Ingredients
  

  • 1 tbsp olive oil
  • 1 onion medium, diced
  • 2 cloves garlic minced
  • 4 cups cauliflower florets
  • 4 cups vegetable broth
  • 1 cup milk
  • 1/2 tsp thyme dried
  • 1/2 tsp smoked paprika
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon cooked and crumbled
  • salt to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the cauliflower florets, vegetable broth, milk, dried thyme, and smoked paprika to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, until the cauliflower is tender.
  • Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer the soup to a blender and blend in batches.
  • Stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.
  • Serve the chowder hot, garnished with crumbled bacon and fresh parsley.

    I tried blending with a regular blender and it exploded a bit (science! 😭). If you have an immersion blender, do that. Flavor was still solid, especially with the bacon on top.

      That makes sense—if the cauliflower was in big chunks, it may not have cooked down evenly and the onion/garlic can get a bit muted. Next time I’d dice the onion/garlic a little finer (or cook the onion 7–8 min) and cut the cauliflower into smaller florets. Also, a pinch more salt/cheddar at the end can bring the flavors back.

    This is a nice idea, but mine was a little bland until I bumped up the salt and thyme. Also, 1/2 tsp paprika felt like not enough—could just be my paprika though.

      Totally agree—mine was kinda bland the first time too. I ended up using a bit more thyme and definitely adding salt gradually while tasting. Also 1/2 tsp paprika barely showed up for me; I’d do closer to 3/4–1 tsp depending on how strong your paprika is.

      Totally get that—bacon can make it overly salty. I’d just add the bacon as a topping (or cut the amount) and then season at the end. With bacon removed, you’ll probably want a little extra salt or even a pinch of pepper to make it pop.

    Tried this tonight—so cozy! The smoked paprika really makes it taste “restaurant-y” and the immersion blender step makes it super creamy. I used extra cheddar and it was perfect. Will make again.

      Totally agree—cheese + cauliflower can definitely take more salt than you’d think. I usually start with what the recipe calls for and then keep adding a little at a time at the end until it “pops.” Glad regular paprika worked too!

    The instructions are mostly fine, but I forgot to cook the bacon first (oops). Put it in raw—don’t do that. Still saved it by crisping it in a pan after… tasted ok.

      Oof 😅 but honestly glad it worked out! Good catch—bacon usually needs to be cooked first so it renders fat and crisps instead of just stewing in the soup. Next time, crisp it separately and add at the end like the recipe implies.

      Wait so you put bacon raw into soup and it was “ok”? That feels backwards to me lol. I’d think it wouldn’t taste right and the fat would mess with the texture. Still—maybe pan-crisping afterwards fixed it? Weird but good lesson.

      Hmm I dunno, I tried something like this once and it was like… watery. Did you blend it after it cools? Or do you add more cheese if it’s not thick enough?

    This is seriously cozy. I blended it smooth with an immersion blender and the texture was perfect—like a lighter chowder but still super filling.
