Ingredients
  

  • 2 chicken breasts boneless, skinless
  • 2 cups mixed salad greens
  • 1/2 cup shredded red cabbage
  • 1/2 cup carrots shredded
  • 1/4 cup Green onions chopped
  • 1/4 cup cilantro chopped fresh
  • 1/4 cup cashews chopped
  • For the Soy-Ginger Dressing:
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp ginger fresh, grated
  • 1 clove garlic minced
  • 2 tbsp sesame oil

Instructions
 

  • In a medium bowl, whisk together the soy sauce, rice vinegar, honey, grated ginger, minced garlic, and sesame oil to make the dressing. Set aside.
  • Heat a grill pan or skillet over medium-high heat. Season the chicken breasts with salt and pepper, then grill or pan-sear for about 5-6 minutes per side, or until cooked through. Remove from heat and let cool slightly before slicing into strips.
  • In a large salad bowl, combine the mixed greens, shredded cabbage, shredded carrots, chopped green onions, and chopped fresh cilantro.

      Yeah, more crunch would help—cucumber sounds great. I might add bell pepper too. Also for the cashews, I toast them in a dry pan first and that keeps them from going soggy.

      Yeah 5-6 min per side felt short for me too. Also I think my pan was hotter than “medium-high” cuz it browned fast. Still tasted great though—soy-ginger is fire.
