Carpaccio di Zucchine with Parmesan

September 1, 2023

When summer produce is at its peak, few dishes celebrate freshness like carpaccio di zucchine. This delicate Italian appetizer is simplicity at its best, showcasing thinly sliced raw zucchini dressed with good olive oil, lemon juice, and shaved Parmesan. It’s the kind of dish that feels fancy without requiring much effort,  perfect for warm-weather entertaining or a light, no-cook lunch.

The magic of this zucchini carpaccio lies in its texture and balance. Raw zucchini, when sliced very thinly, becomes silky and tender, almost melting on the tongue. A mandoline or sharp knife does the trick, turning the vegetable into paper-thin rounds that layer beautifully on the plate. What you’re left with is a canvas ready for flavor.

A generous drizzle of high-quality extra virgin olive oil and a splash of fresh lemon juice bring brightness and richness. The acidity of the lemon enhances the mild flavor of the zucchini, while olive oil adds depth. Shaved Parmesan, with its salty bite, rounds out the dish and adds a luxurious touch. A few cracks of black pepper, maybe some sea salt, and optionally a sprinkle of crushed toasted nuts or fresh herbs like mint or basil take it even further.

This dish is ideal when you want something refined yet effortless. It’s perfect as an appetizer before a pasta or seafood course, or as part of a light summer spread with bread, olives, and a crisp white wine. It also fits beautifully into a vegetarian or Mediterranean-style menu.

Best of all, it’s a great way to use up an abundance of zucchini without turning on the stove. The ingredients are few, but each one matters. When they come together, they create a dish that’s greater than the sum of its parts – fresh, bright, and utterly satisfying.

Why do people eat squash raw? Seems wrong 🤔. This is just a salad with weird ingredients.

This is way fresher than I expected—light, tangy, and the parm really makes it feel “fancy” without effort.

  3. User avatar tuan.kub2002 says:

I made this for dinner and it disappeared fast. I added a little extra basil and it was perfect. Would do again!

  4. 1 star
It’s just sliced zucchini with cheese… How can this be a recipe? LOL.

    1. 5 stars
It may seem simple, but that’s what makes it a good summer appetizer! Just wait till you taste it!

    2. User avatar shawn.olson38 says:

      4 stars
Actually, it’s a really refreshing dish! Sometimes simple is best. Have you tried it?

  5. User avatar clinton.altenwerth90 says:

Not sure about eating raw zucchini. It was okay but I prefer cooked veggies.

  6. User avatar lucilla.bogan says:

    5 stars
So fresh and light! The lemon really wakes up the zucchini, and the Parmesan makes it feel fancy. I used a regular knife and it still worked—nice dinner or side.

  7. 2 stars
Too much lemon! I think half of that would be better. My tummy didn’t like it.

  8. User avatar oPandariaNo says:

    2 stars
Too salty for me. Also, zucchini has a lot of water so it got kind of soggy after a few minutes—maybe serve immediately like the recipe says (which I didn’t 😬).

  9. User avatar basementDweller says:

    4 stars
The basil garnish is a MUST. Without it the whole thing feels flat. I followed everything and it was perfect with a lunch salad.

  10. 4 stars
    Salty! Yum

    1. User avatar rey.labadie says:

      4 stars
Salty enough for you, huh 😅 I think I’d use less parmesan next time—unless you like it super intense.

    2. User avatar smartestRedditor says:

      5 stars
Totally—lemon + parmesan really bring the savory hit. I usually go a touch heavier on the pepper too. Yum!

  11. User avatar merna.kirlin14 says:

    5 stars
Sliced it right. This is how real Italians eat zucchini! 💚

  12. User avatar waneta.willms says:

    Meh 😐

  13. User avatar Miss Kristopher Blanda says:

    4 stars
Tried this for a quick lunch and it actually tasted like restaurant food. Next time I’ll slice even thinner—mine were slightly thicker so the bite was tougher.

  14. 5 stars
This recipe is super simple, and I love how fresh it taste! Perfect for summer.

  15. User avatar tristan.schultz7 says:

    5 stars
Awesome recipe! I added some nuts for crunch. Will make again!

    1. 5 stars
Nuts sound like a great idea! They would add a nice texture. Can’t wait to try it that way!

    2. User avatar art.marquardt20 says:

      3 stars
I dunno about adding nuts to zucchini salad, seems strange. But hey, if you liked it, who am I to judge?

  16. User avatar terminatorXYZ says:

    3 stars
Not sure if I like raw zucchini… the texture was weird for me. But the dressing was nice.

  17. User avatar latrina.hoppe says:

    5 stars
This turned out super fresh and light—exactly what I wanted. The lemon + olive oil dressing really makes the zucchini taste brighter, and the parmesan adds that salty punch. I served it as a starter and everyone went back for seconds.

  18. User avatar mel.waters60 says:

    3 stars
I think the ratio is off—1 tbsp lemon juice might be too tart for some people. I’ll probably start with half next time.

    1. User avatar lucky777 says:

      5 stars
Good call—lemon can be pretty punchy with zucchini. Half next time sounds perfect, especially if your parmesan is already salty.

  19. User avatar terminatorXYZ says:

    3 stars
I don’t know, it was kinda bland. Maybe a little garlic would help? Just my 2 cents.

    1. 4 stars
I get what you mean! A bit of garlic could definitely amp up the flavor. It might not be traditional, but it could work!

  20. 5 stars
Absolutely loved this! So fresh and light, perfect for summer. Will make again!

  21. User avatar gavin.altenwerth says:

    1 star
Zucchini salad??? Nah. Not my thing.

  22. 5 stars
Lol I forgot to sprinkle Parmesan at first, then added it after 😅 Still good though. 5/5 for forgiveness.

    1. User avatar smartestRedditor says:

      4 stars
Not gonna lie, I’d probably skip lemon juice and use balsamic instead… but glad it still worked for you. 5/5 for vibes.

    2. User avatar boyce.schultz1957 says:

      5 stars
Haha I love this 😂 Parmesan fix = perfection. I always do that, especially if I get impatient.

  23. User avatar anonymous_hacker says:

    3 stars
It’s alright. I don’t really get the hype, but my friends liked it.

  24. User avatar randal.skiles1981 says:

    2 stars
Not sure about “carpaccio” though—more like zucchini salad. Still tasty, but I wouldn’t call it fancy carpaccio without a bit more effort.

    1. 4 stars
Totally get what you mean—when I hear carpaccio I expect super fancy thin meat. But zucchini can still be “carpaccio-style” if it’s sliced paper-thin and dressed/finished nicely. This one looks like it nails that vibe, especially with the lemon + shaved Parm. I’d call it carpaccio *di zucchine* rather than true meat carpaccio, but “fancy” feels fair.

  25. 3 stars
I made this for my wife but she doesn’t like zucchini… so I ate it all lol. Not bad!

  26. User avatar Frost Troll says:

    2 stars
Eh, it was okay. I think my kids would rather have pizza than this.

  27. 5 stars
Yum! I used feta instead of parmesan. Super tasty!

  28. User avatar dusty.watsica53 says:

    3 stars
I followed it and it was fine… but not life-changing. The parmesan was nice, but the lemon dressing felt a bit sharp for my taste. Next time I’ll add a tiny bit more olive oil or maybe a touch of honey.

    1. 4 stars
Totally get that—this is more “fresh and light” than wow. Adding a little more olive oil makes it mellow, and a tiny pinch of honey should round out the lemon nicely. Did you also try adding the dressing and letting it sit 2 minutes before serving?

  29. 4 stars
Pretty good, but I wish the instructions mentioned salting the zucchini first. After slicing, I salted lightly for 10 minutes and it seemed more flavorful (less watery too). Still a solid recipe though.

  30. 3 stars
The instructions were a bit unclear. Do I really need basil?

  31. 4 stars
Good idea, but my mandoline made everything too thin and it got a little weird/limp after dressing. Next time I’ll slice slightly thicker and serve faster.

  32. User avatar tommy.kassulke21 says:

    5 stars
Nice and easy recipe! Looks fancy but simple! A hit at my dinner party!

  33. User avatar ALTplusF4 says:

    4 stars
Mandoline scares me, not gonna lie 😅 I tried with a peeler-style slicing and it was still good, but the slices weren’t as even. Flavor was great though!

  34. User avatar Lumberjack says:

    2 stars
This is basically zucchini with lemon dressing and cheese… not complaining, but calling it “carpaccio” feels a bit extra. 😅

  35. User avatar Torchbugs says:

    3 stars
I tried making this but my mandoline slicer broke. Had to use a knife and it was a mess. Tasted okay, tho.

  36. User avatar Hagraven says:

    5 stars
Zucchine with cheese? Yum. Also I put in some garlic, delish!

    1. User avatar aldo.cassin1 says:

      5 stars
Garlic is a delicious addition! I never thought of that. Gonna try it next time!

  37. User avatar jonell.aufderhar1959 says:

    3 stars
Isn’t this just like a salad? I feel like it’s missing something. Could probably use more cheese.

  38. User avatar Super Saiyan 3 Goku says:

    2 stars
Eh, I don’t see the point. Just eat the zucchinis cooked.

  39. 5 stars
The basil garnish is doing way more work than I expected. This tasted brighter than I thought it would, and the parmesan held up nicely (didn’t get watery fast).

  40. 5 stars
So yummy! I added some nuts for crunch. Definitely making this again!

  41. User avatar dusti.brown35 says:

    4 stars
I didn’t think raw zucchini could taste good, but I was wrong! This is super refreshing.

  42. User avatar zack.cartwright35 says:

    2 stars
Zucchini raw? Really? Not sure about that. Thought they had to be cooked.

  43. User avatar michal.oreilly47 says:

    5 stars
Super easy to make! Perfect for summer! 🍋

  44. 1 star
Eh, it’s OK. I thought it would be yummier but just tasted like green.

  45. User avatar elise.bruen92 says:

    4 stars
I didn’t have a mandoline so I used a knife. Some slices were thicker but it still tasted great. Next time I’ll try to get them thinner.

    1. 3 stars
Wait—are you sure this is “carpaccio” if you can’t slice paper-thin? I feel like knife-cut zucchini gets kinda watery. Still, if you served it right away maybe it’s saved by the lemon. 🙂

    2. 5 stars
Honestly I think thicker slices are totally fine—still gets that fresh, lemony bite. Mandoline just makes it prettier and more even. Glad it worked for you!

  46. User avatar harold.fadel60 says:

    5 stars
So fresh and light! I used a vegetable peeler instead of a mandoline and it still worked. The lemon + olive oil dressing makes it pop.

  47. User avatar luther.pfannerstill39 says:

    4 stars
So simple but sooo good! I’m not usually a fan of raw veggies, but this changed my mind!

  48. User avatar Colin the Security Robot says:

    5 stars
So simple but actually feels fancy. The lemon + olive oil makes it taste really fresh, and the shaved parmesan adds that salty bite. Great quick appetizer!

  49. 2 stars
Not a fan. The zucchini texture was weird to me. Maybe cooking them would be better.

  50. User avatar abe.quitzon1984 says:

    5 stars
This is such a fresh, light appetizer. The lemon + olive oil combo really wakes up the zucchini, and the shaved parmesan makes it feel fancy. I’ll definitely make it again for guests.

  51. User avatar michaele.beer68 says:

    2 stars
Easy to make, but felt like it needed something more. A sauce perhaps?

  52. 4 stars
I love carpaccio-style things but I was skeptical without meat 😅. Turns out it’s actually super good. Just make sure the slices are really thin or it’s a bit crunchy.

  53. User avatar oPandariaNo says:

    4 stars
This dish is really refreshing! Perfect for a summer day. I added some cherry tomatoes, yum!

  54. 2 stars
Parmesan isn’t enough flavor for me. I’d add garlic or chili flakes—right now it’s a little bland. Also, 1 tbsp lemon juice felt too much? maybe depends on the lemon.

  55. User avatar veronique.maggio91 says:

    4 stars
I’m skeptical about “carpaccio” from zucchini, lol. Like, it’s healthy, sure, but does it really count? Either way it tasted good and looked fancy, so I guess I’m converted.

  56. 4 stars
Clever idea—turns zucchini into something fancy without much effort. I added extra pepper and it tasted restaurant-level.

    1. 5 stars
Totally agree! The lemon + olive oil really brightens it up, and that extra pepper makes a big difference. Did you shave the parm super thin or use the thicker stuff?

  57. User avatar Vincent Altenwerth says:

    3 stars
Too much cheese! I thought it was too salty. Next time, less!

  58. 3 stars
I liked the idea, but my zucchini was watery after slicing. Maybe I should salt and rest it first? Still decent though.

  59. 5 stars
Mandoline slicer is the key! I tried with a knife the first time and the slices were too thick, so it wasn’t as delicate. With thinner slices it’s much better—restaurant vibes at home.

  60. User avatar damien.kemmer84 says:

    3 stars
Parmesan shaved? I just grated it and it clumped a little. Flavor was still good, but the texture wasn’t the same as I expected.

    1. User avatar Lumberjack says:

      3 stars
Maybe you used the wrong parm? I always grate and it never clumps… could be that the zucchini was too wet? Next time pat them dry and try adding the cheese in smaller pinches. Parmesan should stay kinda delicate.

    2. User avatar Marhta Anderson says:

      5 stars
Totally agree—“shaved” parmesan is a different vibe than grated. If it clumped, you’ll usually want to buy a block and shave with a peeler, then sprinkle right before serving so it doesn’t melt into little bits.

  61. User avatar malia.king15 says:

    5 stars
That mandoline step is scary! I almost took off my finger, but the slices turned out perfect. Topped with extra basil it was a hit at home.

    1. User avatar deana.kuhn21 says:

      5 stars
Totally get that—mandolines look harmless until they aren’t 😬 Glad your fingers are still in the “recipe” though! The lemon + olive oil sounds perfect for keeping zucchini crisp.

  62. 5 stars
Could this get any easier? I made it in 10 minutes. Used basil from my windowsill (kinda sad basil, but still) and it was great with some toasted bread on the side.

    1. User avatar verena.collins2016 says:

      3 stars
Honestly, I tried something like this but my zucchini got watery… maybe I sliced it too thick? Also “shaved” parm—do I just use normal grated or is it different?

    2. 5 stars
That’s awesome—10 minutes is the dream. The zucchini + lemon + parm combo is super bright, and basil on top really makes it feel fancy without effort.

  63. User avatar galina.gorczany25 says:

    4 stars
Not bad, but I think I would add garlic or a pinch of chili flakes. Basil is great though. Simple recipes are underrated.

    1. User avatar karena.lesch65 says:

      3 stars
I made something like this, but I think it needs more cheese? Like more parm and maybe no lemon? Not sure garlic would go with zucchini… but basil helps a lot.

    2. User avatar melania.beatty38 says:

      5 stars
Agreed—this is underrated. I might toss in a tiny bit of garlic and maybe a pinch of chili flakes for some kick. Basil + lemon already sounds perfect.

  64. User avatar ervin.krajcik says:

    5 stars
My family loved it. I served it as a side with pasta and it disappeared fast. Next time I’ll add some toasted pine nuts for crunch.

    1. User avatar annette.murphy says:

      5 stars
So glad your family loved it! Pine nuts would be a great crunchy upgrade—love that idea with the parmesan and lemon.

  65. User avatar Eddie the Computer says:

    4 stars
Y’all, I tried this at a fancy restaurant and it was good but I don’t think my version came out as nice. Maybe my slices were too thick?

  66. User avatar kendra.bruen77 says:

    3 stars
Not gonna lie, 3 small zucchini feels like it won’t make much. Also I’m not sure shaving parmesan that thin is easy—mine clumped a bit.

  67. User avatar porsha.mante55 says:

    5 stars
Yummy! Made it for a family gathering and it was gone in minutes. Everyone loved it!

    1. User avatar tommie.jast20 says:

      5 stars
That sounds awesome! I need to try this for my next potluck. Thanks for sharing!

  68. User avatar Rulindil says:

    5 stars
This was soooo good! The lemon juice really brings out the freshness. Will def make again!

    1. User avatar Angeles Bergstrom says:

      2 stars
Not sure about lemon in this. Zucchini needs more than just that to be tasty. Maybe some garlic?

    2. User avatar lorenzo.wisoky2 says:

      5 stars
I totally agree! The lemon really does make it pop. What a refreshing dish!

  69. User avatar calista.hoppe52 says:

    4 stars
Carpaccio without meat? Honestly I was skeptical, but the flavor combo is pretty legit. Just be careful slicing—those mandolines are no joke.

    1. 5 stars
I was skeptical too, but this actually sounds really fresh. The lemon + olive oil with shaved Parm is a great combo. Good call on serving right away—zucchini gets watery fast.

    2. User avatar Pasta Fasta says:

      3 stars
No meat carpaccio? idk… feels kinda “salad trying to be fancy.” 😅 But I will say mandoline slicing scares me—last time I almost took a finger off. Still, I might try it carefully with a knife.

  70. User avatar Prostetnic Vogon Kwaltz says:

    4 stars
Why is this called carpaccio if it’s just zucchini? Still, it tastes good so I guess branding is everything lol.

  71. User avatar mickey.gerlach says:

    3 stars
I thought it was bland, needs more flavor. Maybe some garlic or herbs would help.

    1. User avatar Chaurus Hunter says:

      5 stars
I agree! A bit of garlic would make it so much better! More flavor for sure! 🌿

  72. User avatar vanita.ryan31 says:

    2. 2 stars
Fresh? Really? I dunno, zucchini can be kinda boring. 🤷‍♂️

  73. User avatar freeman.ritchie says:

    5 stars
Absolutely delicious! The zucchini and parmesan combo is perfect. Will make again!

  75. User avatar MAGA2024.Trumpster says:

I don’t like zucchini, but gave it a shot. Not my favorite.

  76. User avatar man.lowe1968 says:

    3 stars
The flavor is good, but mine got watery after a few minutes. Next time I’ll salt the zucchini briefly then pat dry before dressing.

    1. 5 stars
Totally agree—zucchini can get watery fast. Salting/pat-drying it before dressing is a great fix. I usually do that and it stays crispier.

  77. User avatar Floretta Barton II says:

    3 stars
Looks simple, but the lemon + olive oil combo is a bit strong for me. I think I’ll use less lemon next time or add more olive oil.

    1. User avatar Vroomfondel says:

      4 stars
Huh, I think the lemon is the whole point lol. But yeah—if it’s too sharp, add more olive oil or salt. Next time I’d maybe just do less lemon juice and keep the parm amount.

    2. 5 stars
Totally get that—lemon can be punchy. I usually start with 1/2 tbsp lemon juice and then taste before adding more. More olive oil or even a pinch of sugar can mellow it too.

  78. 4 stars
My kids loved it! Perfect for summer parties. Will make again for sure!

  79. User avatar yuki.walter47 says:

    3 stars
Made this for my kids and they just looked at it like I was crazy. 😅

Absolutely delicious! The lemon juice really brightens it up. Will make again for sure!

    1. User avatar Eccentrica Gallumbits says:

      5 stars
I totally agree! The lemon juice is a game changer. Makes everything taste so fresh!

    2. User avatar Ima Lytle Teapot says:

      3 stars
Sounds good, but I think it might be too lemony for some. Maybe use less next time?

  81. 5 stars
Just made this for a party and everyone couldn’t stop eating! A hit!

  82. User avatar ulysses.blanda9 says:

    2 stars
Looks nice but I dunno, raw zucchini? Feels a bit weird tbh.

  83. User avatar mike.mclaughlin40 says:

    5 stars
This was surprisingly good! I’ve never thought of zucchini like this before.

  84. User avatar emory.reynolds says:

    3 stars
I like the idea, but I found it a bit sharp because of the lemon juice. Next time I’ll use slightly less lemon and maybe add a tiny bit of honey to balance it out.

  85. User avatar Shirley O'Hara says:

    3 stars
Not bad, but the zucchini was a bit bland. Maybe add garlic next time?

    1. 5 stars
I totally agree! Garlic would really kick it up a notch. I usually add it to my dishes for extra flavor.

  86. 3 stars
This feels like a salad but its not a salad?? But I guess whatever works!

    1. User avatar robyn.ondricka says:

      3 stars
But is it really a dish or just fancy slices? 🤔 I don’t know if I’d call it a salad.

    2. User avatar Adelia DuBuque V says:

      5 stars
It’s definitely unique! I love how light it is. A perfect summer dish!

  87. User avatar robbie.littel29 says:

    2 stars
umm i put too much lemon and now it tastes like lemonade 😅. otherwise i think it would be ok. next time less lemon juice for sure.

  88. User avatar sylvester.jacobson2017 says:

    2 stars
I think it needs more than lemon juice—like a bit of garlic or balsamic. Otherwise it’s kind of plain. Still, pretty good.

  89. 4 stars
Super easy and honestly restaurant vibes. I used a knife instead of a mandoline and it still worked, just took longer. Basil on top is a must.

  90. User avatar terry.jacobi17 says:

    5 stars
The basil at the end is key! It brightens everything. I added cracked pepper and it really popped.

  91. User avatar tequila.lynch1988 says:

    4 stars
Simple and elegant! My guests loved it! How did I not know about this dish before?

  92. 3 stars
Too much lemon for my taste. I will reduce it next time.

  93. 3 stars
I only had grated parmesan, not shaved. It melted a little and got clumpy, so I’d say shaved is really the move here. Otherwise, solid flavor.

    1. 5 stars
Good call—parmesan clumping makes sense if it’s grated instead of shaved. Shaved melts more evenly on thin zucchini. I’ve done it both ways and the texture difference is real. Solid advice!

  94. 5 stars
This was so refreshing! Perfect for summer. But I added garlic for extra flavor.

  95. User avatar jamison.klein says:

    3 stars
I’m not sure about raw zucchini + lemon. The flavor was okay, but it felt a bit like eating salad with cheese sprinkles. Still, it looked pretty.

  96. 4 stars
Kinda weird to eat raw zucchini, but I give 4 stars for trying something new.

  97. User avatar emily.bashirian36 says:

    5 stars
Made it exactly as written and it was honestly kinda amazing. I was worried the zucchini wouldn’t taste strong enough, but the shaved parm and lemon fixed that.

  98. User avatar alexander.corwin says:

    4 stars
Yummy! But please don’t slice too thick or it gets watery. Basil helps a lot.

Not sure about the raw zucchini vibe. I know carpaccio is a thing, but I kept thinking it needed cooking—though the taste was still decent.

Super refreshing! The lemon + olive oil dressing makes it feel fancy without much effort. I used a bit more parmesan and it was perfect.

Wow. 5 stars. I put it on a plate like restaurant style and my friends were like “what is this” lol

I didn’t have shaved parmesan, only grated. It melted/merged a bit instead of staying delicate, so texture was off. Still good, but not the same vibe.

Zucchini is too watery for me. I think I’ll cook it next time.

This is so fresh and light—perfect for summer. The lemon + olive oil dressing really makes the zucchini taste “bright” and not watery. I added a few extra basil leaves and it was gone fast.

Yesss! Lemon + olive oil is exactly what I want with zucchini. I tried this and it totally avoids that watery vibe—like you said. Next time I’m adding extra basil too 😊

Sounds good, but I’m wondering—does it actually need the lemon juice? I feel like lemon can make zucchini kinda sour. Also I don’t have a mandoline, so I’ll try knife slices… hopefully not too thick.

Yummy! Who knew raw zucchini could taste so good?

Not bad, but mine turned watery after a few minutes. I think my zucchini slices were too thick or I didn’t use the mandoline fast enough. Still tasty though.

I didn’t have shaved parmesan, only pre-grated. It still worked but the texture wasn’t as elegant—more like sprinkled cheese than carpaccio style. Still yummy and fast!

I followed it exactly and it was kinda bland. Maybe my parmesan wasn’t salty enough? Could use more lemon or pepper for sure.

Mandoline slicer or sharp knife… I don’t have a mandoline and my knife skills are okay but not amazing. Mine came out uneven, yet it still worked. Not bad!

Honestly uneven slices still taste great—carpaccio is more about the fresh, thin vibe than perfect geometry. If you slice them all as thin as you can and serve right away, you’re golden!

This is basically zucchini dressed in lemon and oil. Like, okay. I guess it’s healthy? Needs more seasoning or garlic or something next time.
