Cacio e Pepe is one of Italy’s simplest yet most celebrated pasta dishes, originating from Rome. The name itself, meaning “cheese and pepper,” perfectly captures the essence of this classic recipe. Despite its minimal ingredients, Cacio e Pepe is a masterclass in flavor, demonstrating how quality ingredients and precise technique can transform a few pantry staples into a dish that feels luxurious.
The beauty of Cacio e Pepe lies in its simplicity. Traditionally, it is made with just spaghetti or tonnarelli, Pecorino Romano cheese, freshly ground black pepper, and a little pasta water. The magic happens in the sauce: the starchy pasta water emulsifies with the finely grated Pecorino, creating a creamy coating that clings to each strand of pasta. Freshly cracked black pepper adds a fragrant spiciness that cuts through the richness of the cheese, giving the dish its signature bold flavor. Timing and temperature are key. The cheese must be added off the heat to prevent clumping, and the pasta water must be incorporated gradually to achieve the perfect, silky texture.
Cacio e Pepe is more than just a pasta dish; it’s a symbol of Roman culinary tradition. It reflects the ingenuity of cucina povera, the practice of making delicious meals with minimal ingredients. Over the years, chefs around the world have put their own spin on it, but the traditional version remains beloved for its simplicity and authenticity.
This pasta is perfect for any occasion, from a quick weeknight dinner to an elegant weekend meal. Pair it with a crisp white wine, such as a Vermentino or Pinot Grigio, to balance the creaminess and enhance the peppery notes. A simple side salad or roasted potatoes, or vegetables complements the dish without overwhelming its delicate flavors.
Cacio e Pepe is proof that sometimes less really is more. With just pasta, cheese, and pepper, you can create a dish that’s comforting, satisfying, and full of character. Its timeless appeal makes it a must-try for anyone who loves Italian cuisine and wants to experience the essence of Rome on a plate.

Came out delicious! Reminded me of my trip to Italy. Authentic taste! 🍝
This is my go-to recipe! Simple yet sooo good! 😍
Really? I tried it and my pasta turned out sticky… Maybe I did something wrong? 🤔
I totally agree! This recipe is a lifesaver for quick dinners! 🤗
Did not know Cacio e Pepe was this simple! My fam loved it. Will make it again!
I tried this and it didn’t come out right. Maybe I added too much pepper? 🤔
So glad your family enjoyed it! It’s definitely one of my go-to recipes too. 😊
How can it be 5 stars? Its just cheese and pasta! Where’s the meat?!
I think u need more veggies in this dish… it’s just pasta and cheese, how boring.
I dunno if it’s really that easy… took me a while to get it right. Maybe I’m just not good in the kitchen 🤔.
Don’t worry! It takes practice. Just keep trying, you’ll get it! 🍝
Too much pepper! I choked on it! Will use less next time…
I think you’re overreacting! Pepper ain’t that bad, but maybe just sprinkle less next time. 😅
Lol, that’s a bit dramatic! Just scale it back a notch. Cacio e Pepe’s supposed to be simple and tasty!
Amazing! The cheese made it really creamy! Can I use parmesan instead of pecorino?
I don’t think parmesan is the same, it won’t be as good. Pecorino has that unique kick, ya know?
Yes, you can use parmesan! It’ll be a little different, but still tasty. Just make sure to adjust the salt since parmesan is less salty than pecorino.
Followed the steps exactly and it came together fast. I used extra finely grated Pecorino and it emulsified well. Loved it.
Not bad, but mine seized up a little when I added the cheese. Next time I’ll lower the heat more and add cheese slower. Still tasty though.
So simple yet fancy. Cacio e Pepe is like… peppy comfort food. Loved it! (Also, my pepper smelled amazing.)
This dish is a classic! Perfect for a quick dinner. I used parmesan instead of Pecorino and it was still yummy.
Not sure what I did wrong, but it came out too dry. Maybe more pasta water next time?
I tried it once and it was kinda bland. Maybe I measured the pepper wrong—also I forgot to reserve pasta water, which is probably why.
Totally makes sense—cacio e pepe can get bland fast if the pepper isn’t toasted enough or if you don’t get enough creamy sauce. Reserving the pasta water really is key for emulsifying the Pecorino. Next time try adding a bit more freshly cracked pepper (or toast it a touch longer) and keep the heat low when adding the cheese so it doesn’t turn grainy.
The instructions say “toast pepper 1 minute” but my pan was hottt so it browned quick lol. Still worked, just more spicy.
Haha I love when that happens—1 minute is more of a guideline anyway. Too much browning can be spicy, but if it still came out creamy, you’re good!
Wait, peppER should be toasted in a dry pan right? If it browned “quick” maybe your pepper was too fresh/too much heat. I’d worry it’d turn bitter, but glad it worked for you.
I didn’t have Pecorino so I used Parmesan and… yeah it tastes different. Pepper flavor was great, but the texture wasn’t as rich.
easy peasy lemon squeezy! even I could make it. great for my kids too.
Absolutely loved this recipe! It was so simple and tasted like Italy. Will make again!
I don’t know… toasting pepper for one minute seems too little? My pepper flavor felt kinda flat, and I probably didn’t simmer long enough with the pasta water. Will try again.
wow! so goood!!! I can eat this everyday!!
