Ingredients
  

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 head cauliflower chopped
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.
  • Add the cauliflower and broccoli to the pot, and cook for 5 minutes, stirring occasionally.
  • Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until the vegetables are tender.
  • Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, blend in batches and be careful not to overfill the blender.
  • Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
  • Simmer for an additional 10 minutes, stirring occasionally.
  • Serve hot, garnished with fresh parsley.

      My immersion blender always fights broccoli too 😅 I literally cut the florets smaller and add a ladle more broth. Tbh 5 min for cooking veggies feels short—20 min covered always makes it smooth for me.

      That makes sense—this recipe is pretty mild by default. I usually add a splash of lemon juice or a little white wine vinegar at the end (just 1–2 tsp) and it wakes everything up. Also, sometimes 2 cloves isn’t enough for garlic-forward flavor.

    Two cups broccoli florets and 1 head cauliflower—seems like a lot of cauliflower to me? My ratio tasted a bit cauliflower-forward. Could be just my cutting.

      Hmm maybe you should’ve simmered it longer for it to get thicker? I usually cook mine like 45 min and it turns out way better. Also, did you blend it all the way smooth? If not, that could change the texture a lot.

    I accidentally blended it too long and it got kinda gluey… still edible but texture wasn’t right. Maybe I should’ve blended in shorter pulses like the instructions say.

      Try roasting the cauliflower/broccoli first (like 20 min at 425°F) before simmering. It adds a lot more flavor than just boiling it in broth. Then the cream actually tastes richer.

      Totally get that “meh” feeling. I think this one needs something punchy—like a squeeze of lemon or a pinch of nutmeg—to make it pop. Parsley is nice, but it won’t save a bland base.

    Made this for meal prep and it reheats beautifully. My kids actually ate the broccoli (shocking). I added extra garlic because garlic makes everything better.
