Tbh I get what you mean, but the boiling water is just to fully dissolve the gelatinâwithout it, you end up with little jell-o bits. Cold water is for getting the temp down so it doesnât mess with the setting time.

I usually do a real rolling boilâlike bubbles you canât ignoreâso the Jell-O fully dissolves. If itâs just âhot,â Iâve had it get lumpy and never fully set. You probably didnât mess it up though; give it a good chill time.
