Ingredients
  

  • 2 beetroots medium-sized, peeled and grated
  • 1 pomegranate seeds removed
  • red onion small, thinly sliced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp mint leaves chopped
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the grated beetroots, pomegranate seeds, sliced red onion, crumbled feta cheese, and chopped mint leaves.
