Beef and Spinach Fatayer are savory Middle Eastern pastries filled with a seasoned ground beef and spinach mixture, wrapped in a soft dough and baked until golden. These little hand pies are popular across the Levant and make a perfect appetizer, lunchbox item, or snack for gatherings.
The filling starts with sautéed ground beef, usually cooked with finely chopped onion, garlic, and a blend of warming spices like allspice, cinnamon, black pepper, and a touch of cumin. Once the beef is browned and fragrant, fresh spinach is added and wilted down into the mixture. A squeeze of lemon juice or a spoonful of pomegranate molasses is sometimes added to brighten the flavor and give the filling a bit of tang.
The dough is soft, pillowy, and easy to work with. It’s typically made from a yeast-based mixture of flour, warm water, oil, sugar, and salt. After resting and rising, the dough is rolled out and cut into small rounds. Each round is filled with a spoonful of the beef and spinach filling, then folded into a triangle or boat shape and pinched closed.
Once shaped, the fatayer are brushed with egg wash or oil and baked until the tops are golden and the dough is cooked through. They’re delicious served warm or at room temperature, and they travel well, making them great for picnics or packed lunches.
These pastries combine hearty, spiced meat with earthy greens in a satisfying, handheld form. You can easily make them ahead and freeze them either baked or unbaked for a quick meal later. Whether you serve them with a yogurt dip, a side salad, or just on their own, Beef and Spinach Fatayer offer a delicious taste of Middle Eastern home cooking that’s both comforting and flavorful.

Ingredients
- For the dough: For the dough
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 1 tsp instant yeast
- 1/2 cup warm water
- 1/4 cup vegetable oil
- For the Filling:
- 1 pound ground beef
- 1 onion finely chopped
- 2 cups spinach chopped, fresh
- 1 tsp cumin
- 1 tsp sumac
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast.
- Add warm water and vegetable oil to the dry ingredients, and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour, or until doubled in size.
- While the dough is rising, prepare the filling. In a skillet, cook the ground beef and onion until the beef is browned and the onion is soft.
- Add the chopped spinach, cumin, sumac, salt, and black pepper to the skillet. Cook for another 5 minutes, until the spinach wilts.
- Preheat the oven to 375°F (190°C).
- Divide the risen dough into 8 equal portions. Roll out each portion into a circle with a diameter of about 6 inches.
- Place a spoonful of the beef and spinach filling in the center of each dough circle. Fold the edges of the dough over the filling, pinching them together to seal.
- Arrange the fatayer on a baking sheet lined with parchment paper. Bake for 20 minutes, or until golden brown.
- Serve the beef and spinach fatayer warm as an appetizer or snack.
This recipe is fantastic! I love the combination of beef and spinach. My family devoured them!
This sounds amazing! I can’t wait to try it. Your family must’ve loved it! 😊
Dough was too hard for me. Had to throw it away. Not worth it.
Sorry to hear that your dough didn’t work out! Making dough can be tricky sometimes. Did you knead it long enough?
I had the same problem! My dough was real hard too. Maybe the measurements were wrong or somethin’.
Eh, I don’t know. The dough was too thick for my liking. Maybe I did something wrong?
I think 2 cups flour might be too much—ended up with a stiff dough for me. I added a splash more warm water and it finally came together.
Yum! I added some feta cheese to filling, and it was a hit at my party.
I tried this but had no idea dough could take so long. I guess I missed the rising part. 😅
Made these for my kids and they loved! Easy to hold and eat. 10/10!
I followed the recipe exactly, but my dough didn’t rise at all. What did I do wrong?
Not sure about the measurements… “For the dough: For the dough” made me laugh, but also confused me. Recipe is fine once you ignore the extra text.
Lol yeah that “For the dough: For the dough” part is definitely a typo—but once you follow the actual list, it works. The fatayer came out really tasty.
Is there a way to make this vegetarian? My husband hates beef.
You could try using lentils or mushrooms instead of beef! They add a nice texture too.
Ain’t fatayer supposed to have meat? Can’t believe you wanna mess with tradition!
Do you really need yeast? I didn’t use it and they turned out fine. 🤷♂️
I don’t get why everyone loves these so much. The dough didn’t rise for me and they turned out flat. Not a fan.
Flat dough? Idk, maybe it needed more time to rise? I always let mine rise in a warm place. Also, not a fan of spinach, so def won’t be making these again!
Sorry to hear that! Sometimes the dough just doesn’t cooperate. Maybe your yeast was old? That can happen. I had a similar problem once until I checked my ingredients. Give it another try!
I think sumac is overrated. I left it out and they were still nice. But maybe I’m wrong?
Really bad! I think I did something wrong, they came out flat and weird. Not a fan.
Two words: life changing! I could eat these every day!
I totally agree! These are amazing! My family can’t get enough of them!
Wow! These fatayers were a hit at the party! Will make again!
I added some cheese to the filling and they came out super delicious! Yum!
Cheese sounds like a great addition! I might try that next time. Thanks for sharing!
Meh, the filling was kinda bland. I think it needs something else.
I get what you mean! Maybe try adding more spices or some cheese next time? Might kick it up a notch!
I’m not a fan of spinach but gave it a try. Actually, it was better than I expected!
Yum! I love spinach and beef together, definitely gonna make this on the weekend!
Spinach and beef? Isn’t that kind of weird? I mean, spinach is good and all, but like, I never thought of mixing it with beef. 🥴
Sounds delicious! I’ve never tried these before but definitely want to now. Hope mine turn out as good as yours!
Five stars. That’s it.
How do you know when the dough is done rising? Will it double really?
My dough didn’t rise to “doubled” after 1 hour—maybe my yeast was old. But I kneaded more and it worked anyway.
That sounds exactly like old yeast. Instant yeast usually doesn’t need much babysitting, but if it was dud it won’t rise. Glad you caught it and pushed through!
Mine also didn’t double in 1 hour… I just let it sit like 2 hours and it puffed. Maybe your warm water temp wasn’t warm enough either? 1/2 cup water seems a bit low for 2 cups flour too.
I’m skeptical about using warm water with instant yeast—shouldn’t it be super warm? Mine felt lukewarm and I wasn’t sure.
Warm water can be totally fine even if it feels only lukewarm—instant yeast doesn’t need bath-level warmth like active dry. I usually aim for “warm to the touch” (not hot) and it still rises within the hour.
I was skeptical too. But the recipe only calls for 1/2 cup warm water, and I think you just don’t want to kill the yeast with heat. If it didn’t rise much, maybe the water was cooler than you thought or the kitchen was cold.
This is authentic! My grandma used to make these. Only thing I changed was adding feta. So good!
Can I use another meat? I don’t eat beef. 🐓
Wait, can you actually replace beef with chicken? Sounds risky…
You can use chicken! Just adjust the cooking time a bit since chicken cooks quicker. 🍗
The filling smelled amazing while cooking. I kinda forgot to preheat though (oops) and they still turned out okay, just less golden.
This is a Turkish recipe, right? Not sure why it’s called fatayer but sounds good!
Fatayer? More like ‘fat-yer’ stuffed with sadness. Not a fan. Probably won’t try again.
It’s so easy! I didn’t even knead the dough properly, but it turned out fine. LOL
I made these but used chicken instead of beef. Still good!
These turned out amazing! My family devoured them in minutes. Definitely a keeper!
So glad to hear you liked them! They’re really a family favorite in my house too!
Absolutely delicious! My family loved it!
I had no spinach so used kale instead, and they still turned out great. 👍
Wow, this looks complicated. I barely cook anything!
My fatayer leaked a little while baking 😂. I think I didn’t seal well. Taste was still amazing though—just messy.
Not sure if I did it right. My fatayer fell apart… My dough was a disaster!
Super easy and delicious! You can also use chicken instead of beef, just saying.
This recipe is complicated for me. I’m not a cook and it made my head hurt!
I found the dough tricky to handle. It kept sticking to my hands. Maybe too much water??
I tried making these, but the dough didn’t rise at all. What did I do wrong? 😕
Dough is tricky! Did you use fresh yeast? If not, that could be why! Also, double-check your measurements next time. 🙈
It sounds like you may not have let the dough get enough warmth or time to rise! Make sure your water is warm but not hot, and give it more time if it’s chilly in your kitchen. Good luck next time! 😊
Who needs fancy stuff when you got recipes like this. Simple and good.
Totally agree! Simple recipes like this are the best. Can’t wait to try it!
Way too many steps for something simple. I just want an easy snack!
Yummy! These are perfect for parties! Just made a batch last night. Everyone loved them!
So glad to hear everyone loved them! They were a hit at my party too! 🤩
I made these last week and my family thought they were too spiced. Do you really need that much cumin?
I followed this exactly and mine came out hard as rocks. What went wrong?
So good! 😍 Just like my grandma used to make!
Yum! My kids gobbled these up! Super quick and easy, too. Will make again!
Delicious! These are my new fave snacks. Perfect for parties!
I don’t even know what sumac is! But these still tasted good. Don’t forget to add some hot sauce!
Sumac is a spice! You should try it next time. Trust me, it adds a unique flavor. Hot sauce is a great idea too! 🥳
I don’t get why people use exotic spices like sumac. It sounds complicated, but I guess your fatayer was okay. Hot sauce works just as well, right?
Honestly, I found the mix weird. Spinach and beef? Not for me. But the presentation was nice!
I followed the steps but they didn’t come out right. The dough was too sticky even with flour.
The flavor is legit—kinda tangy and savory. I only wish the dough got a bit more browned, maybe my oven runs cool.
Totally agree—the tangy/savory combo from the sumac is spot on. I’ve noticed browning depends a lot on oven temps too; mine only gets darker if I let them bake closer to 22–25 min.
Maybe try brushing the tops with a little oil or egg wash before baking? 375F is fine, but if your oven runs cool, 20 min might just not be enough. Also, parchment can sometimes keep the bottoms lighter.
Looks good, but can I use chicken instead of beef? My partner won’t eat beef. 🤔
These fatayers are incredible! I can’t believe how easy they were to make. Definitely a new favorite in my house! 🌟
Fatayer? Sounds like something I get at the fair. Delicious!
Made these last night and they were okay but not great. I thought I could taste the flour too much. 😕
Is sumac necessary? I didn’t have any and used paprika instead.
Absolutely delicious! I made these for a party, and they were gone in minutes! 5 stars!
These look great, but do I really need to wait for the dough to rise? I usually skip that step. Is it even worth it?
I can’t believe how good these turned out! I added some cheese to the filling, and it was a hit! Definitely making them again!
Beef is overrated, lol. I used chicken instead. 😂 #healthychoice
These fatayers were amazing! So flavorful and crispy. Will make again for sure!
