Balkan Blini

July 22, 2024

Balkan Blini are the lesser-known cousins of their Russian counterparts, but they carry their own charm and flavor. These small, pan-fried pancakes are soft, slightly chewy, and often served as a savory dish throughout the Balkans, especially in rural households where simple ingredients shine.

Traditionally made from a batter of flour, milk, eggs, and a touch of yeast or baking soda, Balkan Blini are delightfully airy on the inside with a golden, crisp exterior. While Russian blini often lean sweet or are made with buckwheat, the Balkan version tends to be more rustic and hearty, often served plain or filled with savory ingredients like cheese, kajmak (a creamy dairy spread), or even minced meat.

These blini are incredibly versatile. Enjoy them warm with sour cream and fresh herbs for breakfast, or stuff them with feta and roll them up for a snack that feels both traditional and comforting. In some households, they’re layered into savory stacks, almost like a pancake lasagna, or served alongside soups and stews.

What makes Balkan Blini special is their role in everyday family meals. They’re quick to prepare, easy to adapt, and made with pantry staples, making them a go-to for busy days or unexpected guests. The recipe is also endlessly flexible—add grated zucchini or chopped greens to the batter for a veggie-packed version, or top them with ajvar for a flavorful Balkan touch.

Perfect for sharing, dipping, or simply enjoying on their own, Balkan Blini are a taste of tradition that feels timeless and familiar. Whether you grew up with them or are discovering them for the first time, these savory pancakes are sure to become a favorite in your kitchen.

This looks so easy! Can’t wait to try it. Wonder if I can add some blueberries?

    1. User avatar jamey.reynolds says:

      5 stars
Blueberries sound great! I think they would add a nice sweetness to the blini. Can’t wait to see how yours turn out!

    2. User avatar Draugr Wight says:

      2 stars
I dunno about blueberries. I mean, it’s not a pancake, right? Just stick to the recipe, plz.

  2. 3 stars
Yeast didn’t foam for me after 5 minutes (maybe my milk was too hot/cold?). I added a bit more time and eventually it came back, but I was stressed the whole hour.

  3. 3 stars
Mine didn’t bubble much on the first try, I think my milk wasn’t warm enough. After letting the yeast sit longer, they came out way better.

    1. 5 stars
Glad it worked out! Yeast can be picky—warm milk really makes the difference with the foam.

  4. User avatar jacinta.hettinger67 says:

    3 stars
I think the “one tablespoon per blini” part is off. Mine were way smaller than expected and took forever to cook. Flavor was okay though.

    1. User avatar marinda.douglas97 says:

      4 stars
Mine take forever too đŸ˜© I think medium heat is too low with thicker batter. I bump it to a bit higher and cook faster, just watch so they don’t brown too quick.

    2. User avatar bea.rice92 says:

      4 stars
Totally get you—1 tbsp can be tough if your pan runs smaller or the batter is thicker. Next time try measuring by drop/ladle and look for a thin, even circle. How thick was your batter?

  5. 3 stars
I like blini but this recipe feels kinda plain. Could use something like vanilla or lemon zest? I know it’s not “authentic,” but my kids preferred it that way.

  6. 4 stars
Blini? Never heard of ‘em. But I like anything that uses butter! 😋

  7. 3 stars
Not bad, but the texture was more like thick pancakes than blini. Next time I’ll use a bit less flour or add a touch more milk to thin it out.

  8. 2 stars
This is a fun weekend project, but it’s a little time-consuming with the hour rise. If you want quick pancakes, skip it.

    1. User avatar vashti.kuhn says:

      4 stars
Totally agree—waiting an hour for yeast to do its thing is the whole “weekend project” vibe 😅 But the texture is worth it. Next time I’ll warm the kitchen a bit and speed it up.

    2. User avatar luci.renner2014 says:

      2 stars
Hour rise?? I just can’t lol. I tried blini once and it came out like regular pancakes anyway. If I skip the rise, what’s the closest substitute—more yeast or just cook right away?

  9. User avatar chas.emmerich44 says:

    5 stars
These blinis were a hit at my party! Super easy and delicious. 5 stars!

  10. User avatar ian.cruickshank23 says:

    3 stars
Pretty good, but I think 1 tbsp active dry yeast is a bit much? Mine got a little yeasty/strong. Next time I’ll use slightly less and let it rise a bit longer. Still—nice texture.

    1. 4 stars
Strong yeast taste can happen if the yeast gets too hot or rises too fast. I’ve found keeping the milk just warm (not hot) helps a ton. Maybe yours was a bit warmer?

    2. User avatar trent.cormier2011 says:

      5 stars
Yeah I get what you mean—1 tbsp yeast is a lot for only 1 cup flour. I’d start with 2 tsp next time and see. Glad you still liked the texture though!

  11. User avatar lorean.renner says:

    2 stars
Okay but—why non-stick? I used cast iron and they stuck a little, even with butter/oil. Might just be my skillet though. Flavor was still good.

  12. User avatar maryanne.orn83 says:

    4 stars
Really easy recipe! Just follow the steps and you can’t go wrong. Perfect for breakfast or snack time! ❀

  13. User avatar cliff.raynor33 says:

    2 stars
5 minutes is not enough for yeast to foam for me. I waited longer and it finally activated. If you’re in a cold kitchen, keep an eye on it.

  14. 5 stars
Delicious recipe! I used a little more butter, and they were perfect!

    1. 5 stars
Sounds amazing! I can’t wait to try adding more butter too. Thanks for the tip!

  15. User avatar roman.terry says:

    2 stars
Confusing: 1 tbsp melted butter in batter is great, but it kinda burned in my pan. Maybe my skillet was too hot. Watch the heat.

  16. User avatar grazyna.rau says:

    5 stars
    YUM! 😋

    1. User avatar jed.mann96 says:

      5 stars
Totally agree! These look delicious! Can’t wait to try making them myself!

  17. User avatar lawanna.satterfield says:

    2 stars
I followed it exactly, and somehow the yeast didn’t foam at all. Ended up making them without waiting (still ate them). Anyone else have that problem?

  18. User avatar jolie.boyle2003 says:

    2 stars
I tried this and it was kinda bland. I used salted butter by mistake and still needed more salt. Also, the batter took longer to rise than an hour for sure.

  19. User avatar hollis.hoppe1984 says:

    2 stars
I don’t know if I did something wrong, but mine turned out flat and soggy. Any tips?

  20. User avatar arnulfo.hammes says:

    5 stars
Not gonna lie, I was skeptical about yeast + blini, but the rise really makes a difference. I served with sour cream and it was amazing.

  21. 3 stars
Eh, they were okay… not what I expected. Maybe my yeast was old or something. đŸ€·â€â™‚ïž

    1. User avatar oswaldo.flatley41 says:

      4 stars
Maybe try using fresh yeast next time! It really makes a difference. 😊

    2. User avatar donovan.wintheiser says:

      2 stars
I think the instructions are too complicated! Should just mix everything together and cook. 😕

  22. 5 stars
Super easy and honestly kinda addictive. I topped mine with jam and a little butter—Balkan vibes achieved 😄

  23. 3 stars
Didn’t have yeast so tried baking powder instead. They were kinda okay. Should I even call them blinis? 😂

    1. User avatar katelyn.anderson2018 says:

      4 stars
Blini or not, they still sound tasty! Baking powder works too. 👍

  24. 3 stars
The “one tablespoon per blini” bit is confusing. I did small spoonfuls and they were fine, but they came out bigger than expected.

  25. User avatar betty.maggio68 says:

    3 stars
Not sure about calling it blini—mine turned more crepe-like. Still good, just different. Will try again but with thinner batter.

  26. User avatar Jarvis Reichel says:

    3 stars
I followed the recipe exactly and mine didn’t foam much—maybe my yeast was old? Still edible, just not as airy. Flavor is nice though.

  27. User avatar darryl.beier45 says:

    5 stars
Pretty tasty. Kids ate them all. đŸ€·â€â™€ïž

  28. 4 stars
Not gonna lie, I was skeptical about only 1 tbsp yeast for this much flour, but it actually rose fine. Batter was a bit thick—adding a splash more milk helped.

    1. User avatar bob.hills74 says:

      5 stars
I had the same thought about the yeast amount, but mine worked too. Love when that happens 😄

  29. User avatar jade.schinner47 says:

    4 stars
I was skeptical about using warm milk with active dry yeast in a batter, but it worked. Took longer than an hour for me though (more like 75 min).

  30. User avatar Super Saiyan Goku says:

    3 stars
Not bad, but 1 tablespoon per blini seems tiny. I made bigger ones and the cooking time changed. Taste was good—just a little tricky to flip without breaking.

  31. User avatar alicia.dickens2023 says:

    4 stars
The rise time confused me. An hour was fine, but the batter thickened more than expected. I ended up whisking it back a bit with warm milk before cooking.

  32. User avatar Leto Atreides says:

    5 stars
These are amazing! I made them for breakfast and my kids loved them!

  33. 3 stars
I followed it but my yeast didn’t foam. Might’ve been the warm milk (I think I overheated it). Still ate them as flat pancakes
 not bad, just not blini.

    1. 4 stars
Ahh that makes sense—if the milk was too hot it can kill the yeast, so no foaming. Flat blini are still edible though!

  34. User avatar gregory.jenkins says:

    3 stars
Blinis are a Russian thing, right? Why add yeast? Is that traditional?

    1. User avatar Sand-Dial says:

      2 stars
Why the yeast tho? I’ve made blinis without it, and they were fine. Seems like a waste.

    2. User avatar Jim Schmidt says:

      5 stars
Yes, blinis are traditionally from Russia, but the yeast is what helps them rise and gives them a fluffier texture! It’s a common technique. 😊

  35. User avatar Dwarven Centurion says:

    2 stars
I followed the instructions exactly, but they came out too thick. Maybe add more milk next time?

  36. 5 stars
Fluffy and buttery, amazing! Topped with honey and fruits, it was perfect.

    1. User avatar sam.rice30 says:

      5 stars
Sounds delicious! I love that you topped it with honey and fruits. Definitely trying this recipe soon!

  37. User avatar sebastian.veum says:

    2 stars
I had a lot of trouble with the yeast not working. Anyone else have a problem?

  38. 5 stars
These turned out fluffy and slightly sweet—exactly the vibe I wanted. The foamy yeast step is key; I was worried for a minute but it worked after a few more minutes.

  39. User avatar francina.kiehn40 says:

    5 stars
Simple and delicious! I added some cheese in the batter for an extra kick! Yummy!

  40. User avatar carie.bradtke says:

    1 star
Too much work for small pancakes. I don’t get it. 😅

    1. User avatar gaylord.rempel18 says:

      4 stars
I get what you mean—these are a little more effort than regular pancakes. But the yeast rise is what gives them that bouncy, thin “blini” texture. Totally worth it if you’re into that.

  41. User avatar NAFO.SUPREMACY says:

    5 stars
These are amazing! Just like my grandma used to make, but I added some cheese on top. Yum!

  42. 1 star
Did I miss something? The instructions were confusing and my blinis burnt. Ugh! đŸ˜©

  43. User avatar Pasta Fasta says:

    4 stars
I’m skeptical about only 1 tablespoon sugar—seems low for something yeasted. But actually it tasted balanced, not sweet. I’d still add a tiny bit more if you like sweet.

  44. User avatar lyle.hane33 says:

    2 stars
I tried making these and messed up the yeast part. They turned out flat 😞. Maybe I need more practice?

  45. User avatar smartestRedditor says:

    5 stars
Wow easy. 10/10 blini. The bubbles flip perfect, golden on both sides.

  46. User avatar retha.sauer31 says:

    4 stars
Soo easy! I thought it would be hard, but I managed it fine. Dinner success.

  47. User avatar Snow Bear says:

    4 stars
Good flavor, but my batter was way thicker than I expected. I ended up adding a splash more milk to get a better pour. Next time I’ll be more careful with how I measure.

    1. User avatar Josefa Grimes says:

      3 stars
Mine was thick too at first. I think I didn’t warm the milk enough? Next time I’m adding a little more milk before it rises, not after.

    2. 4 stars
That makes sense—flour can be a bit different depending on how it’s measured. A little extra milk is totally the move. Glad it still worked out!

  48. User avatar trey.lynch2018 says:

    1 star
Blinis? More like bland-is! I don’t get what’s so special about them. Better recipes out there for sure.

    1. User avatar carisa.runolfsson says:

      4 stars
Hey, everyone has different tastes! Blinis can be super delicious if made right. 😋

    2. User avatar Humma Kavula says:

      3 stars
I mean, they’re not bland if you add good toppings! Maybe try some salsa or fruit to spice them up?

  49. User avatar wellRespected says:

This recipe is just like my grandma used to make! Brought back so many memories. Thanks!

    1. User avatar lyman.schuster says:

      5 stars
Aww, that’s so sweet! Glad it brought back good memories. Your grandma’s recipe must’ve been amazing! 😊

  50. User avatar fawn.swift45 says:

    5 stars
These are dangerously good. The batter was smooth and the rise took about an hour like the instructions said. Mine came out golden and tender—topped with sour cream and a little jam. Yum!

  51. User avatar zachary.farrell says:

    3 stars
Super easy to make, but mine came out too thick. What did I do wrong?

  52. User avatar wellRespected says:

    3 stars
Mine were kinda pale, like not golden enough. I think my skillet was under the heat. Still yummy with jam, but I’ll crank it a bit next time.

    1. User avatar lisette.beahan1991 says:

      5 stars
Yeah, that sounds exactly like it—medium heat can make them stay pale. Try slightly hotter and give each side a bit longer until they’re properly golden.

  53. User avatar mildred.johnson69 says:

    2 stars
I tried this recipe, and mine turned out flat and dense. Not sure what went wrong. Kind of disappointed.

  54. User avatar denna.ryan says:

    5 stars
Yum! I added some vanilla to the batter and topped them with Nutella. So good! Definitely making again.

  55. User avatar lesley.nienow says:

    1 star
Ugh, blini? Not really my thing. They’re just pancakes, right?

  56. User avatar ALTplusF4 says:

    2 stars
They taste good, but mine didn’t really “bubble” much. I cooked longer and the second side was okay, but the first side stayed pale. Any tips?

  57. User avatar anamaria.rosenbaum45 says:

    5 stars
These Balkan Blini are delicious! I added some cinnamon and they were a hit with my family! 5 stars!

  58. User avatar Willie Maykit says:

    2 stars
I’m not sure about this recipe. My batter didn’t rise at all. Maybe my yeast was old? đŸ€”

  59. User avatar reita.cronin87 says:

My whole kitchen smelled like warm bread after Step 1 😍. Easy batter, easy cooking. I’ll definitely make these again for brunch.

    1. User avatar inell.goyette says:

      5 stars
Ugh yes—“warm bread” smell is the BEST. I also love how hands-off the rise is. Brunch win! 😄

  60. User avatar hilde.hill46 says:

    2 stars
Lol I messed up the yeast step and still ate them. They weren’t bad at all. Could be better though—needs more sugar maybe?

  61. User avatar basementDweller says:

    4 stars
Not bad at all! Mine were a touch thicker than I expected, but the flavor is great—sweet-salty, kinda like a pancake and crepe had a baby.

    1. User avatar king.bernhard2002 says:

      3 stars
Huh, I think yours might be a bit off on the yeast rise? I only let mine sit 30 min and mine are thinner. Also I used cold milk once (oops) and it was way thicker too. Still tasty though!

    2. User avatar marjory.hahn says:

      5 stars
Totally agree—sweet-salty is such a good vibe. Mine also tend to thicken up, so I usually add a splash more warm milk if the batter looks too stiff. Pancake-crepe baby is spot on 😂

  62. User avatar cherilyn.bradtke40 says:

    5 stars
These blini are soooo good! I made them for breakfast and my kids gobbled them up! Will make again!

  63. User avatar zack.durgan36 says:

    4 stars
Easy peasy! But maybe make it with peanut butter next time? That sounds yummy!

  64. User avatar hermine.von48 says:

    1 star
I couldn’t find active dry yeast so I used baking soda. Didn’t work out…

  65. 3 stars
    The yeast part worked
I think. My milk wasn’t super warm, so it foamed but not a lot. I added a splash more warm milk and it revived. Flavor is nice though.

    1. User avatar inez.mayert92 says:

      5 stars
Glad it worked! Foamy means the yeast is waking up—even if it needed a little extra warmth. Next time you can aim for “warm to the touch” like hot bath, not scalding.

  66. User avatar rebbecca.mitchell says:

    4 stars
Pretty good, but I think 1 tbsp melted butter was a bit much for my batter—felt slightly greasy. Still tasty though, especially with sour cream.

  67. User avatar Yooden Vranx says:

    4 stars
Took longer than expected, but the taste is worth it. Would make again!

  68. User avatar tissues_with_issues says:

      5 stars
Right? They’re so light and cozy—love blini with sour cream or jam!

  69. User avatar nelson.miller says:

    5 stars
Delicious! I made these for a brunch and they disappeared fast. Everyone loved them. Will definitely make again!

  70. User avatar Majin Vegeta says:

    3 stars
Isn’t this just pancakes? I don’t see the difference much. Probably won’t make again.

  71. User avatar rich.landlord says:

    4 stars
I’m not gonna lie, I mixed the eggs too fast and got a slightly lumpy batter. But after resting it for that hour, the lumps baked out and the blinis were still tasty. Great quick breakfast idea.

  72. User avatar luanne.ortiz says:

    4 stars
Easy recipe, but I had to adjust the heat a bit. On medium my first few were too dark, so I lowered it slightly and they cooked evenly. Still great flavor.

    1. User avatar anonymous_hacker says:

      5 stars
Thanks for the tip! I always forget that “medium” can vary so much by stove—good to know lowering the heat fixes the dark bottoms.

  73. User avatar brittni.donnelly says:

I never heard of blini before, but now I’m a fan! So fluffy!!!

    1. 5 stars
Welcome to the blini club! They really are fluffy and delicious. Have you tried adding any toppings?

  75. 5 stars
These blinis are amazing! I added some blueberries and they tasted great!

  76. User avatar Eddie the Computer says:

    4 stars
They turned out fluffy, but I think I used too much sugar. Next time I’ll reduce it and see how it goes.

    1. 4 stars
Sounds good! A little less sugar might make them perfect! 😊

  77. User avatar Michael83 says:

    5 stars
Looks good, but I swear my “one tablespoon per blini” made them tiny and I got like 40 lol. Still delicious, just more work than expected.

    1. 5 stars
Haha I feel that! I’m glad they were still delicious though—yeah batter volume vs pan size can be sneaky.

  78. 4 stars
Blini? More like tasty pancakes! I thought they were hard to make, but this recipe is simple.

  79. User avatar mathWizard says:

    3 stars
I think traditional blins should have more filling. Change my mind!

  80. 2 stars
Too confusing, got lost in the steps. Can someone explain the yeast part? How does it work?

  81. User avatar gaynell.pagac1971 says:

    4 stars
Not bad, but mine were a bit pale. I think my skillet wasn’t hot enough—next time I’ll go slightly higher and cook a touch longer.

  82. User avatar yer.wilderman says:

    4 stars
Delicious recipe! I even tried it with honey instead of sugar and it worked well!

    1. User avatar Gaius Helen Mohiam says:

      5 stars
Using honey? That’s a cool twist! I gotta try it that way next time.

  83. User avatar casey.blick2026 says:

    2 stars
IDK… they tasted too yeasty for me. I think I overdid it with the yeast.

  84. User avatar tierra.schoen says:

    4 stars
I used whole wheat flour instead of regular. Not the same, but not bad! Give it a try if you want healthier.

  85. User avatar robbie.erdman7 says:

    5 stars
Made these for breakfast and they came out super soft. The yeast step is key—mine foamed perfectly after 5 mins. Loved the golden color!

    1. User avatar tomiko.hackett13 says:

      4 stars
Hmm I tried blini before and mine were kinda gummy—maybe I didn’t let it rise long enough. Yours sounds great though. What toppings did you use?

    2. User avatar kimberely.haag2009 says:

      5 stars
Yes! That yeast foam step really makes or breaks these. The golden color is my favorite part too 😄

  86. User avatar shante.leffler26 says:

    4 stars
I followed it pretty closely, but my bubbles didn’t show much until I raised the heat slightly. Still turned out tasty, just smaller/thinner than expected.

    1. User avatar moises.daniel says:

      4 stars
That happens to me too sometimes—if the milk/yeast isn’t quite warm enough, the bubbles are kinda shy. Glad you still got tasty ones!

  87. User avatar Juan Morefore DeRhode says:

    5 stars
    Blinis. 👍

    1. User avatar ronny.stokes says:

I love blinis! Can’t wait to try this recipe. Thanks for sharing! 😊

  88. User avatar Duncan Idaho says:

    5 stars
These turned out fluffy and actually tasted like something from back home. I used a slightly thicker batter and they were perfect—golden on both sides.

    1. User avatar leo.berge79 says:

      5 stars
That’s awesome 😄 I love when blini actually taste “right.” I’m glad your thicker batter worked—makes sense it would help them stay fluffy and golden.

    2. User avatar jed.jacobi49 says:

      3 stars
Really? Mine always come out kind of gummy inside. I think I’m overmixing or not letting it rise long enough. How thick are you talking—like pancake batter thick?

Pretty good recipe, but my first batch was a little too thick, so I added a splash more milk. After that they cooked evenly. Nice flavor!

Good catch on the thickness—adding a splash of milk is totally the right move. I’m glad it fixed the even cooking!

    2. 4 stars
Huh, I always thought you had to add less flour if it’s thick. Your method makes sense though—mine turn out weird when the batter’s too stiff.

Looks easy but I messed it up. Followed steps exactly and it was undercooked inside. Maybe my heat was too low? Not sure.

Ugh, that’s frustrating. If they were undercooked inside, yeah—most often the pan heat was too low or the blini were too thick (batter too much per one). Next time try medium-high and use closer to a teaspoon-ish amount per blini, and cook a little longer after flipping until the center feels set.

These turned out soooo fluffy for something that looks so simple. The foamy yeast step is key—followed it and they browned perfectly. Topped with sour cream and a little jam. 10/10!

These are legit Balkan vibes. I used butter to cook and they browned nicely. The foamy yeast step is key—don’t skip that waiting time.

    1. User avatar hanna.parisian says:

      5 stars
Yes! That foamy yeast step is everything—mine never turned out right when I rushed it. The butter browning tip is spot on too.

I tried it but my batter was super thick? I added a splash more milk and it was okay. Still good Balkan vibe tho, but 1 tbsp melted butter felt like a lot for me.

  93. 5 stars
These turned out fluffy and super tasty! The foamy yeast step was key—mine got nice and bubbly after 5 minutes. I topped with sour cream and dill and it tasted like a little slice of the Balkans.

    1. User avatar stuart.bogisich2001 says:

      5 stars
Yes!! The foamy yeast step really does make all the difference. Mine also bubbled fast when the milk was warm enough—so good with sour cream and dill.

I tried these but my batter seemed way too thick after I added the flour. I ended up adding a splash more milk and they were okay, but not super fluffy. Still tasty though!

  94. 4 stars
I followed it pretty closely but my batter was thicker than expected. I added a splash more milk and it turned out great anyway. Flavor is nice—salt and sugar balance well.

“About one tablespoon per blini” made me laugh because mine came out like quarter-sized blobs 😅 Tasted fine though. Won’t call it perfect, but I’d make again.

  96. 5 stars
Wow. So easy and actually feels special. My family ate them all before toppings even got to the table 😂

My batter rose like crazy but the first flip was chaos—too much butter in the pan maybe. Next time I’ll wipe off excess and keep the heat medium-low.

  98. 4 stars
They turned out good but mine took longer to rise, might be my yeast tho.

  99. 1 star
Boring. Just pancakes but different shape.

    1. 4 stars
I disagree! These blini can be super tasty and versatile. They got a unique texture compared to regular pancakes. Give it a shot!

I think 1 tablespoon per blini is too much unless you want bigger pancakes. Mine were huge and took forever to cook through. Still tasted good though!

I’m skeptical about using only 1 cup flour for 2 eggs—thought it would be too thin or too thick. End result was actually balanced, so credit where it’s due.

  102. User avatar Frostbite Spider says:

I tried this but forgot the eggs. Big mistake! They didn’t hold together.

  103. User avatar claude.bergstrom1961 says:

meh… they were okay. I think the butter/oil amount wasn’t enough for my pan, and they dried out a bit while flipping. Would try again with better technique.

  104. User avatar Falmer Archer says:

I followed it exactly, but my blini never got super foamy—maybe my yeast was old. Still edible, just more like thin pancakes than airy bites.

  105. 5 stars
Absolutely delicious! My kids loved these. Will make again for sure!

  106. 5 stars
These came out fluffy and super tasty! I added a little sour cream on top and it reminded me of my childhood. The rise time was spot on.

Yes!! Fluffy Balkan blini are the best—sour cream sounds like the perfect throwback topping. I’m glad your rise time nailed it, that part always decides everything.

I tried this but mine didn’t really fluff up
I think my yeast was old or my milk wasn’t warm enough. Also 1 tablespoon batter per blini seems tiny?? Maybe I made them too big.

  107. User avatar elise.lesch33 says:

They turned out pretty good, but I think I forgot the salt. Oops! So a bit bland. Might try again.

  108. 3 stars
I followed it exactly but my batter was way too thick. Maybe my flour is different? I ended up adding a splash of milk and it worked after that.

    1. 5 stars
That sounds like a flour hydration issue, yeah. Different flours (or measuring cups vs weight) can make the batter much thicker—adding a splash of milk is exactly what you’re supposed to do.

These came out super fluffy for me! I let the batter rise in a warm spot and the bubbles were a great sign. Topped with sour cream and it felt very authentic.

    1. User avatar cammie.schaden63 says:

      5 stars
That’s awesome! The warm rise + waiting for the bubbles really is the whole trick. Sour cream sounds perfect.

Made these last night and the batter actually rose like it promised—super fluffy little blini. The yeast foamed right away (thankfully). I topped mine with sour cream and dill and it tasted like a cozy Balkan cafĂ©.

Yesss! “Foamy yeast” is the best sign 😄 I’m glad it rose for you too—fluffy blini are the goal.

Not what I expected. They were just okay. I think I prefer pancakes.

I totally get what you mean! Pancakes are more familiar. But give blini another shot with some good toppings! They can surprise you!

  112. User avatar reginald.gutmann1965 says:

I’m skeptical of “one tablespoon per blini” because my batter seemed thick, so I ended up using more. Still worked though, and they were tasty—just more like mini pancakes.

    1. User avatar Arthur Dent says:

      5 stars
Totally get that—mine was thicker too, so I used a bigger scoop. They still puffed and browned fine. If it’s thick, it’s basically telling you “mini pancakes,” not “tiny blinis.” 🙂

  113. 3 stars
Not bad, but my first batch stuck a bit even with non-stick. Next time I’ll lower the heat a little. Also, flipping took longer than the recipe made it sound like.

  114. User avatar shayne.smith1975 says:

Why no sour cream or yogurt? Balkan-ish or just “pancakes with yeast”? Also the ingredient amounts seem off—1 cup flour + 1 cup milk is too thick for me.

My yeast didn’t foam at all
I used old yeast, so that’s probably on me. I reran it with fresh yeast and it worked perfectly. Lesson learned.

    Blini!

  117. User avatar CTRLplusW says:

Sounds delicious, but “warm milk” is vague. Mine was too hot and I think it killed the yeast—no foam at 5 minutes for me. Anyone trying this: keep it warm, not hot!

    1. User avatar Prostetnic Vogon Jeltz says:

      5 stars
Totally agree—“warm milk” needs a temperature. I aim for like body-warm (not hot), and mine foams every time. If it’s too hot, yeast definitely sulks.

    2. User avatar rhea.hansen says:

      2 stars
Mine also didn’t foam at 5 mins
I used milk I heated in the microwave and prob overdid it 😅 I’ll try again with cooler milk.

  118. 2 stars
I couldn’t get the batter to rise at all. I used instant yeast instead of active dry and maybe that messed it up. Flavor was ok but texture was off.

  119. User avatar sima.davis10 says:

    4 stars
The rise time confused me—mine only doubled a little after an hour. Maybe my room was cold? Ended up with thinner blini, but they were still tasty.

These came out fluffy and really tasty! The yeast foamed perfectly after 5 minutes, which honestly doesn’t always happen for me. I served with sour cream and a little jam—Balkan vibes for sure.
