Baked stuffed artichokes with shrimp are the epitome of an elegant yet comforting dish that combines the earthiness of artichokes with the delicate sweetness of shrimp. This dish is perfect for a special occasion or as a standout appetizer that’s sure to impress your guests. The hearty artichokes are stuffed with a savory mixture of breadcrumbs, garlic, Parmesan, and fresh herbs, then topped with succulent shrimp and baked to perfection.
Preparing artichokes can seem intimidating, but with a little guidance, it’s an easy and rewarding task. Start by trimming the artichokes and removing the tough outer leaves. You’ll want to focus on the tender heart and the meaty inner leaves, where the stuffing will go. After cleaning, you can steam or boil the artichokes until they’re just tender enough to easily separate the leaves.
The stuffing is where the magic happens. A blend of garlic, breadcrumbs, Parmesan cheese, lemon zest, and fresh herbs like parsley and thyme creates a flavorful, aromatic base. The breadcrumbs soak up the natural juices from the artichoke and shrimp, giving the stuffing a savory, moist texture that contrasts beautifully with the crisp edges of the artichoke leaves. The addition of shrimp adds a pop of seafood flavor and extra richness, making each bite a satisfying combination of textures.
Once the artichokes are stuffed and topped with the shrimp, a drizzle of olive oil or melted butter ensures they bake to a golden, crispy perfection. As the artichokes bake, the shrimp cook through, soaking up the flavors of the stuffing and creating a fragrant, savory dish that’s hard to resist.
Baked stuffed artichokes with shrimp are perfect for a fancy appetizer, a special dinner, or even as part of a seafood platter. Serve them with a crisp white wine and a side salad, and you’ve got a meal that feels indulgent yet balanced. This dish brings together the best of both land and sea, making it a true crowd-pleaser with flavor that’s both elegant and comforting.
