Ingredients
  

  • 2 sweet potatoes large,
  • 12 slices bacon
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Toothpicks

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Cut the sweet potatoes into bite-sized cubes.
  • In a small bowl, mix together the brown sugar, cinnamon, paprika, salt, and black pepper.
  • Wrap each sweet potato cube with a slice of bacon and secure with a toothpick.
  • Dip each bacon-wrapped sweet potato bite into the spice mixture, coating well.
  • Place the bites on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, or until the bacon is crispy and the sweet potatoes are tender.
  • Remove from the oven and let cool slightly before serving.

    Pretty solid idea. Mine took closer to 35 minutes for the bacon to fully crisp, but the flavor was still great. Next time I’ll cut the cubes a bit smaller.

    Not bad, but mine were a little too salty even with 1/4 tsp salt. Also I ran out of toothpicks and used skewers and they kinda slid—still ate them though.

      Good to know about the salt—mine came out fine with 1/4 tsp, but I can see it varying depending on the bacon. Skewers sliding sounds annoying though. Next time maybe rotate them tighter or do fewer bites per skewer.

      Huh, I’d cut salt even more. Bacon is already salty so 1/4 tsp might be too much for some kinds. Also toothpicks vs skewers… yeah skewers would make them wobble. Still sounds tasty!

    Good idea, but mine were a bit soggy in the middle after 30 minutes. Next time I’ll make smaller cubes and maybe broil for the last 2-3 minutes to really crisp the bacon.

      Totally agree about the crisping—bigger cubes definitely steam instead of roast. I usually cut mine a little smaller and I add that broil at the end too (careful not to burn the sugar).

    400°F is right, but 25-30 minutes is probably not enough for thicker bacon. I had to bake like 40 minutes before it was really crisp. Still worth it.

    The spice mix is good, but I think 1/4 tsp salt is maybe too low? I ended up adding a pinch of extra salt before baking. Flavor was still there, just needed a little more oomph.
