Bacon and Spinach Omelette

June 24, 2024

The bacon and spinach omelette is a classic combination that never goes out of style. It’s simple, satisfying, and packed with flavor. Whether you’re starting your day with a hearty breakfast or whipping up a quick brunch, this omelette offers the perfect balance of smoky, savory bacon and fresh, earthy spinach wrapped in fluffy, golden eggs.

What makes this omelette so appealing is its ease and versatility. The ingredients are straightforward but come together to create something greater than the sum of their parts. Crisp, crumbled bacon adds depth and richness, while wilted spinach brings a fresh and slightly bitter contrast. Together, they create a filling that’s bold but not overpowering.

The base of the omelette is made with well-beaten eggs, cooked low and slow to keep them tender and soft. Once the eggs are mostly set, the bacon and spinach are added, sometimes with a bit of shredded cheese for extra creaminess. The whole thing is folded neatly in half and served hot, with steam rising from the center and the edges perfectly golden.

You can easily customize this omelette to suit your taste. Add onions or garlic for extra flavor, or toss in mushrooms, tomatoes, or even avocado. For a lighter version, swap the bacon for turkey bacon or skip the cheese. It’s a dish that adapts to whatever you have in the fridge and still feels like a treat.

The bacon and spinach omelette is not just about taste — it’s also packed with protein, making it a great option for those looking to stay full and energized throughout the morning. It pairs beautifully with toast, roasted potatoes, or a side of fruit for a complete meal.

Whether you’re cooking for one or feeding a table of hungry guests, this omelette delivers a flavorful, no-fuss meal that always satisfies.

A delicious and filling omelette made with crispy bacon and nutritious spinach.
Servings 2 people
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 4 strips bacon
  • 2 cups spinach fresh
  • 6 eggs large
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/2 cup shredded cheese optional

Instructions

  • In a large non-stick skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and chop into small pieces.
  • In the same skillet, add the spinach and cook until wilted, about 2-3 minutes. Remove the spinach from the skillet and set aside.
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Pour the egg mixture into the skillet and cook over medium heat. As the eggs start to set, gently lift the edges with a spatula to allow the uncooked eggs to flow underneath. Continue to cook until the top is just set.
  • Sprinkle the cooked bacon, cooked spinach, and shredded cheese (if using) evenly over half of the omelette. Fold the other half of the omelette over the filling.
  • Cook for another minute to melt the cheese and ensure the omelette is heated through.
  • Slide the omelette onto a plate, cut in half, and serve hot.

Simple and easy! I just used whatever cheese I had in the fridge, and it was still yum! Great for breakfast.

  2. User avatar raguel.bernier says:

I tried this and my omelette broke when I folded 😭 Maybe the pan wasn’t non-stick enough. Taste was great though.

    1. 5 stars
Ahh no 😭 That happens a lot—if the pan isn’t slick enough or the omelette isn’t cooked just to the right point before folding, it’ll break. Next time try lowering the heat a bit, using a well-seasoned non-stick (or a little butter/oil in the pan), and fold once the surface is mostly set but still a bit soft. Also use a thin silicone spatula to lift the edges gently.

Made this for brunch and it turned out fluffy and flavorful. The bacon + spinach combo is a winner—super satisfying.

    1. User avatar Sand-Dial says:

      5 stars
Yes!! Bacon + spinach is such a great combo. I also love that it stays fluffy instead of rubbery—brunch win for sure.

    2. User avatar anjelica.langworth says:

      4 stars
I tried it but my bacon took way longer to get crispy, and I think I overcooked the eggs a bit. Still tasted good though—next time I’ll pull it when the top is just set like you said.

  4. User avatar everette.rutherford97 says:

    4 stars
I think 2 cups spinach is a lot? My pan was crowded but it wilted down eventually. Still tasty though.

    1. 5 stars
2 cups is totally fine—fresh spinach cooks down to like a fraction. If your pan was crowded, I’d just cook it a minute or two longer next time, no big deal.

    2. User avatar shelton.nitzsche39 says:

      5 stars
Yeah 2 cups sounds like a lot at first, but spinach shrinks *a ton* once it hits the heat. Crowded pan is normal—wilted down is basically the point 😄

  5. 5 stars
My kids loved it. Also I accidentally overcooked the bacon a tiny bit but the smoky taste worked anyway. Easy recipe!

    1. 5 stars
Aww that’s awesome your kids liked it! 😄 And I love that the slightly overcooked bacon still worked—the smoky flavor is definitely a plus. I’m trying this one soon.

    2. User avatar Senaida Mills says:

      4 stars
Overcooked bacon is kinda my thing… but I always worry it’ll make the omelette too dry. Still, with spinach and cheese it probably balances out. Easy though, yeah.

  6. User avatar King Cold says:

    5 stars
Yum, I love cheesy omelettes! Gonna try this today.

    1. User avatar ludie.west98 says:

      4 stars
Hope it turns out great! I usually add some salsa on top for extra flavor.

  7. User avatar Super Saiyan 2 Goku says:

6 eggs feels like a lot—ended up with a giant omelette for just two of us. But flavor was great, and next time I’ll just use 4.

    1. User avatar renaldo.mante60 says:

      5 stars
6 eggs definitely makes it huge 😂 But I’m glad the flavor worked out! Next time going with 4 should still give you a nice fold without the “breakfast for a crowd” situation.

  8. 2 stars
I followed it exactly but my omelette didn’t fold—more like it broke apart. Maybe my pan wasn’t non-stick enough.

  9. User avatar Lumberjack says:

    4 stars
Bacon spinach omelette… sounds healthy-ish? 😂 I’ll try it. If it fails I’m blaming the spinach.

    1. 4 stars
Haha fair—spinach is dramatic like that 😄 Bacon helps though. Let me know if it needs more salt/cheese!

  10. User avatar eddy.mraz71 says:

    4 stars
Delicious! I added some tomatoes and onions to mine. Yummy!

  11. User avatar tissues_with_issues says:

    4 stars
Not bad, but 2–3 minutes for spinach felt too short for me. I think my pan runs cooler. Still tasty with extra black pepper.

    1. User avatar virgen.goodwin1998 says:

      4 stars
Yeah 2–3 min for spinach went by fast for me too—my spinach always needs a little longer to cook down. Glad it was still tasty!

  12. 4 stars
Bacon and spinach together? Never thought of that. Turned out better than expected!

  13. User avatar Arwen Evenstar says:

    2 stars
I followed the recipe exactly, but mine turned out super runny. Not sure what went wrong.

    1. User avatar patsy.bayer says:

      4 stars
Maybe you used too much milk? It can make it runny if you’re not careful.

    2. User avatar Loonquawl and Phouchg says:

      5 stars
I dunno, mine was perfect! Maybe you didn’t cook it long enough? 😅

  14. User avatar wallace.keeling says:

    4 stars
Awe some recipe! Made it for brunch and everyone wanted seconds. But isn’t spinach bad for you if you eat too much? 🤔

  15. User avatar Princess Zelda says:

    4 stars
Followed the steps exactly and it turned out nice, but my eggs browned a little too much on medium heat. Next time I’ll lower to medium-low.

  16. User avatar Corrupted Shade says:

    5 stars
Made this for brunch and it was honestly perfect. Crispy bacon + the spinach flavor is so good. I used cheddar and it melted great.

    1. User avatar vania.altenwerth44 says:

      3 stars
Not sure about 2-3 minutes for spinach—mine was still watery after that. Maybe my pan runs hot? Still tasted good though. Would add a squeeze of whatever to dry it next time.

    2. User avatar jona.nolan58 says:

      5 stars
I did the same swap with cheddar and totally agree—melt factor is on point. Crispy bacon + wilted spinach is such a winning combo for brunch.

  17. 3 stars
Might be better with different fillings? Like maybe mushrooms or somethin, idk.

  18. User avatar jere.hartmann says:

    4 stars
Really good, but mine took longer to “just set” on medium heat. I might have had the pan too hot. Still tasted amazing with the cheese.

    1. User avatar milan.simonis71 says:

      5 stars
Yeah, that tracks—if your pan was a bit too hot, the eggs can set faster on the outside before the inside catches up. I usually keep it closer to low-medium and pull it when the top still looks slightly glossy. Glad the cheese saved it anyway! 🧀

    2. 3 stars
Mine also didn’t “just set” right away—thought I did everything though. I had the bacon done fine but the eggs took forever on medium. Maybe I overwhisked the eggs? Not sure. Still tasty, just looked more like a frittata than an omelette 😂

  19. 3 stars
Not bad, but my omelette turned out kinda rubbery. I think I cooked the eggs too long after folding. Also, I forgot to melt the cheese for a full minute—my bad.

    1. 3 stars
Hah I’ve done the same thing—forgot the cheese melt and then overcooked the eggs cuz I was impatient. Try lower heat or take the pan off for a few seconds before folding. Also did you use non-stick? Mine sticks if I’m not careful.

    2. User avatar isidra.kilback4 says:

      4 stars
Good catch on the timing! If the eggs keep cooking after they’re “just set,” they can get rubbery fast. Next time, pull it right when the top looks slightly wet and let carryover + the 1 minute cheese step finish it.

  20. User avatar hilario.rice says:

    4 stars
Really easy and quick breakfast. I added some hot sauce, and it was amazing!

    1. 2 stars
I don’t know about putting hot sauce on omelettes. Just doesn’t sound right to me.

    2. User avatar renate.turner13 says:

      5 stars
Hot sauce sounds like a fun twist! Gotta try that next time. Thanks for the tip!

  21. 1 star
Y’all, this is just scrambled eggs with bacon! Where’s the omelette part? Disappointing.

  22. 2 stars
Wasn’t impressed. Thought the eggs were bland. 🤷‍♂️

  23. User avatar soraya.schoen3 says:

    5 stars
Super delicious! My kids loved it! I added some salsa on top, yum!

  24. 3 stars
Not bad, but mine got a little overcooked on the bottom because I left it too long on medium. Next time I’ll pull it when the top is *just* set.

  25. User avatar ryan.osinski1971 says:

    5 stars
Yummm! 😋 Best breakfast ever! I might have eaten two servings…

  26. User avatar marth.rutherford15 says:

    5 stars
Made this for brunch and it was a hit. Crispy bacon + wilted spinach is such a good combo, and the fold technique worked perfectly. Definitely saving this.

  27. User avatar Falmer Shadowmaster says:

    2 stars
I’m not a fan of cooked spinach… maybe it’s just me but it was a weird texture.

  28. User avatar mendy.corwin says:

    5 stars
I used cheddar and it melted perfectly. Also, chopping the bacon small was key—better distribution than big chunks. Will make again.

  29. User avatar august.spinka53 says:

    2 stars
I followed steps exactly and it stuck a bit anyway. Maybe my skillet isn’t as non-stick as I thought. Still edible but not pretty.

    1. 3 stars
Mine always sticks too. I think the trick is you gotta wait for it to get *completely* set then flip it fast lol. If you flip too early it turns into bacon egg chaos. But yeah… “just edible” is still a win.

    2. User avatar jonah.macejkovic44 says:

      4 stars
Ugh, I feel you. Even with “non-stick,” bacon + eggs can make it grabby. Next time, preheat a little lower and use a thin film of oil/butter before the eggs (not a lot). Also try lifting the edges earlier so it doesn’t set too firmly.

  30. User avatar Michal Torphy says:

    5 stars
This was AMAZING! The flavors just popped. Will definitely make again!

  31. User avatar leena.powlowski58 says:

    3 stars
It was okay, but I think it needed more seasoning. Maybe some garlic powder?

  32. User avatar phung.weimann50 says:

    1 star
This recipe is a total disaster. My omelette fell apart! 😡

  33. User avatar Kathlyn Quigley says:

    1 star
EHHH, I didn’t like it. Just eggs and bacon for me, thank you! Spinach is gross.

  34. User avatar robin.bednar38 says:

    5 stars
Not gonna lie, I was worried the eggs would overcook. But the folding + final minute worked. Easy and satisfying.

  35. User avatar maryrose.jacobson says:

    3 stars
I followed it exactly and my omelette stuck a bit. Maybe the skillet wasn’t truly non-stick. Still flavorful.

    1. User avatar hershel.ullrich2016 says:

      4 stars
That sounds super tasty still! For the sticking—omelettes are pretty unforgiving even with “non-stick.” Did you preheat the pan gently and use a little butter/oil if needed? Also make sure the skillet isn’t too hot.

    2. User avatar demetrius.gerlach says:

      3 stars
Mine did the same thing once. I swear my pan lied about being non-stick 😅 I think the eggs cooked too long or the pan was dry. Next time I’ll wipe it with a bit of oil before pouring eggs.

  36. User avatar porsha.macgyver says:

    3 stars
I don’t know, it seems kinda plain. I added some avocado and salsa, maybe that helped a bit.

  37. User avatar yuette.jast58 says:

    5 stars
This omelette is a game changer! Super tasty and easy to make. My kids loved it!

    1. 5 stars
I’m so glad your kids enjoyed it! This omelette really is a hit with my family too. Makes mornings so much easier!

    2. 2 stars
Really? I tried making this once and it was a disaster! I think I burnt the eggs. Maybe I’ll give it another shot, but I’m skeptical.

  38. User avatar tarsha.osinski says:

    2 stars
I dunno, I thought the bacon would make it better but it was just too greasy for me.

  39. User avatar Colin the Security Robot says:

    3 stars
My spinach was wet, so the filling got watery. I think squeezing it after wilting would help a lot. Otherwise, great concept.

    1. 4 stars
Yeah mine did that once. I just stopped after wilting and didn’t dry it—never again. Wet spinach = sad omelette 😅

    2. User avatar alejandro.brekke says:

      5 stars
Good catch! If the spinach has extra water, it definitely turns the filling runny. Next time I’ll squeeze it in a paper towel after wilting too—thanks!

  40. User avatar willa.kihn16 says:

    5 stars
This is comfort food. The fold in half with the bacon/spinach is perfect. I’ll definitely make it again on weekends.

  41. User avatar soraya.harber89 says:

    3 stars
Bacon is a must! Also, I think more cheese should go in. Who doesn’t love cheesy eggs?

  42. User avatar rhoda.koch93 says:

    3 stars
I think 2-3 minutes for spinach is too short?? Mine was still wet and kinda chewy. Maybe my pan runs cold. Flavor was good regardless.

  43. User avatar Dan Streetmentioner says:

    4 stars
I skipped the cheese and it was still tasty, though slightly less rich. Next time I’ll probably add a pinch of red pepper flakes for some kick.

  44. User avatar Donnell Sawayn says:

    5 stars
Yum! Super easy and fast. The bacon was crispy and the eggs were fluffy—10/10 for lazy mornings.

  45. User avatar alene.dickinson says:

    4 stars
Pretty good. I used frozen spinach but squeezed it dry first (important!), and the texture was still nice. Would make again.

    1. User avatar marcelino.satterfield1 says:

      5 stars
Good call on squeezing the frozen spinach—people forget that part. Glad it still turned out nice!

  46. 2 stars
Ehhh, I burnt mine. My skillet is too hot. Next time I’ll watch it better. 😬

    1. User avatar karol.dibbert says:

      5 stars
Don’t worry, happens to the best of us! Just keep practicing. Next time you got this! 😊

  47. User avatar jackie.kemmer80 says:

    2 stars
    meh

  48. User avatar rickie.grant says:

    1 star
I tried it once and the eggs stuck no matter what. Also bacon was greasy and the spinach tasted bland. Wouldn’t make again.

  49. 3 stars
Not bad, but I’m not sure about the milk—made it a bit softer than I like. Also wish it had more seasoning.

  50. User avatar terminatorXYZ says:

    2 stars
Ew eggs + spinach… but I tried it anyway. Surprisingly good? Like, I’d eat this again. Don’t tell my friends.

  51. User avatar bradford.paucek says:

    5 stars
Bacon, yum! This is a great way to start the day. I never actually cooked spinach before. lol.

    1. User avatar horace.bechtelar says:

      4 stars
Spinach??? Never thought of that. I just toss in more bacon, lol. But hey, whatever works! 😄

  52. User avatar ossie.powlowski1988 says:

    2 stars
Bacon and spinach? I don’t know, seems kinda weird to me. I prefer just plain eggs.

    1. User avatar jerald.wisozk1980 says:

      5 stars
I can see how it sounds strange, but trust me, it’s delicious! The flavors really work together. Give it a shot!

  53. 2 stars
Can I skip the milk? I ain’t got none and I’m worried it’ll mess it up.

  54. 4 stars
The bacon step is the best part. I chopped mine too big and it made the filling kinda lumpy. Lesson learned: smaller pieces, better fold.

  55. User avatar latina.wilderman97 says:

    4 stars
I didn’t have fresh spinach so I used frozen (thawed and squeezed). Still worked, just a little watery—next time I’ll dry it more. Taste was great though.

  56. User avatar Slartibartfast says:

    5 stars
This was delicious! The bacon and spinach combo is perfect. Will def make it again!

    1. User avatar rudy.considine49 says:

      5 stars
Glad you loved it! The bacon definitely adds that savory kick! 🍳

    2. 3 stars
It sounds good, but I don’t know about spinach in an omelette… Is it really that great? 🤔

  57. User avatar suzi.mayert1998 says:

    4 stars
Spinach in an omelette feels kinda healthy-scolding, but wow it’s good. Pepper makes it pop.

    1. User avatar norberto.kunde says:

      4 stars
Spinach + bacon + eggs is a solid combo, but 2 cups spinach seems like a lot—does it cook down for real in 2-3 minutes? Also I forgot the milk once and it still tasted fine… so not sure how necessary it is.

    2. User avatar suspiciousCommentator says:

      5 stars
Honestly I get the “healthy-scolding” vibe 😄 but you’re right—spinach works way better than I expected. The pepper really does wake it up. I’ll keep making this.

  58. User avatar eddie.schimmel2004 says:

    2 stars
Too salty for me. I used standard bacon and then “salt to taste” plus pepper—maybe I went heavy. Would reduce bacon quantity or skip added salt.

  59. User avatar joe_banana says:

    5 stars
This omelette was amazing! The bacon made it so flavorful. Will definitely make again!

  60. User avatar terisa.kshlerin1971 says:

    5 stars
Made this for breakfast and it’s seriously spot-on. Crispy bacon + wilted spinach is such a good combo. Mine needed a tiny extra minute to fully set, but overall 10/10.
