A delicious and satisfying breakfast quesadilla with crispy bacon and scrambled eggs.

Ingredients
  

  • 4 slices bacon
  • 4 eggs
  • Salt and pepper black pepper, to taste
  • 4 flour tortillas
  • 1 cup shredded cheddar cheese
  • salsa for serving
  • cilantro for garnish

Instructions
 

  • Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
  • In a bowl, whisk the eggs and season with salt and black pepper.
  • In the same skillet, pour the whisked eggs and cook until scrambled.
  • Place a tortilla on a flat surface and sprinkle with shredded cheese. Top with half of the scrambled eggs and 2 slices of cooked bacon. Fold the tortilla in half.
  • Heat a separate skillet over medium heat and add the folded tortilla. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown. Repeat with the remaining tortillas and filling.
  • Serve the quesadillas with salsa and garnish with fresh cilantro.

      Idk, I think 4 eggs is spot on if you scramble them fairly thin. They’ll spread out once you’re dividing between tortillas. Leftover egg is never a problem in my house.

      Totally get what you mean—bacon and eggs are delicious, but sometimes it’s “good, not wow.” If your salsa was mild, that could’ve flattened it a bit. Next time try a hotter salsa or add some diced jalapeño right into the egg.

      I made it and mine came out great, but I added way more cheese and let the tortillas get darker. Also, I used less egg than the recipe says (4 eggs for 4 tortillas was too much for me). Maybe that’s why yours felt basic?

      I’m not so sure flour is the “move” tho. Corn tortillas taste better to me and you can still crisp ’em in a dry pan, maybe just longer? Also I think cheddar gets oily if you cook too high heat…
