A Star’s Take on a Classic Dish

Sarah Jessica Parker showcased her colorful lineup of ingredients: vibrant beefsteak tomatoes, Kirby cucumbers, jalapeño, green bell pepper, red onion, balsamic vinegar, hearty bread, and a dash of hot sauce for heat. She emphasized her desire to taste the beautiful tomatoes while balancing them with bright, tangy, and spicy flavors. To elevate the soup’s silky texture, she blended everything, then strained it through a fine mesh sieve for a smooth finish.

Ingredients

  • 4 large ripe tomatoes (beefsteak or any garden variety)
  • 2 Kirby cucumbers, peeled and chopped
  • ½ green bell pepper, chopped
  • 1 jalapeño pepper, seeded and chopped
  • ½ small red onion, chopped
  • 2 slices hearty bread, crusts removed
  • 2 tbsp balsamic vinegar
  • 2 tsp hot sauce (such as Cholula)
  • 3 tbsp olive oil (plus more for garnish)
  • Salt and black pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Place tomatoes, cucumbers, bell pepper, jalapeño, onion, bread, balsamic vinegar, hot sauce, olive oil, salt, and pepper into a blender.
  2. Blend until smooth. For a velvety finish, strain the soup through a fine mesh sieve into a large bowl. Discard solids.
  3. Cover and refrigerate for at least 2 hours to chill and allow the flavors to develop.
  4. Before serving, taste and adjust seasoning with more salt, pepper, or hot sauce as desired.
  5. Ladle into bowls or small cups, drizzle with olive oil, and garnish with fresh basil.
