Spiced Beef and Butternut Squash Rice Bowl

Ingredients

  • 2 cup Rice
  • 28 g Beef
  • 26 g Butternut squash
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a pot, add 2 cups of water and bring to a boil. Add the rice and a pinch of salt, then reduce heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed and the rice is fluffy.
  • While the rice is cooking, cut the beef into small strips.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the beef strips and season with garlic powder, paprika, salt, and black pepper.
  • Cook the beef for about 5-7 minutes until browned and cooked through.
  • Meanwhile, dice the butternut squash into small cubes.
  • Add the butternut squash to the skillet with the beef and cook for an additional 5-7 minutes, stirring occasionally, until the squash is tender.
  • Once the rice is cooked, fluff it with a fork and divide it into bowls.
  • Top the rice with the beef and butternut squash mixture.
