Ingredients
- 2 cup Rice
- 28 g Beef
- 26 g Butternut squash
- 1 tablespoon Olive oil
- 0.5 teaspoon Garlic powder
- 0.5 teaspoon Paprika
- 0.25 teaspoon Salt
- 0.25 teaspoon Black pepper
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, add 2 cups of water and bring to a boil. Add the rice and a pinch of salt, then reduce heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed and the rice is fluffy.
- While the rice is cooking, cut the beef into small strips.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the beef strips and season with garlic powder, paprika, salt, and black pepper.
- Cook the beef for about 5-7 minutes until browned and cooked through.
- Meanwhile, dice the butternut squash into small cubes.
- Add the butternut squash to the skillet with the beef and cook for an additional 5-7 minutes, stirring occasionally, until the squash is tender.
- Once the rice is cooked, fluff it with a fork and divide it into bowls.
- Top the rice with the beef and butternut squash mixture.
