Cheesy Rice with Carrots and Tomatoes

Ingredients

  • 2 cup Rice
  • 2 piece Tomatoes
  • 50 g Cheese
  • 2 piece Carrots
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 0.5 teaspoon Garlic Powder

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a pot, add 4 cups of water and bring to a boil. Add the rinsed rice and 1 teaspoon of salt.
  • Reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and the water is absorbed.
  • While the rice is cooking, peel and chop the carrots, and dice the tomatoes.
  • Heat 2 tablespoons of olive oil in a pan over medium heat. Add the carrots and sauté for about 5 minutes, or until they start to become tender.
  • Add the diced tomatoes to the pan and continue cooking for another 3-4 minutes.
  • Once the rice is cooked, fluff it with a fork and add it to the pan with the carrots and tomatoes.
  • Stir in the cooked rice and season with black pepper and garlic powder.
  • Grate the cheese and sprinkle it over the rice mixture. Stir until the cheese melts.
  • Remove from heat and serve hot.
