Zuppa Toscana is the ultimate comfort food, a soup that’s both rich and nourishing. Known for its satisfying blend of flavors, this Italian classic combines savory sausage, tender potatoes, fresh kale, and a creamy broth. It’s the kind of dish that invites you to curl up on the couch with a warm bowl on a chilly evening or serve it at a family gathering where everyone can enjoy its rustic, hearty goodness.
The key to this soup is its broth. It starts with a flavorful base made from chicken stock, heavy cream, and garlic. The creaminess from the heavy cream makes the soup feel indulgent, but it’s balanced with a bit of heat from crushed red pepper flakes, giving it a subtle kick that keeps things interesting. This combination of creamy and spicy is what makes Zuppa Toscana so comforting and satisfying.
The potatoes are sliced thin and simmered until they’re tender, soaking up all the savory flavors of the broth. They provide the heartiness that makes this soup feel like a meal on its own. Fresh kale is added at the end, wilting into the soup to give it a burst of color and a fresh, earthy flavor. It contrasts beautifully with the richness of the cream and sausage, adding a bit of balance to the dish.
The sausage, typically a mild Italian variety, brings savory, juicy flavors to the soup. It’s usually crumbled and browned before being added to the broth, which infuses the soup with deep, flavorful meatiness.
Zuppa Toscana is a wonderfully versatile dish. You can easily adjust it based on your dietary preferences, using turkey sausage instead of pork, or substituting the cream with coconut milk for a dairy-free version. It’s also a great make-ahead dish. The flavors only get better after a day or two in the fridge, making it perfect for meal prep.
Whether you’re cooking for a crowd or enjoying it on your own, Zuppa Toscana is a warm, satisfying dish that brings comfort and joy in every spoonful.

Not bad, but I found it a little salty because my broth wasn’t as low-sodium as I thought. Taste first before dumping salt in.
Totally agree—this is one of those recipes where you really gotta taste as you go. I always forget different broths vary so much. Good call!
Idk i used regular broth and it was fine? maybe i just added less salt. But yeah taste first, otherwise it turns into salty soup fast 😅
I tried it and my family loved it. Definitely a keeper!
Not bad! I’m just surprised there’s no cheese or rosemary. Still, it’s a solid weeknight soup.
This recipe looks good, but I don’t think kale belongs in a soup. Spinach is better.
My grandma used to make this with different ingredients. Not sure if this is the ‘real’ Zuppa Toscana. 🤔
Quick and easy to make. I added more garlic because I’m a garlic lover! Yum!
Garlic makes everything better! Can’t wait to try this. Thanks for sharing!
Not gonna lie, I was skeptical about adding cream at the end. Mine kinda looked a little grainy after boiling, so I think I should’ve lowered the heat before pouring it in. Tastes great even if it didn’t look perfect.
Super easy and it tastes like it came from a restaurant. I added a little extra garlic and it was perfect. 10/10 comfort food.
Yes!! Zuppa Toscana is such comfort food. I’m glad the garlic boost worked—this recipe really does taste restaurant-y.
I tried it last night and it was good but I think my potatoes took longer than 15 min. Also I used spicy sausage and it was a bit too salty even with low sodium broth, so next time I’ll go lighter on the salt.
Not gonna lie, I found it a little bland. Maybe my sausage wasn’t flavorful enough. The texture was good though—creamy without being weird.
Easy steps, not too many ingredients. My potatoes took closer to 20 minutes though. Still delicious.
The instructions are clear, but my potatoes took closer to 25 minutes to get tender. Still delicious though—would make again.
Totally agree—mine usually takes a bit longer too. 25 minutes sounds about right depending on how thick the potato slices are. So glad it still turned out delicious!
Absolutely delicious! My kids loved it. Will make again for sure.
Does anyone know if you can use turkey sausage instead? I’m trying to be healthy.
Yeah, turkey sausage should work just fine! It’ll be a healthier option for sure. Just adjust the seasoning since it might be milder than Italian sausage.
This tastes like Zuppa Toscana from the restaurant, honestly. I didn’t remove kale stems (oops) and it was a little chewy, but everyone ate it anyway.
Tried this but found it too rich for my taste. Maybe it’s the cream? I prefer lighter soups.
I wasn’t sure about the kale at first, but it really adds to the soup. My kids even ate it without complaining! Who knew greens could be tasty? 4 stars!
Nothing like a good soup in winter. Used turkey sausage instead – still turned out delish!
I like it but 3 cups potatoes feels a little heavy. Next time I’ll use slightly less and add more kale.
Totally agree—3 cups potatoes can make it feel kinda heavy. Next time I’d do 2 cups and stretch it with extra kale or even a bit more broth. Nice tweak!
This is just like the one from that restaurant on the corner!! I thought I would never get it right but you nailed it!
Made this tonight—so cozy. The sausage browning step really matters. I used half-and-half since that’s what I had and it still tasted great. 10/10 for a weeknight soup.
I tried half-and-half instead of heavy cream and it was fine, just thinner. Still tasty, but I can see why people use full cream.
Good to know! I always worry half-and-half will make it taste “watery,” but thinner still sounds okay. Did you change the cooking time at all, or just swap 1:1 and go?
Half-and-half fine?? I dunno, heavy cream is what makes it thick. Half-and-half is like… milk. I’d rather add a little flour or extra cream at the end. But hey, if you liked it!
Made this tonight—so cozy. The kale stays bright and the sausage flavor really comes through. I used spicy sausage and it was perfect.
This recipe is a lifesaver! Super easy and soooo delicious. My family loved it!
Not gonna lie, I was skeptical about using 3 cups of potatoes—felt like too much. But it thickened nicely and made it feel restaurant-y.
Totally get that—3 cups sounded like a lot to me at first too. But once they cook down and the broth thickens, it really does come together like a restaurant bowl.
Soo good!
I didn’t have kale, used spinach instead. Is that ok? Still good!
I dunno, seems kinda bland. Needs more spices or something.
I actually think it’s pretty good as is! But yeah, a little sprinkle of red pepper flakes could do wonders. Just my opinion!
This slaps. Zuppa vibes for real!
Sausage? Is that the same as hot dogs? Asking for a friend.
Made this tonight—so cozy. The sausage + garlic combo is 🔥 and the kale actually stays vibrant. I used half-and-half like the recipe suggests and it turned out creamy without being too heavy.
Yes!! I love when the kale doesn’t turn sad and olive-y. Sausage + garlic really makes it pop—glad it came out creamy without being heavy. 🙌
I made it but my potatoes took WAY longer than 10-15 min, like almost 30… might’ve been the cut size. Also I used half-and-half and it was still tasty though not super thick. Still a good comfort soup!
Made it tonight and it turned out really good. I didn’t have kale stems removed though (oops) and it was still tasty. Next time I’ll be more careful with the prep.
Yummy! Perfect for a chilly evening. Made some garlic bread to go with it!
Tastes good, but why so much cream? The kale should shine!
Okay soup! It was just alright, nothing special. I don’t know if I’ll make it again. 3 stars.
I totally get what you’re saying! I found it kinda bland too. Maybe try adding some spices next time?
Why use broth when you can just use water? I think that’s silly… But it turned out good, I guess.
Yummmm! I added some crushed red pepper for kick! Best soup ever! 😊
Crushed red pepper sounds like a great idea! I love a little heat in my soup. Can’t wait to try it your way! 👍
I think it could use some more spices. Needs a kick! Too bland for my taste.
Maybe you just don’t have the right palate? This soup is creamy and comforting as is!
I agree! A little chili flakes or some Italian herbs can really elevate it. Just a pinch of love! 😋
This soup is absolutely amazing! I love the creamy texture. Five stars!
Made this for dinner, but was too salty! I followed the recipe but maybe I added too much sausage. 2 stars. 😕
I think adding too much sausage could definitely make it salty! Maybe try using low sodium broth next time to balance it out. Don’t give up! 😊
I subbed half-and-half and it worked fine, but the soup didn’t look as creamy as I expected. Tasted great regardless.
Not bad but mine came out bland. I think I under-salted. Also I added salt at the beginning and idk if that was the issue.
This soup is amazing! So hearty and flavorful. I added a bit of red pepper flakes and it was perfect.
The texture was spot on. Also loved that you remove the kale stems—that little detail matters. Will make again.
Love this soup! I made it for my friends and they thought I was a chef. Haha!
Yum! I added some red pepper flakes for a kick! 🔥
Red pepper flakes sound great! I’m definitely trying that next time. 🌶️
I dunno, man. Sounds spicy for a soup, but whatever floats your boat! 🤷♂️
The flavor is great, but I might reduce the cream next time. It turned out a bit heavy for me. Still, good and filling.
Zuppa Toscana? More like Zuppa TOXIC! Hated it.
Yum! Love it! My husband said it’s the best thing i’ve made in ages. I’ll be making it again for sure! 😊
This was kinda bland until I added extra salt at the end. After that, it was better. I’d also add more garlic next time.
Yummy! What bread goes with this?
Meh. For a “Zuppa Toscana” vibe I expected more Tuscan stuff. It’s basically sausage potato soup, ya know?
I tried making this but my sausage burnt. It didn’t taste good at all. Maybe I did it wrong?
Sorry to hear that! Maybe try cooking the sausage on a lower heat next time? It can burn fast if it’s too high. Don’t give up!
I think you mighta left it cooking too long. Keep an eye on it next time! The rest of the soup sounds tasty though.
I subbed half-and-half (like suggested) and it worked, but the broth stayed a little thin for my liking. Next time I’ll use a touch less broth or simmer longer.
The sausage part is key! I used spicy Italian sausage and it came out perfect. Also, using low-sodium broth is smart—otherwise it’s way too salty.
This soup is AMAZING! So hearty and flavorful. My family loves it! Definitely a 5 from me!
I’m glad you loved it! Zuppa Toscana is a family favorite at our house too. It’s so comforting in the winter!
yum!! big fan of creamy soups, so this was right up my alley!
Not bad, but mine came out kinda salty. I used “regular” chicken broth by accident (lesson learned). Next time I’ll go low-sodium like the recipe says and maybe add more water/broth.
So it wasn’t the recipe, it was your broth choice… but honestly I’d still be careful adding salt at the end. Mine never needs much, and I cook it pretty much the same. Try adding the cream first next time and then pepper only.
Ugh, yeah that’ll do it 😅 regular broth can be *way* saltier. Next time low-sodium + adjusting with water makes total sense—good save!
Yum!!! 💖
so easy. my fam love it. i add extra kale and it was wow
Isn’t this soup just like Olive Garden’s? I can’t stop eating it!
I dunno, I’ve been to Olive Garden and this seems different to me. But I’m curious to try it!
Totally! I can’t get enough of this soup. It’s like a hug in a bowl!
