Vegetarian Turkish Pasta

December 8, 2025

Vegetarian Turkish pasta is a beautiful blend of comforting noodles and bold Mediterranean flavors, all coming together in a dish that feels both simple and vibrant. It is perfect for weeknight dinners when you want something flavorful without spending too much time at the stove. This dish draws inspiration from classic Turkish ingredients, especially yogurt, garlic, warm spices, and bright herbs that bring everything to life.

The base of the recipe is pasta, usually a short shape that holds sauce well. Once cooked, it becomes the canvas for layers of rich flavor. The heart of the dish is the yogurt sauce, a silky mix of plain yogurt, garlic, and a hint of lemon. It adds creaminess without feeling heavy, giving each bite a refreshing tang that balances the warmth of the spices. Many Turkish pasta variations rely on this yogurt element to create a soft, velvety feel that pairs beautifully with herbs like mint or parsley.

The true magic often comes from the seasoned oil. Paprika, red pepper flakes, or Aleppo pepper are warmed gently in butter or olive oil until they release their aroma and create a deep red drizzle. This aromatic oil is poured over the yogurt coated pasta, adding color, heat, and a fragrant kick that transforms the dish from simple to memorable. In vegetarian versions, sautéed vegetables like spinach, zucchini, cherry tomatoes, or peppers can be added for extra texture and freshness.

What makes this dish so appealing is how quickly it comes together. The pasta cooks in minutes, the yogurt sauce is stirred cold, and the spiced oil takes only a moment to bloom. Even with these easy steps, the final result tastes layered and thoughtful, almost like comfort food with a gourmet twist. It is light enough for warm weather but cozy enough for cooler evenings, making it a dish you can enjoy all year.

Vegetarian Turkish pasta is also very customizable. Keep it mild or spice it up, use whole grain pasta or gluten free options, add more herbs or keep it minimal. Serve it as a full meal or as a side next to roasted vegetables or a simple green salad.

In the end, this pasta captures everything great about Turkish home cooking. It is warm, fragrant, creamy, and full of character. It is the kind of dish you turn to when you want something satisfying and effortless, yet packed with personality.

Did you really put mint in it? Hate that stuff. 1 star for me.

  2. 4 stars
Good recipe! But I used cheese instead of yogurt, and it was still delish!

  3. 5 stars
This recipe is awesome! So simple and tasty! Will make again.

I tried this but it came out kinda bland. Maybe I need more seasoning? 🤔

    1. 4 stars
I find it hard to believe it was bland! I usually load mine up with spices and it tastes amazing! Maybe try some chili flakes next time? 🌶️

    2. User avatar rudy.hackett says:

      5 stars
More seasoning is definitely a good idea! I usually add a bit of lemon juice too. Gives it a nice zing, you know? 🍋

  5. 4 stars
Yogurt on pasta? Sounds weird but I gotta say, it works! Yum!

  6. User avatar Feyd-Rautha Rabban says:

    5 stars
    Yummy!

Pasta was fine, but my fam didn’t like the yogurt. They prefer cheese!

  8. User avatar nannette.feil says:

    5 stars
This is legit! Simple and tasty! More please!

  9. User avatar Tom Bombadil says:

    4 stars
Pretty tasty but I think I used too much mint. Next time I’ll start with half and adjust. Otherwise, garlic + tomato paste combo is solid.

  10. User avatar rosella.paucek says:

Not my favorite pasta dish, but the yogurt was a nice touch. I’ve never had it like this before. Weird but good!

  11. User avatar Terrell Kiehn says:

This is one of those recipes that doesn’t look like much but tastes way better than expected. 10/10 for lazy cooking.

I love Turkish-ish flavors, but I’m not sure about dried mint. It reminded me of toothpaste a bit (maybe my mint was old?).

  13. 3 stars
My pasta turned mushy. Followed all steps, but I guess it wasn’t firm enough.

  14. User avatar Mercedes Hand says:

    2 stars
I don’t know… yogurt on pasta? Sounds weird. Not for me.

    1. 4 stars
I’ve tried yogurt on pasta before, and it’s actually pretty good! You gotta give it a chance.

    2. 1 star
Yogurt on pasta??? No way, that sounds disgusting.

  15. User avatar perry.reilly11 says:

    3 stars
Not sure about the dried mint amount. 1/2 tsp felt like too much (or maybe I hate mint). My family liked it though, so depends on taste.

  16. 3 stars
Pretty good, but mine turned out a little dry. Next time I’ll add a splash of pasta water or more olive oil. Still tasty though!

    1. 3 stars
Dry pasta is the worst 😅 Maybe use less mint? Also, I think you should add yogurt in the pan so it gets creamy… or do you only top it? Mine was kinda thick but not dry.

    2. User avatar edward.mraz96 says:

      5 stars
Totally hear you—this one can get dry if the pasta drinks up all the sauce. A splash of pasta water is a great fix. I’ll try adding a bit of extra olive oil too next time!

  17. User avatar Charles Gulgowski says:

    4 stars
Quick and easy! I made this for dinner in less than 20 mins.

  18. User avatar deja.kling1953 says:

    4 stars
Made it tonight and it was good, but I think I might’ve needed more salt/pepper. Also, 1/2 tsp mint felt a bit strong for my taste—maybe next time I’ll start with less. Still, tasty and quick.

  19. User avatar Yooden Vranx says:

    3 stars
I followed it exactly and it was fine, but kind of bland? Maybe I needed more salt/pepper or the tomato paste wasn’t strong enough. Would make again with extra seasoning.

    1. User avatar frank.dickens2014 says:

      4 stars
Yeah I get that—mine was a little flat too until I went heavier on the salt and added a pinch of chili flakes. The tomato paste brand makes a big difference.

  20. User avatar macy.legros39 says:

    3 stars
Never thought of putting mint with tomato paste! It’s okay, but wasn’t amazing. Maybe less yogurt next time?

  21. User avatar Pizpot Gargravarr says:

    5 stars
Tried this tonight—super comforting. The mint + tomato paste combo is surprisingly good. I used plain Greek yogurt and it worked perfectly. Will make again!

  22. User avatar tissues_with_issues says:

This is a nice weeknight meal, but 100 grams pasta feels too little for real hunger 😅. I doubled it and it felt right.

    1. User avatar Shavon Kessler says:

      5 stars
I totally get that—100g pasta is more like a light lunch for me too. Doubling is the way 😅 Glad it worked for you!

    2. User avatar tiana.bashirian says:

      4 stars
Interesting! I usually do 80g and add extra toppings (like veggies or chickpeas) so it feels fuller. But if you doubled and it tasted good, that’s solid.

  23. User avatar rufus.thiel says:

    5 stars
This turned out so delicious! I love the mint flavor with yogurt, it’s a game changer!

  24. User avatar diann.hartmann41 says:

    4 stars
Super easy weeknight meal. I had to tweak: I added a splash of pasta water since it felt a little thick after mixing in the tomato paste. Still delicious though.

    1. User avatar Ruthann Moore says:

      4 stars
Tomato paste always thickens, so yeah pasta water makes sense. I make it kinda the same but I add a squeeze of lemon too. Also mint + garlic is kinda underrated.

    2. 5 stars
Love this idea! I also hate when tomato paste gets too thick—good call on the pasta water. 😊 I’ll try that next time.

  25. User avatar Super Saiyan 2 Goku says:

    2 stars
Not a fan of mint in pasta. It just didn’t work for me.

    1. User avatar roseanne.marvin says:

      4 stars
I totally get you! Mint in pasta sounds weird to me too. I prefer more traditional flavors. Maybe basil or parsley would have been better?

  26. User avatar louella.deckow89 says:

    5 stars
This was surprisingly delicious! I added some chili flakes for a kick.

    1. User avatar wallace.simonis1986 says:

      3 stars
I bet it was good, but isn’t yogurt kinda weird with pasta? I dunno…

    2. User avatar Bilbo Baggins says:

      5 stars
Glad to hear you enjoyed it! Chili flakes sound like a great addition! 👍

  27. User avatar dylan.ebert81 says:

    4 stars
This is… weirdly good? The dried mint surprised me in a good way. Could use a little more salt though for my palate.

    1. User avatar michal.stiedemann43 says:

      5 stars
Right?? The mint is such a pleasant surprise. I also added a pinch more salt and it totally made it sing.

  28. User avatar andreas.sipes says:

    3 stars
Just okay. I accidentally used too much mint, ruined the taste 🤦‍♂️. But I guess it’s healthy!

  29. 5 stars
This pasta was delicious! The mint really adds a unique flavor.

  30. User avatar kip.vandervort says:

    5 stars
This is such a comforting quick meal. The dried mint with tomato paste is a cool combo—tastes really “Turkish” to me. I used Greek yogurt and it worked great.

    1. User avatar refugio.schmeler says:

      5 stars
Love this! I’m always looking for quick “something different” pasta, and the tomato paste + dried mint combo sounds so spot-on. Gonna try it with Greek yogurt too.

  31. User avatar rosario.murray85 says:

    5 stars
This is such a comforting idea—garlic + tomato paste + that hint of dried mint sounds really authentic. I used penne and the yogurt topping made it feel restaurant-level. Yum!

    1. User avatar dorinda.kuhlman says:

      5 stars
Yes!! That garlic-tomato paste combo is seriously comforting. I’m glad the yogurt topping gave it that restaurant vibe 🙌

  32. User avatar anja.wolff39 says:

    5 stars
Yummy! Reminded me of my grandma’s cooking in Turkey! Going to make it again for sure.

    1. User avatar anjelica.sauer19 says:

      2 stars
I don’t know. My grandma never cooked pasta this way. Sounds kinda weird with yogurt, right?

    2. User avatar conception.runte1978 says:

      5 stars
This sounds amazing! I love how food can bring back memories. I’m definitely trying this recipe! 😊

  33. User avatar shalanda.vandervort says:

    5 stars
This was surprisingly tasty—garlic + tomato paste + that dried mint combo is legit. I used a bit more mint than called for and it still worked. The yogurt on top made it feel really comforting.

    1. 4 stars
Not gonna lie, I was skeptical about the tomato paste + mint. But I made it anyway and it was actually good. Next time I’ll go a little lighter on garlic though—mine was kinda strong 😅

    2. User avatar Moe DeLawn says:

      5 stars
Totally agree—this combo is such a comfort food hack. I’ve never tried the extra-dried-mint thing, but “to taste” is the way to go.

  34. 4 stars
Simple and tasty, but I think the garlic is a little intense if you mince it too fine. Next time I’ll use slightly less or sauté more gently.

    1. User avatar bebe.prohaska74 says:

      5 stars
Totally agree—garlic goes from “fragrant” to “intense” fast when it’s minced super fine. Sautéing more gently or just using a bit less would make it perfect.

  35. User avatar Flavia Runolfsdottir says:

    5 stars
    Loved it! Five stars!

  36. User avatar dorthey.champlin10 says:

    2 stars
The recipe says only 2 tbsp olive oil for 100g pasta—mine got a bit dry. Also my garlic burned because I guess medium heat wasn’t medium for me 😅. Flavor is decent though.

    1. User avatar annelle.jaskolski says:

      4 stars
Ugh, that sounds frustrating 😅 I’ve definitely found garlic is touchy—what works for one stove can burn on another. Did you try adding the garlic a little later or lowering the heat once the oil is hot? Also I think adding a splash of pasta water could fix the dryness.

  37. User avatar janae.daniel says:

    5 stars
Very simple and quick! I added a spoon of pasta water and it helped the sauce coat better. Great flavor balance.

  38. User avatar leonila.sawayn85 says:

    5 stars
Love the mint + yogurt combo—tastes kinda like comfort food but still fresh. I used fusilli and it held the sauce really well.

    1. User avatar Romelia Schuppe V says:

      3 stars
Sounds good, but 1/2 tsp mint feels like a lot for me 😅 I think I’d start with like a pinch. Also I tried tomato paste once and it was too tangy—maybe I’ll add a tiny bit more oil to balance.

    2. 5 stars
Totally agree—mint + yogurt is such a cozy but bright combo. I also love that it clings to fusilli! Did you add the mint right before turning the heat off? I feel like that keeps it fresher.

  39. 5 stars
Tried this tonight—so comforting! The mint with tomato paste is such a nice twist, and the yogurt makes it taste really fresh. Will make again.

    1. User avatar anonymous_hacker says:

      3 stars
Mint with tomato paste sounds a little weird to me, not gonna lie 😅 But if the yogurt balances it, maybe I’ll try. Do you use plain yogurt or something sweet? Also, how much mint is “to taste” for you?

    2. 5 stars
Yes! Comforting is exactly the word. I’ve done the tomato paste + mint thing before, but using yogurt on top really makes it pop—fresh and tangy. Definitely making it again too.

  40. User avatar murray.stehr89 says:

    3 stars
The flavors are interesting, but I’m not sure about the mint. It’s not bad, it’s just… kinda weird? My partner loved it. I’ll make it again, maybe with half the mint.

    1. User avatar saran.graham84 says:

      5 stars
Totally get what you mean about the mint—dried mint can read “odd” if you’re not expecting it. Half the mint sounds perfect; I always start small too.

  41. 4 stars
Garlic + tomato paste with yogurt is such an odd pairing but it actually makes sense. I’ll definitely make this again when I want something quick.

    1. 5 stars
I was skeptical too, but garlic + tomato paste always hits. The yogurt on top sounds like it would mellow everything out—nice shortcut for a weeknight.

  42. User avatar sunshine.mante says:

    3 stars
Why do you have to use dried mint? Fresh mint is way better!

  43. 2 stars
Too simple for my taste. I like more ingredients! Where’s the protein in this recipe?

  44. User avatar rolland.rodriguez says:

    3 stars
It was okay, but I found it a bit bland. Maybe next time I’ll add some chili flakes or something.

  45. User avatar tiffani.kutch1995 says:

    1 star
Terrible. I did the mint step and it ruined the whole thing. Also my yogurt curdled a bit—maybe my pan was too hot.

  46. User avatar theodore.gusikowski says:

    4 stars
Garlic tomato paste mint + yogurt… sounds weird but I did it and now I’m a believer lol.

  47. 3 stars
I didn’t have dried mint, so I used oregano—still okay but not the same vibe. Texture and sauce cling were good though.

    1. User avatar milford.weber1956 says:

      5 stars
Totally get it—oregano is a different flavor, but if the sauce clung well you still made a solid dish. Next time, even a little fresh mint or a pinch of mint tea leaves could get closer to that Turkish vibe!

  48. User avatar tory.bahringer10 says:

    4 stars
Yummy! I love Turkish food. Made it for dinner last night and it was a hit! 🌟

  49. User avatar robby.davis1999 says:

    3 stars
I used whole wheat pasta but it turned out nice anyway. Good recipe!

    1. User avatar walker.swift1970 says:

      4 stars
Whole wheat pasta is actually pretty good! Glad it turned out well for you. I’ll give it a try too.

  50. User avatar liberal.hero says:

    5 stars
Yum! My Italian grandma would be rolling in her grave! 😂

    1. 3 stars
I dunno about that… my grandma would probably want meat in here. But I might give it a go. 🤔

    2. 5 stars
Haha, love the humor! I’m sure she’d approve of the veggie touch! 😊

  51. User avatar marin.gusikowski1984 says:

    4 stars
Amazing! I forgot to add salt but still yummy!

  52. User avatar cliff.boyle1985 says:

    2 stars
I followed it exactly and honestly… it tasted like tomato paste with garlic and yogurt. Maybe I’m missing something about the mint? Idk.

  53. User avatar edwina.beer2008 says:

    5 stars
This recipe is super easy and delicious! I added some cherry tomatoes for extra flavor.

  54. User avatar Hasimir Fenring says:

    2 stars
I don’t know about putting yogurt on pasta… seems weird.

    1. User avatar danny.will says:

      5 stars
Trust me, it might sound strange but yogurt adds a creamy tang that really makes it special! Give it a try!

  55. User avatar anderson.rutherford28 says:

    3 stars
I followed it closely, but mine turned out kinda bland. Maybe my mint was old? Also I think 100g pasta is for like one person, not two.

  56. 3 stars
Too much yogurt for my taste, but it came together nicely.

    1. User avatar kathyrn.wolf25 says:

      5 stars
I love yogurt, so I think it’s perfect! Adds creaminess to the dish. 🍽️

    2. User avatar Frost Giant says:

      3 stars
I dunno, too much yogurt? Seems weird to me. But hey, everyone has their taste.

  57. User avatar charles.hills77 says:

    4 stars
    Simple but good.

  58. User avatar colene.leannon says:

    2 stars
I didn’t have tomato paste so I used ketchup… yeah don’t do that. Flavor got weird. With real tomato paste though I’m sure it’s great.

    1. User avatar apolonia.quigley5 says:

      5 stars
Good call—tomato paste really matters here. Ketchup’s sweeter and more vinegary, so it definitely can make the flavor go sideways. I’ve never tried it, but I believe you that with real tomato paste it would taste right.

  59. User avatar Mrs. Yolando Walsh says:

    2 stars
I ain’t never heard of mint in pasta before… interesting…

  60. User avatar johnna.rempel says:

    4 stars
Really easy to make! Kids loved it. Will definitely do again.

    1. 3 stars
I tried this but my kids didn’t like it. Maybe it’s just my picky eaters or something. I thought it was kinda bland.

    2. User avatar arnold.bailey1972 says:

      5 stars
So glad to hear that! This recipe is a real winner with kids. What did you serve it with?

  61. User avatar bennie.jacobson9 says:

    3 stars
meh. i mean the yogurt on top is fine but it needed more salt. also more sauce would be better.

  62. User avatar lauralee.nolan23 says:

    3 stars
Mixed feelings. Good flavors but looks more like a soup! 😂

  63. User avatar terrilyn.christiansen34 says:

    3 stars
Just ok! I might try adding some vegetables next time.

    1. 4 stars
Adding veggies sounds like a great idea! It could make it more colorful and nutritious.

    2. User avatar tish.kassulke13 says:

      2 stars
Yeah, but won’t the veggies make it soggy? I think it’s fine as it is.

  64. User avatar Shadout Mapes says:

    2 stars
Too simple for my taste. I like my pasta with more sauce!

  65. User avatar vicenta.jenkins11 says:

    5 stars
I made this with gluten-free pasta and it worked just fine. Love it!

  66. User avatar liberal.hero says:

    4 stars
Simple and pretty tasty. I was worried the tomato paste would be too strong, but cooking it a full minute fixed that. Next time I’ll add a pinch of chili.

  67. User avatar CTRLplusW says:

    3 stars
I used 100g pasta and it felt tiny—like a snack portion. Flavor was good though, just not enough for my appetite.

  68. User avatar Nocturne says:

    4 stars
The instructions are clear, and the steps make sense. I liked that you cook the tomato paste for a minute—adds depth. Pretty solid for a meatless meal.

  69. User avatar Random Dent says:

    2 stars
I followed the steps but my garlic burned a little because my pan was too hot. After that it tasted harsh, so I’d warn to watch it closely. Otherwise the idea is good.

    1. User avatar chery.waters says:

      3 stars
I did exactly that and mine burned too 😅 I think 2 cloves is a bit much if someone has a strong stove. Maybe add garlic after lowering heat? Still tastes okay, just bitter.

    2. User avatar joycelyn.conroy says:

      5 stars
Ahh yeah, garlic gets harsh super fast when the pan runs hot. Medium heat is key—next time maybe sauté the garlic just until fragrant (like 30–60 sec). Thanks for the heads up!

  70. User avatar cathleen.witting says:

    3 stars
I tried this and it was fine, but I’m skeptical about using just tomato paste and no liquid. It got a bit dry until I loosened it with a splash of pasta water.

    1. User avatar eleonor.pouros2021 says:

      5 stars
Totally get your skepticism—tomato paste alone can turn dry fast. I usually loosen it too (even just a splash of pasta water or a spoon of yogurt works). Glad you figured it out!

  71. User avatar salina.carroll0 says:

    4 stars
Honestly I’m confused by the yogurt part. Like… cold yogurt on hot pasta? But I tasted it and it worked. Surprised me.

    1. User avatar hyman.damore86 says:

      5 stars
I get the weirdness, but honestly that tangy yogurt-on-top thing totally makes sense. The hot pasta warms it just enough and it kind of turns into a sauce. Glad it worked for you!

  72. User avatar galen.littel1991 says:

    5 stars
Wow! Five stars—ate it straight from the pan and didn’t even wait for it to cool. Yum!

  73. User avatar chung.medhurst89 says:

    2 stars
Idk, tomato paste with mint and yogurt sounds like something my aunt would make after 10pm. It was edible, but not my favorite. I would add cheese or chili next time.

  74. 4 stars
Really liked how simple it is—most of the work is just boiling pasta. I added a pinch of chili flakes because I’m impatient with mild food.

    1. 5 stars
Totally agree—keeping it simple is the best part. The mint + yogurt combo already has a nice kick, so chili flakes are a great move if you like it spicier. 👍

Garlic smelled amazing, and the yogurt on top definitely helps. I used fresh mint once and it was way better, so I think dried mint is just okay.

The garlic might be too much for my pan because mine browned a little fast. Still edible but I’d lower to low-medium heat.

Good point—garlic can go from fragrant to burnt so fast. I usually start with low heat when I mince it small, otherwise it gets bitter on me too.

Wait… 2 cloves seems like a lot? Mine browned too quick too, but I thought maybe my pan was just too hot. I’ll try low-medium next time.

Not sure about the yogurt on top with pasta… I get it’s Turkish-ish, but I’m skeptical. That said, my family ate it fast, so… okay it works. Next time I’ll warm the yogurt lightly so it doesn’t feel too cold.

This is genius for a quick dinner. 20 minutes max and it tastes like you tried. My kid ate it without complaining!

Not gonna lie, I was skeptical about mint in pasta, but it actually comes through in a pleasant way. The yogurt on top makes it creamy without needing cheese.

Not gonna lie, I was skeptical about the dried mint. But the smell while cooking was actually great. I’ll definitely make it again.
