Turkish pasta, also known as 'Turkish mac and cheese', is a delightful and simple dish featuring pasta mixed with a flavorful tomato-based sauce and topped with a zing of yogurt and mint.

Ingredients
  

  • 100 grams pasta penne or fusilli work well
  • 2 tablespoons olive oil extra virgin
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste thick type preferred
  • 1/2 teaspoon dried mint to taste
  • 100 grams yogurt for serving
  • to taste salt and pepper for seasoning

Instructions
 

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
  • Stir in the tomato paste, cooking for another minute. Add the cooked pasta, salt, and pepper, stirring to combine.
  • Mix in the dried mint, then remove from heat.
  • Serve the pasta topped with yogurt.
