Noodles were gooood. I like it, but my husband said he wants meat next time. Still, it was alright.

  2. 4 stars
Excellent! Made it for my vegan friend, and they loved it!

That’s awesome to hear! I’m so glad your friend liked it! 🌱

  3. User avatar johnsie.gutkowski says:

Not bad at all! The sauce is creamy and aromatic. I had to cook the noodles a tiny bit longer because my rice noodles were stubborn. Overall solid weeknight meal.

  4. User avatar sheridan.wisozk says:

    4 stars
Tasty! But I wish it was a bit spicier. Next time, I’m adding chili flakes!

This recipe is so confusing! How do you expect me to cook with such vague steps? It was a mess, and I ended up burning the noodles.

    1. User avatar charles.keeling1983 says:

      2 stars
Come on, it’s not that hard! Just follow the steps. Burning noodles is on you, not the recipe. just pay more attention next time!

    2. User avatar joe_banana says:

      3 stars
I totally get where you’re coming from! The instructions could definitely be clearer. I had trouble too when I first tried it. Maybe we just need more practice!

  6. User avatar Dan Streetmentioner says:

Not bad at all—pretty easy and tastes like Thai takeout. I used green curry paste by accident once and it was still good. Next time I’ll slice the veggies a bit thinner so they soften faster.

  7. 5 stars
i thought the lime wedges were optional… they werent. The whole thing tasted flat until I squeezed lime on top. Now it’s balanced and bright.

  8. 3 stars
It was just okay… The curry paste was too strong for my taste.

  9. User avatar kit.swaniawski69 says:

    4 stars
Pretty tasty, though I might be picky. I used a different brand of curry paste and it was way hotter than expected. Next time I’ll start with a bit less paste. Still, the flavors melded nicely.

    1. 5 stars
Glad you liked it! Yeah, curry paste brands can vary a lot—starting with less is a smart move. Did you taste as you went or reduce simmer time?

    2. User avatar sherrell.lemke says:

      4 stars
Huh, I think the red curry paste is supposed to be pretty spicy though. Next time you might just use less and maybe add a little extra coconut milk too—unless you want the heat. šŸ˜…

  10. User avatar solomon.beahan49 says:

    5 stars
Yum! I made this for dinner and it was gone in minutes! Definitely a keeper.

  11. 1 star
Not the best. My noodles got mushy, and the sauce was too creamy for my taste. Maybe I did something wrong.

    1. User avatar alec.king1994 says:

      4 stars
Sorry to hear that! Maybe try cooking the noodles for less time next time? They can get mushy fast.

    2. User avatar chi.armstrong says:

      3 stars
I didn’t think it was too creamy at all! The coconut milk is what gives it that nice richness. Maybe less next time?

  12. User avatar suspiciousCommentator says:

    3 stars
It’s ok, but I expected more flavor. The curry paste I used might not have been strong enough.

    1. 2 stars
Flavor? What flavor? I followed the recipe to the T and it was kinda bland. More curry paste might help I guess?

    2. User avatar Vera Murray says:

      4 stars
I totally get that! Sometimes the curry paste just doesn’t pack the punch you want. Maybe try adding some extra spices next time?

  13. User avatar claretta.connelly63 says:

    5 stars
This is my new go-to vegan dish. The sauce clings to the noodles really well. I also throw in some frozen peas and carrots when I’m being lazy—still works great.

Great recipe but what is the deal with keeping everything vegan? This tastes better with chicken!

    1. User avatar lora.mitchell97 says:

      2 stars

    2. User avatar haydee.heller says:

      4 stars
I get what you’re saying! Chicken would definitely give it a different flavor, but I’m all for the vegan twist. It’s surprisingly yummy!

  21. User avatar ShanksOnePiece says:

I followed the steps pretty closely, but mine came out a little too sweet from the brown sugar. Maybe I’ll cut it in half next time. Still, the noodles absorbed the sauce nicely.

  22. User avatar steve_maga says:

Rice noodles are where I usually mess up, but the timing here was forgiving. I did rinse them a bit after draining to stop sticking, and that helped a lot. Great comfort food.

    1. User avatar ArabianNights says:

  37. User avatar lisandra.predovic says:

Honestly I’m not a fan of curry paste, so I tweaked it with red curry powder. It still came out great, but it’s not the same vibe. If you like bold flavors, you’ll love it.

  38. 5 stars
Made this tonight and it’s seriously comforting. The curry paste + coconut milk combo is perfect, and the spinach wilts just right. I added a little extra lime and it brightened everything up—will definitely make again!

  39. 4 stars
Is it necessary to use rice noodles? I used spaghetti instead. Still good though!

  40. User avatar georgine.hand41 says:

    3 stars
Not bad, but I dont understand how you eat these noodles without any meat. Feels incomplete.

    1. User avatar geoWizard says:

      2 stars
But like, how can you just eat noodles and veggies? Sounds kinda weird to me. I’d add chicken or shrimp.

    2. User avatar jame.konopelski1958 says:

    1. User avatar rich.ziemann1 says:

  42. User avatar scarlet.schuppe29 says:

I tried this but used chicken instead of mushrooms. It turned out good, but I think the veg is healthier. I’ll give it another shot with the right ingredients!

  43. User avatar britteny.spinka2003 says:

I don’t know, I followed the recipe, but my dish turned out super bland. Maybe I needed more curry paste?

Recipe says 2 cups spinach, but I used kale instead. Still turned out good. Who needs to follow rules?

  46. User avatar Prostetnic Vogon Jeltz says:

    4 stars
Yum! Lots of flavor! Didn’t have spinach so I used kale and it worked out fine.

    1. User avatar robin.howell35 says:

What kind of curry paste? I used yellow because it was what I had, and it did not taste like Thai. Don’t think I will try again.

  50. User avatar Paula Nancy Millstone Jennings says:

    1 star
This is too complicated! I’m no chef, I’ll stick to my instant noodles!

  51. 4 stars
Not gonna lie, i screwed up the noodles once and they got kinda sticky, lol. But when I did it right the second time, it was great. Would add peanuts or some veggies next time.

  54. User avatar marylynn.wolf says:

    3 stars
I accidentally added too much curry paste and it was fire in a bad way. Disaster!!!

  55. User avatar elvia.dare says:

    3 stars
I followed the recipe but my coconut milk split a little when it simmered. Maybe I heated it too aggressively? Taste was good though, just looks weird.

    1. User avatar wes.pfeffer says:

      5 stars
Yeah, that can happen if the coconut milk gets a bit too hot too fast. Next time, try keeping the simmer gentle (medium-low) and stir it more often when you add the coconut milk + curry paste. If it tastes good, you still totally nailed it—split coconut milk is mostly a texture/appearance thing.

  56. User avatar anderson.little says:

    4 stars
Pretty good! I followed it pretty much exactly, but my sauce turned out a bit thick—next time I’ll use a splash more coconut milk or water. Still, the veggie mix smelled amazing while cooking.

  57. User avatar curtis.schimmel51 says:

    2 stars
I dunno… didn’t taste like real curry to me. A bit bland.

  58. User avatar yun.stoltenberg2024 says:

    5 stars
Makes me feel gurd about liveing healthy! Can’t belive it’s vegan. Gonna try it.šŸ‘

  59. 3 stars
It was ok, but the curry paste was way too strong for my taste. I think I’ll cut back next time.

  60. 5 stars
Super tasty and way more flavorful than I expected. The coconut + curry paste combo is spot on, and the spinach wilts perfectly at the end. I added a little extra lime—highly recommend.
