December 12, 2024

A comforting, savory classic, vegan mushroom pot pie is a perfect dish for cozy nights when you’re craving something hearty and satisfying. The warm, flaky crust is filled with a creamy, rich mushroom filling that’s full of flavor and a great way to showcase seasonal vegetables.

The mushrooms are the star of this dish, adding a meaty texture and deep, earthy flavor that makes this pot pie so indulgent. The filling is made by sautéing mushrooms along with onions, carrots, and garlic, then simmering them in a vegan cream sauce. You can use coconut milk, cashew cream, or even oat milk to create a silky texture that binds everything together. The addition of herbs like thyme and rosemary enhances the flavor profile and gives the dish an aromatic freshness.

The beauty of this vegan pot pie is in its versatility. You can customize the filling by adding peas, leeks, or parsnips for added texture and flavor. The vegetables are cooked until tender, then mixed with the creamy sauce and spooned into a baking dish. A golden, flaky puff pastry or pie crust is placed on top, encasing the filling in a perfect seal. When it’s baked, the crust puffs up beautifully, creating a delicious contrast with the creamy filling.

Made this last night and it was seriously cozy. The mushroom browning step makes a huge difference—like, don’t rush it. My pastry came out extra flaky too.

Flavor is good, but 2 cups mushrooms feels a little light for me. I used closer to 3 cups and it tasted more like a classic pot pie.

Yum! Made this for dinner last night and it was a hit! I added some extra garlic for a kick!

That’s awesome! Extra garlic sounds like a great idea! I love my dishes with a bit of zing. Will definitely try it next time! 😊

I followed it pretty closely but mine took longer to brown the mushrooms. Still came out tasty though—next time I’ll sauté longer on higher heat.

Wait, isn’t puff pastry not vegan?? Confused about this recipe.

It’s good but I found it a bit bland. I think it needs more spices or something.

I dunno… not everyone likes mushrooms. Can you swap them for something else?

I tried to save time with pre-sliced mushrooms and… it wasn’t as good. They didn’t brown as nicely and the flavor felt flatter. Lesson learned: fresh + browning = key.

Who knew vegans could eat this good?? I’m not vegan but I loved it.

I don’t know, it seemed like too many ingredients for a simple dish. Plus, how is puff pastry vegan?

  12. 1 star
Why would you use almond milk? Just use regular milk like a normal person. Not impressed.

VEGAN? Nope. I’m out. I like my pot pie with meat. Sorry not sorry!

  14. 4 stars
Yummy! The flavors are on point! Just a bit more salt for my taste, but still great.

The ingredients list seems solid but I’m skeptical about the almond milk—does it really taste good with mushrooms? It actually did! Still not sure why, but I’m convinced.

Honestly, I was worried about the almond milk too, but the sauce turning creamy makes way more sense than I expected. The thyme/rosemary really carry it.

This was my first vegan pot pie and I’m honestly impressed. The sauce thickened nicely and didn’t taste watery at all.

    1. 5 stars
Yes!! I tried this and the thick sauce thing is REAL—mine also didn’t end up watery. Great for a first pot pie 😄

Too salty for my taste. Maybe next time less salt?
