Tanghulu is a traditional Chinese street snack that has captured global attention for its striking appearance and satisfying crunch. Made by dipping fresh fruit in hot sugar syrup, tanghulu hardens into a glossy, glass-like shell that cracks delightfully with each bite. It’s often called “candied fruit on a stick,” and while it may look like something out of a fairy tale, it’s surprisingly simple to make at home.
Originating from northern China, tanghulu is most commonly made with hawthorn berries, but modern versions often feature strawberries, grapes, blueberries, kiwi, oranges, or even cherry tomatoes. The key to perfect tanghulu is the thin, crisp sugar coating that contrasts beautifully with the juicy fruit inside.
To make tanghulu, fruit is first washed, dried thoroughly, and skewered onto bamboo sticks. Meanwhile, a sugar syrup is prepared by heating granulated sugar and water to around 150°C (300°F), the “hard crack” stage. Timing is crucial, if the syrup is too cool, it won’t harden; too hot, and it could burn. Once ready, the fruit skewers are quickly dipped into the syrup and cooled on parchment or an ice bath to set.
The result? A stunning, mirror-like glaze that enhances the natural beauty of the fruit and delivers a sweet, crunchy experience unlike any other. No wonder tanghulu has become a viral trend on TikTok and Instagram, with people customizing it using different fruits, colors, and even edible glitter.
Beyond its aesthetic appeal, tanghulu is loved for its texture contrast—crispy on the outside, soft and juicy on the inside. It’s a fun treat for kids and adults alike, whether you’re serving it at parties, using it as a dessert garnish, or just making a weekend snack with a twist.
If you’re looking for a new food trend to try at home, tanghulu is the perfect mix of nostalgia, fun, and flavor. Just be sure to handle hot sugar with care, and prepare to impress with every bite.

Ingredients
- 10 pieces hawthorn berries Or other small fruits like strawberries or grapes
- 1 cup granulated sugar Use white sugar for a clear coating
- 1/2 cup water
- 5 sticks bamboo skewers Soaked in water for 30 minutes
Instructions
- Wash the hawthorn berries (or other fruits) thoroughly and pat them dry.
- Skewer the fruits onto bamboo sticks, leaving a small gap between each fruit.
- In a saucepan, combine sugar and water. Heat over medium heat until the sugar dissolves and the mixture starts bubbling.
- Continue to cook the sugar mixture until it reaches a light amber color and is thick enough to form strands when drizzled from a spoon.
- Quickly dip each fruit skewer into the hot sugar syrup, rotating to coat evenly.
- Place the coated skewers on a parchment-lined baking sheet or a wire rack to cool and harden.
- Serve the Tanghulu once the sugary coating has hardened completely.

I don’t know what went wrong, mine turned out all sticky and the sugar didn’t harden. 😢
Delicious! Those hawthorn berries are rare though, anyone know where to find them?
Watched a vid on this before. Lookin good but do u really need to soak the skewers? Seems unnecessary.
Yeah, soaking them helps prevent the skewers from burning if you cook over heat. Gives a better outcome!
So easy, even my kids helped! We loved it! Definitely gonna make again!
This is a good recipe but the sugar part scared me. I burnt my first batch. Be careful!
I totally get that! Sugar can turn fast from delightful to disaster. Next time, just keep an eye on the color. If it gets too dark, take it off heat! Good luck!
Why you scared? Just gotta watch it. I made this with my kids and we all had fun! No burning here! 😄
Just tried this! My tanghulu was too sweet! Can I reduce the sugar?
Tanghulu is supposed to be made with hawthorn berries, right? I don’t get why people use other fruits.
Amazing! I made these with strawberries and they were a hit at the party. Thanks for sharing!
I don’t know… it seems too complicated for something so simple. Can’t I just buy it?
Used grapes instead and they came out super yummy! Sweet and crunchy. 🤤
Grapes sound like a fun twist! I never would’ve thought to use them instead of hawthorn berries. Can’t wait to try it! 😍
Tanghulu! Just like my grandma used to make! Brings back such good memories. Thank you!
I’m glad it brought back wonderful memories! Tanghulu is such a nostalgic treat. What other recipes did your grandma make?
Never heard of Tanghulu before. Looks like a glorified candy apple lol. Is it worth it?
Eh, not my favorite. The coating didn’t harden like it should’ve, it just melted off. Maybe I did something wrong?
I hope this works! Gonna try with some apples and let you know!
Good luck! Apples would be a fun twist, can’t wait to hear how it turns out! 🍏
These turned out so delicious! I used strawberries and they were a hit at the party! 🌟
Yummy! But be careful, the sugar is HOT. My friend burned his hand trying to dip! 😂
I used grapes and it came out great—shiny and crunchy. Drying the fruit mattered a lot. Also the parchment step saved me from sticking chaos.
Very nice! Made this for a party and it was a hit. Wish I could put more fruit on each stick tho.
What a cool idea! Can I use other fruits? My neighbor loves cherries, maybe I’ll give that a shot.
Eh, not what I expected. The sugar didn’t melt right for me. Maybe I did something wrong?
Tried this with strawberries instead of hawthorn. Sooo good! Can’t believe how easy it was!
Tanghulu is a street food in China, right? I wanna try making it but I’m not sure about the sugar part.
Glass fruit! 😍
Uhhh, does this actually taste good? I’m skeptical about the coating.
This is too sugary! I think I need to support the no sugar diet! 🤷♂️
Not that sute when u compare it to candy. Just buy candy instead
I guess if u like candy more, thats cool, but this is a totally different thing. I love Tanghulu!
Tanghulu is way better than candy! It’s healthier and just as sweet. Give it a try!
Hawthorn berries? Where do I even find those? I used grapes instead!
Yummm! Easy to follow and the taste is just like the ones I had in China!
My first attempt turned out like mushy blobs. What did I do wrong? 🙁
This recipe is AMAZING! I made it with strawberries and my kids loved it!
I can’t find hawthorn berries anywhere! Can I use apples or something instead? 🤔
Tanghulu? More like Tang-woah, this looks super sweet!!
Not sure if it’s worth the effort. Just buy store-bought tanghulu, so much easier.
Yeah but like, why go through all that trouble? Just get it from the store, it’s the same thing in the end.
I disagree! Making it yourself is part of the fun! Store-bought just doesn’t compare to homemade tanghulu. Trust me, the taste is worth it!
This recipe is AMAZING! I made it with strawberries and they turned out perfect! Kids loved it!
So chewy inside and hard outside. The bamboo skewers were a good call. Kids loved it and kept asking for more.
I followed steps but my syrup never really got thick enough to drizzle strands. Maybe my stove runs hot? Any idea how to fix that?
Ugh yeah, that sounds like it didn’t reach the right stage. Tanghulu syrup usually needs to cook longer until it’s light amber and noticeably stringy—if it’s not dripping/drizzling, it’s still too watery. Try boiling a bit harder (or reduce one by one of the variables: use medium-high to get a steady boil) and keep cooking until it strings. Also make sure your fruit is *fully* dry—any moisture can make the syrup seize weirdly.
Honestly, I don’t get why people like this. Just a stick of fruit covered in sugar? Seems pointless.
Absolutely love this recipe! Turned out perfect for my kids’ party. They couldn’t stop eating!
Easy to follow! I did it with grapes and they came out great, but my sister said they tasted too sweet.
My fruits slipped off the skewers! Maybe use more fruit next time? :/
Tanghulu forever! Simple and delicious. Just perfect for festivals!
I tried this but my sugar didn’t caramelize properly. What did I do wrong? 😟
Maybe your heat was too low? You gotta get that sugar bubbling! 😅
I had the same issue! I think I used too much water. The syrup needs to be thicker, you know?
YUMMM! Made it and everyone loved it. Sweet tooth paradise!
This seems straightforward but the “thick enough” part is vague. Like… how thick is thick? Thermometer would make it perfect.
I just go by look and spoon-strings like the recipe says. If it drips slow and makes a thin thread, I’m good. Not that exact like a thermometer though 😅
Totally agree—“thick enough” is the vague part. A thermometer is the move. I usually stop around ~300°F/150°C (hard crack stage) so it sets nice and glossy.
Tasted amazing but honestly took me way longer than 7 steps to figure it out. Maybe I ain’t the best cook lol.
I totally get it! Cooking can be a bit tricky, especially with all those steps. But the end result is definitely worth it, right?
7 steps? Bruh, it took me like an hour just to find the hawthorn berries. But hey, at least it tasted good in the end!
👍
This is an awesome recipe! I made it with strawberries and my kids loved it, they even helped me dip the fruit. So good!
I think this is a great way to make sweet snacks! Gonna try with different fruits soon! 🥳
I dunno, looks kinda hard. Can it be done without boiling the sugar? 🤔
That sounds amazing! I can’t wait to see what fruits you choose. 🍓🍇
Bro just use thermometer. Light amber is super subjective. If you don’t hit the right temp it’s gonna sugar-crystal, and then you’re sad. Otherwise, nice recipe.
This recipe is amazing! My kids loved it. Just remember to be quick dipping them!
I’m so glad your kids enjoyed it! Tanghulu is such a fun treat! 😍
Not sure about dipping fruit in sugar…sounds kinda gross. Tried it and it was way too sweet!
Nah, sugar is gross. Why not just eat the fruit? Don’t get why people do this.
I actually loved it! It’s like candy on fruit, super fun to eat. Maybe try with less sugar next time?
I used grapes instead of hawthorn berries. Still tasted yummyy!!!
This Tanghulu brought back so many childhood memories! So simple and sweet. My kids loved it! 😍
I tried with blueberries once and it came out like jam-covered sticks, not the crunchy candy coating. Different fruit maybe?
Yeah, blueberries are watery, so they’ll probably get mushy and make it weird. Also I think you need hawthorn (or really firm fruits) and patience—if the syrup is too thin it won’t set. Maybe your sugar wasn’t thick enough?
Sounds like your syrup probably didn’t get to the right stage—tanghulu should harden into a crunchy shell, not turn jammy. Also make sure the fruit is really dry before dipping and don’t overcook the fruit itself. Try again with the sugar cooked until it’s thick/amber, then dip and let it cool untouched.
I tried making these but the sugar burnt so fast! Help, what am I doing wrong? 😩
Idk, I think your stove is too hot or somethin’. Sugar can burn quick, you gotta watch it closely.
Maybe you cooked it too long! Try lowering the heat and keep stirring. Good luck! 😊
Too much sugar, not for me. I will just eat the fruit plain.
I was skeptical but damn, this was delicious! I used grapes and they turned out amazing. Definitely doing this again!
I’m skeptical about how hard the sugar coating will really get… Anyone tried this before?
Yum! Just like the ones from the street vendors! Gonna make this for my party!
This recipe is awesome! I made it with strawberries and my kids loved it! 🍓
This is my childhood in a stick! Love tanghulu! 😍
Not worth the hassle. I just buy them from a street vendor. Way easier!!
Bad idea. I tried it and the sugar wasn’t amber… it turned black! 😂
Maybe you cooked it too long? I don’t think it was a bad idea. My first time did the same, but I won’t give up!
Tanghulu? Is that even a real thing? My grandma never made this, sounds kinda weird to me. 😕
I don’t know… The sugar didn’t melt right for me. I must have did something wrong.
Don’t worry! It’s tricky sometimes. Did you heat the sugar too much? It can turn into caramel if left too long.
This recipe is quite difficult for a novice. I burnt the sugar! 😩
Why can’t I just use brown sugar? 🤔
Looks great, but isn’t it too sweet? I prefer a more natural taste. Might try with less sugar next time.
Tanghulu recipe was cool but I burnt my first batch! Be careful with the heat!
So easy! I used grapes and they turned out great! Just like the ones I had in Beijing!
Wow! I didn’t know you could use grapes! I’ll have to try that next time. Thanks for sharing your experience!
