  • 2 cups tamarind paste
  • 1 cup sugar
  • 6 cups water
  • 1 cup lemon juice fresh
  • 1/4 cup mint leaves chopped, fresh
  • ice cubes for serving
  • mint leaves for garnish

Instructions
 

  • In a large pitcher, combine the tamarind paste, sugar, and water. Stir well to dissolve the sugar.
  • Add the fresh lemon juice and chopped mint leaves to the pitcher. Stir to combine.

    Mine turned out way too sour at first. I think I measured the lemon juice wrong (maybe it was the bottle kind? not sure). After adding a little extra sugar and more water it was decent. Would make again, but careful with ratios.

    Not sure about the 2 cups of tamarind paste—seems like a lot. I get that it’s supposed to be tangy, but mine was almost thick and strong, like a concentrate. Still okay over ice though.

      Yeah 2 cups sounds huge at first. I think the key is tasting—some tamarind pastes are thicker/stronger, so you may want to start with less and add more later.
