Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 onion diced
- 2 cloves garlic minced
- 1 jalapeno pepper seeded and minced
- 1 red bell pepper diced
- 15 oz black beans 1 can, rinsed and drained
- 15 oz corn 1 can, drained
- 14.5 oz diced tomatoes 1 can
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 cup cilantro chopped fresh
- 1 lime juice
Instructions
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes, or until all of the water is absorbed.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, garlic, jalapeno pepper, and red bell pepper. Cook for 5 minutes, or until the vegetables are softened.
- Add the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper to the skillet. Stir to combine.
- Once the quinoa is cooked, add it to the skillet and mix well with the other ingredients. Cook for an additional 5 minutes, or until heated through.
- Remove from heat and stir in the chopped cilantro and lime juice.
- Serve hot and enjoy!

Pretty good. I think my quinoa needed a few extra minutes because mine was a little chewy, but the veggie and bean mix tasted awesome. Next time I’ll watch it closer.

Totally get you—this does look like a lot going on. But cumin + chili powder together is pretty standard in Mexican-ish seasoning blends. Cumin is earthy/round, chili powder brings more smoky heat. Not redundant if you think of it as layering flavors.
I’d cut one, personally. If you use chili powder strong enough, cumin might be overkill. Also I’ve noticed cumin can taste kinda “dirt-y” if your chili powder is already bold. Maybe do 1/2 tsp each and adjust?

Honestly, I think it’s a great recipe! It might not taste like traditional Mexican food but it’s still pretty good. You can always add some hot sauce to jazz it up. 🌶️

Quinoa is a seed, not a grain. It’s super healthy! You can mix it with rice, just cook rice separately and add them together. Easy peasy!

I used ground cumin instead of cumin (lol same thing i know) and it still tasted good. Cook time is perfect—15 min quinoa is the truth.
Question though: 2 cups water for 1 cup quinoa… does it come out fluffy for you every time? I’ve had quinoa get mushy when I follow 15 min exactly.
Lol I’ve done that swap too—ground cumin vs cumin and it still slaps. Also +1 on the 15 min quinoa, that timing is honestly spot on.

Quinoa is a fine swap for rice in my book—more protein and it doesn’t get mushy. I made this once and it turned out really well with the bean/corn/tomato combo. I’d still add a little extra lime though.

Quinoa weirdly stuck to the bottom of my pan, so presentation was not cute. Flavor-wise it was decent but I would double the cilantro next time. also my lime wasn’t enough??
