Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 onion diced
- 2 cloves garlic minced
- 1 jalapeno pepper seeded and minced
- 1 red bell pepper diced
- 15 oz black beans 1 can, rinsed and drained
- 15 oz corn 1 can, drained
- 14.5 oz diced tomatoes 1 can
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 cup cilantro chopped fresh
- 1 lime juice
Instructions
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes, or until all of the water is absorbed.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, garlic, jalapeno pepper, and red bell pepper. Cook for 5 minutes, or until the vegetables are softened.
- Add the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper to the skillet. Stir to combine.
- Once the quinoa is cooked, add it to the skillet and mix well with the other ingredients. Cook for an additional 5 minutes, or until heated through.
- Remove from heat and stir in the chopped cilantro and lime juice.
- Serve hot and enjoy!

Pretty good. I think my quinoa needed a few extra minutes because mine was a little chewy, but the veggie and bean mix tasted awesome. Next time I’ll watch it closer.

Hmm, I didn’t find it bland, but maybe because I used salt/pepper more aggressively. Also I added cumin + a little smoked paprika from the start and it was way better. Jalapeño amount might matter too—seeds = more heat.

Not bad, but it’s missing something. Maybe a pinch of smoked paprika? Also 1 cup quinoa feels like a lot for 2 cups water—mine came out a little fluffy instead of chewy.

I love Mexican-ish stuff, but this is kinda busy with ingredients. Also, does it really need both cumin and chili powder? Feels redundant.
Totally get you—this does look like a lot going on. But cumin + chili powder together is pretty standard in Mexican-ish seasoning blends. Cumin is earthy/round, chili powder brings more smoky heat. Not redundant if you think of it as layering flavors.
I’d cut one, personally. If you use chili powder strong enough, cumin might be overkill. Also I’ve noticed cumin can taste kinda “dirt-y” if your chili powder is already bold. Maybe do 1/2 tsp each and adjust?

Honestly, I think it’s a great recipe! It might not taste like traditional Mexican food but it’s still pretty good. You can always add some hot sauce to jazz it up. 🌶️
