Spiced chicken with coconut rice and beans is a vibrant and satisfying dish that combines the bold flavors of seasoned chicken with the creamy richness of coconut rice and the heartiness of beans. It’s a perfect balance of savory, spicy, and comforting ingredients that create a fulfilling meal for any occasion. Whether you’re cooking for a family dinner or preparing a meal for yourself, this dish is guaranteed to satisfy your taste buds.
The spiced chicken is the star of the dish, featuring a blend of aromatic spices such as cumin, paprika, turmeric, garlic, and chili powder. These spices give the chicken a warm, smoky flavor with just the right amount of heat. Marinating the chicken in the spices before cooking helps to infuse the meat with flavor, making it juicy and tender. Once cooked, the chicken is perfectly seasoned with a crispy exterior and juicy interior.
The coconut rice serves as the perfect side to complement the chicken. The rice is cooked in coconut milk, which infuses the grains with a rich, creamy texture and a subtle coconut flavor. A bit of lime juice and zest added at the end brightens up the dish and balances the richness of the coconut. The rice is fluffy and fragrant, making it a comforting accompaniment to the spiced chicken.
Alongside the rice, the beans add heartiness and a touch of earthiness to the meal. Black beans or kidney beans are often used in this dish, providing a satisfying texture and flavor. The beans are seasoned with a little garlic, cumin, and salt to enhance their taste and bring everything together.
To serve, place a generous portion of coconut rice on the plate, top with the spiced chicken, and add a scoop of beans on the side. Garnish with fresh cilantro, lime wedges, and a sprinkle of chili flakes for added freshness and heat.
Spiced chicken with coconut rice and beans is a well-rounded dish that’s easy to prepare, delicious, and packed with flavor. It’s a complete meal that’s both comforting and nourishing, making it perfect for any night of the week.

This recipe is amazing! The flavors are just perfect together. My family loved it!
Looks good. 375F is fine. I dont know why mine came out kinda dry though 🙁
SO GOOD!!! I made it for my friends and they loved it! 🤩
I don’t know about this… coconut milk with chicken? Just sounds weird.
This recipe is amazing! The coconut rice is so creamy and goes perfectly with the chicken. Loved it!
Idk, for me it was bland. I measured the spices, but next time I’ll add chili powder or more garlic. Also could use more pepper. Sorry.
Totally fair—this is pretty mild since the recipe only calls for garlic powder + paprika + a little pepper. Chili powder would add a nice kick, and you’re right that more garlic could help if you like bolder flavor. Next time, try adding a pinch of chili powder or cayenne to the rub and maybe a squeeze of lemon at the end to wake it up.
Pretty good, but my chicken didn’t crisp as much as I wanted. I think I should’ve seared longer or used hotter heat. Flavor is still solid though—smoked paprika is doing the heavy lifting.
Yeah, totally agree—skin-on thighs can be stubborn. Next time I’d sear closer to 7–8 minutes and make sure the pot is really hot before the chicken goes in (no crowding either). If it still won’t crisp, you can broil for 2–3 minutes at the end—just watch it.
Wow. Easy weeknight meal. 10/10 😅
Do I have to use black beans? Can I use kidney beans instead? 🤔
Yes, you can use kidney beans instead! They’ll change the flavor a bit, but still yummy! 😋
Yummm, the chicken skin was crispy and the rice was bomb!
Loved how the spices gave the chicken a nice kick! Will definitely make it again. 👍
I’m so glad you liked it! The spices really do make a huge difference, don’t they? 🤗
This looks delicious! Can’t wait to try it out over the weekend. 😍
I made this last week and it was amazing! My family loved it too. Hope you enjoy it as much as we did! 😋
Looks good, but I ain’t sure about coconut milk with chicken. Isn’t that weird? 🤔
This dish was incredible! The flavors were out of this world, and my family loved it. Definitely making it again!
Why does it say to rinse the rice? I did and it didn’t seem to make sense. The rice coulda been better without rinsing. Just saying.
Yesss! This recipe is a keeper! I added some hot sauce for a kick and it was perfect! 5 stars!
Made this tonight—so flavorful. The coconut rice is creamy without being too sweet, and the paprika kick is perfect. I used boneless thighs and it still worked great (just a few mins less in the oven). Will absolutely repeat.
I tried it but my coconut rice turned out kinda watery 😕 maybe I didn’t rinse the rice enough. Also I used regular paprika (not smoked) and it felt less “kick”y. Still edible though!
So glad you liked it! Coconut rice + paprika is such a good combo. And good call on using boneless thighs—shorter oven time makes sense.
Really love this recipe! The coconut rice is a game-changer! 🥥👌
Really solid weeknight meal vibe. The instructions were clear and the rice cooked perfectly for me. I added a squeeze of lime at the end and it bumped it up.
I don’t think it needed the coconut milk, found it too sweet next time I might skip it.
I actually loved the coconut milk! It made it creamy and delish. Maybe try using less next time?
Too sweet? I think that’s just how coconut milk is. Just cut down on it next time! 😂
This recipe is amazing! The chicken was so juicy and the coconut rice is to die for. Definitely a 5-star dish!
Kinda bland for my taste. Needs more spices or something.
I think black beans and coconut don’t mix well. Just my opinion tho. Anyone else feel that way?
Not bad, but 25-30 minutes felt a little short for bone-in thighs in my oven. I had to add like 10 more minutes. Maybe my pieces were bigger, but keep an eye on doneness.
Good point—bone-in thighs often need longer depending on thickness. I usually go by internal temp (165°F) instead of the clock. Thanks for the heads up!
Who uses chicken broth with coconut milk? That’s really unusual. Doesn’t sound good to me.
This was way easier than I expected. The pot-in-pot vibe is real. I accidentally forgot to drain the beans once and it still turned out tasty… just a bit wetter. Would recommend!
This dish was absolutely amazing! The flavors were out of this world. Definitely a 5-star recipe!
The smell when it bakes is unreal. I’m giving it 5 stars because my family cleaned their plates. Cilantro at the end really wakes it up.
Totally agree—cilantro at the end is the perfect finishing touch. I’m making this again this week. 😋
Yummy! But did I miss something or does the recipe not say when to add the beans? I used them anyhow.
My family loved it, but I think I added too much garlic powder. Oops! Will try again with less. 4 stars.
I followed the instructions exactly but my chicken was still pink inside. I don’t think this is safe. Not a fan.
Too much coconut for my taste. I prefer simpler flavors. 😂
Made it for dinner and everyone went back for seconds 😅. I was worried about 25 minutes being too short for bone-in thighs, but it came out tender. Next time I’ll add a squeeze of lime.
Love this! Bone-in thighs can be tricky, so it’s awesome it still came out tender in 25-30. Lime squeeze is such a good next step 😄
I made it once and mine was kinda bland? I think I didn’t salt the beans enough. Also 25 minutes feels short for chicken thighs with bone… but glad yours worked!
It was okay, but I think I might improvise next time. Probably add some veggies to the rice?
I used brown rice instead and it took longer to cook but still good! Thumbs up! 👍
I had to use chicken breasts because that’s all I had. It was still good though!
Not sure about cooking beans in with the rice like this. The texture was okay, but the flavors felt a bit muddled to me. I’d rather warm the beans separately next time.
Ugh, too oily for my taste. Plus, the beans didn’t really work. I don’t think I’d make this again.
This dish was delicious! The flavors were spot on. Definitely a hit with my family!
I’m glad to hear that! This recipe sounds great, I can’t wait to try it myself. Chicken and coconut is like a party in my mouth! 😋
I don’t know… sounds a bit too complicated for me. Can’t you just fry the chicken? And what’s with all the fancy ingredients? 🤔
This recipe was amazing! The flavors worked so well together. Will definitely make it again!
So easy to make! I really appreciate recipes that don’t require any fancy ingredients.
But isn’t coconut milk a bit fancy? I mean, what about just using regular milk or water? Seems strange to call it easy.
I totally agree! It’s nice to have a recipe that doesn’t break the bank or take forever to find ingredients. Can’t wait to try this!
I followed the recipe exactly, but the chicken came out kind of dry. Might try a longer cook time next time.
I don’t know… the coconut milk was too much for me. It tasted more like dessert than dinner. 2 stars.
I totally get where you’re coming from! Coconut milk can be a bit overwhelming if you’re not used to it. Did you try reducing the amount next time? Maybe that would help!
Dessert for dinner? Sounds weird! I thought it was great. Maybe you should try with less coconut milk next time? Just a thought.
Not bad, but I added some chili flakes for a kick and it turned out great!
Why do you use black beans? Aren’t navy beans better? 🤔
Is it supposed to look so soupy? Mine came out like a stew. Next time I’ll use less broth.
The rice turned out super creamy and the beans were a nice touch. Will make again!
I didn’t have cilantro so I used parsley. Kinda regret it—flavor was more bland than I expected. Would rate higher with the original garnish.
This is just chicken and rice, nothing special. Wouldn’t make again.
It’s not just chicken and rice! The spices and coconut make it something special. You gotta give it another shot.
I disagree! This recipe is a comforting classic and the coconut milk adds a great flavor that elevates it!
Made it for dinner last night and it was a hit with the whole family! Thanks for sharing!
Really? Didn’t turn out well for me. The chicken was kinda dry. Maybe I did something wrong?
So glad to hear that! It’s such a fantastic dish. We loved it too!
Pretty solid comfort food. I’d maybe add a little more salt to the rice (could be my chicken thighs were very mild). Otherwise followed exactly and it baked perfectly.
I messed up the cooking time and my chicken was undercooked. I guess I’ll have to try again.
Super easy to make! I’m not a great cook, but this turned out really good! Thanks for sharing!
I’m not usually a “coconut rice” person, but wow. The beans added a nice heartiness. Only tweak: next time I’ll simmer the rice a minute longer before baking so it’s extra tender.
Too much coconut for my taste 😕. Rice was good though, I guess.
Uhh, anyone tried this with brown rice? Would it work? 🤔
I haven’t tried it with brown rice, but it might take longer to cook since brown rice is different. Just keep an eye on it! 👍
I thought this would be simple but it was kinda complicated. What do you mean by searing?
Searing is just a fancy word for getting the chicken skin crispy and brown. It’s supposed to add a lot of flavor! Just cook it in a hot pan for a few minutes on that side before baking it. Hope that helps!
Complicated? Really? I think it’s pretty straightforward. Just follow the steps. Searing is when you fry it hard to make it brown, duh!
I tried this but it didn’t come out as expected. The chicken was dry and the rice was mushy. Wouldn’t recommend.
Simple recipe, easy to follow. But it was too bland for me. Maybe I’m just used to spicy food?
It’s fine, but like, do you really need coconut in everything? 🤔
Not gonna lie, I was skeptical about baking chicken on top of rice, but it worked. The skin stayed crispy-ish and the whole pot smelled amazing.
Not gonna lie I made it wrong—forgot to rinse the rice—lol. But it still tasted decent. Could be better with cilantro, next time for real!
I’ve never cooked with coconut milk before… it turned out kinda weird. Not my favorite.
Yum! I can’t believe how much my family loved this. It’s in the regular rotation now! 🌟
Unpopular opinion: it was kind of bland for me. I followed the salt/pepper measurements exactly. Maybe my paprika wasn’t smoked enough? I’d double the spices next time.
Just okay. I don’t know if I did something wrong, but it seemed bland to me. 🤷♂️
This is a good weeknight meal, but I’d dial back the salt. I used low-sodium broth and it still felt salty to me—maybe my beans were saltier than yours.
Totally agree on dialing back the salt. I also found it comes out pretty seasoned even with low-sodium broth—my beans must’ve been saltier too. Next time I’m going to start with way less “salt to taste” or skip it and adjust at the end.
Huh, I didn’t think it was salty at all. But I’ll admit I use regular broth, not low-sodium, so maybe it balances out? Also I might not be rinsing my beans enough—mine were kinda juicy. I’ll try it your way next time.
Yummy! But I subbed the black beans with kidney beans. Still turned out great! 🌟
Kidney beans? Hmm, that’s interesting! I guess it can still taste good, but I wonder how it changes the flavor. Anyone else tried that?
Easy to make, and tastes great! Also, not too much cleanup!
I skipped the cilantro and used jasmine rice instead. Came out fine for me! 😄
I love that you made it your own! Jasmine rice is a great choice! 😊
Simple and tasty! A few ingredients but packs a flavor punch, love the spices!
The flavor is good but mine came out kinda soupy. I wonder if my rice wasn’t rinsed enough or if my pot wasn’t ovenproof properly. Next time I’ll simmer uncovered a bit after baking.
Not gonna lie, I thought “coconut milk + chicken thighs” would be weird together, but it’s actually really good. The beans made it hearty.
Quick question, can I use white rice instead of coconut rice? Not sure what that means.
You could use white rice, but it won’t have that coconut flavor. Coconut rice is special for a reason! Maybe try adding some coconut extract instead?
Delish! I would eat this every day if I could. 😍
Totally agree! It’s so creamy and comforting. 😋
The kids loved it! Even my picky eater had seconds.
Yummm! Super easy and my kids loved it. Will make again for sure!
Simple and tasty! Did a few swaps with the spices, but it was still good. Thanks for the recipe!
Glad you liked it! Swapping spices is a great way to customize recipes! 😊
Cooking chicken thighs is p easy, just don’t overcook! but I like drumsticks better, lol.
5/10 for me. The rice tasted kinda sweet? Maybe my coconut milk was different. Also I used cumin instead of paprika by accident…oops.
Wow. Like restaurant vibes. I used a Dutch oven and got great browning on the skin-side.
That’s awesome! The Dutch oven really helps lock in that browning—skin-side gets so crisp. I’m glad you got the restaurant vibe 😊
Too complicated for me. Can someone just give me chicken and rice? 1 star.
Tbh I didn’t have cilantro so I used parsley. Still fine, but not the same. Also I forgot to rest it and the chicken juice kinda ran—learned my lesson.
I made this and it was alright. I think I overcooked the chicken a bit. Maybe add more spices next time?
Not too sure about the beans in this. Beans and chicken? Kinda weird if you ask me.
I think the beans add some protein and fiber! Sounds good to me!
I was skeptical about the coconut rice, but wow! It really worked with the chicken!
Coconut rice sounds strange at first, but it really adds a nice flavor. Glad you enjoyed it!
I don’t know about that! Coconut and chicken? Just seems off to me. 😕
My family loved it but I’m not sure if my thighs were too big—baking time might vary. I checked at 30 min and they were done.
So glad your family loved it! And you’re right—thickness/size of thighs can definitely change bake time. If they were done at 30 min, that sounds spot on for your cut. I’d probably start checking around 25 min next time just to be safe.
Easy peasy! First time making coconut rice and it was a hit!
Easy to make, but I wish the flavors were stronger. It’s kind of bland. I added hot sauce to spice it up.
I don’t know, something off with this recipe. My chicken was dry, and the rice just watery. What’s going on?
This turned out super flavorful—smoked paprika + coconut rice is a great combo. I seared the chicken a touch longer and the skin got nice and crisp.
Super easy to make! I added some hot sauce for extra kick. Yum!
I didn’t have chicken broth, used water instead. Still turned out good!
Wasn’t a fan. Too much coconut taste for me. 👎
I love coconut, but I get it, not everyone does! 😅 Maybe use less next time?
Coconut milk + chicken broth is a weird combo to me, but wow… it worked. The beans also helped thicken it slightly. I’ll be using this method again with different seasonings.
I’m skeptical about baking chicken thighs on top of rice—usually you get uneven cooking. Mine actually worked, but I had to rotate the pot halfway through. Not bad at all.
That’s exactly what I worry about too—rice on bottom, chicken on top. But your note about rotating the pot makes me feel better. I’m gonna try it; worst case I’ll do the same thing.
Huh, I always thought chicken thighs need like 45 mins min… 25-30 sounds kinda short to me. Did you keep the pot covered the whole time? Also, do the thighs stay juicy with the skin on?
I think it needs more spices! Didn’t find it spicy enough for my taste.
I followed the recipe exactly and it was honestly good, though I expected the sauce to be thicker. Next time I’ll reduce the broth a little or simmer uncovered after baking.
Not sure the ratio is right—400ml coconut milk + 1 cup broth + 1 cup rice felt a bit rich. Tasty though. I might reduce coconut milk next time or add a splash more broth.
Tasty though, yeah. But I think the rice-to-liquid ratio is off mainly because 1 cup rice holds a lot—maybe cook it longer instead of reducing coconut milk? Like 35-40 mins covered?
I agree—400ml coconut milk with only 1 cup broth can feel super heavy. I usually start with 250-300ml and top up with broth to keep the rice fluffy. Your suggestion makes sense!
Too much rice! Next time I might cut that down. Feels like a filler dish.
This dish was amazing! So flavorful and easy to prepare.
Easy to make, but I think the spices could be a bit stronger. Need more kick!
I found the spices just perfect! But maybe if you like more heat, add some chili flakes next time?
Not gonna lie, I accidentally used regular paprika (not smoked) and it tasted kinda flat. Also I didn’t rinse the rice, so it was a bit clumpy. Would try again properly.
This is just chicken and rice, why does it have a fancy name? 😂
Made this last night—so cozy. The coconut rice turned out creamy but not sweet, and the smoked paprika really came through. I did keep the chicken skin crisp after the sear and it was great.
Totally not what I expected… coconut milk in rice? Weird. Didn’t care for it.
I actually loved the coconut milk in rice! It adds such a nice creaminess. Maybe give it another try?
Not sure about the coconut + beans combo… it tasted okay but kinda muted. I think more cilantro or a bit of chili would wake it up. Chicken was tender, at least.
Coconut rice? Eww. Why would you mix that with chicken? Just stick to plain rice.
The chicken skin was crispy and browned like the recipe promised. I was skeptical about baking thighs on rice, but it worked. Will make again.
The cilantro was a nice touch! Made it look pretty too. 🙂
Coconut milk + paprika is a bold choice… and I mean that in a good way. The cilantro at the end is the perfect fresh finish.
Coconut milk makes everything sweet-ish, and I’m just not into that. The chicken was juicy, but the whole dish tasted a little off to me. Might be an acquired taste.
Yeah, coconut milk can totally go “too sweet” if you’re not into it. I usually add a bit more salt and extra black pepper (or a squeeze of lime) to balance it—might fix that “off” taste for you.
I messed up the temperature and burnt the rice. Still tasted okay tho.
I was skeptical at first, but wow, this dish totally surprised me! So good!
I agree! I didn’t expect it to taste so good either. Definitely making it again!
Really? I don’t see how this can be that great. Sounds a bit too weird for my taste.
Pretty solid. I followed the temps/timing, but my rice was a tiny bit underdone at 28 minutes—probably my pot runs hot. Next time I’ll do 30–35 and it’ll be perfect.
delicious!
This dish was DELICIOUS! The coconut rice adds such a nice touch. My family loved it!
I’m skeptical about “bake then rest 5 minutes” but it actually worked. The rice soaked up all the flavor and wasn’t mushy. Super flavorful for a weeknight meal.
This recipe is amazing! The flavors are so rich and comforting. My family loved it!
Really? I thought the coconut might be too much. I might try it without the beans.
I’m so glad you enjoyed it! The combination of coconut and chicken is heavenly. 🍗🥥
Easy weeknight recipe. The instructions are clear and it’s basically a one-pot meal. I’ll do this again for meal prep.
I’m confused about the bake time—25-30 mins felt short for my bone-in thighs. I had to keep it in closer to 40 until the internal temp was right. Recipe should mention temp.
Totally agree—25-30 mins was way too short for bone-in for me too. I think adding an internal temp target would save people a lot of guessing. Bone-in thighs need longer at that oven temp.
Wait… I followed it and 25-30 worked for my thighs 🤷♂️. Maybe mine were smaller? But yeah temp would be nice. Like 165°F should be mentioned. I just stabbed it to see if the juices run clear lol
Delicious! I added some lime juice for flavor and it was a hit!
I dunno about adding lime. Isn’t coconut supposed to be sweet? Seems like a weird mix.
Sounds great! Lime juice must’ve added a nice kick. I’ll definitely try that next time!
Wow, I did not realize 375°F is that high for chicken. Isn’t 350℉ better? Anyway, not bad.
Pretty good overall. I followed the steps but my rice wasn’t fully fluffy after 30 minutes—maybe my pot runs hot? Next time I’ll bake a few minutes longer and fluff it with a fork.
Hmm I think 25-30 minutes is too short for long-grain rice in a pot… mine was chewy once until I added like 10 more minutes and barely stirred, so the rice didn’t break. Also fork it after you rest, not before 😅
Nice! I’ve had that happen when the oven runs hot or the lid isn’t sealing well. Letting it rest a bit longer (like 10 min) usually helps mine get less clumpy.
Just made this and it was a hit! Perfect for dinner parties. Highly recommend!
Not bad, but I thought it needed more seasoning. 1 tsp salt “to taste” is vague, and I didn’t trust it. Turned out bland until I adjusted.
I added some chili flakes for a kick. Super flavorful. 🥳
This was soooo good! The chicken was juicy, and the coconut rice was creamy. Family loved it!
Made this tonight and it was seriously cozy. The coconut rice smelled amazing while baking—also the paprika on the chicken is perfect. I used a little extra cilantro at the end and would do it again.
I followed the recipe pretty closely, but my rice needed like 10 more minutes in the oven. Still tasted great though—flavor was on point.
Mine came out a little underdone too, so I guess 10 more minutes sounds right. I kinda forgot to rinse the rice once (oops) and it got mushy—still tasty though. Love the coconut/bean vibe!
Good to hear! I’ve noticed oven times can vary a lot—next time I might add 5-10 minutes or check the rice texture earlier. What kind of pot did you use (Dutch oven vs thinner)?
Yum! Can’t wait to make this again. So good and filling, my kids even ate it!
I’m so glad your kids loved it too! It’s such a crowd-pleaser, isn’t it? 👍
Looks good, but do they really eat it? Mine are picky! 🤔
Not bad! I used regular paprika instead of smoked because that’s what I had. Still tasted good, but it lacked that “campfire” vibe. Would make again with smoked paprika for sure.
Made this tonight and it was seriously comforting. The coconut rice turned out fluffy and the smoked paprika gave a nice, warm kick. I didn’t even bother adding anything else—just cilantro on top and done.
I tried it, but mine didn’t get fluffy like yours 😕 I rinsed the rice though. Maybe I should’ve cooked it longer or used basmati instead of long-grain. Still tasty, just more “sticky rice” than fluffy.
Yes!! Comforting is exactly right. The coconut rice + smoked paprika combo is such a good flavor bridge. I also did cilantro only—no changes and it still felt complete.
My kids loved this! Easy to make and clean up. Will be making again!
Coconut milk + chicken broth + rice = comfort food to the next level. Also, I love that you bake it with everything together, less dishes. My family asked for seconds.
That sounds so cozy! I love one-pot baking—less cleanup is a win. Also, coconut milk with rice is a game changer. I’m definitely trying this for dinner this week.
Super tasty and cozy. The smoked paprika really shows up, and the coconut rice came out fluffy instead of weirdly sweet. Made it exactly as written—would cook a tiny bit longer next time for thicker thighs.
Coconut and chicken? Sounds weird. Anyone tried it? How’s it taste?
I don’t get the whole 375°F thing. My oven runs hot and the rice came out a bit dry. Maybe cover tighter or stir mid-bake? Otherwise tasty.
This recipe is like… magic? My family ate everything and asked for seconds. I made it exactly once and now it’s on repeat. 10/10 would cook again 😅
Love the simplicity. One pot, minimal fuss. The cilantro at the end is a nice touch—freshens it up. I added lime juice too and it bumped the brightness a lot.
The rice felt undercooked after 30 min for my oven, so I had to add extra time. Also, 375°F seems low? Not sure. Tasty, but timing needs tweaking.
This is one of those recipes where it looks fancy but it’s mostly dump-and-bake. Loved the minimal effort. Cilantro at the end is a must.
Totally agree—looks restaurant-level for something that’s basically dump-and-bake 😄 And yeah, cilantro at the end makes it feel fresh instead of heavy.
I tried this and it tasted bland. Like… the rice was fine but the chicken needed more seasoning. I’ll give it another shot with more garlic and maybe a pinch of cumin.
Mine came out kinda bland even with all the spices. I think I measured garlic powder wrong (I kinda eyeballed it). Next time I’ll be more precise.
Smelled amazing while baking. The spices are on point, but 1 tsp salt might be too much if your broth is salty (mine was). Still delicious though, and I’d make it again.
Flavor is good, but my rice was a little undercooked at 30 minutes. I think my pot runs hot? I ended up adding 10 more minutes and it fixed it. Still worth it.
Chicken on top of rice in one pot is such a good idea. Super easy cleanup too. I added extra cilantro because I love it and it made the whole dish brighter.
I followed it mostly, but I used regular paprika instead of smoked and honestly it was a letdown. Also I forgot to rinse the rice and it came out slightly sticky—learned my lesson!
That makes total sense—smoked paprika really does the heavy lifting for flavor. Also sticky rice is usually exactly from skipping the rinse; glad you noticed it though! Next time you’ll get it dialed in.
Made this tonight and it turned out super flavorful—smoked paprika with the coconut rice is such a good combo. Chicken skin got nice and browned after searing. Will definitely cook again.
Not gonna lie, I’m surprised it worked with only 25-30 min in the oven. Did you cover the pot the whole time? I might’ve overcooked my thighs last time and the rice got kinda mushy 😅
Yes!! The smoked paprika + coconut rice combo is legit. I love that you got the chicken skin browned—mine always sticks a bit unless I let it really crisp first. Gonna make this again soon.
375F for 25-30 minutes with bone-in thighs? That seems short to me. Mine was undercooked in the center, had to bake longer and then broil the skin. Still tasty, but timing needs adjusting.
Pretty good, but my rice was a little undercooked at 30 minutes. Next time I’ll add 10 minutes or make sure my pot is really covered tight. Flavor was still great though.
i followed it but the rice got mushy on bottom and the top was dry. Anyone else have that problem? Dutch ovens differ I guess.
I burned my first batch because I seared too hot 😅 but second try was perfect. Also: don’t skip rinsing the rice—texture matters.
The spice combo (garlic powder + smoked paprika) is legit. Smelled amazing while baking. Cilantro garnish is a must.
Pretty tasty, but mine needed longer in the oven. After 30 minutes the rice was still a bit firm, so I added ~10 more. Once I adjusted the time it was perfect.
I followed it pretty closely, but my rice was a little underdone at 30 minutes. I covered it tighter and gave it an extra 8 minutes and it turned out fine. Next time I’ll check earlier.
This turned out so flavorful! The coconut milk + smoked paprika combo is legit, and the chicken skin stayed crispy after searing. I added a squeeze of lime at the end—made it pop.
Yes!! Coconut milk + smoked paprika is such a good combo. I also do a quick lime squeeze at the end—totally makes it brighter. Glad your chicken skin stayed crispy!
I tried this but my chicken skin didn’t get crispy. I seared it like it said for 5 min, then baked—maybe my pot was too crowded. Still ate it, but texture was meh.
Yeah, overcrowding can totally steam the skin instead of crisping it. Also, 5 minutes searing might not be long enough depending on your heat and how dry the skin is—patting the thighs really dry helps a lot. Next time, try a hotter sear (or finish uncovered for the last few minutes). Glad you still ate it though!
I’m skeptical about baking time. 25-30 min for bone-in, skin-on thighs + rice seems short, but it actually came out juicy for me. Maybe my pieces were smaller. Either way, good recipe.
Pretty solid. Easy steps, minimal fuss, and it feels like restaurant comfort food. Would add a squeeze of lime if I’m being fancy.
Way too much salt for me. I used low sodium broth and still had to cut the added salt down. Next time I’ll do 1/2 tsp total.
Totally get it—salt always sneaks up on me too. I’ve learned to start with less and then taste before adding more. 1/2 tsp total sounds spot-on.
Weird, I thought 1 tsp salt to taste is pretty mild. Are you sure you didn’t accidentally add extra to the broth or use salted beans? My rice usually comes out perfect.
I liked the combo of coconut + beans, but my rice turned out a little underdone at 30 minutes. Might’ve needed more liquid or longer bake. Still tasty though.
Tried this tonight and it was super flavorful. The chicken skin got nice and browned, and the coconut rice was creamy without being too heavy. I added a squeeze of lime at the end—highly recommend!
2 tablespoons cilantro seems like a lot… but it’s actually perfect if you like herb flavor. My picky kid didn’t hate it. (He hates everything.)
2 tbsp cilantro totally makes sense—especially with coconut/bean flavors. I love when it cuts through the richness. 😄
My husband is picky about herbs but I tried this once and the cilantro wasn’t overpowering. If you chop it fine, it’s perfect.
Great. Simple. Delicious.
Simple-ish 😅 I messed up and forgot to rinse the rice once, and it came out a little sticky, but the chicken flavor was still great. Next time I won’t skip that step!
Totally agree—this is one of those dump-it-in and bake it recipes that still tastes like you tried. The coconut rice smell is unreal.
Made this tonight—so cozy. The coconut rice is super flavorful and the chicken came out juicy. I added a squeeze of lime at the end and it was even better.
The spice blend is great, but I found it a tad salty—probably because my chicken broth wasn’t as low-sodium as I thought. Next time I’ll reduce the salt and taste first.
Mine came out a bit salty even though I used “salt to taste” carefully—maybe my broth was less low-sodium than I thought. Otherwise good flavor, though.
I don’t know about the coconut milk ratio—mine separated a bit. Still tasty though, kind of like a curry vibe without trying. Would make again but I’ll stir more and maybe lower heat.
Delish!
I’m skeptical about baking rice in coconut milk without more liquid info. It turned out okay though—my chicken skin didn’t crisp much since it’s covered the whole time.
So good 😋
I was skeptical about baking the chicken right on top of the rice, but it worked! The beans stayed a little firm (which I like). Next time I’ll use a little more cilantro.
I’m glad it worked for you! I also used the “chicken on the rice” method and it turned out super juicy. The only thing I tweak is I add a bit more cilantro at the end—2 tbsp feels like it disappears.
Honestly I’m still skeptical 😅 Cooking chicken on top of rice in the oven sounds like the rice would get soggy. Also I used regular chicken breast once and it was dry. But your cilantro note makes sense—next time I’d add more herbs.
This came out so flavorful—smoked paprika + coconut is a great combo. I used a little more cilantro and it really brightened everything up. Will definitely make again.
Looks awesome. Saving for dinner tonight.
Nice! Hope it turns out great—those flavors are seriously comforting. Let me know how it goes tonight 🙌
This was seriously cozy. The coconut rice turned out creamy but not too sweet, and the paprika flavor was spot on. I used thighs with skin and it crisped nicely after searing.
My chicken skin didn’t crisp as much as I hoped—searing helped but it got a bit soft after baking. Flavor is still great. I’ll try broiling for 2 minutes at the end.
Cilantro tastes like soap to me, so I used parsley and it was still good. My family didn’t complain once (win!).
Love this! I’m also in the cilantro-soap camp, so swapping in parsley sounds perfect. Glad your family was on board 😄
Interesting… I usually just leave cilantro out entirely and it still tastes fine. But your recipe says bake 25-30 min—chicken might not be fully done with bone-in? Maybe I’m overthinking it lol.
Pretty tasty, but I think 25-30 minutes is a little tight for bone-in thighs. I had to bake a bit longer so the chicken was fully done. Rice was still great though.
Totally agree—bone-in thighs usually need a longer bake than 25–30 min. I usually go closer to 35–40 depending on thickness. Glad the rice still came out great though!
The flavors are on point, but my ovenproof pot is kind of small and the rice barely covered. It still tasted good, just looked messy. 8/10 would try again with more room.
Totally agree—mine always looks a little chaotic when the pot is snug. If you’ve got the rice barely covered, I’d just increase the pot size *or* add a splash more broth/coconut milk. Glad it still tasted amazing though!
Idk, I followed it and my rice was fine? Maybe your oven runs hot or your thighs were extra big. Also 25-30 min feels short for bone-in. Next time cover tighter or cook longer. 8/10 is pretty decent, I guess.
Awesome!
Awesome right back! This sounds super comforting—coconut rice + beans is a great combo.
Nice! I’ll admit I’m a little confused—25-30 min in the oven for bone-in thighs feels short to me. Might need longer? Still gonna try though 😅
