Spaghetti Carbonara with Butternut Squash

November 5, 2024

Spaghetti Carbonara with Butternut Squash is a delicious twist on the classic Italian pasta dish. This version combines the rich, creamy carbonara sauce with the sweetness and earthiness of roasted butternut squash, creating a balanced and flavorful dish. It’s perfect for fall or any time you want a comforting yet slightly lighter take on traditional carbonara.

The traditional carbonara sauce is made with eggs, parmesan cheese, pecorino Romano, and crispy pancetta or bacon. This rich and velvety sauce is tossed with hot pasta, allowing the heat to gently cook the eggs, creating a smooth, creamy coating for the spaghetti. The addition of roasted butternut squash adds a touch of sweetness and a beautiful, vibrant color to the dish. The squash is roasted with olive oil, salt, and pepper until caramelized and tender, which complements the savory carbonara sauce perfectly.

To make this dish, you start by roasting the butternut squash while the pasta is cooking. Once the pasta is done, the pancetta or bacon is crisped up in a pan, and the carbonara sauce is quickly made by combining eggs with grated cheese. The roasted squash is then mixed into the pasta along with the crispy pancetta, and the carbonara sauce is added to create a creamy, indulgent dish.

This version of carbonara retains all the comfort of the original while introducing a new layer of flavor. The butternut squash provides a natural sweetness that balances the salty pancetta and the richness of the creamy sauce. The dish is also easy to customize, add fresh herbs like sage or thyme for extra depth, or use a vegetarian bacon alternative for a meatless version.

Spaghetti Carbonara with Butternut Squash is a perfect fall dish that’s easy to make, comforting, and full of flavor. Whether you’re looking to impress guests or just want a cozy dinner, this dish is sure to satisfy.

Wow—this is comfort food with a twist. The squash makes it creamy without feeling heavy, and the pancetta/pepper combo is spot on.

  2. 2 stars
This was a disaster! The eggs scrambled instead of making a sauce. Not sure I followed it right.

  3. 3 stars
I used pre-grated Parmesan (oops). It tasted fine, but it didn’t melt as smoothly, so the sauce was thicker and less silky. Fresh cheese is worth it.

  4. User avatar terminatorXYZ says:

    4 stars
Followed it pretty closely—only thing is my sauce thickened a bit too fast. Maybe I should’ve kept more pasta water ready. Still tasted great though!

    1. User avatar virgen.mccullough says:

      5 stars
Nice! Yeah, keeping that pasta water really close by helps a ton—carbonara sauces can thicken fast once the egg hits the heat. Next time, try taking the pan off the heat a little earlier and dribble in the water while stirring until it looks glossy.

  5. 3 stars
Will try it but not sure if I like squash. Easy step tho, so I hope it turns out good!

    1. User avatar collette.herzog says:

      2 stars
Squash? Eww! But hey, maybe it will surprise you. We’ll see!

    2. 4 stars
I was skeptical about squash too, but it’s super tasty in this! Good luck!

  6. User avatar Slartibartfast says:

Loved it. My kid asked for seconds and said it tasted like “fall.” I did use pre-cubed squash to save time and it still worked.

    1. 4 stars
Not gonna lie I was nervous about the eggs. Like… raw yolks + warm pasta is a recipe for scramble town. But if you did it without curdling, ok I’ll try it. Also 20 min at 400°F for cubed squash feels a little fast? Maybe my oven runs hot.

    2. User avatar megan.dickens62 says:

      5 stars
Aww “tasted like fall” is the best review 😄 Pre-cubed squash is totally the move—glad it still came out creamy with the yolks.

  7. 5 stars
Not gonna lie, I thought I’d mess up the eggs part. But removing from heat and stirring fast saved me. Great comfort food.

    1. 5 stars
Yes!! I’ve totally scrambled carbonara before—turning it off the heat first is the move. Love that the butternut squash makes it extra cozy.

  8. User avatar frank.simonis says:

    5 stars
This is SUCH a clever twist on carbonara. The roasted squash adds this sweet, silky vibe and the pancetta is perfectly salty. I added a little extra pepper and it was restaurant-level.

  9. User avatar NAFO.SUPREMACY says:

    4 stars
My oven runs hot so 20 min wasn’t enough; I had to roast longer until it was really tender. Other than that, solid.

  10. 4 stars
I was skeptical about putting butternut in carbonara, but it actually works. I used a bit more pasta water and it came together silky.

  11. 4 stars
Flavor was nice, but my sauce got a little thick too fast. I think I didn’t add enough pasta water when mixing the egg/cheese.

    1. 2 stars
I think your problem is the squash. If you roast it too long it gets kinda pasty and then it thickens everything. Also I always add some milk or cream to “fix” it—maybe try that? 😅

    2. User avatar billye.price91 says:

      5 stars
Totally makes sense—carbonara sauce thickens fast once the egg yolk hits the hot pasta. Next time try adding the reserved pasta water a little at a time while you’re mixing off-heat (or wait a few seconds after turning the heat off).

  12. User avatar sanford.crona4 says:

    2 stars
Not a fan… the squash felt weird in carbonara. I prefer the classic style. 2/5

  13. User avatar waldo.abernathy25 says:

    2 stars
Quick and easy recipe! But also kinda hard for me to keep everything from burning, lol.

  14. 3 stars
How can you call this carbonara? Carbonara needs guanciale, not pancetta… 🤔

  15. User avatar fred.schowalter41 says:

    4 stars
Not gonna lie, I was skeptical about squash in carbonara, but it works. The texture is a little sweeter than classic, though. Next time I’ll add a touch more black pepper and maybe less squash.

    1. User avatar mel.carroll98 says:

      5 stars
Honestly same—I didn’t think squash belonged in carbonara, but I’m glad it works. Your pepper/squash balance idea sounds spot on.

  16. 4 stars
This is the kind of recipe that makes you trust the process… until you realize you don’t have room temp egg yolks. I whisked them anyway and prayed 😅

    1. User avatar santo.deckow71 says:

      3 stars
Room temp egg yolks are not optional tho 😬 I’d be worried the yolks would scramble and turn into cheese curds. Also 4 yolks seems like a lot for 12 oz spaghetti—might be heavy. Still, if it worked then props.

    2. User avatar pat.quitzon84 says:

      5 stars
Haha I’ve totally been there—carbonara is basically a “heat control + hope” sport. Next time toss the yolks with a splash of warm pasta water first and it helps them cooperate without scrambling 😅

  17. 5 stars
Yummy! I made it last night and it was a hit. Thanks for the recipe! 😋

  18. User avatar cortez.langworth29 says:

    2 stars
Can’t get behind roasting the squash first—waste of time in my opinion. Carbonara is supposed to be quick.

  19. User avatar deandre.gaylord says:

    5 stars
This was amazing! The butternut squash really elevates the dish. 5 stars!

    1. User avatar lacresha.adams8 says:

      2 stars
I’m not sure about that squash thing. Carbonara is supposed to be simple! Why mess with it?

    2. 5 stars
Totally agree! The squash adds such a nice sweetness. Did you try adding garlic bread on the side? Yummy!

  20. User avatar hyacinth.pouros93 says:

    5 stars
I made this and it turned out super creamy. I used a little extra pasta water and it came together fast. Pancetta was perfect.

  21. User avatar ShanksOnePiece says:

    5 stars
Scrumptious! Can’t believe how easy this was. My family loved it. Will be making again!

    1. User avatar cira.leannon88 says:

      5 stars
So glad to hear you loved it! It’s a family favorite in our house too. 😊

  22. User avatar lindsey.bahringer66 says:

    4 stars
I’m skeptical about putting squash in carbonara, but honestly it works. Texture is creamy and the flavor balance is nice.

    1. 5 stars
I was skeptical too, but the creamy texture makes sense—squash is basically doing some of the same work as a sauce. If you roast it well and don’t rush the egg step, it turns out great.

  23. User avatar selene.konopelski says:

    3 stars
Followed the steps exactly and still almost scrambled the yolks 😅. Next time I’ll let the pan cool more before mixing in the egg.

  24. 5 stars
This was surprisingly delicious! The squash added a great sweetness that balanced the savory pancetta. Will make again!

  25. 5 stars
This was absolutely delicious! The butternut squash added a nice sweetness. My family loved it!

  26. User avatar Captain Ginyu says:

    1 star
Too complicated for a weeknight meal. Takes ages to prepare! 🤦‍♂️

  27. 5 stars
This recipe is AMAZING! I never thought butternut squash could go with carbonara. So creamy and delicious!

  28. 4 stars
Garlic amount felt a little high? Maybe my cloves were huge. I’d reduce it next time, but the rest was solid and the pepper really popped.

  29. User avatar marna.sauer13 says:

    4 stars
Yummy but I forgot to get pancetta. Used bacon instead. Still good! 😂

  30. User avatar ernesto.boyer says:

    5 stars
Super easy and cozy. I used pecorino instead of parmesan and it worked. My only complaint is I wish the pepper was even more—like, don’t be shy.

  31. User avatar leigh.runte says:

    4 stars
Honestly, I didn’t think spaghetti should ever have squash. This recipe was a gamble and it paid off big time! Yum!

  32. User avatar althea.denesik2022 says:

    4 stars
Very creamy and delicious! I added extra garlic for flavor. Will make again! 😋

  33. 1 star
Butternut squash in carbonara? That’s a stretch. Not sure if I like it… 1 star.

  34. User avatar doyle.jenkins1969 says:

    5 stars
I made this for dinner and everyone went back for seconds. The sauce turned creamy without looking oily. Next time I’ll roast the squash a tiny bit longer for more caramelization.

    1. User avatar titus.doyle2021 says:

      5 stars
That’s awesome! Roasting a bit longer for more caramelization is exactly the move—glad it got creamy without turning oily. 🙌 I’m adding this to my list to try.

  35. User avatar Lumberjack says:

    4 stars
Yum! I used bacon instead of pancetta and it was still great. 4/5!

    1. User avatar eleanor.jacobson says:

      5 stars
Bacon is a good choice! Adds a nice smoky flavor. Glad you liked it!

    2. User avatar oPandariaNo says:

      2 stars
I dunno, isn’t it supposed to be with pancetta? Sounds kinda wrong to me.

  36. User avatar hassan.nolan says:

    2 stars
Spaghetti carbonara isn’t supposed to have squash! This isn’t the real recipe. 😠

  37. User avatar almeta.marquardt1965 says:

    2 stars
I think I accidentally cooked the eggs a little (oops). It turned into little cheesy bits instead of a smooth sauce. Still edible, just not the vibe I wanted.

  38. User avatar Issac Ratke II says:

    3 stars
I didn’t have pancetta, used bacon instead. It turned out fine, but I think it missed something.

  39. User avatar felecia.herzog says:

    3 stars
I tried this and it took me too long! I’m not a great cook. It came out ok tho, 3 stars.

  40. 4 stars
The pancetta step is key. Mine was a bit chewy because I rushed it, but once I crisped it more the whole dish improved.

    1. User avatar bernardo.jaskolski says:

      5 stars
Yes!! Pancetta needs that time—when it’s chewy it throws off the whole vibe. I’ve had the same thing happen when I rush. Once it’s properly crisp, the squash + egg sauce actually turns silky.

  41. User avatar Zaynabi says:

    2 stars
Meh. I think this would be better without the squash. Just stick to traditional carbonara.

  42. User avatar Ernie Paucek III says:

    2 stars
I don’t know about you, but this seems off. Carbonara without cream? Not traditional!

  43. User avatar julian.ankunding says:

    3 stars
I dunno, it sounds weird. Squash and pasta? Seems off. But I’ll give it a try, I guess.

  44. 4 stars
I was skeptical about the squash, but it adds a nice sweetness that balances the savory. Took me longer than 20 min for the squash though.

  45. User avatar rosario.cummings says:

    4 stars
Pretty tasty! I used pancetta but maybe mine was a bit too salty, so next time I’ll go lighter on the salt. The pepper-forward vibe is great.

  46. User avatar kasie.jakubowski82 says:

    5 stars
So delicious and I love the fall flavors! 🥰 Perfect with a glass of white wine!

  47. User avatar Grandpa Gohan says:

    3 stars
Love the idea, but 4 egg yolks feels like a lot. It was rich rich rich—maybe next time I’ll use 3 or balance with more pasta water.

    1. User avatar benjamin.johnson says:

      5 stars
Totally get it—4 yolks is *so* rich. I’d definitely try 3 next time, and yeah, a splash more pasta water helps loosen it up without losing that creamy vibe.

  48. User avatar Cave Bear says:

    5 stars
I made this for my family, and they loved it! My kids were skeptics at first, but they cleaned their plates!

    1. User avatar mindi.rutherford77 says:

      5 stars
That’s awesome! I’m so glad your kids liked it. My family is super picky too, but I’m gonna try this recipe for them. 🤞

  49. User avatar Dan Streetmentioner says:

    5 stars
This is a game changer! The butternut squash adds a lovely sweetness. Loved it! 😍

    1. User avatar isadora.harvey says:

      5 stars
I’m glad you loved it! Butternut squash in pasta is just genius! 🤩

  50. 3 stars
I followed the recipe exactly, but my sauce turned out too runny. Any tips?

  51. 4 stars
Soo good! I didn’t have pancetta, so I used bacon. Still worked great! Flavors are off the charts!

    1. User avatar mara.altenwerth says:

      4 stars
I can’t believe you used bacon instead of pancetta! That’s kinda wild, but if it tasted good, who cares? I’ll have to try that too!

  52. User avatar kristofer.kuhn47 says:

    4 stars
Not bad at all. Roasting the squash gives it great sweetness, but next time I’ll double the pepper like, way more. 1 tsp feels low.

  53. User avatar devona.skiles says:

    5 stars
Wow. I thought it would be weird but now I’m obsessed. Also super easy for a weeknight. My family asked for seconds.

  54. User avatar alison.hirthe says:

    4 stars
Mmm, tasted better than I expected! Even my kids who don’t usually eat squash liked it. Win-win!

  55. User avatar Chris Daugherty says:

    4 stars
Very nice! I just sprinkled some extra garlic on top. Yum! Will make again for sure.

    1. 5 stars
I totally agree! Garlic makes everything better. Glad you enjoyed it!

  56. User avatar Gurney Halleck says:

    2 stars
Just okay. The squash was too mushy for my taste. Maybe it’s just not for me. 🤷‍♀️

    1. User avatar russell.davis says:

      4 stars
I totally get you! The squash can get mushy. Maybe try it with zucchini next time? 🤔

  57. 2 stars
The pancetta amount felt small compared to the pasta, so mine was a bit lacking in savory punch. Flavor-wise I needed more bacon/cheese. Otherwise a solid idea.

    1. User avatar eura.brekke says:

      5 stars
Totally get that—4 oz pancetta with a whole 12 oz of pasta can feel a little timid. Next time I’d probably bump to 6–8 oz and maybe add a touch more Parmesan too. Great call on the “savory punch.”

    2. User avatar wendi.hand15 says:

      3 stars
I think it’s supposed to be lighter tho—like the squash kinda sweetens it and the pancetta shouldn’t be overpowering. I usually add extra pepper and a bit more cheese and it balances out. Maybe your pancetta was less salty?

  58. 4 stars
ok butternut squash carbonara is weird… i mean good weird. i probably make again tho lol

  59. 2 stars
I made this and it was honestly kinda mid. I love carbonara, but the squash sweetness threw me off. Next time I’ll use less squash or more pepper/salt.

  60. 3 stars
What even is butternut squash? Can I just use regular squash? This looks weird. 🤔

  61. User avatar Slaughterfish says:

    3 stars
I tried it with spaghetti and it was okay. The texture was kinda thick for my taste, so I ended up adding more pasta water. Otherwise decent.

    1. User avatar rosena.conn says:

      5 stars
Good call adding more pasta water—carbonara can get thick if the sauce seizes a bit. I usually keep a little extra on hand too. What kind of spaghetti were you using (thin/thick)?

  62. 4 stars
I followed it pretty much exactly, except I used smoked bacon instead of pancetta. Turned out great—just be sure to take it off the heat before adding the yolk mix so it doesn’t scramble.

  63. User avatar Mr. Prosser says:

    4 stars
Okay, I was skeptical about adding butternut squash, but it actually works. The sauce came out creamy without scrambling since I turned the heat off like the recipe says.

    1. User avatar yolando.murray says:

      5 stars
Love hearing that! I was worried the squash would make it taste weird, but “creamy without scrambling” is exactly what I’m after 😄 Turning off the heat is the key, for sure.

  64. User avatar maurita.schulist12 says:

    4 stars
Egg yolks + cheese + pepper = happiness. I add a little extra garlic too because why not.

  65. User avatar brendan.anderson says:

    3 stars
Not sure why people call it carbonara—there’s squash so it feels more like a fancy pasta bake in disguise. Still tasty though, just different from what I expect.

    1. User avatar natalia.hermiston1955 says:

      4 stars
I get what you mean—“carbonara” usually means no squash in the mix. But that roasted butternut really does change the vibe, more cozy and creamy like a bake than the classic silky egg sauce. Still, if it tastes good, I’m not gonna complain 😅

  66. User avatar gertude.nitzsche2010 says:

    4 stars
Quick and easy for a weeknight! My kids devoured it. Will make again for sure!

  67. User avatar Aubrey Thiel says:

    2 stars
Can I use whole eggs instead of yolks? I tried this once with a different recipe and it turned into scramble city 😅

  68. User avatar jami.swaniawski says:

    4 stars
Honestly I didn’t have pancetta so I used bacon. It still tasted like a carbonara-ish thing, just smokier. Not mad.

  69. User avatar wilbert.goodwin28 says:

    5 stars
Made this for my roommates and it disappeared fast. Everyone kept asking why it tasted so “restaurant-y.”

    1. 5 stars
That’s the dream 😂 “Restaurant-y” is exactly how it’s supposed to taste—crispy pancetta + the egg yolk/Parmesan emulsion really does it. I bet your roommates loved the peppery finish!

  70. User avatar basementDweller says:

    3 stars
Tried it tonight—my eggs kinda thickened too quickly even though I pulled the pan off the heat. Still tasted good, just not as silky.

  71. 5 stars
This was surprisingly cozy. The butternut squash makes it creamy without feeling heavy, and the pepper really pops. I’d make it again for sure.

  72. User avatar treva.sauer56 says:

    4 stars
My pancetta took longer to crisp than expected, and my garlic browned a little, but the final dish still slapped. Would make again.

    1. User avatar patrick.ledner says:

      2 stars
Mine would never work like that… you roast squash 20 mins at 400, then add egg yolks—seems like scramble city. Also garlic gets brown easy, so maybe don’t add it with the pancetta? Idk, but if it slapped for you, okay. 🙂

    2. User avatar felice.watsica says:

      5 stars
Hah yes—carbonara timing is always a little chaotic. I’ve also had pancetta take longer than expected. Next time maybe start it on slightly lower heat and give it more patience, so the garlic doesn’t go too dark. Glad it still slapped though 😄

  73. 4 stars
Super easy and pretty tasty. I used pre-cubed squash (lazy) and it turned out fine. Family asked for seconds.

  74. User avatar dannie.douglas72 says:

    2 stars
Honestly, carbonara without guanciale is heresy. And adding squash is even more questionable. Flavor’s fine, but it’s not “true” carbonara.

  75. User avatar burton.hammes40 says:

    4 stars
I didn’t have pancetta, so I used bacon. It was fine, but I think pancetta would be better—bacon was a bit smokier than I wanted.

  76. 2 stars
Carbonara without guanciale is sacrilege /j 😅 But seriously, it’s still decent. The garlic + pancetta combo is doing a lot of work here.

    1. User avatar federico.hoeger8 says:

      5 stars
Honestly I don’t think it’s sacrilege 😅 Butternut squash carbonara sounds kinda genius—like sweet + salty. That pancetta + garlic base probably keeps it from tasting “off.” Gonna try it!

  77. User avatar fabian.rosenbaum says:

    4 stars
Garlic + pancetta + parm = yes. The squash part kinda surprised me but didn’t ruin anything. I’ll do this again.

  78. User avatar season.gibson2022 says:

    5 stars
Wow, I didn’t expect butternut squash to work in carbonara, but it’s actually genius. The sauce came out creamy and not eggy once I followed the “off heat” step.

    1. User avatar malvina.kuvalis74 says:

      4 stars
Not gonna lie, butternut squash carbonara sounds kinda wrong to me 😅 but I tried it and it was actually pretty good. I think I under-roasted mine though, still a little firm.

    2. 5 stars
I was skeptical too, but the off-heat step is everything. My sauce stayed silky and creamy—no scrambled bits. Definitely making this again with extra pepper.

  79. User avatar Gandalf the Grey says:

    3 stars
Why 4 egg yolks? Seems like a weird ratio. I think it should be more egg white or something… but I followed it and it was rich.

  80. 4 stars
Good recipe overall. I will say, my squash took longer than 20 minutes at 400°F—maybe my cubes were bigger. Just keep roasting until tender.
