Room temp egg yolks are not optional tho 😬 I’d be worried the yolks would scramble and turn into cheese curds. Also 4 yolks seems like a lot for 12 oz spaghetti—might be heavy. Still, if it worked then props.
Haha I’ve totally been there—carbonara is basically a “heat control + hope” sport. Next time toss the yolks with a splash of warm pasta water first and it helps them cooperate without scrambling 😅
