Souvlaki Breakfast Skillet with Beef and Veggies

August 9, 2023

Who says souvlaki has to wait until lunch or dinner? This Souvlaki Breakfast Skillet with Beef and Veggies brings bold Mediterranean flavor straight to your morning table. It’s hearty, colorful, and packed with protein and veggies to start your day on a strong and savory note.

Inspired by the classic Greek street food, this breakfast skillet swaps the skewers for a one-pan approach. Tender marinated beef is the star, seasoned with garlic, lemon juice, oregano, and olive oil, then quickly seared until juicy and golden. The marinade is simple but powerful, giving the meat a tangy, herby kick that screams souvlaki.

The skillet is built up with a mix of sautéed vegetables. Bell peppers, zucchini, and red onion bring brightness and crunch, while cherry tomatoes add a juicy burst of flavor. Everything gets cooked together in the same pan, soaking up the leftover beef drippings and forming a savory base that tastes like it’s been roasting in a taverna kitchen.

For the breakfast twist, you’ll crack a few eggs right into the skillet and let them cook until the whites are set but the yolks are still runny. The richness of the eggs pairs beautifully with the charred beef and veggies. Sprinkle on some crumbled feta cheese just before serving, and you’ve got a satisfying, flavor-packed breakfast that feels both rustic and refined.

Serve this straight from the pan with warm pita on the side or a few roasted potatoes if you’re really hungry. It’s the kind of breakfast that doesn’t feel rushed, one that makes you slow down, savor, and maybe even imagine you’re enjoying it on a sunny balcony somewhere in Athens.

Whether you’re feeding a crowd or treating yourself to a weekend brunch, this Souvlaki Breakfast Skillet is a delicious way to reinvent traditional flavors with a morning-friendly twist. One skillet, tons of flavor, and a guaranteed satisfying start to your day.

Not sure what souvlaki is but I used some other spices. Came out ok, but what’s with the eggs on the beef?

Made it for brunch and it was honestly better than I expected. I used a little extra pepper and it still wasn’t too salty. Super filling.

    1. 5 stars
Wow, this sounds like a winner. I usually mess up skillets and end up with bland beef, but adding the souvlaki seasoning to the veg makes sense. I’ll try it for brunch—thanks!

I’m not sure about combining beef and eggs like that. Seemed a bit weird to me. I’ll stick to my omelet.

I understand where you’re coming from, but the flavors really meld well together! Give it a try, you might be surprised!

I tried this too and it was super good! Didn’t know cooking could be this easy. I used chicken instead of beef, still yum! 😋

    2. User avatar kristy.krajcik95 says:

I dunno, it seems a bit too much to cook for breakfast. Sounds fancy for an early meal. How does that even work?

  12. User avatar cyril.haley43 says:

    5 stars
I just fried everything together without any measuring! It was slammin!

    1. User avatar katherine.toy says:

      3 stars
You didn’t measure? I would be worried it wouldn’t taste right. But if it worked for you, that’s cool!

    2. 5 stars
That sounds awesome! Sometimes the best meals come from just throwing things together. 😋

  13. User avatar paulita.reichel13 says:

    3 stars
Is it really necessary to use souvlaki seasoning? Can’t I just season with salt and pepper?

  14. User avatar syble.sipes2000 says:

    2 stars
I don’t even know what souvlaki seasoning is. Can I buy it at the store or what?

  15. 5 stars
It tastes like a takeout version of breakfast, which is awesome. I added a squeeze of lemon at the end and it made it pop even more. Would make again.

    1. User avatar kelley.waelchi48 says:

      5 stars
Totally agree—this does taste like legit takeout breakfast. I’m glad the lemon tip worked too; I bet it really brightens up the souvlaki seasoning. Making this again for sure.

  16. User avatar pamela.metz1973 says:

    2 stars
Souvlaki seasoning? Never heard of it. Don’t think I’ll make this again. Sounds complicated.

  17. User avatar Mrs. Danica Waters says:

    3 stars
Not bad but kind of salty for me. Also 2 tbsp seasoning seems like a lot—maybe depends on brand. I’ll reduce next time and add more veggies.

    1. User avatar johnnie.stiedemann99 says:

      3 stars
2 tbsp seems like a LOT ngl 😅 but maybe my seasoning blend is stronger. I’d add salt last instead of with it—some mixes already have it. Thanks for the heads-up!

    2. User avatar jenette.jacobs says:

      4 stars
Totally get it—souvlaki seasoning can be super salty depending on the brand. I usually start with like 1 tbsp and then taste. Next time you’ll be set!

  18. User avatar Frankie and Benjy says:

    4 stars
Um, can you use chicken instead? I’m not a beef fan, but I want to try this. Would that work?

    1. User avatar lacy.okuneva says:

      2 stars
I guess you could, but I’ve never tried it with chicken. Wouldn’t soy sauce or something work better?

    2. User avatar ezekiel.cartwright25 says:

      5 stars
Yes, you can definitely use chicken! Just make sure to adjust the cooking time since chicken might cook a bit differently than beef. You can marinate it with the souvlaki seasoning too for extra flavor!

  19. 3 stars
I followed the recipe exactly, and the eggs turned out rubbery. Maybe cook ’em less? Not sure I’d make it again.

    1. 4 stars
I had the same issue with the eggs! They were way too firm for my taste. Maybe next time try cutting down the cooking time like you said. Hope it helps!

  20. 1 star
Just beef and eggs? Not for me, man. I like my breakfast sweet. But whatever!

  21. User avatar kelly.schamberger73 says:

    3 stars
I dunno, it seemed too oily for me. Maybe I did something wrong? 😕

    1. User avatar Floria Corkery says:

      4 stars
It can be a bit oily if you use too much olive oil, but it should balance out with the veggies! Don’t worry, you’re not the only one who feels that way. 😊

    2. User avatar Jerrie Buckridge says:

      3 stars
Nah, I think it’s just how it is. Souvlaki is supposed to have a bit of grease. Just drain some off if you think it’s too much. 🥴

  22. 2 stars
I don’t know if souvlaki seasoning is meant for breakfast… tasted weird to me. Won’t be trying again.

  23. User avatar arianna.kunze5 says:

    4 stars
I followed the steps but my eggs cooked a bit too firm even though I covered it. Next time I’ll pull it sooner. Flavor still great though—kinda like Greek comfort food.

    1. User avatar Oscar Wolff II says:

      4 stars
Hmm that happens. I think 4–5 minutes can vary a lot depending on your stove and skillet thickness—next time try checking at 3 minutes and keep the heat closer to medium-low. Glad it still tasted great though!

    2. User avatar Miss Kurtis Kiehn says:

      3 stars
Greek comfort food? lol I’m glad. But if the eggs were too firm, you might have cooked too long after covering—also why 4 eggs in a skillet this small? Mine always dries out if I let it sit.

  24. User avatar Dee Hermiston says:

    1 star
Souvlaki for breakfast?! Who would ever think of that? I don’t know, seems strange to me.

  25. 2 stars
Meh, I expected more flavor. Next time I’ll add more spice or somethin’.

    1. User avatar traci.wisozk31 says:

      4 stars
I get it! It can definitely be bland if the spices aren’t enough. Honestly, I usually toss in some garlic and paprika too. Makes a big difference!

  26. User avatar hildegarde.raynor says:

    4 stars
Pretty tasty, but my skillet felt a little crowded so I had to cook the veggies a touch longer. Still, the flavors were awesome and the runny yolks were perfect.

  27. User avatar lance.champlin says:

    3 stars
Quick and easy! But the beef was a bit tough, maybe I cooked it too long?

  28. 4 stars
Quick and easy! My kids loved it! Will make again 🥰.

  29. 4 stars
Made this with my family! It was super fun cracking the eggs, but the beef was a lil tough. Still tasty!

  30. User avatar lizette.abbott57 says:

    2 stars
Honestly, I was skeptical about using souvlaki seasoning in the morning. It was too much for me. Just not for breakfast.

    1. 5 stars
Nah, I think it’s delicious! A bit spicy but that’s what breakfast needs, right? 😄

    2. User avatar signe.russel says:

      4 stars
I totally get you! Souvlaki for breakfast is a bit much. I prefer traditional eggs and bacon, more my style!

  31. User avatar merry.corwin43 says:

    1 star
Too much work for breakfast. I’ll stick to cereal. 😒

  32. 4 stars
Cheap ingredients, big flavor. I was skeptical about putting souvlaki seasoning in a breakfast dish, but it’s honestly really good. 10/10 would (probably) eat again.

  33. User avatar heather.hammes says:

    2 stars
I don’t know about souvlaki seasoning, it seems kinda weird to me for breakfast. Didn’t turn out great.

  34. 2 stars
Why do you put eggs in it? Seems like more work than it’s worth. 🙄

    1. 5 stars
Eggs add protein and flavor. They make it more hearty! 😊

  35. 4 stars
Really flavorful, but I might’ve sliced the zucchini too thick because it took longer to soften. Still delicious though—next time I’ll cut smaller and keep an eye on the eggs.

  36. User avatar basementDweller says:

    5 stars
This was amazing! The beef was super tender and the flavors were on point. Definitely a repeat recipe!

  37. User avatar vanesa.fadel18 says:

    3 stars
Did it all right, but my eggs ended up scrambled. Oops! 😂

  38. 5 stars
Simple and tasty! My kids loved it, and they’re usually picky eaters. Will make it again for sure! ⭐⭐⭐⭐⭐

  39. 2 stars
I don’t know, using beef for breakfast? Seems weird to me…

  40. User avatar illa.gleason42 says:

    2 stars
Souvlaki for breakfast? Sounds weird. I’m skeptical. 🧐

    1. User avatar vance.christiansen77 says:

      5 stars
I know it sounds weird, but trust me, it’s delicious! Souvlaki is great anytime. 😋

  41. User avatar corliss.heaney says:

My girlfriend said she wants me to make this agian like every week now. So I guess it’s good?

  42. User avatar emery.luettgen77 says:

    4 stars
Easy to make and full of flavor! Will definitely make again. Just gotta watch the eggs so they don’t overcook!

  43. User avatar Mr. Toby Jenkins says:

    1 star
The beef was tough and the seasoning didn’t taste right. Maybe it’s my fault but I won’t try again.

    1. 4 stars
I’m sorry to hear that! Maybe try marinating the beef next time? It helps tenderize it!

  44. User avatar rickiestmorty says:

    5 stars
Made this for breakfast this morning and it’s honestly such a great mix of savory + fresh veggies. The souvlaki seasoning really shines. My eggs came out perfectly runny too—will definitely repeat.

  45. User avatar MrsLucyG says:

    4 stars
Just made this but forgot the zucchini. Still tasted good but not as colorful. Oops!

  46. User avatar jacinda.hintz60 says:

    2 stars
Not bad, but my family said “meh” 😂

    1. User avatar eufemia.howe4 says:

      4 stars
“Meh” is still better than nothing 😂 Next time I’d crank the souvlaki seasoning a bit and maybe add a squeeze of lemon at the end. That usually wakes it up!

    2. User avatar cornelius.parker63 says:

      2 stars
I dunno… sounds good but my family would also say meh. Too many veggies? Maybe use ground beef instead and cook the eggs longer so it’s more like scrambled. Also I think 2 tbsp seasoning is a lot? Idk lol

  47. User avatar branden.cormier2019 says:

    5 stars
Great recipe, but I added way more zucchini, and it was perfect! Super filling and healthy.

  48. User avatar mercy.towne says:

    1 star
This is too complicated for breakfast! Just scramble some eggs and call it a day. No need for the skillet.

    1. User avatar wellRespected says:

      4 stars
I totally get what you mean! Sometimes simple is just better, especially in the morning. But give it a try, you might actually like it!

  52. User avatar elwood.glover says:

    3 stars
I followed it exactly and it tasted fine… until my eggs set too hard. I think I needed less time or lower heat when covering. Flavor was solid though.

  53. User avatar Genghis Khan says:

    5 stars
It was a hit with my kids! They loved it! 🌟🌟🌟🌟🌟

  54. User avatar brendan.dibbert85 says:

    2. User avatar rory.mayer28 says:

      3 stars
Really? Breakfast with beef and all that? Seems a bit much for morning. I like my eggs plain, not with veggies. But hey, if it works for you!

  55. User avatar wilton.padberg35 says:

    1 star
Bleh, my kids didn’t like it. They said it was too ‘weird’ for breakfast! 😒

What the heck is souvlaki? I just want a breakfast thing with eggs and meat. Not sure this is for me.

  58. 4 stars
Gonna try this but with tofu instead, you know, for healthy vibes.

  59. User avatar lola.legros1987 says:

    3 stars
Way too much work for a week morning, not gonna lie. Also 2 tbsp souvlaki seasoning sounds like a lot—maybe my brand is stronger. Still edible, but I’d cut it in half next time.

  60. 1 star
Didn’t taste right, maybe cause I used too much salt? 🤷‍♂️ I’m not a good cook; dont know what u mean by “bite-sized pieces” 🤔
