Ingredients
  

  • 200 g shrimp peeled and deveined
  • 250 g pasta your choice, cooked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup mayonnaise
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil
  • 1 tsp dill fresh, chopped
  • to taste salt
  • to taste black pepper

Instructions
 

  • Boil pasta according to package instructions, then drain and rinse under cold water to stop the cooking process.
  • Heat olive oil in a skillet over medium heat. Add shrimp and cook for 3-4 minutes until pink and opaque. Remove from skillet and set aside to cool.
  • In a large bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
  • In a separate small bowl, whisk together mayonnaise, lemon juice, and dill. Add salt and black pepper to taste.
  • Pour dressing over the pasta and shrimp mixture, tossing gently to combine. Adjust seasoning if necessary.
  • Refrigerate for 30 minutes before serving to allow flavors to meld. Serve chilled.

      I totally get what you’re saying! Not everyone is a shrimp fan, but I think you could easily swap it out for chicken or just add more veggies instead. Glad you found it okay, though!

    The steps are simple, but I’m confused about rinsing the pasta. Shouldn’t you cool it without rinsing? I did rinse anyway and it turned out fine.

      I always skip rinsing and just cool it with a quick toss in the bowl. If you rinse, you might lose a bit of that starch that helps the dressing cling, but yours turned out fine so I guess it works for this recipe.
