Ingredients
  

  • 1 lb sausage
  • 8 oz mushrooms sliced
  • 1 bell pepper diced
  • onion small, diced
  • 2 cloves garlic minced
  • 6 eggs
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • parsley for garnish

Instructions
 

  • In a large skillet, cook the sausage over medium heat until browned and cooked through. Remove from skillet and set aside.
  • In the same skillet, add the mushrooms, bell pepper, onion, and garlic. Cook until vegetables are softened and mushrooms have released their liquid.
  • Meanwhile, in a medium bowl, whisk together the eggs, salt, and pepper.
  • Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Cook, stirring occasionally, until the eggs are scrambled and cooked through.
  • Return the cooked sausage to the skillet and stir to combine.
  • Sprinkle the shredded cheddar cheese on top and cover the skillet until the cheese is melted.
  • Garnish with fresh parsley and serve hot.

      Sorry that happened! With 6 eggs, they can go dry if the scramble gets overcooked—I’d try pulling them when they’re still slightly soft and finishing with the cheese cover for less time. Also for salt/pepper: start with ~1/2 tsp salt and 1/4 tsp black pepper (then adjust). Since sausage is often salty, you may need less salt than you think. Next time undercooking + more cheese is a solid plan 😄

      Yeah I agree—6 eggs is a lot. But for a breakfast skillet I actually like it extra-rich. If you’re feeding fewer people, I’d do 4 eggs and it’ll still be great.

      Sounds good, but I’m not sure about adding smoked paprika with breakfast eggs—might overpower the mushrooms? I’d rather just add a pinch of chili flakes than hot sauce. Also how much salt do you use exactly?

      Totally agree—this is one of those “weekend breakfast but doable” recipes. Hot sausage is the move. I’ve also tried a tiny dash of hot sauce at the end and it really wakes everything up.

    My bell pepper was way too big and my onion cooked uneven. But when I mixed everything it turned out fine. Pretty forgiving recipe.

      My onion was also cooking uneven and I thought I ruined it 😅. Maybe my heat was too high? Still, after mixing with the eggs it tasted good. I’d just cut everything smaller next time.
