Roasted Green Beans and Asparagus

March 4, 2024

Sometimes, the simplest dishes are the most satisfying. Roasted green beans and asparagus are the perfect example, a quick, healthy side that packs a punch of flavor without requiring much effort. This recipe lets the natural sweetness and crispness of the vegetables shine, with just the right amount of seasoning to enhance their taste.

Start with fresh, vibrant green beans and asparagus. Both vegetables are in season in the spring, so they bring a refreshing, bright flavor to your plate. The key to making them truly shine is roasting. Roasting caramelizes the natural sugars in the veggies, giving them a crispy exterior and a tender interior. It also enhances their flavor, adding a slight smokiness that makes them even more irresistible.

To prepare, simply trim the tough ends of the asparagus and the stem of the green beans. Toss them in olive oil, then season with salt, pepper, and a pinch of garlic powder or crushed red pepper flakes for a bit of heat. You can also add a squeeze of lemon or zest for brightness, or sprinkle with parmesan cheese for an extra savory touch.

Spread the vegetables out in an even layer on a baking sheet to ensure they roast evenly. The vegetables should be roasted at 425°F (220°C) for about 15-20 minutes, tossing halfway through for that perfect even crisp. The result is golden, crispy edges with a tender bite, a simple side dish that elevates any main course.

These roasted green beans and asparagus pair well with virtually any protein, from grilled chicken to steak or fish. They’re perfect for a weeknight dinner or a holiday spread, and they require minimal prep, so you can focus on other dishes.

Whether you’re looking for an easy side to round out a meal or craving a vegetable dish that feels indulgent, roasted green beans and asparagus deliver both flavor and texture in every bite. It’s the kind of dish you’ll make over and over again.

I didn’t have asparagus, so I used broccoli instead. Still turned out decent, but I’m sure asparagus is better.

I tried this but the green beans were too crunchy for my liking. I think I will roast them longer next time.

    1. 3 stars
I think you should just follow the recipe. They shouldn’t be too crunchy if you roast them long enough! Maybe try 20 mins next time.

  4. User avatar milagro.koelpin78 says:

Absolutely delicious! I added some parmesan cheese on top after roasting. Yum!

Way too much garlic powder for my taste. Didn’t like it at all! 😬

Honestly, I think this is too plain. Like, could use Parmesan or something. As written it feels unfinished.

  9. User avatar jeannetta.strosin2009 says:

    3 stars
Mine turned out a little bland even with the salt/pepper. I think my garlic powder was old? Also, I may have overcrowded the pan so they steamed a bit.

Lol, roasted beans… never thought we’d be eating like this. Who’s next? Kidding, it was fine.

Dis man here don’t know what he is talkin about. You need to boil those first!

    1. User avatar Falmer Nightprowler says:

      4 stars
I usually boil veggies first too, but roasting gives them a nice flavor! Just gotta try it to see how it turns out.

  12. User avatar clemmie.dubuque3 says:

    3 stars
I don’t have asparagus, can I just use broccoli instead? Anyone tried that?

  13. User avatar katheleen.paucek says:

    5 stars
I thought asparagus was just for fancy dinners, but this was easy! My kids even liked it. Surprised!

  14. 4 stars
Is 425°F really necessary? My oven tends to burn things that hot.

    1. User avatar donnie.ankunding2004 says:

      3 stars
425°F is better for roasting! Maybe try adjusting the time instead? Good luck!

    2. 4 stars
I think you can lower the temp a bit, like 400°F. Just keep an eye on them! Burning veggies isn’t fun!

  15. User avatar Tricia McMillan says:

    5 stars
Wow this is super easy! My kids even ate their greens without complaining.

  16. User avatar shanon.schaden65 says:

    1 star
It’s just veggies?? I don’t get what all the fuss is about. Why not fry them instead?

  17. User avatar shandi.huels17 says:

    3 stars
Not sure if my oven runs hot, but mine got browned way faster than 15 minutes. I’d keep an eye on it after 12.

    1. User avatar refugia.doyle22 says:

      5 stars
Good call—my oven definitely runs hot too. I usually start checking around 10–12 minutes and just pull them when they’re blistered and tender, not overdone.

    2. 4 stars
Maybe you cut them too small? Mine browned fast too but I think it was the pan—baked on a dark sheet and it cooks harder. I’d try a lighter baking sheet or lower temp a bit.

  18. User avatar cletus.weber says:

    3 stars
Is asparagus supposed to taste like that? I’ve only tried it in a can before. 🤷‍♂️

  19. User avatar Majin Vegeta says:

    5 stars
Roasted veggies are da best! Man, this is my go-to side dish now.

  20. User avatar Lunkwill and Fook says:

    4 stars
Honestly, 15 minutes felt a little short for my oven. I roasted mine closer to 22 and they got the texture I wanted. Otherwise pretty straightforward and tasty.

    1. User avatar Deep Thought says:

      5 stars
Totally agree—my oven runs hot/cold depending on the day, so 15 min can be a gamble. 22 minutes sounds about right if you like them more browned and less “just-tender.” What pan did you use (dark/black sheet vs shiny)?

  21. User avatar MrsLucyG says:

    4 stars
I dnt use green beans usually but this recipe made them tasty. Thanks!

  22. User avatar Death Hound says:

    2 stars
Wasn’t impressed. The green beans were too chewy for my taste. I guess I prefer them steamed.

  23. User avatar shon.hammes1992 says:

    5 stars
This is a game changer! So simple yet so tasty. Loved how the garlic powder made it pop! Definitely making this again.

  24. 3 stars
Won’t lie, I didn’t trim as well and some ends got tough. Still decent flavor, but prep matters.

    1. User avatar krystyna.goyette says:

      5 stars
Totally agree—tough ends are usually trimming, not the seasoning. Next time just take that little extra minute and cut them all uniform so they roast evenly.

  25. User avatar Malia Cummings says:

    1 star
Made this yesterday, but forgot the olive oil. It was a disaster, never will I forget again.

  26. User avatar Cave Bear says:

Yummy! I added Parmesan cheese on top before roasting, amazing flavor!

    1. User avatar doria.schumm80 says:

Parmesan sounds great! I might try that next time. Thanks for the tip!

  28. User avatar winifred.kassulke1980 says:

    3 stars
What if I add some cheese on top? 🤔

    1. 5 stars
Cheese sounds great! Adds flavor for sure. Just get some parmesan or feta, it’ll be yummy! 😋

  29. 1 star
This ain’t it. Green beans just don’t belong in my kitchen. Stick to fries and burgers, that’s what I say! 🍔

  30. User avatar dale.bartell1957 says:

    4 stars
Good simple side. I added a squeeze of lemon after roasting and it was even better. Would make again for sure.

  31. User avatar tijuana.blanda69 says:

    3 stars
I thought the garlic powder was too strong. I would skip it next time.

  32. 2 stars
Green beans are good but asparagus? Eww.

  33. User avatar matthew.kshlerin95 says:

    4 stars
Yum! I added some balsamic vinegar and put some grated parmesan on top after roasting. So good!

  35. 5 stars
This turned out amazing! I added some parmesan cheese at the end and it was a game changer. Definitely making this again! 😊

I just can’t eat asparagus, so I left it out and added more beans instead. Still yum!

  37. User avatar Grunthos the Flatulent says:

    3 stars
I didn’t have asparagus, so I just used more green beans. Still came out pretty good, but I feel like it’s missing something. Maybe some cheese next time?

  38. 3 stars
Wait, are we supposed to peel the asparagus? I just cook it as is but kinda confused about that. Anyway, it was decent.

  39. 2 stars
Honestly, they turned out kind of bland. Maybe I measured wrong? Still ate them though, because veggies are veggies lol.

  40. User avatar edna.blick18 says:

    4 stars
I think you can add lemon zest for extra flavor. I did that and it was awesome!

  41. 2 stars
I love green beans but asparagus? Not for me. Why would you mix them? Just stick to beans!

  42. 5 stars
Perfect for my diet! loved the crunchiness! <3

  43. User avatar camilla.bechtelar18 says:

Five stars all day! Super easy and tasty. My kids even ate their veggies without complaining! 🎉

I tried making this but ended up burning them. Maybe I should’ve checked sooner than 15 minutes. 😅

  45. User avatar jamar.mclaughlin says:

    5 stars
425°F seems high… I was nervous but everything browned nicely. I’d just keep an eye on them so they don’t overcook.

    1. User avatar faustino.williamson8 says:

      5 stars
Yeah 425°F sounds scary at first, but the timing is what saves it. I usually check at 15 minutes and pull them when they’re bright and just tender—browning is the goal!

  46. 5 stars
Quick and easy! I prepped everything in less than 10 mins! This is my new go-to veggie recipe.

  47. User avatar kasey.walker40 says:

    3 stars
This is fine but I feel like it needs more seasoning—like maybe some chili flakes or parmesan. Otherwise it’s kinda plain compared to what I’m used to.

  48. 5 stars
This is my new favorite! Simple and packed with flavor!

  49. User avatar alfonso.swift says:

    2 stars
Is this vegan? Someone help, I got confused with ingredients.

    1. 5 stars
Yes, this recipe is vegan! All the ingredients are plant-based.

  50. User avatar augustine.boehm1952 says:

    4 stars
Tasted good. But I used too much salt by accident. Gotta watch it next time.

  51. User avatar wellRespected says:

Legendary recipe! Perfect side dish for my chicken! Everyone loved it!

  52. User avatar jeanett.mcdermott10 says:

    2 stars
425F?? That seems too hot for veggies, they’ll burn. Mine did get a bit charred around the edges but I still ate them. Next time I’ll lower the heat.

  53. User avatar cedrick.thompson1982 says:

    2 stars
Garlic powder? Nah, fresh garlic is the way to go! 😂

  54. 5 stars
So good! Fresh veggies are the best! Will make again.

  55. User avatar tissues_with_issues says:

    2 stars
I don’t know why my green beans turned mushy. Followed the recipe but maybe my oven’s too hot or somethin’.

  56. User avatar Hillman Hunter says:

    3 stars
Not bad, but I think it needed more seasoning. I could barely taste the garlic.

  57. User avatar ethyl.koepp22 says:

    4 stars
I cant cook veggies man, got burned the last time. This looks easy tho.

    1. User avatar Peregrin Took says:

Don’t worry! You got this! Just keep an eye on them while they roast.

    2. User avatar ezekiel.schulist2014 says:

Easy? I don’t know about that. Veggies can be tricky. What if they burn again?

  58. 4 stars
I didn’t have garlic powder so I used onion instead. Still good!

  59. User avatar frederick.kub69 says:

    2 stars
I just flopped the whole thing in the oven. I forgot to check the time! 😅

  60. 5 stars
My family is picky, but they actually liked this! Green beans for the win! 🎉

  61. User avatar keri.smith81 says:

Green beans and asparagus? Why not just use one? Seems like overkill.

  62. User avatar karina.moore53 says:

    4 stars
    Looks good. Yumm

  63. User avatar kay.hoeger35 says:

    4 stars
Not bad! The asparagus roasted better than expected—tender and not stringy. Green beans were also nice.

    1. 5 stars
Totally agree—425°F really helps them caramelize without turning mushy. I also do them on the same sheet so they roast evenly. Nice review!

    2. User avatar delfina.rogahn says:

      3 stars
Sounds good, but I’m not sure about the garlic powder. Would fresh garlic burn at that temp? I usually go way lighter on seasoning or mine get bitter. Still, might try it though!

  64. 1 star
This is basically just a mix of veggies with some oil. Not impressed. 1 star.

Super easy recipe. Just threw it in the oven and forgot about it. Came out great!

    1. User avatar terminatorXYZ says:

      2 stars
I dunno, just throwing it in the oven sounds risky. What if it burns? I like to watch my food when it cooks.

    2. User avatar Mellie Bednar says:

Glad to hear it turned out great! I love easy recipes like this. Will definitely try it myself!
