Roasted Green Beans and Asparagus

March 4, 2024

Sometimes, the simplest dishes are the most satisfying. Roasted green beans and asparagus are the perfect example, a quick, healthy side that packs a punch of flavor without requiring much effort. This recipe lets the natural sweetness and crispness of the vegetables shine, with just the right amount of seasoning to enhance their taste.

Start with fresh, vibrant green beans and asparagus. Both vegetables are in season in the spring, so they bring a refreshing, bright flavor to your plate. The key to making them truly shine is roasting. Roasting caramelizes the natural sugars in the veggies, giving them a crispy exterior and a tender interior. It also enhances their flavor, adding a slight smokiness that makes them even more irresistible.

To prepare, simply trim the tough ends of the asparagus and the stem of the green beans. Toss them in olive oil, then season with salt, pepper, and a pinch of garlic powder or crushed red pepper flakes for a bit of heat. You can also add a squeeze of lemon or zest for brightness, or sprinkle with parmesan cheese for an extra savory touch.

Spread the vegetables out in an even layer on a baking sheet to ensure they roast evenly. The vegetables should be roasted at 425°F (220°C) for about 15-20 minutes, tossing halfway through for that perfect even crisp. The result is golden, crispy edges with a tender bite, a simple side dish that elevates any main course.

These roasted green beans and asparagus pair well with virtually any protein, from grilled chicken to steak or fish. They’re perfect for a weeknight dinner or a holiday spread, and they require minimal prep, so you can focus on other dishes.

Whether you’re looking for an easy side to round out a meal or craving a vegetable dish that feels indulgent, roasted green beans and asparagus deliver both flavor and texture in every bite. It’s the kind of dish you’ll make over and over again.

I didn’t have asparagus, so I used broccoli instead. Still turned out decent, but I’m sure asparagus is better.

I tried this but the green beans were too crunchy for my liking. I think I will roast them longer next time.

    1. 3 stars
I think you should just follow the recipe. They shouldn’t be too crunchy if you roast them long enough! Maybe try 20 mins next time.

Absolutely delicious! I added some parmesan cheese on top after roasting. Yum!

Way too much garlic powder for my taste. Didn’t like it at all! 😬

Honestly, I think this is too plain. Like, could use Parmesan or something. As written it feels unfinished.

  9. User avatar jeannetta.strosin2009 says:

Mine turned out a little bland even with the salt/pepper. I think my garlic powder was old? Also, I may have overcrowded the pan so they steamed a bit.

Lol, roasted beans… never thought we’d be eating like this. Who’s next? Kidding, it was fine.

Dis man here don’t know what he is talkin about. You need to boil those first!

    1. User avatar Falmer Nightprowler says:

I usually boil veggies first too, but roasting gives them a nice flavor! Just gotta try it to see how it turns out.

I don’t have asparagus, can I just use broccoli instead? Anyone tried that?

  13. User avatar katheleen.paucek says:

I thought asparagus was just for fancy dinners, but this was easy! My kids even liked it. Surprised!

  14. 4 stars
Is 425°F really necessary? My oven tends to burn things that hot.

    1. User avatar donnie.ankunding2004 says:

      3 stars
425°F is better for roasting! Maybe try adjusting the time instead? Good luck!

    2. 4 stars
I think you can lower the temp a bit, like 400°F. Just keep an eye on them! Burning veggies isn’t fun!

  15. User avatar Tricia McMillan says:

    5 stars
Wow this is super easy! My kids even ate their greens without complaining.

  16. User avatar shanon.schaden65 says:

It’s just veggies?? I don’t get what all the fuss is about. Why not fry them instead?

  17. User avatar shandi.huels17 says:

    3 stars
Not sure if my oven runs hot, but mine got browned way faster than 15 minutes. I’d keep an eye on it after 12.

    1. User avatar refugia.doyle22 says:

      5 stars
Good call—my oven definitely runs hot too. I usually start checking around 10–12 minutes and just pull them when they’re blistered and tender, not overdone.

    2. 4 stars
Maybe you cut them too small? Mine browned fast too but I think it was the pan—baked on a dark sheet and it cooks harder. I’d try a lighter baking sheet or lower temp a bit.

  18. User avatar cletus.weber says:

    3 stars
Is asparagus supposed to taste like that? I’ve only tried it in a can before. 🤷‍♂️

  19. User avatar Majin Vegeta says:

Roasted veggies are da best! Man, this is my go-to side dish now.

  20. User avatar Lunkwill and Fook says:

Honestly, 15 minutes felt a little short for my oven. I roasted mine closer to 22 and they got the texture I wanted. Otherwise pretty straightforward and tasty.

    1. User avatar Deep Thought says:

      5 stars
Totally agree—my oven runs hot/cold depending on the day, so 15 min can be a gamble. 22 minutes sounds about right if you like them more browned and less “just-tender.” What pan did you use (dark/black sheet vs shiny)?

I dnt use green beans usually but this recipe made them tasty. Thanks!

  22. User avatar Death Hound says:

Wasn’t impressed. The green beans were too chewy for my taste. I guess I prefer them steamed.

  23. User avatar shon.hammes1992 says:

This is a game changer! So simple yet so tasty. Loved how the garlic powder made it pop! Definitely making this again.

  24. 3 stars
Won’t lie, I didn’t trim as well and some ends got tough. Still decent flavor, but prep matters.

    1. User avatar krystyna.goyette says:

      5 stars
Totally agree—tough ends are usually trimming, not the seasoning. Next time just take that little extra minute and cut them all uniform so they roast evenly.

Made this yesterday, but forgot the olive oil. It was a disaster, never will I forget again.

What if I add some cheese on top? 🤔

    1. 5 stars
Cheese sounds great! Adds flavor for sure. Just get some parmesan or feta, it’ll be yummy! 😋

  29. 1 star
This ain’t it. Green beans just don’t belong in my kitchen. Stick to fries and burgers, that’s what I say! 🍔

  30. User avatar dale.bartell1957 says:

Good simple side. I added a squeeze of lemon after roasting and it was even better. Would make again for sure.

  31. User avatar tijuana.blanda69 says:

I thought the garlic powder was too strong. I would skip it next time.

  32. 2 stars
Green beans are good but asparagus? Eww.

  33. User avatar matthew.kshlerin95 says:

Yum! I added some balsamic vinegar and put some grated parmesan on top after roasting. So good!

Are green beans and asparagus the same? They look kinda similar.

  35. 5 stars
This turned out amazing! I added some parmesan cheese at the end and it was a game changer. Definitely making this again! 😊

  36. User avatar kena.walker86 says:

I just can’t eat asparagus, so I left it out and added more beans instead. Still yum!

  37. User avatar Grunthos the Flatulent says:

    3 stars
I didn’t have asparagus, so I just used more green beans. Still came out pretty good, but I feel like it’s missing something. Maybe some cheese next time?

  38. 3 stars
Wait, are we supposed to peel the asparagus? I just cook it as is but kinda confused about that. Anyway, it was decent.

  39. 2 stars
Honestly, they turned out kind of bland. Maybe I measured wrong? Still ate them though, because veggies are veggies lol.

  40. User avatar edna.blick18 says:

I think you can add lemon zest for extra flavor. I did that and it was awesome!
