      I think you should just follow the recipe. They shouldn’t be too crunchy if you roast them long enough! Maybe try 20 mins next time.

      Maybe you cut them too small? Mine browned fast too but I think it was the pan—baked on a dark sheet and it cooks harder. I’d try a lighter baking sheet or lower temp a bit.

    425°F seems a bit aggressive for veggies like this… mine got slightly too brown on the tips. Still edible, just not as green as I wanted. Lower temp next time.
