Roasted Cheddar Broccoli

December 26, 2024

Roasted cheddar broccoli is a simple yet flavorful side dish that takes the classic pairing of broccoli and cheese to a new level. The roasted broccoli brings out its natural sweetness and a crispy texture, while the melted cheddar cheese adds a rich, creamy finish. This dish is the perfect way to elevate the often humble broccoli into something indulgent and satisfying, making it a great addition to any dinner or even served as a snack.

To begin, fresh broccoli florets are cut into bite-sized pieces and tossed with olive oil, salt, and pepper. Roasting the broccoli in the oven at a high temperature (around 425°F or 220°C) helps to caramelize the edges, giving it a slightly smoky, crispy texture while keeping the center tender. You can also add garlic or onion powder for extra flavor.

Once the broccoli is roasted to perfection, it’s topped with a generous amount of shredded cheddar cheese. The broccoli is then returned to the oven for a few minutes, allowing the cheese to melt and bubble, creating a gooey, golden layer over the vegetables. The result is a beautiful contrast between the crisp, roasted broccoli and the creamy, savory cheese.

For extra flavor, a sprinkle of crispy bacon bits or a dash of red pepper flakes can be added before serving. Fresh herbs like parsley or chives can also be sprinkled on top for a pop of color and freshness. Roasted cheddar broccoli is an easy, satisfying side dish that pairs well with almost any main course, from roasted chicken to steak or even grilled fish.

Not only is this dish full of rich flavor, but it’s also a great way to get kids and picky eaters to enjoy their veggies. The savory cheese and crispy broccoli make this a crowd-pleaser for family dinners, holiday feasts, or casual gatherings. Whether you’re making it for a special occasion or just to add a bit of cheesy goodness to a weeknight meal, roasted cheddar broccoli is sure to be a hit at the table.

This recipe is yummy! I added garlic powder for extra flavor.

Why do you have to roast it first? Seems like more work than just steaming. 🤔 ⭐⭐

    1. User avatar giovanni.franecki1991 says:

      5 stars
Roasting brings out the natural sweetness of the broccoli and gives it a better texture! Plus, it tastes AMAZING with the cheese. Trust me, it’s worth it. 😋

    2. User avatar Hwi Noree says:

      4 stars
I dunno, steaming just makes everything mushy. Roasting gives it that nice crunch. But whatever floats your boat! 🤷

  3. User avatar kaley.kertzmann1962 says:

This was so good! The cheese is everything. My kids gobbled it up! 😍

  4. 4 stars
Broccoli? No thanks. But I made this for my husband and he really liked it. I’d maybe try again for him.

    1. User avatar tory.beier says:

Glad your husband liked it! Broccoli isn’t for everyone, but adding cheese makes it better.

I just can’t get over the broccoli thing. How can u make that tasty? My kids refused to eat it!

  5. 2 stars
Meh. Broccoli is broccoli. The recipe is fine but nothing special. Also 15-20 mins felt too short for my oven.

  6. User avatar karena.keebler says:

    5 stars
This was sooo good! My kids usually hate broccoli but they gobbled it up with the cheese! Will make again!

Do I have to use cheddar? Can I use mozzarella instead?

    1. User avatar Torchbugs says:

      4 stars
I think mozzarella would work, but it won’t have that sharp flavor like cheddar. Give it a try!

  8. User avatar jamar.orn25 says:

I don’t know, it feels like it needs something more. Maybe some garlic or something?

    1. User avatar Ford Prefect says:

      5 stars
I totally agree! Garlic would add a nice kick to it. I’ll definitely try that next time.

  9. User avatar bob.schulist says:

It was ok, but I think I overcooked the broccoli. Next time, I will check it sooner. ⭐⭐⭐

I dunno about this… Broccoli and cheese? Seems kinda plain, my fam prefers more sauce.

    1. User avatar Falmer Warmonger says:

      4 stars
Whatever man, my kids love cheese and broccoli! If they like it, that’s a win for me. But yeah, more sauce could be nice too.

    2. User avatar sadie.parker91 says:

      5 stars
I actually think the simplicity is what makes it great! Sometimes less is more. Try adding a bit of garlic or some red pepper flakes if you want a kick!

  11. 4 stars
I only had cheddar and mozzarella, used both and it was delish! Best of both worlds!

  12. User avatar cortez.kreiger48 says:

    5 stars
This was a hit at dinner! The cheese made the broccoli so much better. Yum!

  13. 5 stars
This came out super tasty—crispy edges on the broccoli and the cheddar on top is perfect. I did 20 minutes first round and it was spot-on.

  14. User avatar basementDweller says:

    2 stars
Not gonna lie, I don’t get why people love roasted broccoli. This was only slightly better than steaming. Pepper helped, but cheese isn’t enough to convince me.

Just like mom used to make! I added some garlic and it was great.

    Cheese broccoli! 🔥

  19. User avatar samatha.brekke2020 says:

Tastes good but I think my florets were too wet; they steamed more than roasted. Still ended up yummy with the cheddar though.

    2. 5 stars
Totally agree! The cheesy topping is just perfection! Broccoli never tasted this good!

  26. 4 stars
I had no cheddar cheese, so used mozzarella. Still good but not as cheesy! 😂 ⭐⭐⭐⭐

It’s alright but I think it could use a little garlic or something for more flavor.

    1. User avatar margery.paucek says:

      5 stars
Garlic would definitely add a nice kick! I usually throw in some minced garlic before roasting for extra flavor. Try it next time!

  31. User avatar liberal.hero says:

    2 stars
Not great. I think I overcooked the broccoli. It was mushy and the cheese didn’t help.

  32. User avatar jerrod.labadie74 says:

    2 stars
Roasting broccoli is a waste! I think steaming is better. Cheddar just covers up the taste.

  33. User avatar pok.little77 says:

    2. User avatar Wai Waelchi says:

Idk, I made this and the cheese didn’t melt right. Maybe my oven is broken? 🤔

  34. User avatar junior.gibson47 says:

    2 stars
My cheese clumped and didn’t look bubbly at all. Maybe I used pre-shredded cheddar that has anti-caking stuff?

  35. User avatar jere.swaniawski says:

    4 stars
I think adding more cheese won’t hurt. More cheese is better! Cheddar is yummy anyway.

  36. User avatar teddy.hessel says:

    3 stars
Way too salty for me using the full 1 tsp—maybe my cheddar was salty too. Still good flavor though, just adjust next time.

  37. 3 stars
Broccoli with cheddar is too basic. And why do they always roast it? I prefer it steamed.

    1. User avatar carroll.marquardt5 says:

      5 stars
Steamed?! That’s boring. Roasting gives it life! Plus, cheddar makes everything better. Try it! 😊

    2. 4 stars
I actually think roasted broccoli is yum! The cheddar just makes it better. Steamed is good too but roasting gives it a nice flavor!

  38. User avatar terminatorXYZ says:

Not bad but I prefer my broccoli raw. This feels like a waste. ⭐

  39. User avatar annice.cole says:

Easy and tasty. My kids ate all their veggies without complaining. Win!

Can I use frozen broccoli instead? Seems easier than cutting fresh.

    1. User avatar ralph.steuber says:

      5 stars
Yes, you can use frozen broccoli! Just make sure to thaw and drain it first to avoid extra water.

    2. User avatar Mystic Gohan says:

      3 stars
I think fresh is way better! Frozen might be mushy after roasting. Wouldn’t want that.

  43. User avatar The Allitnils says:

    5 stars
Made this tonight and it was super easy. The broccoli browned nicely and the cheese got all melty—10/10 side dish.

    1. User avatar zola.rutherford1991 says:

      3 stars
I tried it but mine didn’t brown much… maybe I overcrowded the pan? Also I think I used too much cheese because it got kinda greasy. Still tasty though.

    2. User avatar Cammar Pilru says:

      5 stars
Yep! I did exactly this and my broccoli had that perfect golden edges + melted cheddar. So good with anything.

  44. User avatar gordon.dickinson says:

    5 stars
So simple and it actually tastes like “real” comfort food. The browned edges on the broccoli were the best part—cheddar made it instantly better.

    1. 3 stars
I dunno… 425°F for 20 min feels like it might over-roast the broccoli? I tried once and mine got kinda dry. Maybe I should’ve checked earlier and added cheese only at the end like you said though.

    2. User avatar suspiciousCommentator says:

      5 stars
Made this tonight—spot on. The browned bits on the broccoli are legit the best part, and the cheddar really pulls it together. I used a little extra pepper and it was even better.

  45. User avatar lili.dare says:

    5 stars
I never liked broccoli before, but this recipe changed my mind! Thank you!

  46. User avatar steve_maga says:

Garlic powder sounds like a great addition! I love lemon juice too. Can’t wait to try both!

Perfect side dish! My kids even ate their veggies without complaining. 😄

  49. User avatar halflife4 says:

I don’t get why you’d put cheese on broccoli. Sounds weird.

    1. User avatar Wellington Yueh says:

      5 stars
Cheese makes everything better! You should give it a try. Broccoli is great with cheddar!

    2. 2 stars
I dunno, seems kinda weird to me too. Broccoli is fine on its own, right?

  50. 5 stars
i dont usually cook veggies but this was super easy. The only thing is my broccoli was kind of wet and it steamed instead of browning until i spread it better.

  51. User avatar karie.shanahan36 says:

    4 stars
I followed it pretty exactly, except I used regular cheddar. Not bad at all, though I would add garlic next time. Simple and hearty.

    1. User avatar Ma'randru-jo says:

      5 stars
Glad it worked out! Regular cheddar still hits—garlic would definitely level it up. Simple but hearty is exactly right.

    2. 4 stars
I did the same-ish but my cheddar didn’t get that melty “bubbly” look… maybe I didn’t roast long enough? Still tasty though. Garlic next time? good call.

  52. User avatar adaline.corkery1995 says:

    4 stars
I forgot to preheat the oven at first (oops) so it took longer. End result was still browned and melted, so I’m not mad. Lesson learned: preheat!

  53. User avatar Pasta Fasta says:

    3 stars
Not gonna lie, I thought 425°F would burn everything. It didn’t, but it was kinda dry? Maybe my florets were too small. Still edible though.

  54. User avatar Sand-Dial says:

    5 stars
Yum! Very easy to make and the flavors were great! I added some crushed red pepper for a kick. 10/10!

  55. User avatar Jessica Atreides says:

Who roasts broccoli? This is unnatural. I prefer my broccoli raw!

  56. User avatar cris.stokes68 says:

I followed the recipe but my cheese didn’t melt right. I dunno what happened. Any tips?

  57. User avatar Kimberly Prohaska says:

I tried this, and my kids ate it all! Even asked for more. What a miracle!

    1. User avatar liberal.hero says:

That’s awesome! It’s always a win when the kids enjoy their veggies. I’ll have to try this too!

  58. User avatar armand.flatley17 says:

Was not my favorite, but my neighbor loved it. Maybe I’m just not a broccoli fan.

  59. User avatar CTRLplusW says:

    4 stars
I’m not sure if roasting broccoli is the best way, but it actually turned out nice. A bit surprised!

  60. 5 stars
    CHEESE!!!! 😍

  61. User avatar Aurelion Sol says:

    3 stars
I don’t think 15-20 mins is long enough, mine was still crispy. Next time I’ll try longer.

    1. User avatar renay.toy says:

      4 stars
I think 20 mins should be enough, but everyone’s oven is different! Maybe try a lower rack next time?

  62. 2 stars
It’s okay but honestly? Just not my thing. I’m more of a meat person.

    1. User avatar Saruman the White says:

      5 stars
How can you not like it? This is like the best way to eat veggies! So cheesy and delicious!

  63. User avatar mckenzie.paucek28 says:

    5 stars
Absolutely delicious! My family loved it. 10/10 would make again!

  64. 3 stars
I followed the recipe but my broccoli turned mushy. What did I do wrong? 🤔

    1. 4 stars
Maybe you roasted it for too long? 15-20 mins is just right! 🤷‍♀️

    2. User avatar donny.wilderman91 says:

      5 stars
Broccoli gets mushy if it’s overcooked. Try less time next time! Good luck! 🍀

  65. User avatar lia.klocko says:

    4 stars
I substituted the cheddar with gouda by mistake, and it was still good! Cooking is fun!

  66. User avatar dewey.auer says:

OMG this is delish!! I couldn’t stop eating it. 10/10 would make again!

    1. User avatar samuel.schuppe18 says:

      3 stars
10/10? Really? I thought it was kinda bland…maybe I needed more spices? 🤔

    2. 5 stars
I’m glad you loved it! It’s one of my go-to recipes too. So simple yet so tasty. 🥦🧀

  67. User avatar theresa.altenwerth18 says:

    1 star
Why would you roast broccoli? It tastes better raw. Just sayin’.

    1. 4 stars
I used to think raw broccoli was the best too, but roasting gives it a whole new flavor! Giving it a try could change your mind. 😊

  68. User avatar keila.mitchell47 says:

    5 stars
Not gonna lie, I added garlic powder and red pepper flakes. It was so good I ate extra before dinner. Original recipe is solid.

    1. User avatar georgeanna.witting74 says:

      5 stars
Love that upgrade—garlic powder + red pepper flakes sounds perfect with the cheddar. I’ve done something similar with smoked paprika and it’s always a win. 😄

  69. 3 stars
The instructions are pretty straightforward, but 15-20 minutes feels short for my oven. Mine needed closer to 25 before it browned.

    1. User avatar Rob McKenna says:

      4 stars
Hmm… mine browned in like 12 minutes, so I think it depends on the broccoli size and how crowded the pan is. Spread it thin and use high heat. Idk why yours took longer.

    2. 5 stars
Good point! My oven definitely runs cool too—15 minutes was pale for me. I do 20–25 and it finally gets that nice browning before adding the cheddar.

  70. User avatar louie.barton1962 says:

    5 stars
Yum!!! My whole family loves this! Will be making again for sure.

    1. User avatar oscar.huels says:

      3 stars
Looks good but I wonder if it will taste as good as it sounds. I mean, roasted broccoli? Really?

    2. 5 stars
That’s fantastic to hear! It’s always great when everyone enjoys the same dish. What do you usually serve it with?

  71. User avatar hiram.rolfson says:

    5 stars
This recipe is a game changer! My kids actually ate broccoli for once. Thank you!!

    1. 5 stars
Wow, that’s awesome! Kids eating veggies is a win! 🥦❤️

    2. User avatar tonda.mcglynn36 says:

      2 stars
But is it really healthy with all that cheese? I thought we were gonna avoid cheese for kids…

  72. User avatar ramiro.parisian says:

    4 stars
Pretty good, but I think 15–20 minutes was a bit short for my oven. I ended up roasting closer to 25 min to get that tender/crisp combo. Still tasty though.

  73. 4 stars
Mine came out a little too salty (I went with 1 tsp exactly). Next time I’ll use “to taste” more carefully, but the roast time worked great.

  74. User avatar tissues_with_issues says:

    2 stars
Not a fan. The broccoli was too tough even after roasting 😩. I followed the time exactly.

  75. 4 stars
Super yum. I used 1% milk cheddar instead of regular—don’t ask, it’s what I had—and it melted fine. Great snack!

    1. User avatar Lauryn Kreiger IV says:

      5 stars
Love this! I’ve never thought to swap the cheese like that, but if it melted fine then I’m trying it. That extra brothy vibe must be nice with 1% milk cheddar 😄

    2. User avatar waldo.keebler97 says:

      3 stars
Hmm 1% milk cheddar sounds risky. Cheddar should be sharper and melt better—maybe you got lucky? Either way, broccoli + cheese is always a win. I’d still use the regular cheddar though.

  76. User avatar Fritz Ferry III says:

    4 stars
425°F is the sweet spot. Mine browned a little more at 18 minutes, but still perfect. Next time I might add garlic powder for extra flavor.

  77. User avatar kimberlie.moore says:

    3 stars
Took too long to cook than what is said here. My broccoli weren’t tender in just 15 minutes. 👎

  78. User avatar wendy.vandervort29 says:

    5 stars
So simple, yet so good! Thanks for the easy instructions. ★★★★★

    1. User avatar Vickie Goodwin says:

  79. User avatar felix.gleason says:

    4 stars
Super easy and so delicious! I added garlic too, yum!

  80. User avatar odell.marks1993 says:

    2 stars
Broccoli in the oven?? Isn’t that a bit burnt? I prefer mine steamed.

    1. User avatar lorelei.zemlak says:

      4 stars
Steamed is good too, but roasting gives it a nice flavor! You should try it sometime.

  81. User avatar Magrathean sperm whale says:

    4 stars
Good but could use more spice or like, garlic or something. Not bad tho.

  82. User avatar Spider Worker says:

    4 stars
I followed the temps exactly (425°F) and it turned out great. Next time I’ll roast 2 minutes longer for even more crunch.

  83. 4 stars
My grandma made me eat broccoli as a kid. This recipe makes it palatable! Thanks!

  84. 4 stars
Broccoli so experience breed! Me likes it but add sum hot sauce next time.

  85. User avatar mazie.raynor1988 says:

    3 stars
I tried this but my cheese didn’t melt! I’m not sure what I did wrong—maybe my oven is too old? 🤨

  86. 1 star
Hate broccoli. But I love cheddar. So this was a weird mix for me. Not my fav.

    1. User avatar Sand-Dial says:

      4 stars
I get it! Broccoli isn’t for everyone, but maybe try it with another cheese next time? Goat cheese is yum!

  87. 2 stars
Bleh. Too much cheese for my taste. Made it soggy. Next time, less cheese!

    1. User avatar leopoldo.wintheiser1954 says:

      4 stars
I think the cheese is what makes it so good! Maybe try a different kind next time if you don’t like cheddar as much?

  88. User avatar Mountain Minish says:

    5 stars
Made this for dinner tonight—so easy and the broccoli actually tastes “roasty” instead of bland. The cheddar step is key. Would do it again!

    1. 5 stars
Yes!! That “roasty” broccoli flavor is everything—glad the cheddar step worked for you. 🙌

  89. User avatar ArabianNights says:

Cheddar on everything is the answer. 10/10—no notes. (Also: super easy!)

Tried this tonight and it came out so good—crispy edges on the broccoli and that melted cheddar is everything. I used a little extra pepper and it was perfect.

I forgot to single-layer it and mine steamed a bit, not as browned. The cheese helped, but I’d follow the instructions better.

Totally makes sense—single layer really affects how browned it gets. Mine did the same when I crowd the pan, and it’s fixable!

    2. 3 stars
Wait—so you basically under-browned it because it wasn’t single-layered? I feel like 425 is hot enough… idk. Either way the cheese saved it 😅

Simple ingredients and quick to make. I’ll definitely make again. Felt healthy.

I love this recipe! It’s so easy and tastes great. Perfect for a quick side dish.

1/2 teaspoon pepper is too much for me but my boyfriend liked it. Overall good and crunchy edges. Would reduce pepper next time.

    1. 4 stars
Totally get that—pepper can be a lot on broccoli. Next time I’d do 1/4 tsp or add it after roasting so it doesn’t hit as hard.

Could be better with more cheese. 1 cup feels a bit stingy, especially if you like gooey stuff. Still tasty.

Totally agree—1 cup disappears fast. Next time I’m doubling the cheddar for sure. More gooey = better roast.

Broccoli is not good! Why people like this? Cheddar don’t help.

I totally disagree! Broccoli is awesome, especially roasted with cheddar. It’s one of my favorite side dishes!

Broccoli with cheese? Who doesn’t like that! But my husband said it was too salty.

Overcooked my broccoli because my oven runs hot. Still, the cheese portion saved it from being a total flop. Learn from me: watch it at 15 minutes.

  98. 3 stars
This is fine, like, the broccoli was cooked and the cheese melted, so win? But I expected more flavor from only salt/pepper.

Made this tonight—425°F was perfect. The broccoli got that nice browned edge, and the cheddar melt was so good I didn’t even miss anything else. Will definitely repeat.

I tried it but I think my cheddar was too old? It didn’t melt right and the broccoli felt a little too firm for me. Maybe I should roast longer than 20 mins. Still tasty though.

    2. 5 stars
Yes!! 425°F really is the sweet spot—my broccoli always comes out way better at that temp. Also the browned edges + melted cheddar combo is dangerous 😄

Pretty tasty, but I think I should’ve cut the florets a bit smaller. Mine roasted unevenly and the thicker pieces took longer. Still, cheese fixes a lot.

    1. 5 stars
Yeah I totally get that—if the florets are different sizes they roast uneven. I usually try to keep everything pretty similar thickness, and I’ll rotate the pan halfway through too.

Cheese DO fix everything 😅 Mine burned a little though—maybe my oven runs hot. Also I thought 425°F was like 400 so I set it wrong lol. Next time I’ll cut them smaller and watch closer.

  101. 5 stars
This recipe is a game changer! Never thought I’d like broccoli this much!

I don’t know about roasted broccoli… it seems weird to me. Why not just steam it?

  103. 4 stars
425°F seems a little high? I was nervous it would burn, but it didn’t—just watch the last few minutes. The cheese got bubbly fast.

425°F seems high—my oven runs hot and the tips got a little dark. Still tasted fine, but watch the browning.

Mine got dark too at 425, but I think it’s cuz I used the wrong cheese? Like the sharp cheddar melts weird. Next time I’ll lower it to 400 maybe. Still tasted good tho 😅

    2. User avatar danny.ritchie56 says:

      5 stars
Yeah, 425°F can definitely run hot depending on your oven. I’d start checking at like 12–15 minutes if yours browns fast—tender but not too dark. Your note is spot on about watching the tips.

LOVE it. The cheddar turns the whole tray into a crispy cheesy situation. Five stars—already adding this to my rotation.

Interesting… I feel like 15-20 mins might not be enough for my oven, but the idea of cheddar on top is legit. Maybe I’ll add like 5 more mins before the cheese?

    2. User avatar Michael83 says:

Yes!! That cheesy crisp is the best part. I’m always shocked how broccoli turns out this good when it gets browned like that.

I’m not a big fan of broccoli, but my wife insisted we try this. Honestly, it was pretty good. The cheese does help, haha!

  107. 5 stars
This is the only way I can get my kids to eat broccoli lol. They said it’s like veggie nachos.

Tried this tonight—super easy and the broccoli browned nicely. The cheddar step makes it feel way more like a “real” side dish. Would definitely make again!

Why would you roast broccoli? That’s just wrong. Boiling is the way to go!

  110. 4 stars
Great weeknight side! I added a pinch of garlic powder and it made it feel restaurant-y. Next time I’ll try keeping the florets a little drier.

    1. 5 stars
Love this—garlic powder is such a good shortcut for that “restaurant” vibe. Keeping the florets a bit drier totally makes sense too; I’ve found it helps them brown instead of steaming.
