      Totally possible your oven runs cool. I’d give it another 5–10 minutes—mine only gets properly golden when the edges are bubbling hard. Also make sure the dish isn’t too deep; thicker layers stay more “melted” than browned.

      That makes sense—if the sauerkraut wasn’t rinsed/drained well, it can add extra brine and then the bake can turn it thicker than expected. Next time try squeezing it a bit and drying it more, or even stir in a spoon or two of sour cream before baking. Glad it still tasted good though!

    Not bad, but I thought it would be more like actual Reuben flavor. The thousand island is doing a lot of heavy lifting. Also I forgot to soften the cream cheese so I had tiny lumps (still ate it lol).

    Weird question—do you bake it uncovered? Mine browned too fast after about 15 minutes even though the recipe said 25. Tasted fine, just looked a little burnt on top.

    This is good, but it’s kinda salty if you don’t rinse the sauerkraut well. My bad for being lazy 😅. I’d add less Thousand Island dressing too, or use a lighter version. Still, the texture was great.

    Pretty solid, but I think 25 minutes was a tad short in my oven—edges were bubbling yet the center felt a bit soft. Also, I rinsed the sauerkraut like it said, which mellowed it a lot. Next time I might drain a bit less for more tang.

    Why not just do it in a slow cooker? Baking dries it out, I think. Also 375°F seems too hot for dairy.
