When you’re looking for a healthy, satisfying meal that’s light yet filling, quinoa and black bean stuffed zucchini is the perfect choice. This dish is both vibrant and nourishing, packed with plant-based protein, fiber, and the fresh flavors of summer vegetables. It’s an ideal option for a light lunch, a hearty snack, or even a flavorful side to accompany your main course.
The base of this recipe is zucchini, which serves as the perfect vessel for a flavorful stuffing. Zucchini is naturally tender and has a mild flavor that complements the savory filling. Once the zucchini is hollowed out, it’s filled with a hearty mixture of cooked quinoa and black beans, which bring both protein and texture to the dish. The quinoa adds a slightly nutty flavor, while the black beans offer a creamy, rich texture that pairs beautifully with the fresh vegetables.
To make the filling even more flavorful, it’s seasoned with a combination of spices like cumin, chili powder, and garlic. These spices give the dish a warm, comforting flavor, while fresh cilantro and a squeeze of lime juice add brightness and freshness. The filling is then stuffed back into the zucchini boats and baked until the zucchini is tender and the filling is heated through.
For an extra touch, you can top the stuffed zucchini with a sprinkle of cheese or nutritional yeast before baking, or drizzle with a bit of your favorite salsa or hot sauce after it’s done. You can also add extra veggies like corn, tomatoes, or bell peppers to the stuffing for more texture and flavor.
Quinoa and Black Bean Stuffed Zucchini is a great make-ahead option that holds up well in the fridge, making it ideal for meal prep. Whether you’re looking for a low-carb dinner, a vegan-friendly option, or just something light and satisfying, this dish is sure to please. It’s simple, healthy, and full of flavor, a great way to enjoy the goodness of fresh vegetables and wholesome ingredients.

Just. Yummy! I didn’t have cilantro so used parsley instead. Still delicious! 🌿
Super easy to make! My kids loved it. I’m not a fan of black beans but this was good with the cheese.
Tbh, I didn’t have black beans, so I used chickpeas instead. Still pretty good!
Can you use different cheese?? Like mozzarella??
Yeah, mozzarella would be good! But it’s gonna be a bit stretchier than cheddar. Still yum! 😋
I don’t think mozzarella melts like cheddar. Is it really a good swap? 🤔
Kinda tastes like taco filling in a veggie boat. Good though. Would add jalapeño next time.
OMG! This is so colourful. Makes me wanna eat veggies all day! 😍
Quinoa and beans are good for you. But why not add meat? Just saying, could use some flavor.
Five stars just because it’s healthy and actually filling. My picky eater ate two. Also the cheddar on top is clutch.
My kids were picky too—ended up eating more than they said they would. I’m stealing this combo again for sure.
Right?! The cheddar really makes it feel like comfort food. I also love that it’s filling without being heavy.
Not as good as I thought. The quinoa didn’t have enough flavor on its own. Disappointed.
375°F for 20-25 min felt too short—my zucchini was still crunchy. I’d extend it or bake covered at first. Otherwise good idea.
Not sure about the quinoa thing. Can I just use rice instead? Seems weird.
No way, quinoa is way better than rice! Gives it a nice flavor and protein. Trust me, don’t skip it!
I think rice would work fine! The texture might be different, but if you prefer it, go for it!
YUM! Just what I needed! Healthy and filling. Perfect for lunch!
This recipe is amazing! Tastes so fresh and healthy! 😍
Looks good, but I don’t know if it’s that amazing. Zucchini is just kinda boring lol.
I totally agree! The flavors are so vibrant! Can’t wait to make it again. 😊
Simple and delicious! I added some hot sauce for a kick. Yummy!
This recipe is fantastic! I love how healthy it is. Definitely a keeper!
Thanks! I’m excited to try it. Healthy is the way to go!
YUM!!! So good! My kids even ate their veggies! 10/10 would recommend!
Made this for dinner last night—super filling and honestly way better than I expected. The cumin + paprika combo is perfect. I did add a squeeze of lime and it really popped.
I made these and they were really filling, but mine came out a bit watery. I probably didn’t drain the zucchini flesh enough—any tips? Still tasted great though.
Yes!! The cumin + paprika combo is the best part. I also added a little lime and it seriously makes everything taste brighter.
Tried it but it turned out too soggy. Maybe I overcooked the zucchini. Not what I expected.
I had the same issue! Zucchini can get mushy real quick. Maybe try roasting them instead of baking? It’ll help with texture.
Soggy? That’s weird. My zucchinis came out just fine. Did you follow the instructions right?
My kids wouldn’t touch it. Guess they ain’t ready for the healthy life yet. I thought it was fine.
Maybe try a different recipe? Kids can be picky!
The stuffing mix smelled amazing while cooking, but mine came out a bit dry. I think my zucchini were bigger and thinner shelled, so I’ll adjust cook time or add a splash of something next round.
