  • 2 cups all-purpose flour plus more for dusting
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 cup cold unsalted butter cut into small pieces
  • 3/4 cup canned pumpkin puree
  • 1/4 cup buttermilk

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  • Add the cold butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
  • In a separate bowl, mix the pumpkin puree and buttermilk together until smooth.
  • Add the pumpkin mixture to the flour mixture and gently stir until just combined.

      I mean… pie filling is mostly pumpkin too, so ya it works. But it throws off the recipe balance. Next time just use plain puree + maybe a tiny pinch of sugar if you want it sweeter.
