I think my ratios were off. Mine tasted more like sweet oat bars than pistachio. Also, I used sweetened almond milk by accident and it was sweeter than expected.

I don’t get it—350 for 25-30… seems too short. mine came out underdone and kinda sticky, sorry. maybe i measured wrong lol
That totally can happen—25–30 is tight, and every oven runs different. If yours were sticky/underdone, I’d just add 5–10 minutes and look for a deeper golden top + edges pulling away a bit. Also cooling completely matters a lot for these.
