Persian Beef Koofteh with Yogurt Sauce

August 9, 2023

Koofteh is a popular Persian dish made with ground meat, rice, and herbs. This version uses beef and is served with a creamy yogurt sauce. It is a delicious and satisfying meal that is perfect for a special occasion or a family dinner.

Persian Beef Koofteh with Yogurt Sauce is a comforting and flavorful dish rooted in Iranian home cooking. Koofteh are large, herb-filled meatballs traditionally made with ground meat, rice, herbs, and sometimes dried fruits or split peas. This version focuses on beef, blended with fresh herbs, spices, and a tender rice base, then gently simmered until juicy and aromatic.

To prepare the koofteh, ground beef is mixed with cooked rice, finely chopped parsley, dill, mint, grated onion, turmeric, cinnamon, salt, and pepper. Some recipes also include a handful of yellow split peas or barberries for added texture and tang, though they’re optional. The mixture is formed into large, round balls — each about the size of a tennis ball — and simmered gently in a tomato-based broth until fully cooked. The broth infuses the koofteh with deep flavor and helps keep them moist.

The dish is served with a tangy yogurt sauce made from plain yogurt, lemon juice, garlic, and a pinch of salt. The coolness of the sauce contrasts beautifully with the warm spices of the beef, adding brightness and balance. You can also stir in a little grated cucumber or chopped mint for a refreshing twist.

Koofteh are traditionally served with flatbread, rice, or on their own in a shallow bowl with the sauce spooned over. They’re hearty enough for a main course and often enjoyed as part of a shared family meal. Leftovers taste even better the next day as the flavors continue to develop.

What makes Persian Beef Koofteh special is the balance of herbs and spices with the richness of the beef, creating a meal that feels both nourishing and celebratory. It’s a great introduction to Persian flavors and a satisfying way to explore traditional Middle Eastern cooking in your own kitchen.

The prep list is so herb-heavy (parsley, cilantro, mint, dill). I didn’t have dill so I used extra parsley—still okay, but I can see why dill matters.

The ingredient list is so many herbs lol. I’m sure it’s delicious but I might cut mint in half because I’m not a huge fan.

What is all this? Rice in meatballs? This ain’t Italian! Not impressed.

  4. 1 star
This is too much work for me. Also I thought turmeric was optional, but it really shows up flavor-wise. Would make again? maybe not.

The yogurt sauce was way too runny! I think I used too much yogurt. Oops! đŸ€·â€â™‚ïž

I added some chili flakes for a kick! Perfect!

    1. 2 stars
I dunno, chili flakes might be too much for a recipe like this. Isn’t it supposed to be more traditional?

    2. User avatar Tawanda Goodwin says:

      5 stars
Chili flakes? That’s a great idea! I love a bit of heat in my dishes. I’ll have to try that next time!

  13. 5 stars
Wow, this recipe is absolutely delicious! The flavors are incredible, especially with that yogurt sauce. Will definitely make again!

  14. User avatar George Hills says:

    4 stars
Delicious! Never had meatballs like these. The yogurt sauce really complements it.

  15. User avatar Ruthanne Gislason says:

Not gonna lie, I was skeptical about cooking the yogurt with the meatballs, but it turned out fine. Just keep it on low heat so it doesn’t split.

    1. 5 stars
Yes! I always worry about yogurt splitting too—low heat is the key. I do the same thing and it comes out creamy every time.

Y’all ever go to a fancy restaurant and try koofteh? I thought this was gonna be just like that. It wasn’t. 😂

    1. User avatar september.watsica28 says:

      2 stars
Honestly, I didn’t find it that great. It’s not exactly like what I had in that fancy place. Kind of disappointed.

    2. User avatar soledad.kuhn19 says:

      5 stars
I really loved this recipe! 😍 The flavors reminded me of a restaurant I went to. Can’t believe how good it turned out! Thanks for sharing!

  17. User avatar wellRespected says:

    4 stars
Not bad, but the yogurt sauce felt kinda thick for me. I think I needed more yogurt or a splash of water/broth while simmering. Still tasty though.

  18. 5 stars
These koofteh are legit. The herbs smell amazing, and the yogurt sauce makes everything feel really cozy. I added a little extra lemon and it was perfect.

  19. 4 stars
The herbs are doing the heavy lifting here. I’m not a mint fan but I reduced it and it still tasted great. Next time I’ll add sumac on top.

  20. 5 stars
Meatballs? Why not just have burgers? Anyway, 10/10, good stuff!

  21. User avatar danna.satterfield1972 says:

Koofteh? More like koofail for me. The yogurt sauce didn’t work out at all.😡

    1. User avatar ALTplusF4 says:

      3 stars
Maybe you just mixed it wrong? Yogurt can be tricky. I always use Greek yogurt for a thicker sauce. Give it another shot!

    2. User avatar Aurelion Sol says:

      4 stars
I’m sorry to hear that your yogurt sauce didn’t turn out! Did you try adjusting the seasoning? Sometimes it takes a bit of tweaking to get it just right.

  22. User avatar clayton.mertz0 says:

    4 stars
Pretty good overall! I added a little extra salt and it still tasted balanced. The meatballs held together well with the grated onion. Will make again.

  23. User avatar yun.nienow36 says:

    1 star
I think is too complicated… I just want simple meatballs. 1/5 for me. 🙂

  24. 2 stars
The instructions are clear, but I wish it mentioned how wet the hands should be / how big the oval balls should be. Mine were all different sizes and some overcooked.

    1. 4 stars
Yeah I totally get that—mine didn’t come out uniform either. I started aiming for about a golf-ball size oval and keeping my hands *very* wet (like re-wetting every few minutes). Also, not overcooking the first browning helps them stay juicy.

    2. User avatar Saruman the White says:

      3 stars
Instructions were okay but I wish they told you exact size. Like
I made them too small and then cooked them too long so they came out dry. Next time I’ll make bigger ovals and just brown quick. Also my hands were only “kinda wet” 😅

  25. User avatar inge.oconnell23 says:

    3 stars
Not sure about cooking yogurt in the skillet—won’t it split? Mine usually separates if I rush it, so I’d keep it super low and stir a lot.

  26. User avatar Fishermen says:

    2 stars
Okay but why the cinnamon? Lol. I’ll try it tho. If it tastes like breakfast I’m blaming you.

  27. User avatar kristine.witting says:

    3 stars
I followed the recipe but my koofteh came out a bit dry. Maybe my ground beef was too lean? Sauce was nice though—tangy and herby.

  28. 5 stars
Yum! The mint is a game-changer! Will make again! 5/5.

  29. User avatar ShanksOnePiece says:

    4 stars
Really easy to make! But I didn’t have any dill, so I used basil instead. Still yummy! 😋

  30. User avatar Caroll Glover says:

  31. User avatar jill.jacobson says:

Koofteh? More like koof. Should’ve just made spaghetti.

    1. User avatar graig.hermann1955 says:

      5 stars
Spaghetti is good, but have you ever tried koofteh? It’s a whole different vibe! 😋

  32. User avatar Dan Streetmentioner says:

    4 stars
I’m not really into cooking beef, but I tried this for my husband and he couldn’t stop raving! It’s definitely a keeper. 😊

  33. 4 stars
I loves beef koofteh! I usually make with potatoes, but this recipe was really tasty too!

  34. User avatar rueben.windler1994 says:

    2 stars
I had a hard time with the meatballs falling apart. Maybe too much rice? Not sure if I’ll try again.

  35. 2 stars
Not my cup of tea. The spices were too strong for my taste. I prefer simple meatballs without all this stuff.

  36. 3 stars
The yogurt sauce was a bit too sour for my taste. But my son loved it.

  37. User avatar zackary.runolfsdottir88 says:

    4 stars
I like the spice combo (turmeric + cumin + cinnamon) but mine were a tiny bit bland. Next time I’ll salt the meat more and maybe add more garlic.

    1. User avatar myrtice.mohr46 says:

      4 stars
I had the same issue 😅 I thought turmeric/cumin/cinnamon would do more. Next time I’m gonna add extra garlic too and probably a bit more salt. Also don’t cook the sauce too long or the flavor gets kinda
 mellow. (Mine tasted bland again.)

    2. User avatar Arthur Philip Deodat says:

      5 stars
Totally agree—those spices are great, but koofteh can taste flat if the seasoning isn’t punchy enough. Salting the meat more (and not being shy with black pepper) usually fixes it. I also like adding a pinch of paprika or a little chili if you want more depth.

  38. User avatar rocco.mueller says:

    2 stars
Yogurt sauce was kinda weird. Why is it hot? But the meatballs were good. 2/5.

    1. User avatar Super Saiyan 2 Goku says:

      2 stars
Hot yogurt sauce? That’s just strange. Why would anyone heat yogurt? You were right to be skeptical.

    2. User avatar elvis.ankunding98 says:

      4 stars
I actually love the yogurt sauce when it’s warm! It adds a nice flavor to the meatballs. Maybe try it again?

  39. User avatar grover.dicki94 says:

I don’t know what koofteh is but this sounds fancy and delicious! +5 stars from me!

    1. 5 stars
Koofteh is a Persian dish, you’re gonna love it! It’s really good with the yogurt sauce. Try making it! 😊

  40. User avatar Johnsie Buckridge says:

    3 stars
I don’t know about using so much mint… it was overwhelming. Maybe cut it down?

  41. User avatar oren.bernhard1991 says:

Can you use chicken instead of beef? I don’t eat red meat. Also, how much rice? Sorry if I’m dumb about this.

  42. User avatar buford.becker16 says:

    4 stars
Can someone tell me if I can use chicken instead of beef? Not a big fan of red meat.

    1. User avatar kari.schmitt40 says:

      3 stars
I think chicken would make it dry. Beef is more juicy, right? But I guess you could try it for a change. Just dont mess it up!

    2. User avatar leonila.shields76 says:

      5 stars
Yes, you can definitely use chicken! It’ll give a different flavor but should work fine. Just make sure to adjust the cooking time a bit since chicken can cook faster than beef.

  43. User avatar bonny.kihn1972 says:

    5 stars
Yum! Just made this for the family and it was a hit! Will make again for sure! 😊

    1. User avatar lurline.gibson says:

Yogurt sauce turned out sour — not sure what I did wrong…

    1. User avatar lanora.cummings24 says:

      3 stars
Sour? Did u mix in the lemon juice? That can make it tangy. I like mine with extra dill!

    2. User avatar marquis.abshire says:

      4 stars
Sorry to hear that! Maybe the yogurt was too old? Fresh yogurt is usually better in recipes.

My grandma made something like this, but it had raisins. Different but still good!

    1. User avatar Eccentrica Gallumbits says:

      5 stars
Sounds really good! My grandma used to add raisins to everything too; it gives such a nice flavor. I might try that with this recipe!

  46. User avatar steve_maga says:

Delicious! I substituted beef for turkey and it worked out great! My fam loved it! Will make again!

Yogurt sauce sounds strange. Can you use sour cream instead? đŸ€”

  48. 3 stars
Not gonna lie, I’m skeptical about cooking yogurt in the skillet without it curdling. Low heat + stirring helps, but I always worry. Did you do this and it stayed smooth?

  49. User avatar lowell.howell20 says:

    2 stars
My sauce got kinda grainy after simmering too long, I think. Still edible, but I’d definitely shorten the simmer next time and stir more.

    1. 4 stars
Grainy?? I’ve had yogurt get weird if you boil it. But you simmered 10–15 min in the directions
maybe try like 5 min max or take it off heat sooner. Also, did you use full-fat yogurt?

    2. User avatar milo.sanford85 says:

      5 stars
That grainy texture makes sense if it simmered too long—yogurt can break. Next time I’d keep it just gently heated and stir more often. Your fix sounds spot-on.

  50. 4 stars
Had a few problems with the meatballs breaking apart. Any tips?

  51. 5 stars
This is the best koofteh recipe! I love how the spices blend together. Definitely a 5!

  52. User avatar Seth Lind says:

    5 stars
This recipe is a game changer! The flavors are incredible, and that yogurt sauce just tops it off. My family loved it!

  53. User avatar Armandina Mills says:

    3 stars
Not bad, but I think it could use more spices. It’s a bit bland for my taste.

  54. 4 stars
Are you sure this is authentic Persian? My grandma made it with different herbs. Anyway, it was pretty good, 4 stars.

    1. User avatar Li Shenlong says:

      5 stars
Authentic or not, I still love a good koofteh! It’s all about how it tastes, right?

    2. User avatar priscilla.schroeder says:

      2 stars
Your grandma’s version sounds better. This one just seems too simple, like it’s missing something special.

  55. User avatar basementDweller says:

    4 stars
I tried something similar once and it turned out really good, but I’d add a bit more salt to the meat mixture next time. Still, looks legit.

    1. 5 stars
Thanks! More salt in the meat mixture makes sense—koofteh can be a little bland if you don’t season it well. Did you taste it raw before shaping or just adjust after browning?

  56. User avatar porfirio.shanahan says:

    1 star
Followed the recipe, but my meatballs fell apart. Sad face. Bad experience.

  57. 2 stars
My mom made this when I was a kid, but she never used rice. Does it really need it?

    1. User avatar Loonquawl and Phouchg says:

      5 stars
I think the rice helps bind everything together! Maybe your mom had her own way of doing it. 😊

  58. User avatar thelma.heller1 says:

    4 stars
I like the flavor profile, but 2 cups yogurt for a batch of meatballs feels like a lot. Still, if you simmer it down maybe it’ll be perfect. Anyone else adjust the sauce thickness?

    1. 4 stars
Try whisking the yogurt first and keeping the heat really low. If it’s bubbling hard, it’ll get weird and thin/curdle-y. I add a pinch of salt last too.

    2. User avatar len.keebler1959 says:

      5 stars
I had the same thought about 2 cups yogurt. I ended up using 1 1/2 cups and it was perfect—thicker but still silky after simmering 10-15 min.

  59. 5 stars
Solid recipe. I used basmati rice and it stayed tender. The spice level was perfect for me—warm but not spicy-spicy.

    1. User avatar anonymous_hacker says:

      5 stars
Love hearing that! Basmati is a great call—keeps the koofteh tender without turning mushy. Glad the spice level hit that warm-but-not-too-hot sweet spot.

  60. User avatar Dwarven Shpere says:

    3 stars
Meh, was just okay. Maybe I mixed the spices wrong?

    1. User avatar colton.daniel says:

      4 stars
Don’t be too hard on yourself! Spice mixes can be tricky. Maybe adjust the salt next time? I loved it!

  61. 5 stars
Wow, this took me back to my grandma’s kitchen! Flavors are on point! Will definitely make it again often!

  62. User avatar Falmer Warmonger says:

    3 stars
Not sure about the yogurt sauce – it’s kinda weird with meat. Next time I’ll just use regular tomato sauce.

  63. 4 stars
Not bad at all! I did adjust the seasoning a bit (more salt + a squeeze more lemon). The koofteh were juicy and the yogurt sauce tasted fresh.

  64. User avatar theron.kovacek2013 says:

1 lb ground beef + 1 cup cooked rice feels a little dry? Maybe. Also, where’s the olive oil amount? But hey, I’d still try it.

  73. User avatar gene.zboncak says:

    3 stars
I found this a bit too complicated for a weeknight meal. Also, why is there rice in meatballs? Seems weird to me.

    1. 4 stars
I get what you mean! It does seem like a lot of steps for a quick meal. But trust me, the rice helps keep the meatballs moist! Maybe try it on a weekend?

  74. 3 stars
Sounds fancy but too many ingredients for me. I’m more of a simple cook. 😅

  75. User avatar shane.gutmann89 says:

  81. User avatar ellsworth.swift53 says:

    5 stars
This is the best recipe I’ve ever tried! The flavors are amazing!

  84. User avatar malik.kilback8 says:

I’m so glad you loved it! I tried this recipe too, and my family devoured it! đŸ€€

My family loved it! I added some extra spices for a kick and it was delicious. Will definitely make again!

That sounds amazing! I love a kick of spice in my dishes too. Can’t wait to try this!

    2. 2 stars
Extra spices? Isn’t that gonna make it too strong? I think the original recipe is good as is.

  92. User avatar joe_banana says:

Looked so good but tasted…eh? Maybe I did something wrong, but the spices were too strong for me. 🙁

    1. User avatar nolan.erdman25 says:

Spices can be tricky! Maybe try less next time or add some sweetness to balance it out. 😅

The yogurt step confused me—once it started simmering it split slightly. I kept it on low like the recipe says, but maybe my heat was still too high. Flavor was good, texture meh.

These sound fantastic—mint + herbs in the koofteh is such a great idea. The yogurt simmer is making my mouth water.

Followed the recipe exactly, but my meatballs fell apart. What did I do wrong? Help!

  96. 3 stars
I followed it pretty closely, but mine turned out a little dry. I think my rice was too cold or I mixed too much. Still tasted great though.

  97. User avatar sydney.gerlach5 says:

I’m skeptical about simmering meatballs in yogurt—mine almost curdled until I turned the heat way down. So yeah, low heat is key.

Easy to follow but took longer than I thought. The prep is real! đŸ˜©

Yum! Just made these for my family and they loved it! Even my picky kids ate it!

Delicious! I made it for a dinner party and everyone raved about it! Thanks for sharing!

  101. 4 stars
I’m skeptical about simmering beef meatballs directly in yogurt, but wow
it worked! Just keep it gentle and don’t boil. Really comforting meal.

I didn’t have dill so I used oregano lol. It wasn’t the same vibe, but the lemon helped. Wouldn’t replace dill again though.

  103. 5 stars
This recipe is amazing! The koofteh is so flavorful and the yogurt sauce really ties it together. Definitely a keeper! 😊

  104. User avatar edwin.abshire43 says:

Delicious, but the sauce is like, super thick. Maybe put less yogurt next time? Just sayin’.

So glad you loved it! The flavors really do blend well together. What’s your favorite part of the recipe?

    2. User avatar shari.cummerata11 says:

I dunno… it sounds complicated with all those ingredients. Is it really that good?

I’m giving 2 stars because the instructions are a little vague. How much olive oil? And do you really simmer 10-15 min or more like cook time? I ended up guessing.

    1. User avatar les.stehr says:

      4 stars
Totally fair! The olive oil amount isn’t specified—“heat some olive oil” is vague. I usually use about 1–2 tbsp just to coat the pan.

  107. 5 stars
These sound amazing—beef + rice + all that herbs is exactly my kind of comfort food. The yogurt sauce step is such a great idea too. Gonna try with extra dill!

  108. 4 stars
Quick question—are we supposed to use dill and mint in the meatballs too? I only tasted dill in the sauce. Either way, it was tasty, but I’m wondering if I missed something.

  109. User avatar kristyn.mcglynn22 says:

    Kinda bland for me
like I could’ve used more garlic? Also cooking yogurt that way feels risky, but it was okay. Maybe I’ll double the spices next time.

Can I use chicken instead of beef? I don’t like beef much. đŸ€”

    1. User avatar hang.windler66 says:

      3 stars
But is it really the same? Like isn’t beef a big part of the flavor in Persian dishes? I don’t know if chicken can give that taste. đŸ€·â€â™‚ïž

    2. User avatar vertie.cassin says:

      5 stars
You can definitely use chicken! Just keep an eye on the cook time. Chicken might cook faster than beef. Good luck! 😊

  111. User avatar marilyn.blanda says:

This is such a vibe. Beef + rice + herbs = love. Next time I’ll grate the onion finer so it blends better. 10/10 would eat again.

I tried it but used chicken instead of beef because I had some. It didn’t turn out as good. Should’ve followed the recipe.

    1. User avatar christie.considine says:

      2 stars
Why didn’t you just stick to beef? It’s way better. Chicken can’t match the richness of beef in this dish.

    2. User avatar Mr. Prosser says:

      4 stars
Using chicken was a brave choice! I sometimes do that too, but I agree the flavor is quite different. Next time, it’ll be amazing!

  113. User avatar Ms. Helena Hoeger says:

This was so flavorful—turmeric + cumin + cinnamon is such a nice combo. The yogurt sauce actually made it feel restaurant-level. I served it with naan and it disappeared fast.

  114. 3 stars
Okay but why does it say 1 tbsp lemon juice and also ‘salt to taste’ for the sauce—like how much salt?? I used my best judgment and it turned out decent.

  115. 5 stars
Followed it pretty closely—meatballs turned out juicy and not dry. I wasn’t sure about cooking yogurt directly but it worked on low heat. Great flavor balance.

  116. User avatar mariann.kuvalis20 says:

Made this last night—so flavorful! The mix of turmeric/cumin/cinnamon with the herbs is honestly on point. My sauce thickened nicely too. Will be repeating.

    1. User avatar madeline.lynch14 says:

      3 stars
I dunno if I did it right but mine tasted
kinda tangy? Like more lemon than expected. Next time I’ll go lighter on lemon juice and salt. Still pretty good though!

    2. User avatar Tahm Kench says:

      5 stars
Yes!! The turmeric + cumin + cinnamon combo is what does it for me too. I also like how the yogurt thickens without turning weird—nice job 👏

The shape tip with wet hands is real—mine looked way better than usual. I also grated the onion super fine and it boosted the juiciness.

    1. User avatar whitney.larson51 says:

      5 stars
Good call on the wet hands—my koofteh always sticks like crazy, so I’m stealing that tip. Also super fine onion makes sense for juiciness! 🌿

I messed up and used uncooked rice (oops). Totally different texture—more like meatballs with rice pudding vibes? But I’m giving it 3 stars for effort.

    1. User avatar theo.weber91 says:

      4 stars
Haha it happens! Koofteh is super forgiving—uncooked rice might just make it a different “style,” but honestly sounds kinda tasty. I’m glad you still tried it.

    2. User avatar quinn.kutch says:

      2 stars
3 stars for effort? 😅 If you used uncooked rice, it won’t bind or cook right like it’s supposed to. Next time cook the rice first (like your recipe says) or you’ll get that weird pudding/meatball mash.
