Paleo Baked Chicken Nuggets

August 30, 2023

Who doesn’t love chicken nuggets? Crispy, tender, and easy to eat, they’re a favorite for both kids and adults. But if you’re following a paleo diet or looking for a healthier alternative to traditional fried nuggets, paleo baked chicken nuggets are the answer. These nuggets are made with wholesome, nutrient-dense ingredients, offering a crispy outside and juicy interior without any of the guilt.

The key to paleo chicken nuggets is the coating. Instead of breadcrumbs or flour, which are not paleo-friendly, you can use almond flour and coconut flour to create a crunchy, golden crust. These gluten-free alternatives provide a light, crispy texture and pack in healthy fats and protein. For added flavor and crunch, you can mix in some ground flaxseed or sesame seeds.

For seasoning, the sky’s the limit. Garlic powder, onion powder, paprika, and sea salt combine to give the nuggets a savory flavor. You can also add a bit of cayenne pepper for a kick or fresh herbs like parsley or thyme to bring in some freshness. The best part is that the coating sticks perfectly to the chicken, creating an irresistible crunch once baked.

To make paleo chicken nuggets, simply cut boneless, skinless chicken breasts into bite-sized pieces, dip them in a beaten egg, then coat them with the almond-coconut flour mixture. Arrange the nuggets on a baking sheet lined with parchment paper, and bake them at a high temperature, around 400°F, until golden brown and fully cooked.

What makes these nuggets even better is that they’re baked, not fried, meaning less oil and less mess. They’re a healthier option that still satisfies that crispy, craveable craving.

Serve your paleo baked chicken nuggets with a side of avocado dip, mustard, or your favorite homemade dipping sauce. Whether as a snack, meal, or party appetizer, these nuggets will be a hit!

chicken is good, not so much the almond flour. It taste different.

I love almond flour! But I get it, it does have a unique flavor. Have you tried mixing it with regular flour? That might help!

  2. 4 stars
I followed it pretty close but mine weren’t super crispy after 20 min. Maybe my nuggets were bigger—next time I’ll flatten/cut smaller and bake a few extra minutes.

These were super easy and way less mess than frying. My kids kept stealing them 😅

  4. 5 stars
The seasoning ratio is great. I added a pinch of cayenne and it kicked it up. Almond flour can burn if you let it go—watch the edges.

Not gonna lie, I was skeptical about almond flour nuggets. But the oven browning actually worked—no deep frying required.

  6. 5 stars
These came out surprisingly crispy for being baked. The paprika + garlic combo is legit. I used olive oil spray and flipped at exactly halfway—huge difference.

400°F for 20 min is maybe optimistic—mine took closer to 25 to cook through. But once I adjusted time, the texture was great.

Could use more instructions on spacing the nuggets. Mine stuck together a bit on the tray until I added parchment next time.

  9. 5 stars
These nuggets are a game changer! Finally a healthy version that my kids love! 😍

Loved these!! I used coconut flour instead and they were amazing!! #BestNuggetsEver

  11. 4 stars
This was super easy to make! I added some cayenne for a kick. Will definitely make again!

Easy and quick weeknight meal. I served with mayo + hot sauce and it tasted like something you’d get at a diner.

    1. User avatar hildegard.altenwerth says:

      5 stars
That sounds awesome—diner vibes are the best. Did you bake on parchment or directly on the sheet? I’m trying this soon.

  13. 2 stars
Followed it exactly and they came out kinda dry. My eggs didn’t seem to stick well to the chicken at all, so the coating fell off in places. Maybe I cut the pieces too big?

  14. 3 stars
Good except I think I forgot the salt. Need to pay more attention next time lol.

  15. User avatar Harry Beard says:

    5 stars
Very tasty! I dipped mine in hot sauce and loved every bite! Well done!

  16. 3 stars
Not gonna lie, almond flour breading can get a little dry. I’d add a touch more egg or almond milk to help it stick better. Still tasty though.

    1. User avatar athena.fahey says:

      3 stars
Dry?? Huh. I guess I don’t mind. I usually just add more paprika and cook longer like 25 min, then they’re crunchy. Also, is 2 eggs enough for 1 cup almond flour? Seems like not, but maybe I’m doing it wrong lol.

    2. User avatar mistie.kutch66 says:

      5 stars
Totally agree—almond flour can dry out fast. I’ve had better luck with an extra splash of almond milk and making sure the nuggets get a proper egg coating so the crust stays a bit more “tender.”

  17. 4 stars
Pretty straightforward. I was worried they’d be dry, but they were still juicy inside. Next time I’ll bake a couple minutes longer for extra crunch.

    1. User avatar isaiah.keebler44 says:

      3 stars
20 min only? Mine were kinda pale and not crunchy at all, I had to go like 30. Also I used chicken thighs once and it didn’t work the same. Maybe flip more than halfway?

    2. 5 stars
I had the same worry—mine usually dry out. Glad you got that juicy center though. I’ll try baking them a bit longer for more crunch!

  18. User avatar kristopher.schuster53 says:

    4 stars
Pretty good, but my almond flour coating didn’t get as crisp as I hoped. I think I used too little oil spray. Still tasted great though.

  19. User avatar jacob.funk1968 says:

    2 stars
Not sure why they didn’t turn out like the picture. Mine were soggy. Maybe I used too much almond milk?

    1. User avatar lizbeth.von34 says:

      4 stars
Soggy nuggets? That sucks! Maybe your oven temp wasn’t right? I always double check mine to be sure. Good luck next time!

    2. 3 stars
I think almond milk might make it soggy, yeah. Stick to the recipes. Also, a bit of oil helps for crunch!

  20. User avatar saul.littel46 says:

    3 stars
I’m skeptical about how “nuggets” can be crispy when they’re basically breaded chicken with no breadcrumbs. That said… they were tasty. I’d add a pinch of cayenne next time.

  21. 5 stars
Quick, easy, and healthier! What else can you ask for? You rock!

  22. User avatar elroy.kling2012 says:

    3 stars
These were way healthier than fast food nuggets, but I miss the crunch. The coating is good, just not that same fried texture.

    1. User avatar gerry.koss9 says:

      4 stars
Totally get that—almond flour nuggets can be crunchy but not quite the deep-fried texture. I’ve had better luck if I press the coating on firmly and use a wire rack on the baking sheet so air circulates.

    2. User avatar alexis.goyette71 says:

      4 stars
Did you try broiling at the end? Like 1-2 minutes right after baking to brown up. Also, make sure nuggets aren’t too thick or they steam instead of crisp.

  23. User avatar hilaria.toy77 says:

    5 stars
Made these tonight—honestly so good. The almond flour coating got really crisp after flipping. I used a little extra paprika and they smelled amazing.

  24. User avatar Hillman Hunter says:

    1 star
Paleo? More like pale-no. These taste like cardboard.

  25. User avatar elisha.little1953 says:

    5 stars
These were sooo good! My kids loved them and I love that they’re healthy. Will make again!

  26. User avatar Eddie the Computer says:

    2 stars
Not a fan. They turned out kinda dry and the flavor was bland. I expected better.

    1. User avatar ilana.wolf says:

      2 stars
I dunno what you did, but these were really good to me! Sounds like user error? 🤷‍♂️

    2. 5 stars
I found the perfect way to make them juicy! Maybe try marinating the chicken for a bit before coating. It might help with the dryness!

  27. User avatar MAGA2024.Trumpster says:

    2 stars
These are mid. Like, chicken is good but the almond flour flavor is kinda strong. Next time I’ll try a different seasoning blend.

    1. User avatar lashawn.rowe says:

      4 stars
I totally get that—almond flour can be pretty loud. I’ve had better luck cutting the almond flour with a little more seasoning (or using less next time). What blend are you thinking for the next batch?

  28. User avatar britteny.terry says:

    4 stars
Good flavor, but mine weren’t that crispy after 20 min. Maybe my nuggets were too big or I didn’t use enough spray. Still tasted great with ranch.

    1. User avatar Eddie the Computer says:

      5 stars
Yeah I ran into that too—20 min wasn’t enough for thicker nuggets. I usually cut them smaller and bake closer to 25–30, flipping and giving them a bit more spray/oil. Glad the flavor still hit though!

  29. User avatar The Pirates says:

    3 stars
I followed it exactly and mine stuck to the baking sheet a bit. Maybe I should’ve used parchment or more spray, but flavor was still on point.

  30. User avatar genaro.hudson says:

    5 stars
Tried these tonight—so crispy for being baked! The paprika/garlic combo is on point. I did need to flip a little more often so they browned evenly, but overall super easy.

    1. User avatar blanch.damore1969 says:

      3 stars
Not gonna lie, almond flour nuggets sound kinda dry to me. Did you spray enough? I followed the steps and mine were okay but not that crispy—maybe my oven runs hot.

    2. User avatar rozella.purdy says:

      5 stars
Yes!! I had the same issue with uneven browning—flipping a bit more (like every 7–8 minutes) fixed it. The paprika/garlic flavor is legit, and they stay crispy longer than I expected.

  31. User avatar rusty.streich says:

    2 stars
Nuggets? They just look like chicken pieces! Not very creative. Not impressed. 👎

    1. User avatar ed.rodriguez40 says:

      5 stars
I think they’re creative! Using almond flour is awesome. Not everything has to be super fancy! 😊

  32. User avatar Sand-Dial says:

    3 stars
I didn’t have almond milk so I used regular milk… oops. They still turned out decent, but the coating felt slightly different. Will do it right next batch.

    1. 4 stars
Honestly, regular milk should still work—glad they came out decent! The coating difference makes sense since almond milk affects the egg mixture texture a bit. Next batch you’ll get that same crispier vibe. Nice save!

  33. 2 stars
Not sure about paleo nuggets… almond flour is expensive and the coating didn’t feel like “real” breading to me. Tasted fine though.

    1. User avatar Mr. Barten says:

      4 stars
I totally get the almond flour cost—this recipe is one of those “maybe worth it” options. I’ve found if you bake them a little longer (like 22–26 min) they crisp up more and feel closer to real breading.

    2. User avatar janae.kihn47 says:

      2 stars
Not gonna lie, I tried almond flour nuggets once and it was kinda bland and “sad” looking. Did you use a lot of spray/oil? Also did you flip at exactly halfway?

  34. User avatar ollie.wehner54 says:

    2 stars
I messed up the dipping once (didn’t let the egg drip), and the coating got clumpy. Still tasty though—just messier.

  35. User avatar carisa.pagac25 says:

    3 stars
Pretty good, but my nuggets came out a little dry. Maybe my chicken pieces were too small? Next time I’ll keep an eye on baking time and try thicker chunks.

  36. User avatar vergie.lowe99 says:

    5 stars
Yum! My new go-to snack. I added some cayenne for a kick! Perfect for my paleo diet.

    1. 2 stars
Cayenne?! Isn’t that too spicy for chicken nuggets? I’m skeptical about that mix.

    2. User avatar shella.koss34 says:

      5 stars
That sounds delicious! I’m gonna try it with some hot sauce next time. Love this recipe!

  37. User avatar Pasta Fasta says:

    2 stars
Meh. Dry and kinda egg-y. Could be my oven though.

  38. User avatar Jayme Zieme says:

    5 stars
OMG these are WAY better than I expected. My kid actually ate them without complaining, which is basically a miracle.

  39. User avatar Mark Mywords says:

    5 stars
These turned out way better than I expected—crispy edges and super flavorful. The paprika + garlic combo is spot on. Definitely making again.

    1. User avatar Hotblack Desiato says:

      5 stars
Yes! Crispy edges are the best part. I tried this once and also loved the paprika + garlic—such a simple combo but it really pops.

    2. User avatar archie.fritsch1955 says:

      3 stars
Huh, mine were kinda dry even though I cooked 20 mins. I wonder if my chicken pieces were too small? Still, the flavor sounds great though—might give it another go.

  40. 4 stars
Not gonna lie, I thought 20 minutes would be too short. It wasn’t—chicken was cooked through, just be sure your oven is really at 400°F.
