Mushroom and Spinach Stuffed Flounder

October 19, 2023

If you’re craving something light, flavorful, and slightly fancy without spending hours in the kitchen, Mushroom and Spinach Stuffed Flounder is the perfect choice. This dish delivers restaurant-quality flavor with minimal effort, making it ideal for both a quick weeknight meal and an impressive dinner for guests.

Flounder, a delicate white fish, has a mild flavor and a tender texture that pairs beautifully with earthy mushrooms and leafy spinach. The filling starts with sautéed mushrooms, garlic, and onions, cooked until golden and aromatic. Add a handful of fresh spinach to the skillet until wilted, then stir in a touch of cream cheese or ricotta to bind everything together into a rich, savory filling.

To assemble, simply spoon the mixture onto each fillet, roll them up gently, and secure with a toothpick if needed. A drizzle of lemon juice and a sprinkle of paprika or parmesan on top adds brightness and a touch of color. Bake the fish just until flaky and tender, about 15 to 20 minutes.

Not only is this meal high in protein and low in carbs, but it’s also incredibly satisfying without feeling heavy. Serve it with a side of steamed veggies, cauliflower mash, or a simple green salad for a complete and balanced dinner.

What makes this recipe so special is how easily it elevates everyday ingredients. The combination of spinach and mushrooms offers a lovely contrast of flavors and textures, while the mild flounder lets those ingredients shine.

Whether you’re trying to eat lighter, impress guests, or simply break out of a dinner rut, Mushroom and Spinach Stuffed Flounder is a must-try. It’s elegant, wholesome, and proof that great meals don’t have to be complicated.

To complement the rich flavors of the Mushroom and Spinach Stuffed Flounder, consider serving it with a side of steamed vegetables or a fresh salad. For a heartier meal, you can also pair it with some wild rice or roasted potatoes. To enhance the dining experience, a glass of crisp white wine or a light-bodied red wine would perfectly complement the flavors of this dish.

Eh, honestly it was kinda bland. I added some lemon juice and it helped a bit, but still didn’t wow me. 🤷‍♂️

I get what you mean. I tried it too and thought it was kinda plain. Maybe trying some spices could help? 🤔

Great recipe! Only thing is, I used cheddar instead of Parmesan ’cause that’s what I had. Still yum!

I don’t know… It seems a bit complicated for just fish. Can’t we just fry the flounder? Why add so many things?

  6. 1 star
Too complex for me 😩 I’ll just stick to frying fish next time.

I get you! Frying fish is way easier. But this stuffed fish sounds fancy! Maybe you can try it someday? 😊

Delish! But can we use other fish? My husband is picky about flounder.

    1. 3 stars
I think flounder is best for this, but I guess other fish could work. Not sure how it’ll taste though. 🤷‍♂️

You can use any firm white fish like tilapia or cod! Just adjust the cooking time as needed. I love this recipe! 😊

I tried this once, but the flounder was too fishy for me. Maybe it’s just not my taste.

I didn’t have Parmesan, so I used cheddar. Not sure if that was right.

Delish! I switched spinach for kale, and it worked out fine. Easy and quick meal!

  11. 4 stars
I thought flounder was a type of fruit… but this actually tastes great. Great recipe!

So good! I didn’t have any spinach so I used kale instead, it worked perfectly! 😋

Not bad. The instructions are clear, but I’m skeptical about rolling flounder without tearing it. Mine held together using toothpicks, thankfully.

    yum, fish!!!

This recipe is fine but I burnt mine a little…that’s on me though. Pay attention to the time.

Isn’t flounder too expensive? Why not use tilapia? Taste dont matter to me anyways, fish is fish!

Not my thing. The mushrooms were too strong for me and my kids didn’t like the texture.

    1. 4 stars
I get what you mean! Mushrooms can be a bit much sometimes. Have you tried other stuffings? Maybe cheese and herbs would be better for the kids.

Honestly, I think the mushroom flavor is great! But I guess not everyone likes it. Just swap them out next time or make it without! No biggie.

Do I really have to roll the fillets? Seems like too much work for fish.
