Miso Butter Clam Linguine

August 8, 2023

If you’re looking to elevate your pasta game with something unexpected yet incredibly flavorful, miso butter clam linguine is the perfect dish. It combines the briny sweetness of fresh clams with the rich umami of miso and butter, all tossed with perfectly cooked linguine. This East-meets-West fusion is both comforting and elegant, making it ideal for a weeknight dinner or an impressive meal for guests.

The base of this dish starts with fresh clams. Littlenecks or Manila clams work beautifully here. A quick soak and scrub get them ready to steam. As the clams cook, they open and release their juices into the pan, creating a natural briny broth that becomes the backbone of the sauce.

To that, miso paste and butter are added. The miso provides deep savory notes, while the butter adds richness and silkiness to the sauce. White miso works best here because it’s milder and slightly sweet, blending well with the clams. A splash of dry white wine helps to deglaze the pan and balance the richness with a touch of acidity.

Linguine is the pasta of choice for its ability to soak up the sauce while still offering a satisfying bite. Toss the pasta directly in the pan with the clams and miso butter sauce so it absorbs all the flavor. Add a little of the reserved pasta water to adjust the consistency and help the sauce cling to the noodles.

Garnish the finished dish with freshly chopped parsley, a squeeze of lemon juice for brightness, and a few grinds of black pepper. For a little heat, red pepper flakes work well too.

Miso butter clam linguine is a fantastic example of how global flavors can come together in a single bowl. It’s deeply savory, slightly briny, and full of rich texture and flavor. It feels fancy but is surprisingly easy to make. Whether you’re a pasta lover, a seafood fan, or someone looking to try something new, this dish deserves a spot on your dinner table.
