Mini Mint Cheesecakes

March 4, 2024

Mini Mint Cheesecakes are a delightful twist on the classic cheesecake, perfect for anyone who loves the combination of creamy richness and refreshing mint. These bite-sized treats are as adorable as they are delicious, making them ideal for parties, gatherings, or a sweet treat just for yourself. Their individual portions make serving easy, and their cool mint flavor brings a light, refreshing touch to the rich, velvety filling.

What makes these mini cheesecakes stand out is their balance of flavors. The creamy, tangy cheesecake filling pairs beautifully with the subtle mint flavor, which can be infused through mint extract or fresh mint leaves. A classic graham cracker crust provides a crispy, slightly sweet base that complements the smooth filling, while adding just the right texture contrast. Topping them with a mint leaf or a drizzle of chocolate ganache can elevate them to a new level, giving them a professional touch without much extra effort.

These mini cheesecakes are also incredibly customizable. For those who prefer a stronger mint flavor, a bit of crushed mint candy or even some chocolate chips folded into the filling can provide extra sweetness and texture. The individual size of the cheesecakes means that you can easily control portions and even make them ahead of time. They’re the kind of dessert that works well for meal prep, as they hold their shape and flavor in the fridge, allowing you to indulge whenever the craving strikes.

Not only do mini mint cheesecakes bring a refreshing and indulgent taste, but they also offer a perfect way to serve a crowd without the hassle of slicing up a large cheesecake. Whether you’re hosting a summer party, a holiday gathering, or just want something light and refreshing after a rich meal, mini mint cheesecakes are a dessert that everyone will love.

I followed the steps but it came out to dry… what went wrong?

  2. 2 stars
I don’t know if I did something wrong but mine turned out kinda weird. They didn’t fluff up like I expected!

  3. 3 stars
325°F for 18-20 mins seems too short? I thought they’d be more jiggly in the middle. I had to chill them longer to firm up. Still, not bad for the effort.

  4. User avatar ezequiel.reynolds says:

    3 stars
Mine cracked a little on top. I cooled them the way it says, so I’m not sure what happened. Still tasted great though, so not a total loss.

  5. 4 stars
I thought the mint would be too much, but it was just right. Great recipe!

  6. User avatar Captain Ginyu says:

    5 stars
These turned out super cute and the peppermint flavor is perfect—like a minty dessert you’d get at a bakery. I used regular oreos for the crumbs and it baked nicely.

  7. 2 stars
I don’t know why but my crust kinda fell apart when I cut into them. Also 1/4 cup milk felt like a lot with 2 packages cream cheese? Could be user error, but yeah.

  8. User avatar cheyenne.quitzon says:

    2 stars
Ehh, not my vibe. The cookie crust was great, but the middle felt too dense. Maybe I overbaked.

  9. User avatar Draugr Death Overlord says:

    5 stars
I have to say, this is my new go-to dessert! Everybody loved them. Thanks for sharing this amazing recipe!

  10. 2 stars
I can’t trust this recipe – mint and chocolate? That’s strange. The bake time seems way off!

  11. User avatar charles.dare5 says:

    2 stars
I tried making these for a party, and they turned out more like mini puddings than cheesecakes. Something went wrong.

  12. 5 stars
I tasted the batter and it was super minty, so I worried. But after baking/chilling it mellowed a lot. Tbh this is a win for me.

  13. User avatar ShanksOnePiece says:

    3 stars
Not bad, but it needed more structure. After 2 hours it was firm-ish, not fully set like I wanted. Could be my fridge or I underbaked.

    1. User avatar gary.terry1961 says:

      5 stars
I get what you mean—2 hours sometimes isn’t quite enough for that “fully set” feel, especially if your fridge runs a little warm. Have you tried chilling overnight? That usually tightens the texture a lot.

  14. User avatar Beregond says:

    5 stars
Minty and chocolaty, love it! Just can’t get enough!

  15. User avatar alonzo.schmitt says:

    5 stars
Easy to make and sooo yummy! Perfect for dessert lovers! I had no chocolate crumbs, used Oreos instead. Delicious!!

    1. User avatar Marathon Man says:

      3 stars
I don’t know about using Oreos instead! Isn’t the chocolate flavor different? But I guess if it tasted good, why not! LOL!

    2. User avatar loren.gutmann says:

      5 stars
Looks easy! Can’t wait to try it! Thanks for the tip about Oreos! Yummy!

  16. User avatar mittie.lesch57 says:

    3 stars
Not bad, but the peppermint extract feels a little “fake” to me. I might try mint chocolate syrup or even real mint next time. And I forgot the green coloring but honestly it still looked fine.

    1. User avatar Valentin Bechtelar says:

      5 stars
Totally get that—peppermint extract can taste a bit “perfumey.” Next time I’d try 1/2 tsp peppermint + maybe a touch more sugar or even some vanilla to round it out.

  17. User avatar joe_banana says:

    3 stars
I don’t like mint. Can I make this without the peppermint? Will it still taste good?

  18. User avatar Brendan Heller DDS says:

    4 stars
The crust is amazing—really chocolatey and holds together well. I didn’t have mini pans so I just did muffins and they came out fine. Would make again!

    1. User avatar steven.sipes50 says:

      5 stars
Yes!! Love hearing the crust held up—mine always wants to crumble. Chocolate cookie crumbs are such a win here.

  19. User avatar frederick.hagenes36 says:

    2 stars
Honestly, mine cracked a lot even though I cooled them 10 min and refrigerated. Maybe my eggs were too large or my pan was different. Tasted okay but not pretty.

  20. User avatar evon.crist says:

    5 stars
These were super easy to make and tasted delicious! My family loved them.

  21. User avatar coy.gutkowski says:

    3 stars
I feel like 1/4 cup milk might be too much or maybe my cream cheese was old? Texture came out a bit runny before baking. Still tasted good though—just not the smoothest.

  22. 1 star
I don’t know about this one. Mint and cheese? Sounds gross. 😖 But I guess some people like weird flavors. 1 star for me.

  23. User avatar nicolas.johns74 says:

    3 stars
I tried making them, but my batter was too runny. 🤔 What did I do wrong?

  24. User avatar lyle.denesik says:

    5 stars
These turned out insanely cute. The peppermint flavor is there but not overpowering—perfect for the holidays. I used crushed Oreo-style cookies and loved the chocolate base.

  25. 2 stars
Um, my cheesecakes didn’t set at all. I followed the recipe exactly, but they are more like puddles. 😕

  26. User avatar curt.huels19 says:

    4 stars
Followed the steps pretty much exactly. The texture was creamy after chilling, and the edges being slightly golden is real. I’d maybe bake 1-2 minutes less next time for even softer centers.

    1. 4 stars
I think baking them 1-2 minutes less is a great call. My first batch was a tiny bit firmer than I wanted, but still tasty 😅

    2. User avatar cecile.harvey27 says:

      5 stars
Yes! I had the same creamy texture after chilling—those “slightly golden edges” are spot on. I did yours timing and mine came out perfectly set.

  27. User avatar colton.mante59 says:

    2 stars
This recipe is too complicated. Can’t I just buy a cheesecake? 🙄

    1. User avatar ellen.predovic says:

      5 stars
You could buy one, but homemade is way better! Just take your time with it. 😄

  28. User avatar glynda.reichel46 says:

    5 stars
Wow—so easy 😅 The butter crust actually stayed together better than expected. I did 325°F and mine came out golden on the edges like the recipe says.

  29. User avatar luigi.bechtelar5 says:

    4 stars
Mine didn’t get as “slightly golden” as described, but they tasted great anyway. Next time I’ll watch them a little closer because my oven runs hot.

  30. User avatar lucien.stroman10 says:

    3 stars
Did anyone else have issues with these falling apart? Mine crumbled really bad.

  31. User avatar sydney.trantow60 says:

    3 stars
Why not use regular cream instead of milk? Wouldn’t that make it richer? Just a thought.

    1. User avatar sherilyn.schultz77 says:

      4 stars
Using cream sounds good, but milk balances it out for a lighter texture. Yo, I prefer the creaminess of cream, though! 🥳

  32. 2 stars
Baking 18-20 minutes at 325°F… mine were nowhere near set. I ended up baking like 30 minutes. Maybe my mini pan is bigger? Anyway, good after the fix.

  33. 3 stars
I’m allergic to mint, can I use vanilla instead? Will it wreck the recipe?

  34. User avatar chanelle.spencer says:

    5 stars
Mini! like my snacks. Love it!

    1. 5 stars
I absolutely agree! These mini cheesecakes are perfect for snacking. Can’t wait to try them out!

  35. User avatar christia.wiza says:

    5 stars
These came out super cute and honestly way better than I expected for “mini” cheesecakes. The peppermint is subtle (not toothpaste-y) which I loved. I topped mine with extra chocolate shavings and it was perfect.

  36. User avatar cordell.price68 says:

    4 stars
Made this for my kids and they gobbled ’em up! Can I freeze these for later?

  37. User avatar clemmie.oreilly59 says:

    2 stars
I don’t get why you’d need green food coloring. Doesn’t it taste the same?

    1. User avatar yajaira.homenick66 says:

      2 stars
Who cares about the color? If it taste good, that’s what matters. Just another fancy gimmick.

    2. User avatar lala.green1985 says:

      4 stars
I think the green food coloring makes it festive! Plus, it adds to the presentation. It’s not all about taste, you know.

  38. User avatar lavern.bernhard27 says:

    4 stars
Mine needed a couple extra minutes—18-20 had them a little too jiggly. Also, I somehow forgot to let them fully cool before chilling and they were a bit messy, but still tasted great.

  39. User avatar Damian Stark I says:

    4 stars
I never thought of putting mint in cheesecake! It’s a bit unusual but surprisingly great! 10/10 would eat again!

    1. User avatar booker.lesch1992 says:

      5 stars
I totally agree! Mint adds a refreshing twist to cheesecake. Never thought of it either until I tried it last week. Yum!

  40. User avatar jame.smitham81 says:

    1 star
Why would you put peppermint in cheesecake?? That’s just wrong. I won’t be trying this.

  41. User avatar Galaxia Woonbeam says:

    3 stars
They turned out green instead of mint color… did I use too much of that color stuff?

  42. User avatar samuel.jenkins46 says:

    4 stars
I couldn’t find the green food stuff, so I just left it out. They still turned out great, really good flavor!

  43. 5 stars
OMG, these were bomb! I made them for a party and people couldn’t stop eating them.

  44. 5 stars
Delicious! My friends thought I bought them from a bakery. I need to keep this recipe close!

  45. User avatar nathaniel.leannon says:

    5 stars
really really good!! easy recipe and it taste better than I thought! 🙂

    1. User avatar Patrick Larkin says:

      5 stars
I’m so glad you liked it! It’s one of my favorites too. 😊

    2. User avatar joe_banana says:

      2 stars
Taste better than you thought? Really? I mean, it’s just cream cheese and cookies, right?

  46. User avatar Rob McKenna says:

    4 stars
I don’t like mint in desserts, but my family loved this recipe.

    1. User avatar Gag Halfrunt says:

      4 stars
That’s awesome your family loved it! More mint for them, I guess! I think I might give this a try despite not liking mint myself.

    2. 2 stars
Mint in dessert is gross! How can they eat that? Cheesecake is already good without weird flavors!

  47. User avatar Tom Bombadil says:

    5 stars
These mini cheesecakes are simply delightful! The mint flavor is perfect for summer. Will make again!

  48. User avatar remona.leannon37 says:

    4 stars
Never made a cheesecake before, but this was easy and tasty! 🥳

  49. 3 stars
Question: do you bake in a water bath? I skipped it and mine were a bit eggy. Still, kids liked it.

  50. 2 stars
Ehh, they weren’t my favorite. The texture was kinda off, like too much cream cheese I guess?

  51. 3 stars
Not sure about peppermint extract + chocolate cookie crumbs. I mean, it works, but it tasted kinda like a mint cookie dessert—cool idea, just not my favorite combo.

    1. 4 stars
Totally get that—peppermint extract + chocolate cookie crumbs sounds awesome on paper, but can tip into “mint cookie” territory fast. I think next time I’d either cut the peppermint in half or swap in a plain vanilla crust.

  52. User avatar tandra.durgan93 says:

    3 stars
I didn’t have the right ingredients, but they still came out decent. Couldn’t find peppermint extract, so I used vanilla…oops!

  53. 1 star
Meh. I mean how can a cheesecake be mini? It’s like a muffin… disappointed.

  54. User avatar ernie.erdman says:

    2 stars
I’m skeptical about 2 eggs for these—mine never really set right after baking, like the middle was still jiggly. Could be my oven, but 2 hours in the fridge didn’t fully fix it.

  55. User avatar damian.gutkowski says:

    2 stars
Ehhh. Too many steps. Also I used milk and it was kinda runny—next time I’ll try sour cream or less milk. Flavor is okay but I expected more.

  56. User avatar ricarda.langworth says:

    4 stars
Delicious! But I skipped the green food coloring and they still turned out great! Who needs it anyway?

    1. User avatar ShanksOnePiece says:

      5 stars
I totally agree! The green food coloring is just extra. These cheesecakes are amazing without it!

  57. User avatar Demon King Piccolo says:

    2 stars
These are too rich for my taste. My stomach hurts after one! Not bad, but not for me.

    1. User avatar rickiestmorty says:

      4 stars
I totally get what you mean! They are pretty rich, but maybe try just a bite next time. Can’t waste good cheesecake, right?

  58. User avatar Humma Kavula says:

    5 stars
These were delightful! Perfect minty flavor. Will make again!

  59. User avatar shanae.gutkowski48 says:

    4 stars
Wow. Quick dessert. My kids said it tasted like fancy candy cane vibes 😅. I didn’t even have peppermint extract so I used mint extract (probably not the same) and it worked well.

  60. User avatar suspiciousCommentator says:

    4 stars
So easy to make! I had all the ingredients already in my pantry. My kids loved them!

  61. User avatar thomasine.harris18 says:

    1 star
Why do u add the green coloring? It’s cheesecakes not a salad, lol.

    1. User avatar malissa.osinski says:

      4 stars
I think the green just makes it festive! Mint is meant to be refreshing, right? 😊

    2. User avatar tammy.dickinson65 says:

      3 stars
I mean, it’s just a pop of color! It’s not like it’s gonna taste like grass or somethin’. Chill out! 😄

  62. User avatar rayford.oberbrunner says:

    5 stars
Very simple and tasted great! The kids had fun making these too.

  63. 3 stars
The batter looked really thick after adding the eggs, like cookie dough thick, not creamy. I might’ve overbeat or measured wrong, but the end result was still edible.

    1. User avatar les.little1954 says:

      5 stars
Same thing happened to me! After the eggs it went super thick, almost like frosting. I ended up chilling the batter a bit and they still baked up creamy in the end.

  64. User avatar keturah.blanda87 says:

    3 stars
How do you make them green? I added too much food dye and now they’re like weird green blobs. Still tasted good tho!

  65. User avatar adalberto.williamson says:

    2 stars
This recipe is alright, but I prefer regular cheesecakes, not mini ones.

    1. User avatar reatha.towne71 says:

      4 stars
I totally get where you’re coming from! Mini cheesecakes just don’t hit the same way as a big slice. But they’re cute for parties!

  66. 5 stars
These mini cheesecakes are an absolute delight! The mint flavor is just right. I made them for a party and everyone loved them! ☺️

    1. User avatar tanisha.berge88 says:

      2 stars
I don’t get why mint in cheesecake is a thing. Isn’t it supposed to be sweet and creamy? 🤔 Just seems weird to me.

    2. 5 stars
I made these too! They were a hit at my family gathering. I used crushed Oreo instead of chocolate cookie crumbs, and it turned out great! 😋

  67. User avatar scottie.torp84 says:

    2 stars
Peppermint extract can be harsh if you use too much, and I think mine might’ve been a little strong. Still tasty though—just more candy-cane vibes than “mint.”

    1. User avatar johnette.smith1963 says:

      5 stars
Totally agree—peppermint can go from “refreshing” to “mouthwash” fast. I usually start with half the extract and adjust from there.

    2. User avatar halflife4 says:

      4 stars
I had this same problem once. My first batch was basically candy cane, not minty. Next time I’m adding a little less for sure!

  68. User avatar lashay.cummings58 says:

    4 stars
I used crushed Oreos for the crumbs and it was a little rich, but in a good way. The mint flavor is nice—almost like a thin-mint cheesecake.

    1. User avatar Orlando Christiansen says:

      5 stars
Ooo that sounds so good 😋 I’m glad the Oreos didn’t make it gross—just rich in a “dessert-y” way. Thin-mint cheesecake is exactly what I was hoping for!

  69. User avatar oPandariaNo says:

    3 stars
Easy to follow recipe, but I think I used too much food coloring. They looked kinda weird. Still tasted okay though!

    1. User avatar jetta.thiel says:

      3 stars
Too much food coloring? I thought that stuff was just for looks. Guess it can ruin it too. 🤔

    2. User avatar ben.ebert56 says:

      4 stars
Glad it tasted okay! Maybe next time dial back the food coloring a bit? It’s all about trial and error. 🍰

  70. User avatar shanika.dare36 says:

    4 stars
Delicious with a touch of chocolate! I might add more peppermint next time, yum!

  71. User avatar fatima.ohara says:

    3 stars
Is it supposed to turn green? mine is brown… what’s up? lol

  72. 5 stars
These came out super cute and creamy! The peppermint extract is not subtle either—in a good way. I baked mine closer to 20 minutes and they were perfectly set.

    1. 5 stars
Totally agree—mine were super creamy too, and the peppermint was definitely noticeable (in a good, festive way). I also found 20 minutes was the sweet spot.

  73. User avatar royce.abernathy1993 says:

    4 stars
Cheesecake is life! Will try this but w/o chocolate crust, ugh!

    1. 5 stars
Totally agree! Cheesecake is amazing, but chocolate crust just doesn’t do it for me either. Can’t wait to see how yours turns out!

  74. User avatar taina.fisher5 says:

    5 stars
These came out super cute and the peppermint is definitely there without being too overpowering. I added extra chocolate shavings and it felt very festive!

    1. 5 stars
Ahh I love hearing that about the peppermint—my biggest fear is it’ll be overpowering. Festive + extra chocolate shavings sounds perfect!

  75. User avatar gearldine.vandervort says:

    5 stars
These were sooo good! I love mint and chocolate together. Definitely making these again!

    1. User avatar luanna.kuhic71 says:

      5 stars
Yum! Mint and chocolate are a classic combo. Glad you enjoyed them! I can’t wait to try this recipe myself.

  76. User avatar MAGA2024.Trumpster says:

    5 stars
Followed the instructions exactly (325°F, 18-20 min) and they set perfectly. Texture was creamy, not rubbery. Will make again for sure.

    1. 5 stars
I’m also obsessed with how well they set at 325°F. I’ve made them twice and same deal—18-20 mins seems perfect for mini size.

    2. User avatar Michael83 says:

      5 stars
Love hearing this! I always worry cheesecakes will go rubbery, so “creamy, not rubbery” is exactly what I want. Definitely trying your timing.

  77. 4 stars
Mini cheesecakes? Bad idea, they just disappear too fast! Make a big one next time!

  78. User avatar Effrafax of Wug says:

    4 stars
Mine cracked a little on top. I’m not sure if it’s overbaking or I added the eggs too fast. But still creamy and delicious—just not pretty.

  79. User avatar rex.pacocha63 says:

    3 stars
I love mint desserts, but this was kinda strong for me. I’ll use less peppermint extract next time.

  80. User avatar dominick.mohr85 says:

    3 stars
The recipe is solid, but 1/4 tsp peppermint extract felt a bit strong for my taste. Next time I’ll cut it down to like 1/8 tsp or add more milk/cream cheese to balance.

    1. User avatar phuong.huels54 says:

      5 stars
Totally agree—peppermint extract can be punchy. I usually do a scant 1/8 tsp and it’s perfect with the cream cheese.

    2. 5 stars
Nice! I’ve been afraid to use peppermint extract at all. Your suggestion to cut it or add more dairy balance makes sense—going to try 1/8 tsp next time.

  81. User avatar hedy.steuber45 says:

    4 stars
Peppermint extract always smells like toothpaste to me… but these actually didn’t taste like that. The cookie crust helps. Pretty impressive for something “mini.”

    1. 5 stars
Totally agree about peppermint extract—mine usually smells like toothpaste too 😅 But “mini” desserts are so forgiving. The cookie crust definitely helps cut the sharpness.

    2. User avatar anton.grimes says:

      4 stars
Interesting! I never think to use peppermint extract in cheesecake. How strong was the mint flavor after chilling—like subtle or straight-up minty?

  82. User avatar heath.corkery65 says:

    5 stars
Omg peppermint + chocolate cookie crust is such a vibe. The green food coloring is unnecessary but makes them look like holiday candy. Would definitely make again.

  83. User avatar lacy.sanford86 says:

    5 stars
These are dangerously cute and way better than I expected. The peppermint extract is perfect—tastes like a minty dessert shop treat.

    1. User avatar Alexis O'Connell IV says:

      5 stars
Okay I tried this and wow—those little edges are dangerously good. The peppermint extract really does taste like a dessert counter. Mine came out a touch too soft though, next time I’ll chill longer.

    2. 3 stars
I don’t know… 2 eggs for that much cream cheese seems off? Also 325°F for 20 minutes—I’m scared they’ll be runny. But I guess if the edges look golden it’s fine? Might try anyway with less peppermint extract.

  84. User avatar kareem.zieme29 says:

    4 stars
I used gel food coloring and the green looked more like mint than slime 😂. Texture was creamy, not grainy. Next time I’ll reduce the sugar just a bit, but that’s personal preference.

    1. 5 stars
Mint >>> slime 😂 Love that. Glad yours came out creamy!

  85. User avatar darrel.strosin2001 says:

    5 stars
These were dangerously good. The peppermint is subtle (not toothpaste-y) and the cookie crust is perfect. I’ll definitely make them again for holiday parties.

idk maybe my eggs were too big? batter was runny and the tops cracked a lil. still good tho, but i think my oven runs hot.

    1. User avatar Jessica Atreides says:

      4 stars
Eggs being bigger can definitely mess with bake time/texture. Next time maybe use a tablespoon or two less milk (or bake 1-2 min less if your tops start cracking).

    2. User avatar Questular Rontok says:

I had almost the same issue once—my batter was runny too. I think the key is mixing the cream cheese just until smooth and not overbeating once the eggs go in. Also, 18-20 min can vary a lot by oven.

I was skeptical about using cookies for the crust, but wow, it changed the whole game! Love it.

5 stars! I made these for my party and they were gone in a flash! Everyone asked for the recipe.

I don’t get why people love mint + chocolate together lol but okay. I tried them anyway and they were actually really good. Maybe my brain changed.

  90. User avatar Mrs. Kendrick Murazik says:

I’m skeptical about baking time—18-20 min felt short for eggs and cream cheese. Mine were jiggly at first but firmed up after chilling, so I guess it works.

  91. User avatar Random Dent says:

    4 stars
Mine baked fine, but the centers were a little soft until I refrigerated longer (like 4 hours). Also I used mint chocolate cookie crumbs instead of plain—still worked great.

  92. User avatar autumn.kiehn2004 says:

    5 stars
These turned out super cute and the peppermint flavor is actually noticeable without being overwhelming. I used crushed Oreos and it tasted like a holiday dessert from a bakery. The texture was spot-on after chilling.

  93. User avatar sherrie.douglas1957 says:

Not sure if it was my oven, but they came out slightly browned on top and a little cracked. Taste is great—next time I’ll lower temp or bake shorter.

  94. User avatar denver.mckenzie86 says:

I think 2 packages cream cheese is a bit confusing—mine was 16 oz total and worked fine, but I double-checked because the wording threw me off. Great texture once I got it right.

The crust part is solid, but I think 3 tbsp butter might be a bit much for my crumb size? Still delicious though.

    1. User avatar sung.lockman32 says:

      4 stars
Mine came out fine with 3 tbsp butter, but I will say I used slightly more cookie crumbs than the recipe calls for. Maybe that’s the key difference?

    2. User avatar steve_maga says:

      5 stars
Yeah, I agree—3 tbsp butter felt a little rich for my crumb amount too. I cut it down to 2 tbsp and the crust still held together really well.

I don’t like mint much, but my friends loved these! I am just here for the chocolate parts.

    1. User avatar Mr. Prosser says:

Chocolate is the best part anyway! Mint’s just there for looks. 😂

Followed the steps exactly. Mine baked a tiny bit longer (closer to 22 min) because the centers were still wobbly, but once chilled they set nicely. Sweetness was right on and the crust held together well.

    1. User avatar milan.hartmann1984 says:

      5 stars
Nice! I love hearing the centers set after chilling—sometimes bake time varies a bit with ovens. Glad the sweetness and crust held together too.

  98. User avatar Felice VonRueden Sr. says:

The peppermint extract tastes great, but my crust was crumbly and didn’t really “stick” to the liners. Maybe my butter wasn’t fully mixed? Still tasty though.

Not gonna lie, the green food coloring is kinda extra. I did it anyway and it looked like science project cupcakes lol, but my kids loved them.

  100. 2 stars
I accidentally used mint “flavoring” instead of peppermint extract and… it was okay? Texture was good, but flavor was weird.

325°F for 18-20 min… seems short for cheesecake with eggs. Mine cracked a little (probably overbaked or I beat too hard). Next time I’ll lower the heat or mix less.

    1. User avatar ali.schneider1995 says:

      5 stars
Totally agree—325°F at 18-20 min does feel a bit fast for anything with eggs. I wonder if mini size or oven quirks make it work though. Cracking usually screams either overbaked or too much air, like you said.

  102. User avatar samuel.jacobi says:

min cheesecakes are good but too sweet for me. Maybe less sugar next time?

  103. User avatar becki.ritchie38 says:

The green food coloring part feels unnecessary to me, but the flavor was nice. I forgot to refrigerate for the full 2 hours and they were softer than expected.

  104. User avatar renato.willms1974 says:

325°F for 18-20 min is a lie… or at least it didn’t work in my oven. I pulled them early and they were too jiggly in the middle. After longer baking and chilling they improved, but I wouldn’t call it foolproof.

  105. User avatar garth.mcclure83 says:

I followed the instructions pretty closely. Mine took closer to 22 minutes and I chilled overnight. Super creamy and not too sweet.

  106. User avatar Meriadoc Brandybuck says:

Why would you put green food coloring? Isn’t that just unnecessary? Tastes good tho.

  107. User avatar carroll.barton11 says:

I used gluten-free cookies and it worked great! Also I added green coloring and it looked super festive. Would make again for parties.

Super easy and looked fancy with minimal effort. I used crushed Oreos and it came out great. My family demolished them.

Totally agree—these look way harder than they are. I made them for a party and they disappeared fast. The peppermint is the perfect touch!

    2. User avatar Draugr Scourge says:

I tried this but mine cracked a little. I think I overbaked—next time I’ll pull them right at 18 min. Still tasted awesome though.

I made these for my mom’s birthday and she loved them! The whipped cream on top was a nice touch!

  110. 2 stars
Cheesecakes should be baked longer or they won’t be solid! Mine fell apart when I took them out.

  111. 3 stars
Mine cracked a bit on top, which I guess is normal for cheesecake… but I followed the steps pretty closely. Maybe my oven runs hot? Flavor is delicious though.

    1. 4 stars
That sounds super similar to what I’ve seen—cheesecake can crack even when everything’s spot on. My guess is oven runs hot or they’re just slightly overbaked; next time pull them right when the edges look set and the centers still jiggle a tiny bit.

    2. 4 stars
Oven temp could definitely do it. If yours runs hot, try 315°F (or bake 1–2 min less). Also don’t overmix after adding the eggs—more air = more cracking.

  112. 4 stars
Followed the recipe pretty closely, but my center was a little soft after 20 minutes. Still tasted great though—next time I’ll bake 2-3 minutes longer and chill longer.

  113. User avatar vance.white48 says:

My batter looked lumpy at first until I beat the cream cheese longer. After that they set fine—garnish really makes them pop.

These mini mint cheesecakes are to die for! So creamy and the mint flavor is just right. Perfect for the holidays!

  115. User avatar arlean.rempel says:

These turned out super cute and rich! The peppermint extract is the perfect amount—didn’t taste like toothpaste at all. I baked mine closer to 20 minutes and they were perfectly set.

  116. User avatar lenard.schmidt says:

    5 stars
These are the best mini cheesecakes I have ever made! Super easy and delicious. My kids loved them!

  117. 3 stars
Not gonna lie, 1/4 cup milk feels like a lot for only 8 oz cream cheese? My batter was pretty loose, but it still turned out. Could probably work with slightly less milk to get a thicker filling.

  118. User avatar tammera.sipes43 says:

    2 stars
3 tbsp butter seems low? My crumbs wouldn’t really bind until I added a tiny splash more butter. Maybe I did the crumb mix wrong, but yeah.

  119. User avatar dale.waters5 says:

Why eggs TWO packages of cream cheese? like, the ratio seems off to me but I’ll trust the process. (Also I used blue food coloring—whoops.)

  120. User avatar lizzzard says:

I’m skeptical about peppermint extract with cheesecake. It’s not bad, but it’s strong and kinda artificial tasting if you overdo it. Next time I’ll use less.

    1. User avatar Sue Permann says:

      2 stars
I used exactly 1/4 tsp and it still felt like toothpaste 😅 Maybe my peppermint was extra strong. Next time I’m cutting it further or adding more vanilla?

    2. 5 stars
Totally agree—peppermint extract can take over fast. I do like it, but I keep it to the smallest amount and it tastes way more “real.”

  121. User avatar bart.crooks2009 says:

    4 stars
Pretty solid for a mini version. I used a little less peppermint (1/8 tsp) because my family doesn’t love strong mint. Still tasted great with the chocolate shavings.

  122. User avatar trisha.reinger40 says:

Pretty tasty, but my tops cracked a bit (maybe I overbeated the eggs). Also I think 18 minutes was slightly too long for my muffin tin—next time I’ll start checking at 16.
