Meringue Tart

September 26, 2025

There’s something wonderfully nostalgic about a classic meringue tart. It’s the kind of dessert that looks impressive on the table, with its golden, cloud-like topping piled high and toasted just enough to catch the light. Beneath that airy crown lies a silky filling, often brightened with citrus or deepened with chocolate, all resting in a crisp, buttery crust. Each bite is a contrast of textures and flavors: the crunch of the pastry, the smoothness of the filling, and the melt-in-your-mouth sweetness of the meringue.

What is meringue?

Meringue is a light, airy mixture made by whipping egg whites with sugar until it forms stiff peaks. It’s often used as a topping for pies and tarts, or baked into cookies, pavlovas, and desserts.

What are the different types of meringue?

There are three main types:
French meringue: The simplest version, made by whipping raw egg whites with sugar.
Swiss meringue: Egg whites and sugar are gently heated over a water bath before whipping, creating a more stable meringue.
Italian meringue: Hot sugar syrup is slowly poured into whipped egg whites, resulting in a glossy, stable meringue often used for toppings or buttercream.

Why isn’t my meringue stiffening?

If your meringue won’t form peaks, it’s usually due to fat or moisture in the bowl or on the whisk. Make sure everything is completely clean and grease-free. Even a small drop of egg yolk can prevent the whites from whipping properly.

Can I make meringue ahead of time?

Yes, but how you store it depends on the type. Baked meringues (like cookies) should be kept in an airtight container at room temperature. Soft meringue toppings are best added just before serving to keep them fluffy.

Why does my meringue weep or shrink?

This usually happens if the sugar wasn’t fully dissolved or if the meringue was over- or under-baked. Also, spreading meringue on a hot filling helps prevent moisture from forming underneath.

How do I get golden tips on my meringue?

Use a kitchen torch for precise browning or bake briefly at a high temperature. This caramelizes the sugar and adds a beautiful toasted finish.

At its heart, a meringue tart is a celebration of balance. The meringue itself is a marvel, whipped from simple egg whites and sugar until it’s glossy and voluminous. Its delicate sweetness is the perfect foil for a tart, zesty filling like lemon or passion fruit. Together, they create a flavor that’s both refreshing and indulgent, satisfying without ever feeling heavy. Even the crust plays a crucial role, adding a buttery richness and a satisfying crunch that ties everything together.

One of the most charming things about meringue tarts is their versatility. They can be sophisticated centerpieces for elegant dinners or cheerful desserts for casual gatherings. Mini versions make delightful party treats, while a full-sized tart, artfully sliced, is always a showstopper. Seasonal twists also keep this classic fresh: think blood orange curd in winter, raspberry filling in summer, or a hint of lavender for a floral note in spring.

Beyond its taste and beauty, there’s something timeless about a meringue tart. It’s a dessert that feels special, often reserved for celebrations or moments when you want to impress. Yet, at the same time, it carries a sense of comfort, evoking memories of family meals and homemade treats. Whether you serve it as the grand finale to a dinner party or enjoy a quiet slice with tea, this dessert never fails to delight. Light, luscious, and full of contrast, a meringue tart proves that simple ingredients, when combined with care and creativity, can create something truly extraordinary.

YUM! I added some lemon zest, and it was heavenly. Will make again for sure! 🥳

This tart was so good! My family loved it! Thank you!

This recipe is workin’, but what if I don’t have a tart pan? 🤔

  4. 4 stars
It was so sweet! Kinda liked that but wow. Maybe less sugar next time?

    1. 2 stars
Less sugar? Are you kidding? That’s the whole point of a meringue tart! 🤷‍♂️

    2. User avatar Dr. Neville Cremin says:

      4 stars
I totally agree! It was super sweet, but I enjoyed it. Maybe dial it back a little next time. 😊

  5. User avatar maximo.block75 says:

    2 stars
Ok but how can you cook egg whites? That’s just raw, right? 🤨

  6. User avatar morton.herzog5 says:

    4 stars
I thought meringue was just sugar and eggs, lol. I was wrong. This recipe is the real deal!

    1. User avatar Ms. Garret Wunsch says:

      2 stars
Meringue is just sugar and eggs tho, not sure why its complicated. Seems like extra work for not much gain.

    2. User avatar samuel.morar2018 says:

      5 stars
Right? I always thought it was super simple too! This recipe is a game changer. Can’t wait to try it! 🤤

  7. 1 star
Can someone explain what ‘stiff peaks’ means? I just made a mess trying to figure it out.

    1. 3 stars
I think stiff peaks is like when its super hard. I just do it till it looks fluffy, maybe not the best but hey, it works for me.

    2. User avatar Ryuu Shenlong says:

      4 stars
Stiff peaks means when you beat the egg whites until they form peaks that don’t droop. Just keep mixing after soft peaks until they’re really firm! Don’t worry, it’s tricky at first.

  8. User avatar darwin.lemke56 says:

    2 stars
I don’t understand how anyone gets meringue to work. Mine turned out all runny. 🤷‍♂️

  9. 5 stars
This tart turned out amazing! The meringue was so fluffy! My family loved it.

    1. User avatar tobie.schamberger78 says:

      2 stars
I tried this recipe, and my meringue was more like a puddle. Not sure what went wrong.

    2. User avatar sherell.robel51 says:

      5 stars
So happy to hear that! Fluffy meringue is the best! What flavor did you use?

  10. User avatar vincent.okon60 says:

    3 stars
It was ok, but the crust was too crumbly for my taste. I prefer a firmer texture.

    1. User avatar lamar.swaniawski50 says:

      4 stars
I found the crust delightful! Maybe try baking it a bit longer next time?

    2. 3 stars
Too crumbly? I think that’s part of its charm! A firmer tart is just not right for meringue!

  11. 2 stars
Honestly, it was kind of bland… Not sure if I did something wrong.

  12. User avatar Barry Manilow says:

    4 stars
I thought it was gonna be hard to make but surprised myself! 🥳

  13. User avatar sabra.witting87 says:

    1 star
Why do people even like meringue? It’s just a glorified egg white. Pass!

  14. User avatar maryland.bernhard1978 says:

    4 stars
I can’t believe how easy this was! My first time making meringue and it turned out great!

  15. User avatar clarence.walker91 says:

    5 stars
Yum! I added some lemon zest for a twist! 🤗

    1. User avatar simone.keebler25 says:

      2 stars
Lemon zest? I dunno, that sounds a bit weird for a meringue tart… How does that even work? 🤨

    2. 5 stars
That sounds delicious! Lemon zest really brightens things up. I might try that next time! 🍋

  16. User avatar chang.gaylord58 says:

    3 stars
Is meringue supposed to be chewy?? Mine turned out kinda weird!

  17. User avatar katrice.muller67 says:

    3 stars
I followed the steps exactly, but my egg whites wouldn’t get stiff peaks. I must’ve had a greasy bowl or old eggs. Still tasted fine, just looked sad.

    1. User avatar kurtis.gutmann37 says:

      2 stars
Maybe your oven temp was off? I’ve had meringue look “sad” when it’s not browning fast enough. Also 350°F seems kinda low? I just do 400 and it works every time for me. (Could be wrong though 😅)

    2. User avatar benny.heaney87 says:

      5 stars
Ugh, that’s so frustrating—but honestly that sounds exactly like the usual culprit: even a tiny bit of grease can prevent stiff peaks. Next time try wiping the bowl/whisk with a little vinegar or lemon juice and make sure there’s *zero* yolk. Also, room-temp whites help a lot.

  18. User avatar rosendo.powlowski says:

    5 stars
This is just like my grandma used to make. Nostalgic and delicious! 😍

  19. User avatar dreama.lubowitz2006 says:

    3 stars
I dunno… the meringue didn’t turn out like I thought. Maybe it’s my eggs?

    1. User avatar lorean.bauch15 says:

      4 stars
It could be the eggs! Make sure they’re fresh and at room temperature. That helps a lot!

  20. User avatar mariella.veum25 says:

    5 stars
Best tart I’ve made. Period. The texture is so light—like clouds but still crunchy on the edges.

  21. 3 stars
Meringue was good, but I think it’s too much sugar for my taste. Maybe less next time.

  22. User avatar maximo.konopelski66 says:

    2 stars
350°F for that long feels off to me. My meringue started browning too fast around 20 min—should probably lower the temp or vent the oven? 😅

  23. User avatar eusebia.sauer says:

    5 stars
Soooo easy! I don’t usually bake, but this recipe basically walks you through it. Only problem is I ate the meringue off the spoon before spreading it 😅

    1. User avatar laine.olson85 says:

      5 stars
Honestly that’s the best part 😄 The spoon tax is real—still, the tart will be even better if you leave some for the topping!

  24. User avatar gerald.herman2024 says:

    5 stars
This was amazing! The meringue was so fluffy and sweet, just perfect. 🙌

    1. User avatar shelby.grady1966 says:

      5 stars
Glad you enjoyed it! The fluffiness is key for meringue. 😍

  25. User avatar Samwise Gamgee says:

    1 star
I always fail at making meringue. This one didn’t work for me either. Sad face.

  26. User avatar NAFO.SUPREMACY says:

    5 stars
This turned out so pretty—golden meringue with a crisp crust! I was nervous about stiff peaks, but the gradual sugar step really helped.

  27. 5 stars
This turned out way better than I expected! The crust is buttery and the meringue stayed nice and glossy. I baked until deep golden and it was perfect.

  28. 1 star
A waste of eggs if ya ask me. Not for me! 😒

  29. User avatar Blue Dartwing says:

    3 stars
Meh. Tastes good but it’s kinda plain without fruit or something. Like, give me lemon curd or berries and I’m in.

  30. User avatar hollis.frami97 says:

    2 stars
Idk if it’s me but I couldn’t get “stiff peaks” after adding all the sugar. It stayed kind of glossy and would not hold shape. I think I under-whipped or my bowl wasn’t clean. Not great looking, but it was still sweet.

  31. 2 stars
Meringue tart is my weakness. However, I think my egg whites had a tiny bit of yolk (oops). It still rose a little but not like the pictures.

  32. User avatar Homan Provement says:

    3 stars
Followed it exactly and it was… okay? The crust was a little too crumbly for my liking, and the meringue shrank slightly.

  33. User avatar Falmer Nightprowler says:

    4 stars
Loved the simplicity. Only tweak: I baked the crust closer to 18 minutes because my oven runs cool. Still delicious.

  34. User avatar emery.grant74 says:

    5 stars
This came out so pretty! The meringue was glossy and golden, and the crust stayed crisp. I used a slightly cooler oven rack and it helped a lot.

  35. User avatar evita.lebsack2022 says:

    5 stars
Yum! I added some lemon zest to the meringue and it was a hit!

  36. User avatar chet.schroeder says:

    2 stars
I had egg whites with a little yolk (oops) and the meringue never reached stiff peaks. Still, it tasted sweet and eggy in a good way.

  37. User avatar suspiciousCommentator says:

    4 stars
My crust shrank a bit, but it still tasted amazing. I think my butter wasn’t cold enough. Next time I’ll chill it longer.

  38. 2 stars
I followed the recipe exactly, but the meringue didn’t rise. What did I do wrong? 🤔

  39. User avatar otha.runolfsson says:

    5 stars
Love it! Great dessert for parties! Everyone asks for the recipe!

  40. User avatar tanesha.gutkowski says:

    4 stars
Delicious! But my crust was too thick, I will roll it thinner next time.

  41. 2 stars
Honestly, I found the crust way too crumby. Not a fan of this. Maybe I did something wrong?

  42. 3 stars
Honestly, meringue is tricky. Mine ended up runny. I’m not sure if I’ll try again. 😞

    1. User avatar Eddie the Computer says:

      4 stars
I totally get it! Meringue can be so temperamental. Maybe try using room temp egg whites next time? Good luck! 😊

    2. 3 stars
Just whip it longer! The more you beat, the better it gets! Or is that just for eggs? 🤔

  43. 4 stars
Tart crust was yummy, but I didn’t have vanilla so I used almond extract! Still good.

    1. User avatar celesta.rohan1964 says:

      3 stars
Idk, isn’t almond extract too strong? I prefer vanilla. But if you liked it, good for you!

    2. User avatar lorretta.herman12 says:

      5 stars
Almond extract sounds like a fun twist! Glad it turned out good for you!

  44. User avatar lacie.berge says:

    4 stars
I followed the steps pretty closely. Soft peaks to stiff peaks took longer than the recipe said (maybe my mixer is weak). Still delicious though—sweet, light, and not overly eggy.

  45. User avatar aron.purdy5 says:

    3 stars
Too sweet! Like, why so much sugar? I prefer less sweet things, but it’s okay.

    1. User avatar minnie.blick says:

      4 stars
I totally get it! Meringue can be really sweet. Maybe try reducing the sugar next time?

  46. User avatar art.mcdermott28 says:

    2 stars
Meringue is so tricky! Mine never gets stiff enough. What am I doing wrong?

    1. User avatar alana.anderson says:

      5 stars
I totally get it! Make sure your bowl is super clean and that no yolk gets in with the whites. That can mess up your meringue big time!

    2. User avatar lorene.bailey30 says:

      3 stars
Idk, maybe you’re not beating them long enough? Or the sugar could be too wet? Just a thought.

  47. User avatar manuel.blick96 says:

    4 stars
Pretty good, but mine shrank a bit—maybe I didn’t chill the butter long enough. Still tasted great though, like a classic dessert.

    1. 3 stars
I dunno… mine shrank too and I chilled the butter, so maybe it’s the flour? Also 15 min feels short for the crust, I think I baked mine longer or it drooped and the meringue kinda weighed it down. Still good tho, classic flavor like you said.

    2. User avatar jeanna.reinger40 says:

      5 stars
Thanks! Yeah, chilling the butter is huge for keeping the crust from shrinking—when it’s warmer it bakes up quicker and pulls in. Next time, chill the dough 15–30 min before pressing (or chill the diced butter even longer).

  48. 4 stars
Made this for my friend’s birthday. She loved it! 🎉

  49. User avatar catherin.erdman says:

    2 stars
Idk why mine was grainy—maybe I didn’t add the sugar slow enough? It still rose though, so… not a total disaster.

  50. User avatar Ilban Richese says:

    5 stars
This was so easy to make! My kids loved it! 🍰

    1. User avatar tami.ritchie29 says:

      3 stars
Easy? I tried making meringue once, and it turned to soup… How did you manage to get it right? 😅

    2. 5 stars
So glad to hear your kids loved it! Meringue is always a hit with my family too! 🙌

  51. User avatar reid.schmidt says:

    3 stars
350°F for both bakes seems a bit odd to me—wouldn’t the meringue weep? Mine did a little after it cooled, so next time I’ll try a lower temp.

  52. User avatar Carrie Oakey says:

    3 stars
I followed it exactly and my meringue never got to stiff peaks. Also my oven runs hot, so I had to pull it early or it browned too fast.

  53. User avatar trina.kovacek2000 says:

    2 stars
Lots of steps here. Idk if I have the patience for this. Just gonna stick to cookies.

  54. User avatar danyell.schamberger42 says:

    4 stars
Gotta say, it was easy to make! Just took a little time but worth the wait. Yummy!

  55. User avatar suspiciousCommentator says:

    3 stars
I followed everything and mine turned chewy instead of crisp. Also I think 350°F is too low? Not sure. Still tasty.

  56. User avatar Leto Atreides says:

    4 stars
The crust tasted good, but mine shrank a bit and the edges got darker around 12 minutes instead of 15. I’d recommend watching it—every oven runs different. Meringue was gorgeous regardless.

  57. User avatar Draugr Overlord says:

    4 stars
The crust is super buttery and nice, but 15 minutes felt short—mine was pale at first and I added 5 more minutes. Would make again.

  58. 4 stars
Pretty good for a dessert! But I can’t believe how much sugar is in the meringue – crazy!

  59. 5 stars
Vanilla + meringue is always a win. I added a little lemon zest and it tasted way fresher than plain sugar.

    1. User avatar Garlic Jr says:

      5 stars
Totally agree—vanilla in meringue is such a win. Lemon zest is such a smart tweak, I bet it cuts the sweetness nicely.

  60. 4 stars
Easy to make and taste so good! Great dessert for family gatherings. Will make again!

  61. User avatar Lunkwill and Fook says:

    3 stars
Love the simplicity, but 350°F feels a little high for a meringue tart. Mine browned faster than I wanted and I had to loosely tent with foil.

  62. User avatar brigitte.farrell50 says:

    5 stars
This tart is amazing! The meringue was fluffy and the crust was perfect. My family loved it!

  63. User avatar hosea.schaefer30 says:

    5 stars
Wow. It’s like sweet clouds on a buttery base. My whole family asked for seconds. 10/10 would make again!

  64. 4 stars
I’ve made meringues before and I gotta say: using all-purpose flour in the crust like this is fine, but chilling the butter matters a lot. Mine worked great since I chilled it extra.

    1. User avatar Spider Soldier says:

      5 stars
Yes!! Chilling the butter is the whole deal. I’ve rushed that step before and the crust got kind of greasy instead of crisp. Glad yours turned out great—how long did you chill it?

  65. User avatar chan.larson says:

    5 stars
Five stars!! I used extra vanilla and the whole house smelled amazing. The texture was light, not eggy.

    1. 5 stars
Awesome! “Not eggy” is exactly what I’m hoping for with meringue. Did you notice if it held up after cooling?

  66. User avatar halflife4 says:

    4 stars
Sooo sweet 😅 but in a fun dessert way. I used vanilla and it smelled amazing. Crust was a little dry though—maybe I should bake it less than 15 minutes.

  67. User avatar melvin.mohr says:

    2 stars
meh. too much sugar. also 30 minutes is not enough maybe. i dunno i just don’t like meringue tarts that much.

  68. 2 stars
Looks pretty, but I’m skeptical. Bake crust 15 min then bake meringue 30—seems like it could burn or stay underdone. I’d lower temp maybe.

  69. User avatar Dominic Vernius says:

    5 stars
The instructions are pretty clear. The part about clean bowl is real—mine worked after I wiped everything with a tiny bit of vinegar. Science!

  70. User avatar andrew.von says:

    4 stars
Followed the steps closely and the meringue turned a perfect light gold. Only thing is I needed like 35 minutes to get the color I wanted.

  71. User avatar maggie.heathcote79 says:

    2 stars
Mine didn’t get stiff peaks even after ages. I think my egg whites had a bit of yolk (oops). Not your fault though—just sad breakfast vibes.

  72. User avatar Rob McKenna says:

    3 stars
I’m skeptical about baking meringue at 350 for 30 minutes—seems like it would weep or collapse. Mine did start to weep after cooling, but it still tasted amazing. Next time I’ll lower the temp and dry it slower.

  73. User avatar honey.ritchie says:

    5 stars
Made this for dessert night and it came out gorgeous—golden top, crisp shell, and sweet but not cloying. The stiff-peak stage is key!

    1. 5 stars
Yes! The stiff-peak stage is the whole game—people rush that part and wonder why it weeps. Yours sounds perfectly set. 🍯✨

    2. 3 stars
I tried this once but my meringue never got really stiff… i think my egg whites had too much fat from a bowl i used earlier. Still tasted good though 😅

  74. User avatar rich.landlord says:

    5 stars
This came out way better than I expected! The crust was buttery and the meringue actually stayed glossy for once. 10/10 for the vanilla touch too.

  75. User avatar Humma Kavula says:

    5 stars
Made this for the family and it turned out WAY better than I expected. The crust was buttery and the meringue got that perfect golden color. I might chill the crust dough next time for extra flakiness.

    1. 5 stars
Love hearing this! The golden meringue is honestly the best part. Chilling the crust dough is a great call—should help with flakiness. Did you find it browns evenly after the extra time?

  76. User avatar ingeborg.anderson says:

    2 stars
Honestly… I don’t get meringue. It’s like clouds but with sugar. Mine collapsed as soon as it cooled. Still delicious though.

  77. User avatar erich.crona92 says:

    3 stars
My crust got a little too dark at 15 minutes. I’d reduce to 12 maybe, but the flavor is solid and buttery.

  78. 3 stars
The directions are simple and I like that. But why not mention cleaning the bowl thoroughly? I had residue from soap and it affected everything.

  79. User avatar roxann.friesen2016 says:

    3 stars
Pretty good, but 4 egg whites seems like a weird amount for a full tart top. I ended up with less meringue than I expected, so the layers were thin. Flavor was nice though.

  80. User avatar Cave Bear says:

    3 stars
Why does my crust always come out sandy? I pressed it pretty hard too. Maybe my butter wasn’t cold enough—going to chill it longer next time.

  81. User avatar Paula Nancy Millstone Jennings says:

    4 stars
“Clean bowl” is no joke. I used a bowl that still had a tiny bit of residue and the meringue wouldn’t whip. Learn from my mistake—scrub everything first. Once I tried again, it worked.

    1. 5 stars
Yes!! I learned this the hard way with whipped egg whites too—any grease or residue ruins it. Clean bowl and tools are everything.

  82. User avatar stuart.stoltenberg says:

    4 stars
This is delicious, but I’m skeptical about the exact baking time—30 minutes made mine too dark. Next time I’ll watch it and go by color.

This is one of those recipes that sounds easy but is actually kinda fussy. If the bowl/whisk isn’t spotless the whites won’t whip right.

    Too sweet.

Yeah, I agree—this one can turn out pretty sweet. Next time I’d cut the meringue sugar down a bit (like 3/4 cup instead of 1 cup) or add a tiny pinch of salt to balance it.

Hmm maybe you used bigger eggs or your meringue sugar ratio was off? I followed it and it was sweet but also good. Try adding a squeeze of lemon or some berries to cut it a lot.

Not gonna lie, 350°F feels too low/high depending on your oven. I did 325°F for 25 minutes on the second bake and it turned out better.

Pretty good, but mine shrank a little in the tart pan. Not a disaster though—flavor was great and the meringue browned nicely.

The crust tasted buttery and I liked the simple ingredient list. My meringue shrank a bit though, maybe I overbeated or my oven runs hot.

I love the texture contrast, but 30 minutes felt like not enough for my oven. I probably should’ve aimed for a deeper golden color.
