Health Benefits

A Balance of Flavor and Nutrition

While Linguine with Creamy Alfredo Sauce is undoubtedly a decadent treat, it can also be enjoyed as part of a healthy and balanced diet. By incorporating the right ingredients, you can enhance the nutritional value of this dish. However, it is important to practice moderation due to its higher calorie content.

The linguine noodles provide a source of carbohydrates, giving you energy to fuel your day. They are also a good source of dietary fiber, aiding in digestion and helping you feel fuller for longer.

In terms of the creamy alfredo sauce, it is typically made with butter, cream, and Parmesan cheese. While these ingredients contribute to its indulgent flavor, they are also high in saturated fat and calories. However, you can make adjustments by opting for lighter alternatives such as using milk instead of cream and reducing the amount of butter used. Additionally, you can add nutrient-rich ingredients like steamed vegetables or grilled chicken to increase the overall nutritional value of the dish.

Yummy dish! I added shrimp and it was delish.

    1. 5 stars
Shrimp sounds like a great addition! I’ll have to try that next time.

I don’t know about shrimp in Alfredo, kinda weird, don’t ya think?

  2. 4 stars
Alfredo is the best food! Not a fan of cookin tho 😂

    1. User avatar pura.koss15 says:

I totally get you! Cooking can be a chore, but this Alfredo sauce will make it worth it! Just five steps, you got this! 😄

    2. 4 stars
LOL I hate cooking too! But Alfredo is so good that I might actually try this recipe. Just need to convince myself! 😂

  3. 2 stars
Ok but why no flour or anything? Mine split a bit and looked oily, even though I simmered just 5 minutes. Could be the cheese brand. Tastes fine, presentation was rough though.

  4. User avatar lilly.pagac1990 says:

    4 stars
5 starz lol. I forgot to garnish with parsley bc i was too hungry 😭 but it was still good. Next time I’ll do it right.

    1. User avatar Lorilee Flatley PhD says:

      5 stars
Lol same — parsley is totally optional in the moment 😭 Glad it still tasted good though! Next time: garnish duty activated.

    2. 3 stars
I think Alfredo needs more garlic than just powder. Also 5 minutes simmer might be too short for me—mine thickens longer. But hey, if it was creamy and good, that’s what matters.

  5. 4 stars
I’m not a big fan of heavy cream recipes, but this was easy and fairly foolproof. I used freshly grated parm and it thickened nicely.

    1. 5 stars
Totally agree about using freshly grated parm—store-bought doesn’t melt the same. Glad it thickened for you!

  6. 2 stars
Way too much butter!!! Next time I’ll use less or replace it with olive oil.

  7. User avatar clark.prohaska99 says:

    3 stars
I followed the instructions, but my sauce turned out too thin. What did I do wrong? Anyone else have this issue?

  8. User avatar santiago.koss1983 says:

    4 stars
I followed the steps pretty much exactly, but mine got a little too thick. Next time I’ll loosen with a splash more cream or pasta water.

  9. 5 stars
Creamy, cheesy, yum! Will definitely make again.👍👍

  10. 5 stars
This was sooo good! I added chicken and it was a hit with the fam! ❤️

  11. 4 stars
I was skeptical about garlic powder instead of fresh garlic, but honestly it worked. The sauce clings to the linguine really well. Next time I’ll add a bit of black pepper for extra bite.

  12. User avatar paris.mertz says:

    5 stars
Made this tonight and it was super creamy without being too heavy. I added a little extra garlic and cracked black pepper at the end—perfect comfort food.

    1. User avatar shaunna.lockman says:

      3 stars
Hmm I followed it pretty much but mine turned a bit salty—maybe my parmesan was extra salty. Next time I’ll use less and season at the very end.

    2. 5 stars
Totally agree! I made this with extra pepper too and it hits that perfect comfort-food spot. Love how creamy it gets without feeling heavy.

  13. User avatar kenton.sauer93 says:

    2 stars
Way too much butter! I thought it would be healthier. Should’ve used olive oil instead…

    1. User avatar ronnie.schinner96 says:

      4 stars
I get what you mean about the butter, but it’s Alfredo! It’s supposed to be rich and creamy. You could always make a healthier version if you really want to! 😅

  14. 4 stars
    Linguine perfect! Yummy sauce!

    1. User avatar carlo.gulgowski says:

      5 stars
I’m so glad you liked it! The sauce is really delicious, isn’t it? I add a bit of nutmeg sometimes for extra flavor.

  15. User avatar Aurelion Sol says:

    1 star
Bleh, way too garlicky for my taste. I prefer a simpler sauce.

    1. User avatar Adela Abernathy says:

      2 stars
A simpler sauce sounds boring! Garlic brings so much to a dish. Just my opinion.

    2. User avatar Bess Twishes says:

      4 stars
I actually think the garlic gives it a nice flavor! Have you tried using less garlic powder next time? You might like it better! 😊

  16. User avatar suk.ullrich67 says:

    4 stars
Not gonna lie, I forgot the garlic powder but it still turned out delicious. Yum!

  17. User avatar Colin the Security Robot says:

    3 stars
Not gonna lie, I’m skeptical about garlic powder instead of fresh garlic. It’s okay, but I felt like it needed more punch. Next time I’ll use fresh.

  18. 2 stars
Is this really the real Alfredo recipe? I heard it should have egg in it! This ain’t right!

  19. User avatar Prostetnic Vogon Kwaltz says:

    2 stars
Couldn’t get it smooth—parmesan clumped up like it didn’t want to cooperate. Maybe my cheese wasn’t fresh enough?

    1. User avatar Super Saiyan Gohan says:

      5 stars
Ugh, parmesan clumping is so real. I’ve found it helps to pull the pan off the heat for a sec and stir the cheese in gradually, then bring it back to low. Also make sure it’s finely grated (not big flakes). Fresh cheese usually melts better, but temperature is the bigger culprit for me.

    2. 4 stars
I don’t think it’s the cheese as much as the heat—if the cream is too hot the parmesan kinda seizes. Also, I’ve used pre-shredded parm before and it clumps like crazy, so maybe yours was older. Next time shred yourself and keep it really low temp.

  20. User avatar malisa.franecki says:

    5 stars
I added chicken to mine and it was bomb! 😍

    1. User avatar ema.hudson69 says:

      4 stars
Chicken?! Sounds interesting! I never thought of that, but I might try it next time. 🍗

  21. 4 stars
I was a bit skeptical at first. Thought it needed more flavor, but I added some chicken and it turned out good.

    1. User avatar francene.prohaska2020 says:

      5 stars
Glad you found a way to make it work! Chicken sounds like a great addition to this dish.

  22. User avatar keira.hand13 says:

    1 star
Followed the recipe but my sauce didn’t thicken. What did I do wrong? 🙁

    1. User avatar russell.klein39 says:

      4 stars
Maybe you didn’t simmer it long enough? The cream needs to reduce a bit to thicken, I learned that the hard way!

  23. User avatar anh.murphy0 says:

    4 stars
Not gonna lie, I was skeptical about 5 minutes of simmering. But it actually worked—nice flavor and smooth sauce.

  24. 4 stars
Pretty good, but mine split a little when I added the cheese. I think I should’ve lowered the heat more. Still tasted great though—will try again.

  25. User avatar nina.hackett38 says:

    5 stars
Super easy and tasted restaurant-level. The sauce came out silky and clung to the linguine perfectly. I added a little extra parm and black pepper at the end—perfect comfort food.

  26. User avatar Shaddam Corrino IV says:

    5 stars
This turned out super creamy and comforting. I used freshly grated parmesan and it melted perfectly—no grainy texture at all. Will make again!

    1. User avatar diana.grant says:

      5 stars
Yes! Freshly grated Parmesan really is the secret—glad it came out smooth and creamy for you. I’ll try your method next time.

  27. User avatar steve_maga says:

    3 stars
Idk Alfredo is always kinda bland to me. This one was better than most, but I still added nutmeg and it helped a lot. Otherwise 3 stars.

  28. 5 stars
My kids loved it! Will make again for sure. Super easy and quick.

  29. User avatar clark.rippin says:

    4 stars
The garlic powder is a bit strong for my taste. I might try half next time, but overall it was still delicious and the coating was great.

    1. 5 stars
Totally get that—garlic powder can be punchy. Half definitely sounds like the move next time, especially since it’s going into a creamy sauce where it really stands out. Glad you still loved it though!

  30. 5 stars
    nummy

  31. User avatar King Cold says:

    4 stars
Easy instructions, and the sauce really does come together fast. I used pre-grated parm (oops) and it still worked, but fresh would probably be better.

  32. User avatar Yooden Vranx says:

    2 stars
Not good. I dont know if it was the cheese or what, but it was just too heavy for me. 😣

  33. User avatar Grunthos the Flatulent says:

    5 stars
I made it vegan with tofu and cashew cream, turned out outstanding!!

    1. User avatar terminatorXYZ says:

      5 stars
That sounds amazing! I’ve been trying to eat more plant-based and will definitely give this a go with tofu.

    2. User avatar cheri.crooks says:

      2 stars
But is vegan really as good as the real thing? I doubt it can be better than the original.

  34. User avatar charlyn.langosh67 says:

    5 stars
    Lol 5 stars. So good.

  35. User avatar horacio.schimmel43 says:

    3 stars
Couldn’t get it ‘smooth and creamy’—it turned grainy. Maybe my parmesan was pre-grated and too dry? Also simmering 5 minutes felt long for me.

  36. User avatar elwood.oconner says:

    5 stars
Can’t believe how easy this was. I thought it would be complicated, but nope!

  37. User avatar Slartibartfast says:

    2 stars
Honestly, I don’t think parmesan by itself makes an Alfredo. You gotta use actual mozzarella or something. Mine tasted a bit flat.

  38. 5 stars
Made this tonight and it was super comforting. The sauce actually came out silky, and the garlic powder gave it a nice gentle kick. I added a little extra parmesan and it didn’t hurt at all.

  39. 3 stars
I thought it would be better. The sauce was too thick for my liking. I prefer a lighter alfredo. 🙁

  40. User avatar San Shenlong says:

    5 stars
This was really good! The sauce was so creamy and delicious. My kids loved it!

  41. 5 stars
This recipe is incredibly delicious! The sauce is rich and creamy—it had my family asking for seconds!

  42. 3 stars
This tasted kinda bland to me… and I followed the steps exactly. I even used “salt and pepper to taste” like the recipe says but still. Might be my parmesan was pre-grated and salty? Not sure.

    1. 5 stars
I’ve had that happen too—Alfredo can go “meh” if the parmesan isn’t doing enough. Pre-grated parm sometimes has anti-caking stuff and can taste flatter. Next time I’d use freshly grated (and maybe add a little extra garlic powder or even a pinch of nutmeg). Also, make sure you’re salting the pasta water—this recipe only says salt/pepper at the end.

  43. User avatar craig.dibbert1998 says:

    5 stars
Best part was how fast it was. Like, I was eating in under 20 minutes. My kid asked for seconds lol

  44. User avatar tonisha.fay1970 says:

    3 stars
Pretty good, but mine turned grainy after adding the Parmesan. I think my cream got too hot. Still tasty though—just not as smooth as the description.

    1. 4 stars
Ugh, that sounds exactly like overcooking the cream. Parmesan can make it grainy if it hits too much heat—next time try lower heat or add the cheese slowly off the heat.

    2. User avatar Francisco Block says:

      4 stars
Mine did that once too. I also think my parm was old-ish and it clumped. Still tastes fine though, just not that silky restaurant vibe 😅

  45. 3 stars
Question: should the cream be simmered longer than 5 minutes? Mine tasted kinda raw-ish, like it didn’t reduce enough.

  46. User avatar betty.haag20 says:

    4 stars
Not bad at all! I forgot the garlic powder at first (oops) so I sprinkled it later. Still turned out creamy—kind of forgiving recipe.

    1. User avatar gilbert.bradtke99 says:

      5 stars
Haha love that it still worked! Garlic powder later is basically the same as adding “extra garlic vibes.” 😄 Creamy Alfredo is definitely forgiving when you keep the heat low.

    2. 4 stars
See I woulda messed it up by stirring too hard or overheating the cream, so props. Next time maybe add the garlic right away though—1/2 tsp just sounds like it could vanish. But if it’s creamy, I’m sold.

  47. User avatar barbar.lang1997 says:

    5 stars
This was soooo creamy! Loved it!

    1. 5 stars
I agree! It was like a hug in a bowl. Best pasta ever!

    2. User avatar synthia.toy2018 says:

      2 stars
I dunno… it seems pretty heavy with all that cream and butter. Can’t be good for you.

  48. User avatar debroah.hills72 says:

    1 star
This is not authentic Italian! Real pasta shouldn’t be so heavy with cream. You gotta use olive oil. Disagree with this recipe.

  49. User avatar chase.okeefe1996 says:

    4 stars
I followed the steps exactly but my sauce got a little too thick. Next time I’ll add a splash of pasta water to loosen it.

  50. 4 stars
I added some chicken to it, and it was a hit at dinner. Definitely making again!

  51. User avatar Roberta Sawayn Jr. says:

    2 stars
“Alfredo” without real garlic and without nutmeg?? I dunno… it’s alright, but not like restaurant alfredo. Also my sauce separated a bit when I cooked it too hot. Still ate it though 😅

  52. User avatar mickie.cummings says:

    2 stars
I tried making it but the sauce curdled! What did I do wrong?

    1. 4 stars
Maybe you had the heat too high? The cream can separate if it’s cooked too fast.

    2. User avatar franklyn.koch88 says:

      3 stars
I dunno, but my sauce curdled too once! I think it was the cheese? 🤷‍♂️

  53. 4 stars
I’m skeptical about the garlic powder (like, not fresh). But honestly it worked and didn’t overpower. Next time I might add some nutmeg because Alfredo usually has that vibe.

    1. 5 stars
Totally get your skepticism—garlic powder can go harsh. But if it didn’t overpower, you nailed the balance. Nutmeg in Alfredo is a great idea too; it really gives that “restaurant” vibe.

    2. User avatar charlie.hahn94 says:

      3 stars
I don’t know about nutmeg… I feel like it’ll taste weird with parm. Garlic powder is fine though, fresh garlic would be too strong for me. Did you use regular parm or the fancy one?

  54. 5 stars
Wow, restaurant vibes for real. Tossed it with linguine and it vanished off the plate. Next time I’ll add black pepper like a responsible adult.

    1. User avatar rachelle.runolfsson says:

      5 stars
Right?! I did the same thing—one minute it’s on the plate, the next it’s gone. 😄 That black pepper is the move for sure.

  55. User avatar hugh.abernathy10 says:

    4 stars
I was skeptical about garlic powder instead of fresh garlic, but it still tasted nice. Would recommend adding more cheese if you love that salty kick.

  56. 3 stars
I forgot to stir occasionally and it almost stuck at the bottom. Lesson learned, but still tasted great once I got it under control.

    1. User avatar arline.mckenzie says:

      4 stars
I totally do that sometimes 😅 I usually turn the heat way down and keep stirring so it dont like… burn on the bottom. Next time you’ll nail it.

    2. User avatar Gag Halfrunt says:

      4 stars
Ugh, that would stress me out! I’m glad it turned out great though—Alfredo can definitely get sticky if you don’t keep an eye on it.

  57. User avatar phoebe.beatty says:

    4 stars
Linguine or spaghetti? What’s the diff? 🤔 Made it with spaghetti it taste good anyways.

  58. User avatar tissues_with_issues says:

    5 stars
Made this tonight—so creamy and comforting. I used fresh garlic instead of powder and it was still awesome. Parmesan really melts in nicely.

  59. User avatar Gandalf the Grey says:

    4 stars
Super easy recipe! My kids devoured it. Will make again!

  60. User avatar louie.walsh34 says:

    3 stars
Pretty basic recipe, nothing special about it. Maybe add some herbs or something.

    1. User avatar Elmira Jast DVM says:

      2 stars
Why would you wanna ruin a classic? This alfredo is perfect! Addin’ herbs sounds weird 😕.

    2. User avatar claude.lang62 says:

      4 stars
I think it’s good as it is! Sometimes simple is better. But yeah, herbs might spice it up!

  61. User avatar quintin.gaylord says:

    4 stars
Mine got a little thick too fast when I reduced the heat. I added a splash of pasta water and it came back nicely. Good recipe!

  62. 5 stars
Super quick weeknight dinner. I garnished with parsley and it looked fancy even though I’m clearly not. Would make again.

  63. User avatar bettye.rosenbaum67 says:

    3 stars
I used pre-grated parmesan (oops). Still tasted good, but not as smooth. The texture was slightly grainy—learned my lesson.

    1. User avatar Bart Donnelly says:

      3 stars
Wait—parmesan is parmesan, no? 😅 I think it’s the low simmer step. Maybe you didn’t simmer long enough for it to fully dissolve, so it gets grainy. Still, nice save!

    2. User avatar ALTplusF4 says:

      5 stars
Ahhh yup, pre-grated can be a little dusty/with anti-caking stuff, so it won’t melt as silky. Next time, fresh-grate for sure—glad it still tasted good though!

  64. User avatar Frost Troll says:

    3 stars
This recipe is fine, but I’m skeptical about 5 minutes simmer time. I feel like cream needs longer? Either way, it turned out okay.

    1. 4 stars
Yeah I get the skepticism—5 minutes sounds short. I usually do more like 8–10 so it thickens a bit, but if the cream is warm and you stir, it can still come together. Glad it turned out okay for you!

  65. User avatar raymond.mckenzie says:

    5 stars
This was so easy to make! My kids loved it. 5 stars!

  66. User avatar liberal.hero says:

    5 stars
Absolutely delicious. I simmered the cream slowly like the instructions and the cheese melted perfectly—no lumps.

  67. User avatar Sand-Dial says:

    3 stars
I liked the flavor, but it was way too rich for my taste. Could probably cut the butter/cream in half and still be good.

  68. 3 stars
I think you forgot to mention how to cook the linguine properly. Mine came out mushy and gross.

    1. User avatar sid.nicolas5 says:

      4 stars
You should definitely follow the package instructions carefully. Overcooking can make it mushy! Maybe try a timed test next time?

  69. User avatar bobbie.greenholt says:

    4 stars
The instructions are simple, but I wish it said to turn off the heat before adding cheese. Mine clumped at first, then smoothed out after more stirring.

  70. User avatar Ms. Tiffiny Mayer says:

    2 stars
Too much butter for me. Made it greasy.

    1. User avatar andres.parisian58 says:

      2 stars
Greasy? I think you just cooked it wrong. Butter is key for a good Alfredo! 🤔

    2. User avatar kenna.kautzer says:

      4 stars
I actually loved the butter! It made it so rich and creamy. Maybe try using less next time? 🤷‍♀️

  71. 4 stars
I accidentally used salted butter and forgot to add extra salt—still tasty though. The sauce texture was perfect, creamy like restaurant style.

  72. 5 stars
Easy weeknight meal. I threw in some black pepper and it tasted restaurant-y. My family asked for seconds.

    1. User avatar karrie.howell2023 says:

      5 stars
Yes!! That’s exactly how I like it—black pepper really makes the Alfredo pop. Glad your family went back for seconds 😄

  73. User avatar irish.weissnat says:

    2 stars
I tried this and the sauce separated a little when I turned the heat up. Lesson learned: low heat is not optional with cheese.

    1. User avatar Storm Atronach says:

      5 stars
Yep—cheese sauces can totally split if the heat gets too aggressive. Low and steady really is the key with cream + Parmesan. Glad you figured it out!

    2. User avatar linnea.mcclure93 says:

      3 stars
I think it’s more than just “low heat.” I’ve done alfredo style stuff and if the parm was too clumpy or not fresh it can seize/split anyway. Did you use pre-grated or straight from a block?

  74. User avatar Miles Teg says:

    2 stars
Why do you need butter AND cream? Isn’t that too much fat? I used olive oil instead!

  75. User avatar Glossu "Beast" Rabban says:

    5 stars
This is the best alfredo I’ve ever made! So creamy and delicious. 5 stars!

  76. 3 stars
I don’t think it was as creamy as it should be. Maybe I did something wrong?

  77. User avatar Mathew Raynor says:

    5 stars
Delicious! Just like at Olive Garden! Yum!

  78. 2 stars
Way too buttery for me. Maybe I’m just not an Alfredo person, but I found it heavy and rich.

  79. 3 stars
Do you have to use heavy cream? Can I use milk? 😬

    1. User avatar Gag Halfrunt says:

      3 stars
You can use milk, but it won’t be as rich and creamy. 😕 Just keep that in mind!

  80. 3 stars
Eh, it’s just pasta with cheese. Not that special. 😒

    1. User avatar berry.lemke54 says:

      4 stars
I get what you mean, but it all depends on how you make it! A good Alfredo can hit the spot. Maybe try adding some veggies or chicken to it? 🌱🍗

  81. User avatar Questular Rontok says:

    5 stars
Creamy and super comforting. I added a little extra garlic and cracked black pepper at the end—turned out rich without being heavy. Followed the steps exactly.

  82. 4 stars
Not bad! I followed it pretty closely, but my sauce got slightly thick too fast on low heat. Maybe my cream was colder? Still delicious though, and the garlic powder flavor was nice.

    1. User avatar ka.ziemann1995 says:

      5 stars
Good catch! Cold cream can definitely make the sauce seize up and thicken faster than expected. I’ve had luck keeping the cream at room temp and whisking it in more slowly—also Parmesan melts smoother if it’s added gradually.

  83. User avatar Matilda Collier says:

    5 stars
So creamy and comforting! I added a pinch of nutmeg and it really made the sauce taste “restaurant-y.” Definitely making again.

  84. 3 stars
Not bad, but I think 5 minutes simmer is too short? I wanted more flavor depth. Also used pre-grated Parmesan and it didn’t melt as nicely.

This is dangerously good. I doubled the cheese like an absolute hero and now I’m adding parsley to everything. 10/10 would eat straight from the pan.

Danggg I love this energy 😂 Doubling the cheese really is the correct move. Parsley on top too? That’s chef behavior.

    2. User avatar Vroomfondel says:

I tried Alfredo before and it went all grainy… do you melt the Parmesan gradually or just dump it in? Asking because “straight from the pan” sounds dangerous 😅

This is missing something for me. It’s creamy but kind of bland unless you go heavy on salt/pepper. I ended up adding a splash of lemon and it really woke it up.

    1. 5 stars
Totally agree—mine tastes kinda flat too unless I salt/pepper aggressively. A little lemon or even a tiny pinch of nutmeg fixes it for me.

I think the key is simmering on low and not rushing the cheese. I’ve ruined other sauces by turning the heat up too high.

    1. User avatar Rhiannon Brown says:

      5 stars
Yes!! Low and slow is everything for Alfredo. If the heat’s too high the cheese just turns grainy and sad. I simmer the cream too, like you said, and it comes out smooth every time.

Alfredo sauce is supposed to be made with egg, right? This is just butter and cream. Not authentic.

Easy and quick to make! Perfect for a weeknight dinner. I added some grilled chicken and broccoli to it.

  90. User avatar Brandy Gislason PhD says:

Pretty good, but mine got a bit too thick after it sat for a minute. Next time I’ll loosen it with a splash of pasta water.

Made this tonight and it came out super creamy. I used freshly grated parmesan and it melted perfectly—no graininess at all. The garlic powder gives a nice mellow flavor, not too sharp.

I love alfredo, but this felt a touch bland until I used more salt. After that, it hit the spot.

    1. User avatar Novella Abernathy III says:

      3 stars
Hmmm I’m not sure. I used the exact amounts and it was still bland for me, so I added more parmesan and a pinch of nutmeg. Maybe the garlic powder needs to be fresh garlic?? Either way good base, just needs a tweak.

Totally agree—Alfredo can be a bit timid without enough seasoning. I usually start light on salt, but end up adding more at the end too. Glad it worked for you!

I tried to follow it but forgot to simmer long enough. The sauce was thin, like soup vibes. Family said it was “fine,” so… fine lol.

Honestly, 5 minutes might not be enough depending on how hot your stove runs. I usually give it a few more minutes after lowering the heat until it coats a spoon—otherwise it stays kinda soupy. Next time, simmer a bit longer and keep stirring so it thickens with the Parmesan.

The garlic powder + heavy cream combo is legit. I served it with grilled chicken and it made the whole meal feel fancy.

This is basically my go-to Alfredo now. The sauce actually comes together smoothly when you keep the heat low before adding the Parmesan. Delicious!

I tried something similar but mine never stays smooth… maybe my Parmesan is pre-shredded? Also 5 minutes feels short but I’ll trust you 😅

    2. User avatar beryl.johnson says:

      5 stars
Yes!! Keeping the heat low before the Parmesan is the key—I always used to rush it and the sauce would get grainy. This sounds spot on.

I love a simple alfredo, and this one tastes like the “fancy” restaurant version. The garlic powder is a nice touch. Will definitely make again.

Pretty good, but I think it needed a little more salt. Also I simmered longer than 5 minutes because my sauce seemed thin, and that helped. Would definitely make again.

    1. User avatar Mrs. Johnnie Beier says:

Totally agree on the salt—Alfredo can taste a bit flat without it. Glad simmering longer fixed the thickness too. Next time I might aim for closer to 8–10 minutes before adding Parmesan.

    2. User avatar Carlton Kuphal says:

I tried this once and it was still kinda runny even after simmering 😅 maybe too much cream? Also I don’t have Parmesan fresh so I used the pre-shredded kind and it clumped. Still decent though.

Not bad at all! The garlic powder is a little strong though—maybe reduce to 1/4 tsp if you’re sensitive.

    1. User avatar cinda.sawayn80 says:

Hmm I used 1/2 tsp and it was perfect for me 😅 I think it depends on the brand of garlic powder. But yeah if you’re sensitive, definitely start lower.

Thanks! I agree the garlic can be a bit punchy—next time I’ll try 1/4 tsp. Great call.

This is basically my go-to quick alfredo. Only tweak: I add a little black pepper and a pinch of nutmeg. Tastes fancy for minimal effort.

The garlic powder worked, but I think fresh garlic would be even better. Also wish it mentioned pasta water—mine clumped a bit at the end.

Made it for dinner and my family devoured it. I used freshly grated parmesan and it melted smooth—no gritty texture. Would definitely make again!

This is a nice quick dinner. My kid actually ate it without complaining, which is a win in our house.

Way too much butter for my taste—my skillet was basically an oil slick at first. Flavor was good though once it emulsified.

    1. User avatar kym.waelchi8 says:

      4 stars
Totally get it—when I make this I cut the butter down a bit too. Once the cream and parm emulsify it *does* turn out really tasty, but that initial “oil slick” phase is real.

    2. User avatar maira.adams84 says:

      4 stars
Maybe your heat was too high? I’ve found that if the butter bubbles hard before the cream goes in, it gets greasy fast. Low and slow helps a lot.

  104. User avatar Lucius Klein says:

I followed it pretty much exactly, but next time I’ll add a pinch of nutmeg. The sauce was good, just felt a little one-note to me.

    1. 3 stars
I wouldn’t add nutmeg—seems weird with Alfredo. Maybe try more parmesan or a splash of milk instead? Also “simmer 5 minutes” is kinda long? Mine gets thick way faster, like 2–3 minutes.

    2. User avatar venita.feest53 says:

Totally get the “one-note” feeling. I’ve noticed that if you don’t add something acidic (like a squeeze of lemon) or a little extra garlic/pepper, it can taste flat. Nutmeg might help too—love that idea.

  105. 2 stars
Not gonna lie, Alfredo sauce feels a little bland to me. It needs more seasoning—like more pepper or even some onion powder.
