Ingredients
  

  • 1 cup lentils rinsed and drained
  • 2 tablespoons olive oil
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 6 cups vegetable broth or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the onions, carrots, and celery, and sauté until the onions are translucent, about 5-7 minutes.
  • Stir in garlic, cumin, and coriander, and cook for another minute until fragrant.
