If you’re looking for a dish that’s light, bright, and full of flavor, lemon herb grilled chicken with couscous should be on your menu. It’s a balanced meal that’s easy to make and satisfying enough for lunch or dinner, especially when you want something wholesome but not too heavy.
The star of the dish is, of course, the grilled chicken. Marinated in a mix of lemon juice, olive oil, garlic, and fresh herbs like parsley, thyme, and oregano, the chicken turns out juicy and flavorful with just a hint of char from the grill. The lemon not only tenderizes the meat but also adds a sunny brightness that pairs perfectly with the herbs.
While the chicken is marinating or grilling, you can prepare the couscous. It cooks in just minutes, making it an ideal base for this dish. Once fluffed, it’s tossed with a bit of olive oil, lemon zest, chopped parsley, and, if you like, a handful of finely chopped vegetables such as cucumber, red onion, or cherry tomatoes for extra texture and color.
To bring it all together, serve the sliced grilled chicken over a generous bed of couscous. Add a wedge of lemon on the side and sprinkle some extra herbs on top for a fresh finish. For extra creaminess, a spoonful of Greek yogurt or a light tzatziki makes a great accompaniment.
What makes this dish really shine is its simplicity. The ingredients are straightforward and fresh, and the flavors are clean and vibrant. It’s the kind of recipe that feels like it came from a sunny café in the Mediterranean, but it’s easy enough to prepare any night of the week.
Whether you’re meal prepping for the week or hosting a casual dinner, lemon herb grilled chicken with couscous is a reliable go-to. It tastes just as good cold as it does warm, making it perfect for picnics, lunchboxes, or leftovers the next day.

Ingredients
- 4 chicken breasts boneless, skinless
- 2 lemons juiced
- 3 tbsp olive oil
- 2 Garlic cloves minced
- 1 tbsp thyme chopped, fresh
- 1 tbsp rosemary chopped, fresh
- Salt and pepper to taste
- 1 cup couscous
- 1 1/2 cup chicken broth
- 2 tbsp parsley chopped, fresh
Instructions
- In a bowl, whisk together the lemon juice, olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal the bag and let the chicken marinate in the refrigerator for at least 1 hour.
- Preheat a grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before serving.
- While the chicken is grilling, prepare the couscous according to the package instructions, using chicken broth instead of water. Fluff the couscous with a fork and stir in the fresh parsley.
- Serve the grilled chicken with the couscous and enjoy!
I don’t understand why everyone loves this. The chicken was too dry for me and couscous is just weird.
I actually found the chicken juicy! Maybe try cooking it a bit less next time? And couscous is one of my faves!
This is a solid recipe! Just make sure your chicken is not overcooked and it’ll be perfect.
The recipe says discard the excess marinade, which is good safety-wise, but I was hoping to save some. Could add it back only if boiled? Idk.
Yeah, I totally get wanting to save it. But since it touched raw chicken, you really should not add it back unless you bring it to a full rolling boil (and even then I’d keep it separate and use it for a sauce rather than “marinating” again). Otherwise it’s risky—especially with garlic in there. I usually just reduce a little chicken broth + lemon and call it a day.
Did it once. Tasted like lemon water with garlic. Will not repeat. (Maybe my grill was too hot?)
I tried this recipe, but my chicken ended up a bit dry. Maybe I grilled it too long? Good flavors though!
Maybe try grilling for less time next time? 6-8 mins is usually right, but every grill is different! Glad you liked the flavors!
Not sure about using rosemary and thyme together—mine smelled a bit like soap at first (maybe I used too much?). Eventually it mellowed, but I’m skeptical it’ll be a repeat.
I tried it but my couscous came out kinda clumpy. I think I didn’t fluff soon enough. Chicken still tasted good, but next time I’ll watch the liquid amount closer.
This was absolutely delicious! The chicken was juicy and full of flavor. Definitely making it again!
Honestly… lemon chicken and couscous sounds fancy but also kinda bland? I tried it and it was actually super good—my family asked for seconds. Don’t skip the fresh herbs.
Lemon chicken? Count me in! My taste buds approve! 🎉
Couscous? Like the stuff you find in a can? I used rice instead. Still turned out pretty good tho.
Yum! I put a lil bit of hot sauce on mine for a kick. 🥵 Next time, I might add some veggies on the grill too!
Veggies? I dunno. I think it’s good just like that. Don’t mess with perfection! 😒
That sounds delicious! Hot sauce is a great idea! 🥳 Adding veggies will make it even better!
um… couscous went soggy 😕 maybe I used too much broth? chicken was fine. wouldn’t make again
Quick question: is 1 cup couscous dry or cooked? I used dry and it seemed right but the package instructions were confusing lol.
I can’t believe how easy this was! I usually mess up grilled chicken, but this turned out perfect.
I was skeptical about cooking couscous with broth, but wow. Tastes way better than plain water. Chicken could’ve used a tiny bit more salt for my taste though.
I had a bit of a hard time with the grilling part. My chicken got kinda dry. Maybe I cooked it too long?
Lemon with chicken? Really? I thought that sounded weird but it was actually really good!
I know right? Lemon makes everything better! Glad you liked it!
This was so delicious! My family couldn’t get enough. The lemon really makes a difference!
Made this last night—super bright and fresh. The lemon + rosemary combo is perfect, and the couscous soaked up the broth nicely. Will definitely repeat.
Yes!! The lemon + rosemary really makes it feel so fresh. Glad the couscous soaked up the broth too—mine does the same.
Followed it pretty much exactly. Flavor is great, but 6-8 minutes per side felt a bit long for my grill—one breast got slightly overdone. Next time I’ll start checking earlier.
Not gonna lie, couscous with chicken broth sounds kinda fancy for something so simple. But it worked. The parsley at the end is the move.
I followed it mostly, but I didn’t have fresh rosemary so I used dried (maybe too much?). It turned out a bit overpowering, yet still good.
Oh no—dried rosemary can definitely be stronger than fresh. I usually use about 1/3 the amount when swapping. Glad it was still good though!
what’s couscous?? Can I just use rice?? I wanna try but not sure about it.
Couscous is like tiny pasta, really! Rice would work too but couscous soaks up flavors better. Give it a go!
What’s couscous?! I’ve never heard of it! I just use rice for everything. Not sure if I wanna change now.
Perfect summer meal! I didn’t have chicken broth so I used water. Still good!
I don’t think it would taste as good with water. Chicken broth adds flavor! But if you liked it, that’s what matters!
Using water instead of chicken broth? That’s kinda bold! Glad it worked for you, tho!
The instructions are easy, but my grill time was longer—more like 10 min per side for thick breasts. Still delicious, just watch your temps.
I was really skeptical about the lemon flavor, but it turned out great! Chicken was juicy and flavorful.
Juicy? But how can chicken be juicy with lemon? I don’t know about this. Seems off.
I’m glad you liked it! Lemon really adds a nice zing, doesn’t it? I think I’ll try it with fish next time! 😊
Kinda bland. I think it needs more spices. I added some chili flakes and it helped.
Looks too complicated for me. Why not just fry the chicken? 🤷♂️
Made this last weekend—so bright and herby! The lemon + rosemary combo is legit, and grilling time was spot on for my chicken. I also let the couscous sit covered for a couple minutes and it fluffed perfectly.
Not bad but kinda strong on the rosemary for me. Like, I used a bit too much because I chopped “2 tbsp” instead of 1—oops. The chicken was juicy though.
Totally get that—rosemary can overpower fast. Glad your chicken stayed juicy though! Next time maybe reduce to ~1 tbsp or even do half rosemary/half extra thyme.
I’m skeptical about couscous getting enough flavor from just broth, but the lemon/herb chicken fixes it. Still, I might add some lemon zest to the couscous next time.
Lemon herb grilled chicken?? Yummy! Had it with some corn on the side. 10/10 would eat again!
Sounds delish! I need to try this recipe soon. How did you cook the corn?
Lemon chicken is da best. Yum! 🙌
Lemon chicken is indeed amazing! I make it all the time. What do you usually serve it with?
I don’t have a grill, so I pan-seared it. Still worked—just got less char. Flavor was legit though.
This recipe is amazing! The chicken came out so juicy and full of flavor. Definitely making it again!
I love lemon + rosemary, so I was excited. Mine came out a little too salty though, and I’m not even sure why—I didn’t measure the salt. Still tasty, just go easy.
Yummm! I added some chili flakes to the marinade for a little kick. So good!
Not bad but I think I overcooked mine? It ended up a bit dry even though I hit 165°F. Maybe my grill was hotter than “medium-high.” Still tasted flavorful though.
Yeah, 165°F is a safe temp, but chicken can definitely dry out if the grill runs hot or you’re on the long end of the 6–8 minutes. I usually pull it around 162–164°F and let it rest—carryover helps.
The chicken was dry and the couscous was undercooked. I followed the recipe exactly tho! Not sure what went wrong.
Simple and delicious. I had to use lemon zest too because I’m extra lol. The herby smell is unreal.
Yummy! But roast chicken is way better lol.
The lemon + thyme combo is super bright. I marinated mine closer to 3 hours and the chicken was juicy and flavorful. Couscous with chicken broth was a great move—won’t do it any other way now.
This was fantastic! The lemon really brightened the chicken. Will make it again for sure!
I’m glad you liked it! The lemon does add a nice touch. How about trying it with some veggies next time?
Made this for dinner and it turned out super juicy. The lemon + rosemary combo smells amazing on the grill.
This recipe is absolutely delicious! The chicken was so juicy and full of flavor. My family loved it!
Not bad, but I think it needs something more—maybe a little heat or a sauce. Also, my couscous got a bit clumpy even though I followed the package directions. Still ate it all, so… yeah.
I followed the recipe to the letter and the chicken tasted too sour! Maybe I used too much lemon? Not sure if I will make it again.
Made this last night—so bright and herby! The lemon really cuts through the richness of the chicken. I grilled a bit longer since my breasts were thicker, but it turned out juicy.
Made this for dinner and it was super fresh and bright. The lemon + herbs combo is spot on. I let the chicken marinate closer to 3 hours and it grilled juicier than usual.
Love hearing this! 3 hours marinating really makes a difference—totally agree on the lemon-herb brightness. Did you grill on direct heat the whole time or finish with the lid closed?
My kids gobbled this up! So quick and easy to make. Thanks for sharing!
Quick and easy? I dunno, sounds kinda fancy to me. My family would turn their noses up at fancy.
I’m so glad to hear that! This dish really is a hit with kids. Plus, it’s healthy!
Lemon and chicken, classic combo! But I used beef by mistake. Still good, I guess.
I kinda skipped the herbs and just used lemon and chicken. It was ok, but I’m not good with cooking. Maybe try the full recipe?
I totally agree! Herbs make such a difference. Give it another shot with the full recipe, you’ll be surprised! 🌿
Skipping herbs? Really? That’s like making pizza without cheese! But hey, at least you tried! 😂
I don’t get the hype. Lemon chicken is fine, but this didn’t wow me. The herbs were nice but not enough contrast.
Totally get what you mean—lemon + herbs can be kinda “pleasant” but not always wow. I’ve found the contrast comes more if you add something punchy with the couscous (like extra lemon zest or a bit more salt/pepper) and don’t skimp on the fresh parsley. Also, grilling time can dry it out fast, so maybe the chicken wasn’t getting that good char flavor?
Good recipe. Simple. Would make again!
Totally agree—this looks straightforward and flavorful. The lemon-herb marinade sounds like it really does the work. I’d definitely make it again too!
Grilled chicken with couscous? Sounds fancy, but I don’t even know what couscous is. Is it like rice?
I tried this last night, but my chicken was a little dry. Maybe I overcooked it? Anyway, the couscous was great with the broth!
Why do I need to put chicken in a ziplock? Can’t I just marinate in a bowl? Seems silly.
I dunno, seems like a lot of work for chicken. Just use a bowl, right? Why waste bags?
Using a ziplock helps keep the marinade on the chicken better, plus it’s less mess. Trust me, it’s worth it!
YUM!!! So good 🥰
I’m not convinced about putting chicken broth in couscous every time, but wow—this one actually nailed it. Lemon makes it feel restaurant-y.
Not gonna lie, I tried it and I think I messed up… I used 1 cup broth and boiled it with the couscous instead of following the package. Still tasted good though, like tangy lemon chicken. Maybe next time I’ll use the full 1.5 cups like the recipe says.
I’m with you—chicken broth in couscous sounds like one of those “why not just use water?” things. But the lemon + herb combo is legit. Restaurant vibes for sure.
I didn’t have fresh thyme/rosemary so I used dried and maybe that’s why it tasted flat. Also my couscous turned out clumpy even though I fluffed it. Could be user error… but I doubt it 😂
Totally possible it was the dried herbs—fresh vs dried can make a big difference. Also dried herbs are stronger, but if you didn’t adjust the amount, it can go off. For couscous clumps: I’ve found the key is letting it steam covered 5 minutes and fluffing gently, not aggressively.
meh
Not bad, but the marinade felt kinda strong? Like very garlicy. Next time I’ll cut the garlic in half. Couscous was the star.
I used dried thyme/rosemary (because I’m not fancy like that) and it still worked. Next time I’ll do fresh herbs for sure.
Pretty tasty! I was worried 6-8 minutes per side would dry out the chicken, but it came out juicy. I added a little extra rosemary because I like it strong. Next time I’ll check the chicken earlier though.
That’s exactly what I’ve experienced—6-8 min/side sounds scary but if you hit 165°F it stays juicy. Love the extra rosemary idea! 🌿
Pretty good! I used dried thyme/rosemary and it still worked, just not as fragrant as fresh. Couscous came out fluffy with the broth—would definitely do again.
The amounts seem fine, but I would add a little more garlic. Also, I forgot to discard the excess marinade and it almost burnt on the grill—lesson learned.
Wait—so you marinated in the bag and then you HAVE to toss the marinade? I always just brush it on lol. Probably why mine sticks and chars.
Ooo I love extra garlic—this marinade sounds super bright. And good catch on discarding the excess; grill “almost burnt” is always a lesson learned the hard way 😅
Made this last night—so bright and herby. The lemon + garlic combo is legit, and the couscous soaked up the broth perfectly. I marinated the full 2 hours and grilled it to 165°F. Will repeat!
This was so easy to make and tasted delicious! My whole family loved it. Will definitely make again!
I’m skeptical about the marinade amount. With only 3 tbsp olive oil, it feels like it won’t coat 4 chicken breasts well, but mine probably depended on how big the breasts were. Flavor was okay though, not wow.
