Jalapeno Fries with Cheddar

February 1, 2024

If you’re a fan of bold flavors and crave a little heat, jalapeño fries with cheddar might just become your new favorite indulgence. This snack takes everything you love about loaded fries and turns it up a notch with crispy jalapeño strips and gooey melted cheese.

The magic starts with fresh jalapeños. Slice them lengthwise into thin strips, the seeds can be left in for extra heat or removed for a milder experience. Lightly coat them in seasoned flour or a tempura-style batter to give them a delicate crunch once fried or baked. These fries aren’t just spicy, they’re satisfyingly crisp on the outside while keeping a bit of bite inside.

Once the jalapeño fries are cooked to golden perfection, it’s time for the cheddar. A generous sprinkle of shredded sharp cheddar goes a long way. You can pop the tray back into the oven just long enough to melt the cheese and let it seep into every crevice of the fries, creating a gooey, spicy, salty combo that hits all the right notes.

For an extra punch of flavor, consider adding a touch of smoked paprika or garlic powder to the cheese before melting. Or go full-on indulgent with a drizzle of sour cream, a dash of lime juice, or even a scattering of crispy bacon bits.

These fries are perfect for game day snacks, casual gatherings, or even as a side dish with burgers or grilled meats. They’re easy to make, super customizable, and guaranteed to disappear fast once served.

The balance of spicy jalapeños and creamy cheddar makes these fries addictive, each bite delivers a satisfying mix of heat, crunch, and melty goodness. Serve them hot, with a cold drink and maybe a ranch or chipotle mayo dip on the side, and you’ve got a snack that’s far from ordinary.

Jalapeño fries with cheddar aren’t just a twist on traditional fries, they’re a celebration of bold flavors and creative comfort food.

My kids loved these fries! I even added bacon bits, so good!

I don’t know about the jalapenos. Can’t handle spice. Might try without them.

  3. 3 stars
Too much spice for me. My mouth was on fire! Maybe I’ll try less cayenne next time.

  4. 2 stars
I followed the recipe but they came out mushy. Maybe my oven is broken?

    1. User avatar mary.wolff69 says:

      3 stars
Nah, it’s probably just your oven. Once I had the same problem and got it fixed!

    2. User avatar rosemarie.lind28 says:

      4 stars
Maybe try slicing them thinner next time? Sometimes the thickness can make a big diff!

  5. User avatar porter.wolff88 says:

    4 stars
Pretty solid recipe. 20 + 5 + 5 worked great in my oven, but next time I’ll slice the fries even thinner so they crisp more evenly.

  6. 3 stars
Eh, not my favorite. The cheese kinda went everywhere and they were soggy.

  7. 4 stars
I love jalapenos, so these were a hit for me! Cheddar on top is just divine.

  8. User avatar nannette.hickle says:

Isn’t 400°F too high for fries? I usually do them at 375°F. Just sayin’.

    1. User avatar CTRLplusW says:

      5 stars
I think 400°F is perfect! It gives them that crispy texture. Trust the recipe!

  9. User avatar lashawnda.blick43 says:

    4 stars
Pretty solid, but my fries didn’t get as browned after the flip. Next time I’ll cut them even thinner and maybe broil for a minute at the end to crisp up the top.

    1. User avatar trent.funk46 says:

      5 stars
Thanks! Browning can be tricky—thinner fries should help a lot. I like the broil idea at the end too. Did you use a light-colored baking sheet or parchment? That can affect crisping.

    2. 3 stars
Mmm mine also paled after the flip. I think 20 min is not enough. I would try 30 then flip, and skip the broil cuz it burns my cheese quick lol. Still tasted good tho.

  10. User avatar edward.treutel2006 says:

These fries are a game changer! So cheesy and spicy. Yum!

What a great twist on fries! My kids loved them, even with the jalapenos.

Fries with jalapenos? Sounds weird lol. How did they even like that? 🤔

    2. User avatar aubrey.dibbert1998 says:

Idk, this seems too complicated for fries. Just fry em like normal!

  14. User avatar Pasta Fasta says:

I prefer regular fries. These are weird. 😒

  15. 3 stars
Not a fan of cilantro, can I skip that part? What’s it for anyway? 😅

  16. User avatar edwardo.cassin2022 says:

I made these but forgot the paprika. Still tasted good though.

  18. 4 stars
Jalapenos and cheddar? What a combo! I didn’t have paprika, so I used chili powder instead. Still tasty! 🔥

  19. User avatar bryon.huels44 says:

    3 stars
My jalapeños were super spicy so I probably overdid the heat. But the recipe is straightforward and the cheese melted perfectly.

  20. User avatar jayson.boyle39 says:

I dunno, I thought they would be better. The fries turned out soggy instead of crispy. Maybe I did something wrong…

Jalapenos don’t go on fries, that’s just wrong. What’s next, ketchup on cereal? 🤔

    1. User avatar Brandy Bottle says:

      4 stars
No way! Fries with jalapenos are great. Ketchup on cereal is just dumb. Try it before you knock it! 😜

I actually think jalapenos on fries sound amazing! A little spice never hurt anyone. 😋

  31. User avatar coleman.okeefe69 says:

    1. User avatar Roger Overandout says:

    2. User avatar sidney.heller2001 says:

      2 stars
They look good, but I dunno about all that spicy stuff. Can’t handle heat like that. Also, aren’t fries just supposed to be salty? 🤔

  32. User avatar scarlet.schamberger1958 says:

    3 stars
Looks good, but can you make it without cheese? My friend is lactose intolerant. But yeah, I love spicy stuff.

    1. User avatar theodore.langworth80 says:

      4 stars
You can just leave out the cheese. Maybe try adding extra jalapeños instead? Spicy!!

  33. User avatar lessie.wisozk17 says:

    4 stars
I skipped the cayenne and added some ranch dressing on the side. Perfect!

  34. User avatar christeen.macejkovic1968 says:

    3 stars
I dunno… they looked good but I think I overcooked mine. The cheese didn’t melt right…

    1. User avatar kia.kunze73 says:

      4 stars
Don’t worry! Sometimes ovens can be tricky. Maybe try reducing the time next time? You got this!

  35. User avatar april.dooley2025 says:

    2 stars
Sounds good but where’s the ketchup? You need that for fries!

    1. 4 stars
I guess ketchup is a must for fries, lol! But these sound super tasty even without it. Maybe a spicy dip would go well too!

  36. User avatar burl.berge80 says:

    5 stars
So easy to make and healthy! I used olive oil like you said. Great recipe 🙂

  37. User avatar elvin.moen2001 says:

    2 stars
Looks good but 400°F seems kinda low for fries, no? Mine didn’t get much color. Maybe I should’ve used a hotter oven or a convection setting. Still flavorful though!

    1. 4 stars
I get what you mean—400°F is a bit on the gentle side. I usually do 425°F and flip halfway, and they come out way more golden. Maybe your fries were a little thick too?

    2. User avatar ArabianNights says:

      3 stars
Nah, 400°F is fine imo. If they didn’t color, it’s more about spacing—single layer and don’t overcrowd. Also soaking the cut potatoes helps a lot with crisping.

  38. User avatar lorilee.beier2015 says:

    3 stars
I followed it exactly and mine came out kinda soggy in the middle. Maybe my fries were too thick? Still tasty, just not that crisp vibe.

  39. User avatar Arthur Philip Deodat says:

    4 stars
Really easy to make! But I think I used too many jalapenos. They were super spicy! 😅

  40. User avatar elsa.casper94 says:

    2 stars
I don’t know about this recipe. Seems a bit too spicy for me. 😬

    1. 4 stars
I understand, but you can always reduce the jalapenos or leave them out. Free to make it your way! 😊

  41. User avatar kellye.zboncak63 says:

    5 stars
These are the best fries ever! So cheesy and spicy! 10/10 would recommend.

  42. User avatar hallie.mosciski says:

    2 stars
Meh, they were okay. More like potato sticks than fries.

  43. 5 stars
    Yummy!

    1. 4 stars
Yummy for sure, but 1 cup cheddar on fries feels like not enough… and 1/2 tsp cayenne might be mild if your jalapeños are weak lol. Still gonna make it though.

    2. 5 stars
Yesss! The combo of cheddar + jalapeño is dangerous (in a good way). I’m trying this ASAP 😋

  44. User avatar suspiciousCommentator says:

    1. User avatar rickiestmorty says:

  45. User avatar tiffany.cremin43 says:

Why are we putting jalapenos on fries? Seems kinda weird to me.

    1. User avatar Gaius Helen Mohiam says:

      4 stars
I think jalapenos add a great kick! You should give it a try before you judge. 😊

    2. User avatar Gabriella says:

      2 stars
But fries are supposed to be simple! Why ruin them with peppers? Just stick to cheese!

  46. 5 stars

    1. User avatar Majikthise says:

Homemade fries??? Easy peasy! I used sweet potatoes instead, just as good! 😋

  48. 5 stars

  49. User avatar markus.gulgowski says:

Potatoes, good. Cheese, good. This recpie, not so good. Gonna stick to plain fries.

    1. User avatar alisha.haley11 says:

      5 stars
But plain fries are just… plain. You missin’ out on flavor! Trust me, give these a shot!

    2. User avatar yahaira.skiles76 says:

      4 stars
I dunno, man. Sounds tasty to me! Spicy and cheesy is the way to go. Maybe try again?

  50. User avatar harlan.turner79 says:

    3 stars
Just ok. Would’ve been better if the cheese was more melty. Dissatisfied.

  51. 2 stars
I don’t get it… fries in an oven without soaking? They came out kind of soft for me. I like extra-crispy fries, so this wasn’t it. 🙁

    1. User avatar Cammar Pilru says:

      4 stars
I get your point 😅. Without soaking, the outside can be more “soft potato” than crisp. I’ve found cutting a bit thinner and making sure they’re in a single layer helps a lot—also, if your oven runs cool, 400°F might not be hot enough.

    2. User avatar noble.runte3 says:

      4 stars
Tbh the recipe says bake 20 + 5 + 5 = only 30 mins. For extra-crispy, you might need more time and/or a higher temp (like 425°F) + flipping halfway. Also patting the fries dry after slicing makes a difference.

  52. User avatar carroll.bergstrom says:

    1 star
Paprika with fries? Sounds weird, but I gave it a shot. Too spicy for me though. 1 star.

    1. User avatar tommy.lindgren says:

      4 stars
I think you might have used too much cayenne! Maybe try less next time? I love this recipe!

  53. User avatar winifred.armstrong67 says:

    5 stars
yummy delish 10/10 would fry again.

  54. 4 stars
So easy to make! I forgot cilantro but it didn’t matter. Will try again with it next time.

  55. User avatar arminda.crona80 says:

    3 stars
I think this recipe needs more cheese. Just a bit more. And why cilantro? I don’t like it.

  56. User avatar bennie.jakubowski1957 says:

    2 stars
Uhhh… why flip them at 20 minutes? I didn’t and they stuck a little (maybe my parchment?). Still, jalapeño cheese was incredible.

  57. User avatar deneen.jast1963 says:

    5 stars
These fries are AMAZING! The spice level is perfect. I didn’t even need ketchup!

  58. User avatar dale.bogisich says:

  59. User avatar irish.hand2000 says:

    5 stars
Cheddar on fries is always a win. The cilantro at the end gave it that fresh kick. I’d try adding a squeeze of lime too.

  60. 1 star
Are jalapenos even spicy? I didn’t think they were. Mine turned out bland.

  61. 3 stars
I don’t think the jalapenos add much. Should stick to plain fries with cheese.

    1. User avatar Rod N. Reel says:

      5 stars
I totally disagree! The jalapenos give it a nice kick! Plain cheese fries are boring! 🙄

  62. 4 stars
Easy recipe! I didn’t have fresh cilantro, but used dried. Still turned out good!

  63. 5 stars
Not gonna lie, I was worried about only 20+5+5 minutes, but they actually browned nicely. The seasoning is spot on—garlic powder and paprika combo is doing the heavy lifting.

  64. User avatar Frostbite Spider says:

    1 star
I think regular fries are better. These taste weird with jalapenos. Not for me.

  65. User avatar Christine Gleason says:

    1. User avatar clair.dooley says:

  71. User avatar jannette.fahey says:

    4 stars
Pretty tasty, but my fries weren’t as crisp as I wanted. I think my potatoes were a bit thicker. Next time I’ll slice thinner and maybe broil for a minute at the end.

    1. User avatar jacque.kunze says:

      5 stars
Yeah, broiling at the end is a great fix. If they were thicker, they usually steam instead of crisping in the oven—slicing thinner helps a lot. Did you also flip them halfway like the recipe says?

  72. 3 stars
Is cilantro really necessary? I don’t like it at all. Fries would be fine without it.

  73. 3 stars
meh. 400°F is fine i guess. mine went soft, not fry-like. also i forgot to flip lol so maybe that’s on me? anyway 3 stars.

    1. User avatar dora.robel2015 says:

      4 stars
I think 400°F is okay, but they really need the flip + single layer. If they’re crowded they steam and get soft like you said. Next time try thinner fries and a hot-ish pan.

    2. User avatar delmer.homenick says:

      3 stars
dang i forgot to flip one time too and it was like baked potato wedges lol. also cheese on top can trap moisture. maybe bake longer before adding cheddar?

Yum! The best fries I ever had. Better than the ones at McD’s for sure!

    1. 4 stars
I gotta try this! I love fries and jalapenos. Are they really better than McD’s? 😊

  78. 4 stars
I didn’t have jalapenos but used bell peppers instead. Still tasty but not the same kick. Next time I’ll stick to the recipe!

  79. 4 stars
Great flavor, but my jalapenos were a little too aggressive 😅 I used fresh ones and they were spicy-spicy. Still ate them all though.

  80. User avatar ressie.ohara4 says:

    4 stars
I was skeptical about baking fries with just 20+5 minutes, but the seasoning really sticks. The cheese melts nicely. Cilantro on top surprised me—in a good way.

  81. 5 stars
These fries are AMAZING! The jalapenos have just the right kick, and the cheese makes it even better. Definitely a new favorite in my house! 🌶️🧀

  86. User avatar robin.wolff2026 says:

Not bad, but 1 tsp salt felt like a lot? My potatoes were pretty salty, and I had to add a squeeze of lemon at the end to balance. Flavor was good though.

    1. User avatar avril.marks41 says:

      5 stars
Sorry about that! Different potato sizes/brands can really change how much salt comes through. Next time I’d try 1/2 tsp salt and season to taste—then you won’t need the lemon at the end. Glad the overall flavor was still good though!

  87. User avatar lucius.bergnaum39 says:

    5 stars
Wow wow WOW! I never thought I’d like jalapenos this much, but these fries are the bomb! 🔥

  88. User avatar phillip.lebsack2014 says:

  90. User avatar CTRLplusW says:

Ugh I hate when the cheese turns into a stretchy mess 😅 Parchment makes sense—also I wonder if adding the cheddar a minute later (after the fries are flipped) helps it cling better?

Maybe you didnt wait long enough for the fries to dry out? I made these and my cheese stayed put. Also 400F is kinda low? I do 425 and it works better lol.

Fries are too soft! I like them crispy. Oven might not be hot enough.

Fries good. Cheese taste nice! Me like!

Cayenne pepper + jalapeno felt like overkill for me. The taste was good, but I’d cut the heat in half next time or use mild jalapenos.

I followed the recipe but my fries turned out soggy. I think I cooked them too long. 😟

I made these before and they came out perfect! You sure you cut them thin enough? That’s the secret!

Soggy fries? I think maybe you didn’t use enough oil or the oven was too low. Gotta follow the temps!

I was skeptical at first about jalapenos on fries, but woah! This is a game-changer.

I thought they were too spicy! Maybe tone down the jalapenos a bit.

Too spicy? Nah, just eat some bread after! 😅

I love spicy food, but I get it! Maybe 1 jalapeno instead of 2 could work? Just a suggestion!

I tried this recipe, but my fries turned out too soggy. Maybe I didn’t bake them long enough? Not sure if I’ll try again.

I had high hopes but these were just too spicy for my taste. Maybe less cayenne next time.

Yeah, soggy fries can be a drag! Try cutting them into thinner pieces next time or leaving them in for a bit longer like you said. A little extra patience goes a long way!

U should let em cook longer or maybe turn up the heat a bit! Soggy fries r the worst, no joke! Good luck!

Why do people put jalapenos on fries? Just eat the fries and leave the peppers out.

Not bad… but too spicy for me. Also I accidentally used smoked paprika once and it tasted kinda weird. Still, the flavors were balanced once I toned down the cayenne.

Totally get that—jalapeños + cayenne can be *a lot*. I usually cut the cayenne in half (or skip it) and add a little extra paprika for the color/flavor. Also smoked paprika is definitely a different vibe, so that “weird” taste checks out. Glad you got it balanced though!

A friend made them and I tried them, they was good! But too spicy for me. LOL!
