Italian Breakfast Strata

September 11, 2023

Italian Breakfast Strata is a delicious and satisfying baked dish that’s perfect for brunches, holidays, or make-ahead breakfasts. Layered with rustic bread, eggs, cheese, Italian sausage, and vibrant vegetables, this savory casserole is like an elevated version of a frittata – rich, hearty, and full of flavor.

The beauty of a strata lies in its simplicity and flexibility. Day-old bread cubes (often ciabatta or sourdough) are layered in a baking dish and soaked in a seasoned egg and milk mixture. This base is then combined with ingredients like sautéed Italian sausage, bell peppers, spinach, mushrooms, and lots of melty cheese, typically mozzarella, Parmesan, or provolone. The mixture is allowed to rest, often overnight, so the bread fully absorbs the custard and all the savory flavors meld together.

Baking transforms the strata into a golden, puffed-up dish with a creamy center and a slightly crisp top. The result is a sliceable, crowd-pleasing breakfast that’s easy to prepare in advance and can feed a family or group with minimal effort. It’s also a great way to use up leftovers or incorporate fresh herbs like basil, parsley, or oregano for added freshness and Italian flair.

Whether served with a side salad, fresh fruit, or just a good cup of coffee, Italian Breakfast Strata brings comfort and elegance to your breakfast table. It’s ideal for festive mornings like Christmas, Easter, or Mother’s Day, or any time you want a warm, make-ahead breakfast that feels special.

I followed it mostly, but I didn’t press hard enough and a few spots stayed a bit dry. Next time I’ll really mash the bread down.

    1. 5 stars
That makes sense—if you don’t really press it down, some cubes just don’t soak. Next time try pressing with the back of a spoon (or even a tamper) and make sure the egg/milk goes right down into the corners of the dish. Also, letting it sit 5–10 minutes after baking helps it firm up instead of staying dry.

  2. 5 stars
This was super cozy—everything came out nicely set and the top was golden like the recipe said. I used a little extra pepper and it felt extra flavorful.

  3. User avatar olga.hettinger2 says:

    4 stars
I followed it exactly and the flavor was great—oregano + cheese combo is so good. Next time I might add a pinch of garlic powder because it tasted a tiny bit one-note to me.

  4. User avatar Dr. Veronika Yost says:

    5 stars
I’m giving it 5 because my kids actually ate it without complaints. I will say, I sprinkled extra parmesan on top and it browned beautifully.

    1. User avatar hyon.bartoletti23 says:

      3 stars
Wait… 45 min at 350 and it sets in the center? Mine always comes out too wet. Maybe I should press it more? Also I think my oven runs hot? 🤷‍♂️

    2. 5 stars
Aww that’s the best review—kids actually eating it means it’s a win. The extra parmesan browning also sounds spot on.

  5. 5 stars
Five stars! I made it the night before (minus baking), and the next morning it was perfect. My house smelled amazing and the texture was spot on after resting the 5 minutes.

  6. User avatar Carmen Barrows says:

    4 stars
This is good but salty if you don’t watch the ham/parmesan. I’d reduce salt and rely on the cheese. Also, letting it sit 5 minutes really helps—otherwise it’s a little runny.

  7. User avatar Arthur Philip Deodat says:

    4 stars
Pretty solid idea, but I think 6 eggs might be a bit light if your bread cubes are large. Mine needed closer to 55 minutes to fully set in the middle.

  8. User avatar Spider Soldier says:

    5 stars
My kid ate it without complaints, so that’s a win 😂. The oregano is subtle and works well. Next time I’ll add spinach if I’m feeling fancy.

    1. User avatar filiberto.robel92 says:

      4 stars
Nice! I’d be scared mine would get soggy, but 45 min at 350 seems okay. When you add spinach do you squeeze the water out first? Otherwise it might turn kinda watery, right?

    2. User avatar ashely.west6 says:

      5 stars
Haha I love when kids just eat it—instant approval 😂. That oregano subtlety is exactly what I was hoping for. Spinach next time sounds legit!

  9. User avatar norman.klocko45 says:

    5 stars
Not gonna lie, I was skeptical about “breakfast strata” using Italian bread only. But wow. My family kept going back for seconds. I’d absolutely make again.

  10. 5 stars
This was a huge hit at our brunch! So cheesy and delicious. Will definitely make again!

    1. User avatar shaquita.emmerich says:

      5 stars
So glad you liked it! This strata is one of my favorites too. Perfect for gatherings!

    2. User avatar terminatorXYZ says:

      3 stars
I thought it was a bit bland. Maybe add some veggies next time? Just a thought.

  11. 1 star
I don’t trust recipes that call for so many eggs. Too eggy for me! One star.

  12. User avatar joel.tromp35 says:

    4 stars
Pretty solid. I used low-fat milk and it still worked, though next time I’ll do whole milk for richer flavor. Also let it sit longer than 5 min—helped a lot.

  13. User avatar morton.gleason31 says:

    2 stars
Ugh, this was too bland for my taste. I won’t make it again.

  14. User avatar dan.okeefe21 says:

    4 stars
The instructions are clear, but I wish it said whether to cover it with foil at first. Mine browned a bit too much before fully setting, but flavor was still good.

    1. User avatar tanya.howell says:

      4 stars
I did it exactly like that and mine was kinda dry and too brown too 😅 maybe your oven runs hot. Next time I’d try lowering to like 325 and maybe cover loosely with foil. Still tastes good though!

    2. User avatar anonymous_hacker says:

      5 stars
That’s a great point—if it browns before it’s set, I’d cover it with foil for the first ~25 minutes and then uncover to finish. Helps the center set without over-browning.

  15. 3 stars
Not bad but I can’t believe it’s breakfast food. Feels like lunch.

    1. User avatar mathWizard says:

      4 stars
I agree! This does feel more like lunch than breakfast. But it looks delicious! 😋

  16. User avatar allen.kuhlman50 says:

    3 stars
Okay but 1 cup ham AND 2 cups milk feels like it might be watery? I added extra cheese and it helped. Still tasty though—would make again with adjustments.

  17. 2 stars
Not a fan. The texture was off for me. Maybe I did something wrong? But it just didn’t hit right.

  18. 4 stars
Italian breakfast strata sounds fancy but the ingredient list is pretty basic. Still, mozzarella + parmesan makes it taste like you tried harder than you did. Good comfort food.

    1. User avatar helaine.fisher says:

      5 stars
Totally agree—this looks “fancy” but it’s basically pantry staples. The ham + mozzarella + parmesan combo is doing the heavy lifting for sure. I’ve made similar strata and it’s peak comfort food, especially with oregano in the egg/milk mix.

  19. 4 stars
I forgot the oregano and it still tasted great. I wonder if I can use basil instead. Good recipe! 4 stars.

  20. 2 stars
Okay, but does it really need mozzarella + parmesan? That’s like doubling the dairy. Mine turned out greasy-ish unless I used less ham.

    1. User avatar Trin Tragula says:

      4 stars
Honestly, you *can* cut it back—mozzarella for melt/texture and parmesan for that salty, savory bite. If yours got greasy, I’d try using less mozzarella (or a part-skim one) and be sure the ham isn’t super fatty. Also letting it sit 5–10 min helps it set, so it doesn’t feel oily.

    2. User avatar eloy.schaden14 says:

      3 stars
Yeah I’d say you don’t have to double it. Use just mozzarella OR just parmesan. Greasy-ish likely came from the ham fat + cheese fat, not the recipe “for sure.” I’d reduce both cheeses a little and maybe add a bit more egg/milk if it looks dry.

  21. User avatar ginger.berge56 says:

    1 star
Okay, I made this and it literally exploded in my oven. What did I do wrong???

  22. User avatar Romani and Cremia says:

    2 stars
2/5… it was bland, honestly. I added more salt and pepper and even a pinch of garlic powder, and it improved. I guess oregano alone isn’t enough for my taste.

  23. 4 stars
Not sure about the Italian breakfast part—tastes like ham and cheese bake (in a good way). I served it with marinara and everyone acted like it was genius.

  24. User avatar Ralph Witting DDS says:

    4 stars
Great flavors! Reminded me of my grandma’s cooking. Very nostalgic. Thanks for sharing! 4 stars.

  25. User avatar Ford Prefect says:

    4 stars
Pretty good, but mine came out a bit eggy on the sides. I think my bread cubes weren’t soaked enough even though I pressed them. Next time I’ll let it sit 10 minutes before baking.

  26. 5 stars
So good! Made it for my friends and it disappeared in minutes! 🍽️

  27. User avatar warren.howe says:

    5 stars
Yummy!!! Perfect for brunch! I added some spinach just for extra veggies. 😋

  28. User avatar alphonso.harvey33 says:

    5 stars
Made this for brunch and it was a huge hit. The mozzarella pull is legit, and the oregano gives it that cozy Italian vibe. I let it sit the full 5 minutes—helped it set perfectly.

    1. 5 stars
I made it this weekend and totally agree—the oregano is what makes it taste “Italian.” Mine didn’t get quite as much pull though, maybe I need to use more mozzarella next time 😅

  29. User avatar jeanett.shanahan93 says:

    2 stars
Maybe I did something wrong, but mine didn’t get golden on top. I covered it with foil halfway and then uncovered. After that it looked way better.

    1. User avatar Humma Kavula says:

      4 stars
Yeah, that happens sometimes. Your foil halfway makes sense—if it didn’t brown the first go, it probably just needed more time uncovered (or your oven runs a little cooler). Next time try leaving it uncovered the whole time, or add 5–10 minutes at the end until the top goes golden and the center is set.

  30. User avatar willette.pollich says:

    3 stars
Took way longer to bake than suggested! My oven must be broken or something. The top was still soggy after 45 mins.

  31. User avatar titus.spencer88 says:

    5 stars
This is a fantastic recipe! Super easy and so delicious. My family loved it!

  32. User avatar hollis.roob says:

    5 stars
Made this for brunch and it came out super comforting. The top got really golden, and the inside was perfectly set after the 45 minutes. I used regular sandwich bread but still loved it.

    1. User avatar darryl.mitchell74 says:

      5 stars
Yes!! This is exactly the kind of brunch comfort food I’m after. I like that the inside set in 45 minutes too—mine always worries me with strata. Great tip using regular sandwich bread!

  33. User avatar sherwood.wolf55 says:

    5 stars
This sounds like the perfect make-ahead breakfast. Love the ham + mozzarella combo—feels super comforting. I might add a little garlic powder too, but the base recipe looks spot on.

    1. User avatar wellRespected says:

      5 stars
Yes! The ham + mozzarella is such a great combo for strata—comfort food goals. Garlic powder sounds like a perfect little upgrade.

  34. User avatar david.konopelski76 says:

    4 stars
I added spinach because I had it, and it turned out better than expected. The base recipe is flexible. Next time I’ll season the spinach too.

  35. User avatar Spriggan Earth Mother says:

    4 stars
I’m not usually a strata person, but this one surprised me. I used prosciutto instead of ham and it still worked. Would make again for sure.

  36. User avatar krissy.ondricka14 says:

    5 stars
Wow! This is the best breakfast ever! Gonna make it every Sunday!

    1. User avatar thanh.dubuque2 says:

      5 stars
Glad to hear you loved it! Simple and tasty, right? Perfect for Sundays!

  37. User avatar savannah.mccullough2014 says:

    2 stars
I didn’t really get this. Isn’t strata supposed to be a type of cheese? I’m confused. Anyway, it tasted fine.

  38. User avatar Restless Draugr says:

    4 stars
I don’t even like breakfast casseroles that much, but this one surprised me. The bread stays a little chewy, and the center is creamy. Good stuff!

    1. User avatar hildred.schuster11 says:

      5 stars
Totally get that—stratas can be hit or miss. I love how the bread stays a bit chewy instead of turning into mush. Creamy center is the dream 😄

    2. User avatar Enoch Treutel says:

      4 stars
Hmm interesting. I baked one like this and mine came out more like a sponge? Maybe I didn’t press it down enough or my oven ran hot. Still, your description makes me wanna try again.

  39. 4 stars
Uh, this is just a fancy bread pudding, right? But I like it anyway.

  40. User avatar Yooden Vranx says:

    4 stars
I dunno, I thought strata was supposed to be more like a casserole. This isn’t how my grandma made it! 🤔

  41. User avatar Kristy Schmitt says:

    5 stars
Super easy to make! I would make this for any occasion honestly.

    1. 5 stars
I love how simple this is! Perfect for a brunch with friends. Thanks for sharing!

  42. User avatar gina.paucek5 says:

    4 stars
Pretty good, but mine took closer to 55 minutes to fully set in the center. Still tasty and the oregano smell is awesome.

  43. 4 stars
I’m not sure about 45 minutes—mine needed closer to 55 to set in the center. The top was golden by then, but the middle was still kinda wobbly. Still tasty though.

  44. User avatar jeremiah.cassin62 says:

    4 stars
The ratio of cheese feels right, but 45 minutes might be short depending on your oven. I baked closer to 55 and the texture was perfect.

    1. User avatar Paul "Muad'Dib" "Usul" Atreides says:

      4 stars
Hmm 45 min was not enough for me. I think I left it too high temp? Next time I’ll do 55 like you said. Also I kinda forgot to press with a fork but it still turned out okay.

    2. User avatar kenny.pacocha56 says:

      5 stars
Totally agree—cheese ratio is spot on. I did 50 min instead of 45 and the center was more set. Love this for a weekend breakfast.

  45. User avatar janey.cummings1978 says:

    2 stars
Disapointing, I overcooked it. Followed the time exactly but it came out too dry. :'(

  46. User avatar rico.abshire says:

    1 star
Ehh, I thought it was overrated. It was just bread and eggs like my grandma made, but not as good.

    1. User avatar sharolyn.stroman71 says:

      4 stars
I totally get what you mean! It does sound pretty basic when you break it down. Sometimes old family recipes just have that special touch!

  47. User avatar Krystin Mann I says:

    2 stars
I tried this and it came out too soggy. Maybe I added too much milk? Not sure if I’d make it again. 2/5

  48. 4 stars
I’m skeptical about 45 minutes—my oven runs cold. I ended up baking closer to 55 and it still turned out great. So yeah, time might vary.

    1. User avatar Miss Doyle Kassulke says:

      5 stars
Totally agree—ovens vary a lot. I’ve had this same thing happen where 45 min is too optimistic. 55 sounds about right, especially if the center needs to set.

  49. 3 stars
Salt and pepper “to taste” is vague. I under-salted and it tasted kinda flat until I served it with hot sauce. Otherwise easy.

    1. User avatar jene.nitzsche says:

      3 stars
Maybe you needed more oregano too? I always do extra, like a full tablespoon, or else it tastes blah. Also hot sauce is king 😅

    2. 5 stars
Totally agree—”to taste” is the one part that can make or break it. I started using like 1/2 tsp salt for this size and it’s way less bland (then pepper + hot sauce if needed).

  50. User avatar faith.hahn93 says:

    5 stars
So easy! I mixed everything the night before, popped it in the oven in the morning. Just add a bit more time if it’s cold from the fridge.

    1. User avatar dexter.anderson53 says:

      4 stars
I tried it but 45 min felt way short for my oven. Also I think 350°F is too hot? Mine got brown on top before the middle cooked, so I covered it with foil. Still pretty good though, just needs timing tweaks.

    2. User avatar damion.schoen87 says:

      5 stars
This is so doable! I did exactly that (mixed night before), and in the morning I just baked a few extra minutes until the center was set. Turned out fluffy and cheesy—thanks!

  51. User avatar micah.hessel says:

    2 stars
I don’t know about this… I think it needs more seasoning. It turned out pretty bland for me.

  52. User avatar basementDweller says:

    5 stars
This came out super cozy—golden top, nice custardy center. I added a little extra oregano and it smelled like a legit brunch spot.

    1. User avatar robyn.kunze14 says:

      4 stars
Interesting… I think I undercooked mine last time? 45 min at 350 feels short to me. Did you cover it with foil at all so it doesn’t dry out? Also when you say custardy center—like still a little jiggly?

    2. 5 stars
Yes!! That golden top + custardy middle is exactly what I’m chasing with strata. Extra oregano is a great call—brunch vibes for sure 😄

  53. User avatar stefani.donnelly18 says:

    5 stars
Made it this morning and it was honestly better than I expected. The top got that nice golden color and the center actually set like the directions said. Will repeat.

  54. User avatar babette.kuphal says:

    5 stars
Yum! I used bacon instead of ham because I like bacon better. So good! Definitely doing this again! 5 stars!

  55. User avatar trina.parker says:

    3 stars
Not bad, but I think it needed more seasoning. Maybe some garlic would help?

  56. 2 stars
I tried this but forgot the cheese… oops. Still okay I guess.

    1. User avatar bertha.wuckert1997 says:

      3 stars
No cheese?! That’s like making pizza without sauce! But I guess it could still be decent.

  57. User avatar Mendy Runolfsdottir Jr. says:

    4 stars
Really tasty, but I think 45 minutes was a bit short for my oven. Mine needed closer to 55 to get the center fully set. Otherwise, great comfort food.

    1. User avatar edgardo.rath says:

      5 stars
Totally agree—strata is super oven-dependent. I also needed a few extra minutes for the center to set. Yours sounds spot-on though!

    2. User avatar harvey.goldner says:

      4 stars
I dunno… 45 min always worked for me, maybe your dish was deeper? Also I cook it a little longer till it smells less eggy. Still yummy!

  58. User avatar Freida Convict says:

    3 stars
I think the oven temp is off? Mine didn’t brown much at 350°F, so I bumped to 375 for the last 10 minutes. Still tasty though—just not as “golden” as pictured.

  59. User avatar Miss Rosanne Schroeder says:

    5 stars
This was SO good! My family loved it. I added some spinach too!

  60. User avatar enedina.fadel48 says:

    3 stars
Is 1 cup of ham really enough? Felt like I shoulda added more.

  61. 2 stars
Do you really need that much cheese? Seems like overkill to me. I like it simpler. 2

  62. User avatar francis.borer77 says:

    4 stars
I added some spinach & it was really good! Great brunch idea!

    1. User avatar williams.powlowski17 says:

      5 stars
Spinach sounds like a great addition! I might try that next time! 😋

  63. User avatar rosetta.cormier says:

    5 stars
WOW! I can’t believe how easy this was! Perfect for a lazy Sunday morning. Thank you!

  64. User avatar marcell.connelly says:

    5 stars
Made this for my family and it was gone fast. The combo of mozzarella + parmesan is so comforting, and the oregano gives it that “Italian café” vibe. I did add a little extra black pepper—highly recommend.

  65. User avatar hong.schuster1954 says:

    3 stars
This came out kinda eggy for me. Maybe my bread cubes were too fresh? Next time I’ll toast the bread a little first or use slightly less milk.

    1. User avatar winston.ratke55 says:

      4 stars
I get that—strata can turn eggy if the custard doesn’t fully set. I’d try baking closer to 50–55 min and make sure the center is really firm (not jiggly). Also, toasting the bread helps a lot so it soaks more evenly.

    2. User avatar Mr. Prosser says:

      3 stars
Wait you used 2 cups milk and 6 eggs? That seems like a lot of wet stuff for only 6 slices bread. I think you’re right—either toast/dry the bread more or cut back the milk a bit. Mine never came out eggy though 🤷‍♂️

  66. User avatar nam.heaney1975 says:

    5 stars
Made this for the family, they all eat it even my picky son! 10 stars if I could! ☆☆☆☆☆☆

  67. User avatar aida.macgyver1974 says:

    3 stars
I love strata! This one sounds good, but a little basic.

    1. User avatar loriann.pacocha61 says:

      3 stars
A little basic? Looks like a great way to use leftover bread though. I’m not a chef, but I think it sounds yummy!

    2. User avatar Gormlaith says:

      4 stars
I find it basic too, but sometimes simple is best! You can always add more spices or veggies if you want to jazz it up.

  68. 4 stars
I didn’t have Italian bread so I used sourdough. It was honestly kind of amazing, but the texture was more custardy than I expected. Still a win.

  69. User avatar latrina.miller says:

    5 stars
This was so delicious! The kids loved it and it was easy to make. Will definitely make again!

  70. User avatar Nolan Gislason says:

    3 stars
I tried this and it was kinda bland. Maybe more cheese would help? Just my opinion.

    1. User avatar eli.davis69 says:

      4 stars
I totally get what you’re saying! A little extra cheese never hurts. Maybe some herbs too for flavor? Just a thought!
